Hot, even incendiary headlines you betcha. Ones that make you angry, make you forward the post to your friends who forward them to their friends. But are they real?

No, they’re from fake news sites. Some of them are clearly satirical sites such at The Onion. Others are what as know as “clickbait” sites. Every time you click on them, information is gathered about you. This information is then sold to advertisers. Unsettling stuff indeed. Here is a list of fake news sites. Some are clearly labelled as fake or satirical, others are not.

Honduran Nacatamales

Honduran Entree

NACATAMALES

INGREDIENTS – DOUGHNacatamales-

6 cups masa harina or corn flour
1 cup lard, shortening, or butter
1 teaspoon salt (1 more teaspoon later)
3 tablespoons orange juice
5 tablespoons lime juice
4 cups chicken stock

INGREDIENTS – FILLING

⅔ cup rice
2½ pounds pork
3 large potatoes
3 garlic cloves
1 green bell pepper
1 large onion
1 sweet green chile pepper
1 medium tomato
3 tablespoons cilantro
1½ tablespoons cumin
½ teaspoon pepper
1 teaspoon salt
1 teaspoon achiote paste (or ½ teaspoon paprika plus ½ teaspoon vinegar)
2 tablespoons vegetable oil

Makes 18 nacatamales. Takes at least 3 hours.

INGREDIENTS – ASSEMBLY

12 10″-x-10″ banana-leaf squares*
A roll of aluminum foil
Multiple big pots (4½ or larger. Extra pots enables you to cook more nacatamales at once.)
Good restorative drink to keep you going.

* = Banana leaves can be found in Mexican or Asian grocery stores. If they can’t be found, just use the tin foil without them. Oh, banana leaves are curved, not square at all. Bastards.

SPECIAL UTENSILS

electric beater
cooking twine or butcher’s twine

PREPARATION – INITIAL

Soak banana leaves in large pot. You really need to make the banana leaves flexible.

PREPARATION – DOUGH

Add masa harina, lard, and 1 teaspoon salt to first, large mixing bowl. Mix with electric beater set on low. With electric still set on low, slowly add orange juice, lime juice, and chicken stock. Mix until it has the consistency of mashed potatoes. Rev up electric beater to high setting or until it starts to become fluffy. Cover dough and let sit for 30 minutes.

PREPARATION – FILLING

While dough is sitting, cook rice according to instructions on package. Cut pork into ½” cubes. Peel potatoes. Slice potatoes into ½” cubes. Dice garlic cloves, green bell pepper, onion, sweet green chile pepper, and tomato. Add pork cubes, cilantro, cumin, pepper, salt, and achiote paste to second, large mixing bowl. Mix with hands until pork cubes are well coated with spices.

Add vegetable oil, coated pork cubes, and potato cubes to pan. Sauté on medium heat for 20 minutes or until potatoes soften. Stir frequently. Add garlic cloves, green bell pepper, onion, sweet green chile pepper, and tomato. Sauté for 5 minutes or until onion softens. Stir frequently.

PREPARATION – ASSEMBLY

Remove banana leaves soaking in pot. Heat water on high heat until it is scalding hot. Add banana-leaf square to pot. Keep leaf in pot until it becomes flexible. Remove banana leaf. Place ⅓ cup of dough in the middle of the banana leaf. Smooth dough with wet hands until it is about 2″ from the edges of the banana leaf.

Add equal amounts of pork cubes (about ⅓ cup), over the middle of the dough, followed by cooked rice (about 2 tablespoons) and potato cubes (about 1½ tablespoons). Add another ⅓ cup of dough over potato cubes. Smooth top layer of dough gently with wet hands. Fold bottom edge of banana leaf over filling until it reaches the top half of the leaf Gently fold in edges to make a square. Gently–Don’t break the banana leaf–tie kitchen twine around filled banana-leaf square.

Place the filled banana-leaf square over the center of an aluminum-foil square. (The aluminum-foil square large enough to wrap the banana square. Tightly fold bottom edge of foil over filled banana-leaf square. Tightly fold sides of aluminum foil over banana square, then the top side. Tie the aluminum-foil covered square like a parcel with kitchen twine. Repeat process for each banana leaf. There should be a banana leaf softening in the pot while constructing each nacatamale.

Put metal rack in bottom of each pot. Add water to each pot until level is ½” above the racks. (Aluminum cookie cutters work quite well as a substitute for wire racks.) Bring to boil using high heat. Cover and reduce heat to low. Add a single layer of nacatamales to rack. Simmer for 45 minutes. Add water as necessary to keep level ½” above the rack. Remove nacatamales from pots. Repeat for each batch of nacatamales. Remove all twine and tin foil and serve to adoring guests.

TIDBITS

1) Nacatamales were invented by Señor Naca Tamale, chef to the royal governor in 1689. They were delicious, so much so that Governor Alfonso Bondigas knew he would win a million pieces of gold if he could send just one nacatamale to the Spanish king, Charles II.

2) So, in 1690, Governor Bondigas sent 100 nacatamales with the annual fleet carrying gold to Spain. They got eaten by the crews.

3) In 1691, Governor Bondigas sent 200 nacatamales with the fleet. 100 got eaten by the crews. The rest got eaten by gourmet rats.

4) In 1692, Governor Bondigas sent 400 nacatamales. The sailors devoured 100, the gourmet rats another 100, and the rest spontaneously combusted. No one saw that one coming.

5) Pirates captured the annual Nacatamale fleet in 1693, tamales having by that time become more valuable than gold.

6) In 1694, the Honduran governor sent 1,600 nacatamales with the nacatamale fleet. Unfortunately, First Mate Pedro Migas placed the nacatamales in the same room where he dried the crew’s socks. When half of the socks fled to a parallel dimension–a journey they continue to this day–they took all the nacatamales with them. By the way, culinary quantum physicists say trans-dimensional aliens took a great liking to nacatamales and can often be found at nacatamale stand through out Central America. You have to look closely for them; their disguises are excellent.

7) In 1695, Governor Bondigas tried catapulting the nacatamales to Spain. They only made it two miles out to sea where they utterly destroyed a pirate fleet. Karma, you bet.

8) In 1696, Señor Bondigas noticed a little boy skipping rocks all the way across a small stream. Could this work with nacatamales? No.

9) Spurred by the efforts of 1697, nacatamale skipping became the premier event of the Spanish-American games. All Honduras went sports mad. Every young man in that land spent every spare moment practicing to win the gold medal in nacatamale skipping. This naturally left no nacatamales left to be shipped to Spain.

10) The banana bug wiped out the banana crop in 1698. No banana leaves, no nacatamales.

11) In 1699, banana growers all used their leaves to make beer. Banana-leaf beer was enormously popular that year. You can only find this beer in a few Honduran villages. The brand is El Banano.

12) In 1700, the Nacatamale Fleet finally made it to Spain with fifty million nacatamales. But Charles II had died two weeks before. His successor, Philip of Anjou, grandsom of Louis XIV exported them all to Britain as a good-will gesture. The British loved the nacatamale. Lasting global peace seemed likely. But the British gobbled the nacatamales up in just one week, got sick of them, and in revenge declared war on France. Wars would rage across Europe for another 245 years. The new Spanish King blamed Governor Bondigas who died broken hearted. However, the legacy of the good man lives on in the millions upon millions of postal packages wrapped in the manner of the nacatamale.

How The British National Election Will Give Me Super Powers

 

According to USA Today on May 7, 2015, Britain’s Green Party held one seat in Parliament. There were much larger parties holding many more seats vying for control of the country’s destiny. However, they are of no interest to us and we shall ignore them.

The main thing to notice is that Other Parties held 27 seats.  According to USA Today, other parties “Includes smaller parties from Northern Ireland, Wales, and Independents.” Okay fine, but what is smaller than one? Zero! (Okay, 1/2 is smaller than one. But you can’t have half a politician sitting* in Parliament or in the United States Congress for that matter. The incomplete he or she would die. It would be messy. Moreover, even though partial politicians are not specifically excluded from winning office in any country on this planet, there does seem to be a rather strong unwritten rule about it.)

Okay, now it gets exciting. USA Today claimed that the Other Parties, as of May 7, held a total of 27 seats in Parliament. How on Earth is that possible if all the Other Parties have zero members sitting* in Parliament? Is the sum of zeroes greater than 27? YES, dear reader  0 + 0 + 0 = 0 > 27 or alternatively 0>27. Half of 0 is o. Half of 27 is 13.5.  So 0>13.5. In fact, zero is greater than any positive number. Woo hoo, then line of thinking is quite exhilirating, liberating even.

0 > 1, 0>2 . . .

This is where I acquire super powers.  SupermanTM flies at let’s say, 100 miles per hour. I admit it; I fly at zero miles per hour. But we’ve just proved that 0>100. I CAN FLY FASTER than Superman. Superman can lift 2 tons of steel. I can easily lift o tons of steel. 0>2. I can hoist more than Superman. I AM STRONGER THAN SUPERMAN. I am mightier than Superman.

Do not worry. I shall use my superpowers for good, unless of course, you block the aisles at the supermarket with your shopping cart. Then you will be toast.

* = Members of Parliament are allowed to stand and move around. They do not have to sit all the time. Sitting in Parliament is just a phrase that has gotten a lot of currency.)

Pork Colombo

French Guianese Entree

PORK COLOMBO

INGREDIENTSPorkColombo-

1½ pounds pork loins
2 garlic cloves
1 onion
1 tomato
3 tablespoons Colombo powder (See above recipe.)
2 tablespoons vegetable oil
2 cups chicken or vegetable stock
2 tablespoons lime juice
1 teaspoon Scotch bonnet sauce or habañero sauce (This are spicy!)
1½ tablespoons chives
½ teaspoon pepper
1 teaspoon salt
½ tablespoon thyme

Makes 6 bowls. Takes 1 hour.

PREPARATION

Cut pork loins into 1″ cubes. Mince garlic. Dice onion and tomato. Add pork cubes and Colombo powder to mixing bowl. Use fork to thoroughly coat pork cubes with Colombo powder.

Add coated pork cubes and vegetable oil to pan. Sauté at medium-high heat for 10 minutes. Stir occasionally. Add garlic, onion, and tomato. Sauté at medium-high heat for 5 minutes or until onion softens. Add chicken stock, lime juice, Scotch bonnet sauce, chives, peppers, salt, and thyme. Simmer at low-medium heat for 30 minutes. Stir occasionally.

TIDBITS

1) According to culinary historians, Scottish clansmen, from the 12th century on, would rub Scotch bonnet peppers onto their shaved heads before engaging in battle. Naturally, the fiery Scotch bonnet burned their noggins something considerable, so much so the clansmen became the fiercest of warriors. No army could stand up to them in hand-to-hand combat. “Here comes the Scotch bonnet heads” was a byword for terror for the invading English armies over the centuries.

2) Finally, the English hit upon the idea of shooting arrows tipped with lutefisk at the Scottish pikemen. The Scots retreated in terror. England and Scotland would become part of Britain. The English units lobbed lutefisk at the enemy warriors. The Scottish infantry, beserk with pepper heat penetrating their brains would smash through the disorganized infantry. It was an enduring formula for victory on the battlefield. Britain would soon conquer most of the world and there you go.

Belgian Apple Fritters

Belgian Dessert

APPLE FRITTERS

INGREDIENTSAppleFritters-

2⅓ cups flour
16 ounces beer
5 large apples
4 cups vegetable oil (or enough to cover apple slices)
½ cup confectionery sugar
1 tablespoon lemon juice

SPECIAL UTENSIL

electric beater
electric skillet

makes 30 apple fritters

PREPARATION

Add flour and beer to large mixing bowl. Use electric beater on medium setting until there are no lumps and the mixture thickens in batter. If mixture is liquidy after lumps have disappeared, put mixture into refrigerator for 5 minutes. Peel and core apples. Cut into 6 rings each. Coat apple slices into flour/beer mixture.

Add oil to skillet. Heat electric skillet to 375 degrees. Add coated apple slices to skillet. The oil should cover the slices. Fry apple slices for about 2 minutes on each side or until golden brown. Remove fried slices, or fritters, and place on paper towels. Repeat until done. Sprinkle fritters with lemon juice and dust with confectionery sugar.

TIDBITS

1) Belgians believe eating cabbage on Shrove Tuesday will prevent Belgium’s cabbages from being devoured by caterpillars and flies. Works for me.

2) Shrove Tuesday occurs on Tuesday. Further research shows Shrove Tuesday occurring before Ash Wednesday, the start of Lent. Shrove Tuesday is also known as Mardi Gras, or Fat Tuesday. Traditionally, people would eats lots of high caloric foods on this day before giving up their tasty temptations for Lent.

4) Indeed, Shrove Tuesday is also known as Pancake Day in protestant Britain, New Zealand, and Canada and in catholic Ireland as inhabitants on those happy countries would traditionally eat pancakes and engage in run-on sentences on that day. It’s gratifying to know that food, pancakes in this case, brings amity, peace, and contentment to nations with histories of political and religious differences. All we are saying is give pancakes a chance.

Icelandic Crepes – (Pönnukaka)

Icelandic Entree

ICELANDIC CREPES
(Pönnukaka)

INGREDIENTSIcelandicCrepe-

4 tablespoons butter
3 eggs
2 cups milk
2 tablespoons sugar
½ teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon ground cardamom
1 3/4 cups flour
12 ounce jar lingonberry jam
1 cup whipped cream
2 tablespoons confectionary sugar
no stick spray

makes 15 crepes

SPECIAL UTENSIL

crepe pan or skillet

PREPARATION

Melt butter in skillet. Let butter cool. Add cooled butter, eggs, milk, and sugar to large mixing bowl. Mix with whisk for 1 minute or until thoroughly blended. Add baking powder, baking soda, cardamom, and flour to second mixing bowl. Mix these dry ingredients with whisk.

Gradually fold in the baking powder/baking soda/cardamom/flour mix into the butter/
eggs/milk/sugar bowl. Mix with whisk. Batter is ready when lumps disappear.

Add drop of water to pan. Turn heat to medium-high. Pan is ready when water sizzles. Spray pan with no-stick spray. Pour 1/4 cup batter into pan. Make sure batter spreads evenly. Cook on medium-high heat for about 1 minute or until bottom of crepe turns golden brown. (X-ray vision helps. If you do not possess this skill, gently lift up the edges of the crepe with a spatula and take a peek.) Turn over crepe with spatula, a wide one is helpful, and cook for about 1 minute or until golden brown. Remove crepe from pan. Repeat for each crepe.

Place 1 heaping tablespoon whipped cream and 1 tablespoon lingonberry jam on the middle of each crepe. Fold in half to make a half-moon shape. Fold in half again to make a pie wedge. Press down gently to spread lingonberry and whipped cream through crepe. Top with 1/2 teaspoon confectionary sugar. Repeat for each crepe. Serve right away.

TIDBITS

1) Over half of all Icelanders believe in elves! Icelandic music companies have a bias in signing musicians who profess to believing in elves. It is said the elves will defend their rocky homes by using magic powers. Bulldozing companies sometimes arbitrate with elves in hopes of getting the wee people to leave. I would love to see this.

2) The Yule Lads are Iceland’s answer to Santa Claus. While the story around Santa Claus originated from a real person, Saint Nicklaus, the Yule Lads descended from evil trolls. Indeed, parents tormented wild children with, “The Yule Lads will get you if you don’t behave.” However, the powers that be made this form of parenting illegal in the 18th century. Now, they are relatively benign even though they sport names such as Bowl Licker and Window Peeper.

3) Today, kids are tormented by internet outages.

4) Britain and Iceland nearly went to war three times over the right to fish for cod near the Icelandic shores. Something to thing about when munching on a fish stick.

5) This tidbit did not survive editing.

6) Icelanders love to play midnight golf during July and August when the day is twenty-four hours long. There are lava beds on some Icelandic golf courses. Is there a lava-bed wedge in Icelandic golf bags? I don’t know.

7) Ice melts when dropped into any one of Iceland’s volcanoes.

8) Indeed, ice melts in any of the world’s volcanoes.

9) Cheese sandwiches burn rapidly when placed in an active volcano. That’s a bad way to toast your cheese sandwiches. Indeed, doctors everywhere recommend against this cooking technique, citing near certain incineration of the chef.

10) This is why Iceland has no gourmet toasted-cheese sandwiches restaurants close to active volcanoes, not even for tourists.

11) Can Iceland’s magical elves survive the intense heat of an active volcano? If so, they could toast cheese sandwiches. Sure, Iceland’s elven chefs would have to have incredibly quick and skilled hands. But wouldn’t a volcano-fired golden brown cheese sandwich be way cool?

Pork and Tofu Stir Fry

Chinese Entree

PORK-AND -TOFU STIR FRY

INGREDIENTSPorkTofuStir-

12 ounce firm tofu
1 pound pork tenderloin
3 garlic cloves
1/2 tablespoon cornstarch
1 teaspoon hot-pepper paste or chili-garlic sauce
1 teaspoon red pepper flakes
2 teaspoons sherry
2 teaspoons soy sauce
1 teaspoon peanut oil
1 tablespoon sesame oil
1/2 cup chicken or vegetable stock

SPECIAL UTENSIL

food processor
a wok would be nice as well

PREPARATION

Cut tofu into 1/2″ cubes. Use food processor to shred pork. Mince garlic cloves.

Add pork, garlic, cornstarch, hot-pepper paste, red pepper flakes, oil, sherry, and soy sauce to mixing bowl. Toss ingredients until pork is thoroughly coated. (You make take the toss instruction in a non-culinary way if your guests look upon your efforts and say, “Ew, I don’t like Chinese.”)

Add peanut oil, sesame oil, and ingredients from mixing bowl to skillet. (Ask for a wok for Christmas.) on medium-high heat for 2-to-3 minutes or until pork is no longer pink. Stir frequently. Add tofu. Sauté for 1 minute or until tofu is heated through. Stir in chicken stock and cook covered on medium-high heat for 2 minutes. Goes well with rice.

TIDBITS

1) It’s comforting to know that the Earth’s orbit will not be affected if all billion or more Chinese jump off a chair at the same time. Physicists say so. So there. So no nation needs to develop a counter-jumping program.

2) However, an experiment in Britain in 2001 had school kids jumping off chairs at the same time. The reason for this trial completely escapes me. Sounds like fun though. Anyway, this scientific research caused a 2.0 earthquake. 2.0! Pshaw, I’m from California. That’s not an earthquake. Pish!

National Stereotypes on Google

Here is how Google completes your search question when you type in the words, “Why is (some country) . . .?” Presumably the first completed choice by Google mirrors peoples’ stereotypes about particular nation.

The following  stereotypes garnered more than one country:

Poor countries were: Indonesia, Mexico, Mozambique, Nicaragua, Nigeria, Romania, Vietnam
Expensive countries were: Argentina, Brazil, Britain, Fiji
Happy countries were: Denmark, Sweden
Rich countries were: Germany, Norway, Switzerland
Dry countries were: Australia, Peru, Turkey
Big countries were: Greenland, Russia
Why so important countries? were: Afghanistan, Cuba, Egypt, Greece
Violent and dangerous countries were: Colombia, Iraq, Pakistan, South Africa

And now, stereotypes for the first fifty countries that popped into my mind. Okay, many of the following countries were chosen because I love their cuisine. or I enjoyed traveling there. My favorite is, “Why is Greenland so big?”

Hot Chocolate

American Appetizer

HOT CHOCOLATE

INGREDIENTSHotChocolate-

4 ounces semisweet chocolate (chips or squares)
4cups milk
1/2 cup sugar

PREPARATION

Add all ingredients to saucepan. Heat with medium heat. (Whoa! Heating with heat. That’s just crazy enough to work.) Cook until chocolate has completely melted and liquid is just ready to boil. Stir frequently.

Use an electric or hand beater on hot chocolate if you wish to make it frothy. Mini marshmallows and whipped cream make excellent toppings.

TIDBITS

1) If it weren’t for chocolate, we probably wouldn’t have microwaves. Decades ago, the chocolate bar in Percy Spencer’s pocket melted when he got close to the microwaves of a magnetron. Potato Ham Soup

American Soup

POTATO HAM SOUP

INGREDIENTSPotatoHamSoup-

6 Russet potatoes
1 pound ham
1 onion
1/2 teaspoon mustard
1/4 teaspoon paprika
1/4 teaspoon pepper
1/4 teaspoon salt
1/2 cup butter
1 cup milk
1/2 cup sour cream

PREPARATION

Cut potatoes and ham into 1/2″ cubes. Dice onion. Put potato, ham, and onion into large pot. Add just enough water to pot to cover potato, ham, and onion. Add mustard, paprika, pepper, and salt. Cook on high heat until water boils. Reduce heat to medium and cook for 20 minutes or until potato is tender. Stir occasionally. Reduce heat to warm. Add butter, milk, and sour cream. Cook for 2 minutes or until soup is heated through. Stir frequently.

TIDBITS

1) Dom DeLuise starred in a movie called Silence of the Hams. It parodied the movie Silence of the Lambs. Silence of the Hams did not do well at the box office. So I’ll discuss potatoes instead..

2) The Inca Indians of Peru were the first known cultivators of potatoes. They harvested the first spud somewhere between 8,000 BC and 5,000 BC. That’s quite a wide range of years. It’s the same thing as saying your federal-income-tax check will be in the mail sometime from now until the year 5014. See how well the folks at the IRS accept that statement.

3) In 1536, the Spanish conquered the Incan Empire for its potatoes and gold. There are thousands of varieties of potato. There is only type of gold. Gold is an element. The potato is not; it is a tuber. Sure there are such things as white gold but that comes from mixing gold from something, well um, whitish. But just think of the dozens of herbs and spices that can be added to potatoes. Moreover, the mighty tuber is truly tasty, gold not so much. Potatoes beat gold by a technical knockout.

4) Many people believe the first real French fries were actually made in Belgium. If Belgium had thought of patenting French fries, it could have ruled the world and become fabulously wealthy. However, it’s doubtful Belgium’s powerful and envious neighbors: Germany, Britain, and France would have let tiny Belgium continue with this monopoly. It’s certain a long and bloody European war would have erupted. Thank good Belgians shared the recipe. The Great Global French Fry Peace broke out, marred only the interruptions of World War I and World War II. Yay, spuds.
