Peruvian Quinoa Salad

Peruvian Appetizer

QUINOA SALAD

INGREDIENTS

1 cup quinoa
½ cucumber
¼ cup fresh cilantro
2 Roma tomatoes
1 red bell pepper
¼ pound queso fresco or feta cheese
1¼ teaspoons aji amarillo, aji panca, or chipotle powder
1½ tablespoons lime juice
2 tablespoons olive oil
2 avocados

Serves 6. Takes 40 minutes.

PREPARATION

Cook quinoa according to instructions on package. Remove from heat and let cool. While quinoa cooks and cools, peel and dice cucumber. Dice cilantro, tomatoes, and red bell pepper. Dice queso fresco. Add quinoa, cucumber, tomato, red bell pepper, queso fresco, aji amarillo, lime juice, and olive oil to salad bowl. Toss salad with forks until well blended. Garnish with cilantro. Peel, pit, and cut each avocado into 6 slices. Garnish with avocado slices.

TIDBITS

1) Quinoa salad is an anagram for Quad Sinaloa. Sinaloa is a state in Mexico. It is all that remains of the once proud and vast Sinaloan Empire. The heyday of the Sinaloan Empire occurred over 4,000 years ago. It’s realm included North America, South America, Europe, and Southeast Asia. It’s technology while primitive by today’s standards was absolutely whizzo back then.

2) Way back then, Rubberto Sinaloa got drunk, cut open a rubber plant, and poured its sap into a boiling cauldron meant to cook fish. The heat turned the sap into rubber. He made rubber bands. Rubberto shot his rubber bands at his neighbor and took over his lands. He made the same land grab over and over again. Soon, he became emperor of Indonesia. We should all go on such drunken tears.

3) Anyway, Rubberto’s armada of rubber rafts crossed the mighty oceans. His marines and soldiers equipped with mighty rubber bands conquered pitiful natives armed only with stick and scary faces. Then Rubberto died, no doubt at the end of his life, leaving no heir. His four main generals quarreled and the Empire divided itself into the Quad Sinaloas of Viking Sinaloa, the Pharaoh’s Egypt, the Aztec Empire, and Poway, California. Sinaloa, Mexico is all that remains of the once feared empire. The prudent Mexican Federal government has banned Sinaloa’s inhabitants from possessing rubber bands, so things are kinda okay.

Beer Pizza

Italian Entree

BEER PIZZA

INGREDIENTSBeerPizza-

1 beer pizza crust (See above recipe.)
1 small onion
1 Roma tomato
1 teaspoon Italian seasoning
½ pound ground sausage
¼ cup beer (additional ¼ cup later)
½ cup pasta sauce
¼ cup beer
1¼ cups tablespoons grated Parmesan cheese
no-stick spray

Takes 30 minutes.

SPECIAL UTENSIL

PREPARATION

Preheat oven to 400 degrees. Spray pizza pan to keep the pizza from sticking. (It’s not a good feeling to have your great looking, great smelling pizza fall apart because it sticks to pan when you try to serve it.) Put crust on pan.

Thinly slice onion and tomato. Add Italian seasoning and ground sausage. Mix with hands and form several small meatballs. Add meatballs and ¼ cup beer to pan. Sauté at medium-high heat for 5 minutes. Stir a couple times to ensure even browning. Remove meatballs.

Add pasta sauce and ¼ cup beer to liquid already in pan. Bring to boil using high heat. Stir occasionally. Reduce heat to low and simmer for 5 minutes. Ladle beer/pasta sauce evenly over crust. Sprinkle onion slices, tomato slices, meatballs and Parmesan cheese over sauce. Put pizza in oven and bake at 400 degrees for 10-to-15 minutes or until cheese or crust in golden brown.

TIDBITS

1) Old King Arthur’s knights loved beer pizza. When the blessing of the food was over, all hands shot out to grab a big piece. However, the Knights of the Square Table who sat at the corners were at a severe disadvantage over the knights who sat at the sides. Hence the saying, “As hungry as a corner knight.” These hungry knights invariably challenged the pizza-chomping side-of-the table knights to mortal combat. King Arthur found his army of knights so depleted by pizza-fired duels, that his kingdom was wide open to foreign invasion. Then, he hit upon the happy idea of making a round table for pizza eating. All knights were equidistant from the pizza. All Knight of the Round Table were equally fed and content. It was a glorious time.

Completo, the Chilean Hot Dog

Chilean Entree

COMPLETO
(hot dog)

INGREDIENTSCompleto-

4 Roma tomatoes
4 medium avocados
½ teaspoon salt
4 teaspoons vegetable oil
4 submarine rolls – 8″ long
4 quarter-pound hot dogs – 8″
½ to 1 cup mayonnaise (1 cup means you’re fearless about spilling on your shirt or floor)
1 cup fresh sauerkraut

SPECIAL UTENSILS

metallic rack to cover pot
lots of napkins

PREPARATION

Dice tomatoes. Peel avocados, cut in half, and remove pits. Add avocado halves to mixing bowl. Mash avocado with potato masher or fork until smooth. Add salt and oil. Stir until avocado mixture (palta) becomes creamy. Boil hot dogs in large pot on high heat for five minutes. Steam rolls on rack atop pot. Add hot dogs to buns, then top in the following order with sauerkraut, tomato, a thick layer of creamy avocado (palta), and mayonnaise. The layers of creamy avocado and mayonnaise should be thick and wide, until it barely stays on the roll. Eat with the cut of the bun facing up.

Is this a messy hot dog? Yes it is! This is why you see it sold more often in Chile from street vendors than in restaurants.

TIDBITS

1) Sauerkraut is fermented cabbage.

2) The Mongols under Genghis Khan slaughtered thousands upon thousands of people while conquering darn near every place from Mongolia to western Europe. Which was bad. But who doesn’t have a bad side? I, for example, constantly misplace my glasses.

3) But I have done good deeds as well. And so did Mr. Khan, who brought the idea of fermenting vegetables to the western world. Without fermented cabbage, sauerkraut, the completo would not have been possible. I think Genghis would have been pleased to have known about his role in this recipe, unless, of course, he was more modest and unassuming than previously suspected.

Saudi Al Kabsa – chicken and rice

Saudi Entree

AL KABSA
(Chicken and rice)

INGREDIENTSAlKabsa-

3 pounds chicken breasts (or other parts)
2 carrots
5 garlic cloves
2 medium onions
3 Roma tomatoes
4 tablespoons butter
1/2 cup tomato puree
2 ½ cups water
1 ½ cups chicken stock
2 whole cloves
1/4 teaspoon nutmeg
1/4 teaspoon salt
2 teaspoons kabsa spice mix (See Kabsa Spice Mix recipe if you can’t find the mix.)
2 cups basmati rice (Do not precook.)
1/4 cup raisins
1/4 cup slivered almonds

Serves 6

SPECIAL UTENSIL

Dutch oven

PREPARATION

Preheat oven to 350 degrees. Chop chicken into 12 pieces. Grate or dice carrots. Mince garlic cloves and onions. Dice Roma tomatoes. Add garlic, onion, and butter to Dutch oven. Sauté garlic and onion on medium-high heat or until onion softens. Stir frequently. Add chicken, tomato puree, and chopped tomatoes, Reduce heat to low and simmer for 5 minutes. Stir occasionally.

Add water, chicken stock, carrot, cloves, nutmeg, salt and kabsa spice mix. Bring to boil using high heat. Cover, reduce heat to low and simmer for 30 minutes or until chicken is no longer pink inside. Remove chicken and bake for 25-to-30 minutes at 350 degrees or until it starts to brown.

Bring to boil. Stir in rice. Simmer for 30 minutes or until rice is tender and liquid is absorbed. Stir occasionally. Add raisins. Simmer for 5 minutes. Stir occasionally. Place rice on plate and top with 2 chicken pieces. Garnish with an equal amount of almonds.
TIDBITS

1) The Temple of Eve is supposedly located in the Saudi city of Jeddah. Cool.

2) Saudi Arabia is one of the driest countries in the world.

3) British humor is one of the driest in the world.

13) Speaking of using words to communicate information; all shops in Saudi Arabia are forbidden on Valentine’s day from selling anything red or with hearts on it. You may not wear anything red.

14) Movie theaters and beer are banned in Saudi Arabia. You must drive to Bahrain for these things, which depending on where you live could be anywhere from twenty minutes to twenty hours away. That movie had better be good.

15) And what if the beer you had made you sleepy and you fell asleep during the movie? That movie that took you twenty hours to get to? And twenty hours to get back?

16) If had to drive forty total hours for a beer, I would get the best, most expensive beer I could buy and really, really, really savor it.

17) And I would get gourmet popcorn for the movie. A giant tub of it.

Pasta Sauce

Italian Appetizer

PASTA SAUCE

INGREDIENTSPastaSauce-

2 garlic cloves
2 pounds Roma tomatoes
2 tablespoons olive oil
1 teaspoon basil
1 teaspoon marjoram
1 teaspoon onion powder
1 teaspoon oregano
1/4 teaspoon salt
1/2 teaspoon savory
1/4 teaspoon sugar
1/2 teaspoon thyme

makes 2 ½ cups

SPECIAL UTENSIL

blender

PREPARATION

Mince garlic cloves. Puree tomatoes in blender. Add remaining ingredients to large saucepan. Bring to boil on high heat, stirring constantly. Reduce heat to low, cover, and simmer for about 45 minutes or until sauce thickens. Cool.

TIDBITS

1) It’s helpful to know whenever you’re at an anagram convention that pasta sauce is an anagram for: cause a spat, a cat’s pause, sautes a cap, and cue ass pat.

2) A pat is a small slice of butter. A stick of butter is much longer than a pat.

3) When German soldiers invaded the Netherlands in 1940, they confiscated the locals’ butter. Culinary historians suspect the main impetus behind Germany’s patently unpleasant wars of aggression was a massive butter shortage in the Fatherland. The Netherlands has ample stocks of butter, so it was overrun by its larger bread-spread lacking neighbor to the east.

4) Sure, Germany invaded other nations as well, but that was mainly from inertia. Once you start invading other countries, it’s kinda hard to stop. Besides, Belgium had fries, France had cheese and baguettes, and Russia had beef stroganoff.

5) Eight nations met in Toronto, Canada in 1953 to sign the Ample Butter Supply Treaty (ABS.) To remove all temptation for aggression, signatory countries pledged to main large supplies of butter. America maintains its emergency butter supply in a climate controlled cave near Butte, Montana.

Salsa

Mexican Appetizer

SALSA

INGREDIENTSSalsa-

3 serrano chiles
9 cloves garlic
1 white onion
8 Roma tomatoes
1 tablespoon vegetable oil
1/2 teaspoon cilantro
2 teaspoons lime juice
1/4 teaspoon salt

PREPARATION

Preheat oven to 350 degrees.

Remove seeds from serrano chiles if you desire a milder salsa. Put chiles, garlic, onion, tomatoes, and oil in baking dish. Stir until garlic, onion, and tomatoes are well coated with oil. Roast in oven at 350 degrees for 25 minutes.

Dice roasted veggies. Add veggies, cilantro, lime juice and salt to mixing bowl. Blend with whisk or fork. Goes great with everything except lutefisk.

TIDBITS

1) May, 1997, was National Salsa Month. Our officials have too much time on their hands.

2) In 2003, Texas declared tortilla chips and salsa to be the Official State Snack. The Texas government has too much time on its hands.

3) Pace Foods uses over 20 million pounds of hot peppers every year. That’s a lot of peppers or maybe just one huge pepper. Can you imagine a pepper that big? If you managed to eat it you’d need a really huge glass of milk to coat the pain receptors in your throat.

4) It would take a really big cow to give enough milk to fill that glass in tidbit 3).

5) Tomatoes and serrano chiles are not vegetables. They are fruits. So is a banana.

6) “Sometimes a banana is just a banana.” – Sigmund Freud. Freud would have been greatly interested in a dream about a twenty-million-pound serrano chile.

7) Oh, and some historians think Christopher Columbus crossed the Atlantic Ocean to get away from lutefisk.

Caprese Burgers

Italian Entree

CAPRESE BURGER

INGREDIENTSCapreseBurgers-

1/2 onion
2 cloves garlic
1 1/2 pounds ground beef
1 tablespoon Italian seasoning
12 ounces pound mozzarella cheese
2 Roma tomatoes
1/4 teaspoon peppercorns (or black pepper)
6 hamburger buns
3 tablespoons extra-virgin olive oil
1/3 cup fresh basil
1/4 teaspoon sea salt

PREPARATION

Mince onion and garlic cloves. Mix onion, garlic, ground beef, and Italian seasoning. Form 6 patties.  Put patties in frying pan. Fry at medium-high heat with lid on for about 15 minutes or until the insides of the patties are done to the desired level of pinkness or brownness. Flip patties 2 times.

While patties are cooking, slice mozzarella into 24 slabs. Slice tomatoes 1/8″ thick. Grind peppercorns. Toast hamburger buns. Put a patty on each bun. Put 2 slabs on mozzarella on patty. Put 2 slices of tomato on mozzarella slabs. Put 2 slabs of mozzarella on bun top, then put 2 slices of tomato. Drizzle olive oil on and sprinkle the bottom half with ground pepper, and salt. Sprinkle top half with basil. Combine the bottom and top parts of the burger. Repeat for the next 5 burgers.

TIDBITS

1) In 408 A.D., Alaric besieged Rome with his Visigothic army. The Romans bought him off with 3,000 pounds of pepper. It is quite possible, though historians are by no means unanimous of this point, the Visigoths used this pepper to make caprese burgers.

2) In 410 A.D., their supply of pepper exhausted, the Visigoths were reduced to eating porridge. Clearly, this was not a stable situation. Alaric took his army once more to Rome. This time, the Romans refused to give the barbarians their pepper; Italian pork chops with pepper having become the latest culinary rage. The culinary-driven Visigoths stormed Rome, sacking it for 3 days while they searched for hidden stores of pepper.

3) Rome never recovered. The great chefs of Rome, deprived of pepper, gradually drifted off into banditry. The entire Roman Empire collapsed. The Dark Ages descended all over Europe not to be lifted for a thousand years.

4) This is why I always keep a lot of pepper in my kitchen.

Beef Chili Cheese Fries

American Entree

BEEF CHILI CHEESE FRIES

INGREDIENTSBeefChiliCF-

1 yellow onion
5 cloves garlic
6 Roma tomatoes
2 tablespoons olive oil
1 1/2 pounds ground beef
1/2 teaspoon cayenne
1 tablespoon chili powder
2 teaspoons cumin
2 teaspoons oregano
2 cups beef broth
1 pound pre-cooked french fries (This is a great way to get rid of those french fries that come with all those hamburger meals.)
1 pound Four Mexican Cheeses (Yes, a pound)
1 1/2 cups sour cream
1 teaspoon parsley

PREPARATION

Mince onion and garlic. Dice tomatoes. Add onion, garlic, and oil to skillet. Sauté for 5 minutes at medium-high heat or until onions soften. Stir frequently. Add beef, cayenne, chili powder, cumin, and oregano. Cook on medium heat for 10 minutes or until beef is no longer pink. Stir occasionally.

Add Roma tomato, dice tomato, beef broth, French fries, cheese, and sour cream to skillet. Cook on medium-high heat to 10 minutes. Stir frequently. Reduce heat to low and simmer for 10 minutes. Stir occasionally. Garnish with parsley and serve.

TIDBITS

1) The first known French fries were made in Belgium around 1680. Yay, Belgium. These first fries were a substitute for fried fish. Who knew?

2) Thomas Jefferson served French fries in the White House during his Presidency of 1801-1809. Oh, he also penned the Declaration of Independence and was responsible for the Louisiana Purchase in 1803. The many Louisianans who eat French fries of the Fourth of July are grateful.

3) The Rolling Stones sang about French fries in their 1964 song “Under the Boardwalk.” The Rolling Stones are British. Britain went to war with Germany in 1914 to preserve Belgian neutrality and Belgian French fries. Harsh words were said by all and the conflict went global. We are still living with the culinary consequences of the War To End All Wars.

Chicken Pulique

Guatemalan Entree

CHICKEN PULIQUE

INGREDIENTSChickenPuli-

3 chicken breasts
1/4 cup olive oil
2 cloves garlic
2 brown potatoes
4 fresh tomatillos
2 dried guajillo peppers
1 medium onion
4 Roma tomatoes
2 cups chicken broth

2 cloves
3 peppercorns
2 teaspoons annatto seed
1/2 teaspoon cinnamon
1 teaspoon cumin
3 tablespoons epazote

SPECIAL UTENSIL

spice grinder
Dutch oven

PREPARATION

Cut chicken into 1/2″ cubes. Coat chicken with olive oil. Add to Dutch oven and sauté on medium-high heat for 10 minutes or until chicken is no longer pink inside. Stir. occasionally.

While chicken sautés, cut potatoes into 1/2″ cubes. Add chicken stock and potato to soup pot. Cook on medium heat for 20 minutes or until potato is tender.

While chicken bakes and potato cooks, remove husks from tomatillos, and seed guajillo peppers. Mince tomatillo, garlic, guajillo peppers, onion, and tomatoes. Grind cloves and peppercorns. (Whew, work fast! Have a Roy Rogers drink to give you the necessary caffeine. ☺)

Pour potato/chicken broth over chicken cubes in Dutch oven. Add tomatillo, garlic, guajillo peppers, onion, tomatoes, cloves, peppercorn, annatto, cinnamon, cumin, and epazote to Dutch oven. Cook at medium-low heat for about 10 minutes. Stir occasionally.

TIDBITS

1) Oh crudness, my internet connection is out. I can’t look up fun facts about pulique. I’m jump starting my brain. Okay, here goes.

2) Pulique is quite popular in Guatemala.

3) It is not as popular where there is zero gravity such as the International Space Station.

4) Cooking involves much mincing of garlic. On Earth, garlic mincing means little garlic bits scatter millimeters into the air and fall all over the cutting board.

5) Only in zero gravity, those garlic bits keep rising in the air and fly all over the place until they hit the ceiling and the walls where they bounce and bounce up and down the corridors.

6) If the chef on the Space Station is mincing up a heap of garlic, pretty soon a cloud of garlic bits fills every corridor, floating and bouncing away for a long time.

7) Everything on the station soon reeks of garlic, even the billion-dollar experiments.

8) On the other hand, vampires hate garlic. The Space Station would be guaranteed to be vampire free.

9) Even if the vampires somehow built a rocket to propel them into outer space..

10) And as of going to press, vampires have shown no such technological skill.

11) Nor do they enough money to pursue such a monumental undertaking.

12) Nor do vampires have any real access to the global capital market.

13) Bankers everywhere no longer loan to vampires. Not for any project.

14) These financiers once lent to vampires, but the loans came back to bite them in the ass.

Fish with Peppers and Coconut Milk

Brazilian Entree

FISH WITH PEPPERS AND COCONUT MILK

INGREDIENTSCoconut_Milk-

1 red chile
1 red bell pepper
1 garlic clove
2 Roma tomatoes
1/2 onion (1/2 more later)
2 cod fillets (about 12 ounces total, or halibut or haddock)
2 teaspoons lime juice
1/2 teaspoon chili powder
1/2 tablespoon cilantro
1/2 teaspoon sea salt
1 cup coconut milk
2 tablespoons palm oil or vegetable oil (1 tablespoon more later)

1/2 tablespoon palm oil or vegetable oil
1/2 onion
1 cup cassava flour or all-purpose flour or toasted bread crumbs.

The camera was in Chicago when I made this dish so I couldn’t take a picture of it. Please enjoy the above picture.

PREPARATION

Seed and dice red chile and red bell pepper. Mince garlic clove. Dice tomatoes and 1/2 onion. Put cod in large mixing bowl. Pour enough water in bowl to cover cod. Add lime juice. Let sit for 30 minutes. Remove cod fillets. Pat them dry with towel. Put cod in skillet. Add red bell pepper, garlic, tomato, chili powder, cilantro, sea salt, and coconut milk. Let sit for 15 minutes.

Cook fish/spice/coconut mix on high heat until it begins to boil. Simmer at low heat with lid on for 5 minutes. Add 2 tablespoons palm oil. Simmer with lid on for 10 additional minutes.

While fish/spice/coconut mix simmers, thinly slice 1/2 onion. Sauté sliced onion second skillet with 1 tablespoon palm oil on medium-high heat for 5 minutes or until onion is soft. Add cassava flour and cook on medium-high heat for 2 minutes or until flour is lightly toasted.

Serve fish/spice/coconut mix on top of sliced onions and toasted cassava flour.

TIDBITS

1) Over half of the world’s cassava production occurs in Africa.

2) Where does the other 40 percent plus come from?

3) I think we can rule out Antarctica as a major source of cassava.

4) Unless, of course, the scientists in Antarctica, have vast hydroponic farms devoted to growing cassava.

5) Wouldn’t it be neat if there were a movie called Hydroponic Cassava Farming in Antarctica. I’d see it. After all, I saw Salmon Fishing in the Yemen.
