Fajita Bowls Recipe

Mexican Entree

FAJITA BOWLS

INGREDIENTSFajiBowl-

7 small flour tortillas
4 chicken breasts
3 garlic cloves
1 medium yellow onion
1 green bell pepper
2 orange bell peppers
1 red bell pepper
4 tablespoons vegetable oil
4 teaspoons lime juice
1/4 teaspoon TabascoTM sauce
1 teaspoon red chili powder
1 1/2 teaspoons cumin
1/2 teaspoon coriander
1 teaspoon Poultry MagicTM spice
2 cups lettuce
1/2 cup shredded Four Mexican cheeses
salsa (optional)

UTENSILS

Muffin tin or 8″ casserole dish
A lazy Susan, about 24 inches across, if you can find one.
toothpicks

PREPARATION – BOWL METHOD – 1

Preheat oven to 375 degrees. Turn muffin tin upside down. Gently push flour tortilla down between 3 upside-down cups. Do this 2 more times. Put muffin tin with tortillas in oven. Bake at 375 degrees for 10 minutes or until tortilla bowls become crispy. Way cool, huh? See below picture.

PREPARATION – BOWL METHOD – 2

Put a tortilla in each corner of the casserole dish. Fold up sides of all 4 tortillas so that they form 4 bowls. Put a toothpick in one tortilla and in another tortilla wherever they come together. Bake at 375 for 20 minutes or until tortilla bowls become crispy. Also cool. See below picture.

PREPARATION OF FIXINGS

Make spice mix by whisking together in small bowl: chili powder, cumin, coriander, poultry spice and TabascoTM sauce. Cut chicken into strip 1/2″ wide and 2″ long. Add 1/3 of spice mix to chicken. Mix until chicken is coated with spice.
Use food processor to mince garlic cloves. Use knife to slice the onion into rings. Then cut rings into fourths. Combine 1/3 of spice mix with garlic and onion.

Use knife to slice the bell peppers into rings. Then cut rings into fourths. Combine 1/3 of spice mix with bell peppers.

Pour vegetable oil and lime juice into no-stick frying pan. Sauté on medium-high heat 3 times . Put each sautéed mix in its own bowl, leaving oil and lime juice in pan. 1) Sauté garlic and onion. 2) Sauté green bell pepper, orange bell pepper, and red bell pepper.. 3) Sauté chicken strips. Put bowls on lazy Susan, again if you have one. Add more vegetable oil and lime juice if you run out while sautéing all the ingredients.

Shred lettuce. Put lettuce and cheese in bowls on lazy Susan. Male a fajita bowl by filling tortilla bowl with: chicken, onion/garlic, bell pepper, lettuce, and cheese. Arriba. (Could you tell I italicized the period at the end of the last sentence?)

TIDBITS

1) It is doubtful there ever was a real lazy Susan.

2) To clear the good name of Susan, here is a list of famous Susan singers: Susan from Iran, Susan from Japan–Is having a last name so hard?–Susan Boyle, Susan McFadden, Suzi Quatro–Okay a variation on Susan but I remember listening to her in college so there–

3) Famous Susan actresses: Susan Cookson, Susan Hampshire–I remember watching her watching her in a Masterpiece Theater series during college. You rocked, Ms. Hampshire–Susan Dey, Susan Littler, Susan Lucci, Susan Oliver, Susan Sarandon–star of the cult classic Rocky Horror Picture Show–and Susan St. James.

4) Famous Susan authors: Susan Cheever, Susan Isaacs, Susan Sontag–I have a book of hers sitting on my bookshelf–and Susan Fromberg Schaeffer.

5) Famous dog of the current British Queen: Susan.

6) Famous Susan mass murderers: None.

7) Famous Susan dictators: None.

8) See? Susans are nice. I can personally vouch for the niceness of every Susan I’ve met.

Tunisian Harissa Recipe

Tunisian Appetizer

HARISSA

Harissa-

INGREDIENTS

12 dried chile de arbol peppers or milder red chile peppers
4 garlic cloves
3/4 teaspoon caraway seeds
3/4 teaspoon coriander
3/4 teaspoon cumin
1/2 teaspoon salt
1/2 tablespoon lemon juice
2 tablespoons olive oil

PREPARATION

Remove stems and seeds from peppers. (Always, always wash hands after handling chile peppers.) Put peppers in bowl of hot water. (This softens and relaxes the peppers.) Remove peppers after 30 minutes. Mince peppers and garlic cloves. Combine all ingredients in bowl.

Store in refrigerator for up to one month. This is one tough condiment.

TIDBITS

1) Caraway seeds reduce flatulence.

2) Moving quickly on, the word Tunisia comes from Tunis, the country’s capital, not the fish, tuna.

3) It’s a fact, Germany was never called Hamburgeria after its import port city of Hamburg.

4) The burg Hamburg is not named after ham. Ham is an English word. Hamburg is still in Germany and is likely to remain that way.

5) Unless of course, the movement of the Earth’s plates increase to such a phenomenal pace that Hamburg ends up being next to Boston sometime by press time for this book.

6) I would like to point out that if the Earth’s plates do move that fast there will be immense worldwide devastation. Book signings will be difficult to schedule.

7) Surfers though would have a great time. Those fast moving continents would generate tons of primo waves. Cowabunga, dude.

Guyanese Garlic Pork Recipe

Guyanese Entree

GARLIC PORK

INGREDIENTSGarlicP-

2 pounds pork loin
2 garlic bulbs
1/2 onion
5 cloves
1/2 teaspoon salt
1 teaspoon thyme
1 teaspoon Scotch bonnet sauce
1/2 tablespoon lime juice
2 1/2 cups white vinegar
2 cups water

1 tablespoon vegetable oil
1 1/2 cups rice

SPECIALTY ITEM

PREPARATION

Cut pork into 1/2″ cubes. Mince garlic and onion. Put pork cubes, garlic, onion, cloves, salt, thyme, Scotch bonnet sauce, lime juice, vinegar, and water into large jar. Put lid on jar and marinate for 2-to-7 DAYS. This is no spur-of-the-moment recipe you can whip up to impress a future fiancee.

2-to-4 days later, add oil everything in jar to large skillet, pan, or Dutch oven and sauté on medium-high heat for about 7 minutes or until pork begins to brown. While pork mixture simmers, cook rice according to instructions on package.

TIDBITS

1) Garlic is a major ingredient in this recipe.

2) In 1986, French and Soviet spacemen quarreled over garlic. The French would not go into space without garlic. The Soviets complained about garlic’s bad smell and refused to allow it onto the space station. Did the world come close to war? I don’t know.

3) Garlic has been thought by many over the centuries to ward off vampires.

4) Perhaps the French though the Soviets were sending their vampires into space.

5) For decades, the Soviets sent their political undesirables into the gulags of Siberia.

6) Vampires are about as undesirable as people get and since space stations are farther from Moscow than Siberia, I understand the Soviets wanting to send their vampires into outer space.

7) And I totally understand the French government not wanting its astronauts to come back as vampires to infect the entire country because they were bitten by cosmonaut vampires.

8) I always have garlic in my home to ward off Russian vampire spacemen. Better safe than sorry, I always say.

Chicken Mango With White Wine Recipe

Bahamian Entree

CHICKEN MANGO WITH WHITE WINE

INGREDIENTSChicMan-

3 chicken breasts
4 garlic cloves
2 mangoes
2 1/2 cups white wine
4 tablespoons butter
1/4 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon black pepper
1 cup orange juice
1 tablespoon lime juice
2 tablespoons soy sauce

PREPARATION

Cut chicken breasts into fourths. Mince garlic cloves. Peel mangoes and cut off the fleshy part into strips. Pour wine into large pot. Put chicken into pot. Cook on high heat for 7 minutes. Pour 1 cup of liquid from the pot into a cup and save. Remove the rest. (This is probably not the best recipe for your Dom Perignon.)

Add butter and garlic to pan with chicken. Fry for about 7 minutes or until chicken starts to turn golden brown. Add saved wine, mango strips, cinnamon, ginger, black pepper, orange juice, and soy sauce. Simmer at low heat with lid on for 10 minutes. Serve to appreciative guests.

TIDBITS

1) Mangos are the most popular fruit in the World

2) Really?

3) The paisley pattern used on ties is based on the mango.

4) Why not ties based on tacos or brownies?

5) Or even tie pattern with a strong marinara theme. That way if you’re having a job interview at a fancy Italian restaurant and you spill marinara sauce on your tie they’ll never notice.

6) Buddha meditated under the cool shade of a mango tree. Sipping a Roy Rogers works for me.

7) I like to think Buddha would have enjoyed a nice, cooling Roy Rogers drink.

Cuban Arroz Con Pollo Recipe

Cuban Entree

ARROZ CON POLLO

INGREDIENTSArrozCP-

2 cups rice
3 chicken breasts or 2 pounds chicken parts
1/4 teaspoon black pepper
1/4 teaspoon cumin
1/4 teaspoon oregano
1/4 teaspoon paprika
2 tablespoons olive oil
3 garlic cloves
1 medium onion
1 bay leaf
1/2 green bell pepper
1/2 red bell pepper
1/medium tomato
1 1/2 tablespoons lemon juice
2/3 cup white wine
2 cup chicken broth
1/2 teaspoon cilantro.

PREPARATION

Cook rice according to instructions on package.

While rice is cooking, cut chicken breasts into 1″ cubes. (If you are using parts such as chicken legs, leave them as they are.) Mince garlic and onion, Dice green and red bell peppers. Coat chicken with black pepper, cumin, oregano, and paprika. Puree tomato.

Add olive oil, garlic, and onion to frying pan. Sauté on medium-high heat for 5 minutes or until onion turns soft. Add spice-coated chicken, bay leaf, green and red bell pepper, tomato, lemon juice, wine, and chicken broth. Bring to boil at high heat then reduce to low and simmer for 20-to-30 minutes or until chicken is cooked through. (You might have to cut off a bit and taste. Maybe taste a second piece, a third…)

Serve with rice in a bowl. Garnish with cilantro.

TIDBITS

1) Sugar was first made into cubes in Cuba. That’s why we call sugar “cubes.” Before cubes, sugar had always been scooped.

2) People would always ask, “One or two spoons?” when serving sugar with coffee.

3) Indeed, specialized spoons were made for sugar. The first major producer of sugar spoons was Krupp of Essen, Germany.

4) Krupp made a fortune off their sugar spoons. So much so they were able to enter the burgeoning armaments industry.

5) Germany bought so much artillery from Krupp in the 1900s that it started an arms race in Europe. The heavily armed nations of Europe inevitably went to war in 1914.

6) A scarred Germany resentful of the peace terms imposed by the victorious powers in 1918 seethed for revenge.

7) And so, World War II erupted in 1939. The years from 1939 to 1945 were a bummer.

8) The war alliance between The United States and the Soviet Union proved ephemeral. (Cool word, huh?) They soon constructed vast arsenals to intimidate each other.

9) Tensions between America and Russia lessened considerably in the 1990s when the countries’ presidents took the first step toward peace, The Lutefisk Ban treaty.

10) Or so I’ve heard.

Ful Medames – Egyptian Fava Bean Recipe

Egyptian Entree

FUL MEDAMES
(fava beans)

INGREDIENTSfulmeda-

6 eggs
2 garlic cloves
1 medium onion
1 tomato
2 tablespoons sesame oil
2 16 ounce cans fava beans
1/2 cup lemon juice
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon paprika
2 tablespoons parsley
1/4 teaspoon sea salt (or regular salt)
1/4 teaspoon white pepper (or black pepper)

PREPARATION

Boil water. (Hard to do on Mount Everest.) Put eggs in boiling water and cook for 6 minutes for soft-boiled eggs and 12 minutes for hard-boiled ones. Remove eggs.

While water boils and eggs cook, mince garlic and onion. Dice tomato. Add garlic, onion, and sesame oil to pot. Sauté on medium-high heat for about 5 minutes or until onion softens or starts to brown. Stir frequently.

Drain cans of fava beans. Add fava beans, lemon juice, cumin, coriander, parsley, salt, and pepper. Cook on low-to-medium heat for 10-to-15 minutes. Stir occasionally.

While fava bean/spice mix simmers, remove eggs from shells. Slice each egg into four slices. Pour fava bean/spice mix into bowls and top with egg slices.

Makes 4-to-6 bowls.

Do not do what the song suggests and walk like an Egyptian when serving hot ful medames to guests and family.

TIDBITS

1) On May 29, 1953, Sir Edmund Hillary and Tenzing Norgay were the first people to successfully climb Mount Everest.

2) I read Norgay’s book about the climb in 5th grade. I remember them being happy and having a strong sense of accomplishment, but recall nothing about boiling eggs on the summit.

3) Indeed, I have been unable to find anything that suggests anyone has made any attempt to hard-boil eggs at the summit of Mount Everest. Apparently, everyone is too busy getting up there to even care about making culinary history with even this most modest of dishes.

4) This failure is despite the fact that oodles of people make the climb every day.

5) So many people go up Mount Everest there is a rescue helicopter designed specially to remove injured or debilitated climbers to hospitals. The chopper is kept busy.

6) If they can design a helicopter for this worthy mountain, why the heck can’t someone take the time to boil an egg at the peak?

7) We can calculate, though, how much time it should take to boil an egg there given what we know about air pressure at that altitude. A soft-boiled egg should take 20 minutes. A hard-boiled one should take 35 minutes.

8) Water should boil at the top at 66 degrees Celsius instead of the 100 degrees it needs at sea level.

9) So when someone says he’s boiling mad atop Mount Everest, it doesn’t mean much.

Powegian Garlic Bread Soup Recipe

American Soup

POWEGIAN GARLIC BREAD SOUP

INGREDIENTSGarBrSo-

2 10″ garlic bread halves
3 garlic cloves
3 stalks green onion
1/4 cup olive oil
1 medium yellow onion
6 Roma tomatoes
1 green bell pepper
3 cups vegetable or chicken broth
1/2 cup sour cream
1 tablespoon Italian seasoning
1/2 teaspoon black pepper
3 eggs

SPECIALTY UTENSIL

Dutch oven

PREPARATION

Dice tomatoes and green bell pepper. Cut garlic bread into 1/2″ slices. Mince garlic, green onion, and yellow onion. Sauté bread, garlic, green onion, and yellow onion with olive oil in Dutch oven on medium-high heat for about 5 minutes or until onions begin to soften. Stir frequently.

Add broth, tomato, green, bell pepper, sour cream, Italian seasoning, and pepper. Cook on high heat until soup begins to boil. Stir frequently. Add eggs. Stir frequently until eggs are cooked to your desired level of doneness. Not a good time to contemplate the infinite.

Serve to happy hungry hordes.

TIDBITS

1) This recipe uses three eggs. In the stateroom scene from the movie Monkey Business the zany Harpo Marx constantly asks for two eggs.

2) Harpo Marx is not related to Karl Marx.

3) Karl Marx was not at all zany, preaching constantly for a worker-run state via violent revolution.

4) The comedic career of Karl Marx never got anywhere. Indeed, it is doubtful he even tried.

Tandoori Turkey Burger Recipe

Indian Entree

TANDOORI TURKEY BURGER

INGREDIENTSTanTuHB-

1/4 onion
1 garlic clove
1 1/2 pounds ground turkey meat
1 1/4 tablespoons lemon juice
1/2 teaspoon salt
3/4 cup plain yogurt
3/4 tablespoon garam masala (available in ethnic stores)
1/2 teaspoon cayenne
1/4 teaspoon coriander
1/2 teaspoon paprika

no-stick spray

lettuce
6 sesame-seed hamburger buns

SPECIAL APPLIANCE

outdoor grill

PREPARATION

Mince onion and garlic. Add all ingredients to large bowl. Mix with hands. Cover and refrigerate overnight.

Preheat outdoor grill on medium-high. Spray grill with no-stick spray. Make patties with hand. Place patties on grill and cook until patty is white inside or its juice is clear. Turn patties over at least once, but only they are firm enough to be flipped.

Toast buns. Assemble your burger. Enjoy.

TIDBITS

1) Each burger in this recipe uses lemon juice and a turkey patty.

2) Chet Lemon was a center fielder for the Chicago White Sox and Detroit Tigers from 1975 to 1990. He played for the World Champion Detroit Tigers in 1984. Mr. Lemon hit 215 home runs over his career and batted .273

3) Bob Lemon pitched for the Cleveland Indians from 1946 to 1958. He played for the World Champion Cleveland Indians in 1948. His lifetime record was 207-128.

4) However Patty Duke never played professional baseball. Her forte was acting. She’s best known for her starring roles as Patty and Cathy Lane in the early 60s’ television program, The Patty Duke Show. Part of the theme says, “… a hot dog makes her lose control.”

5) If you lose control of your grill, you’ll have a gigantic fire.

6) In which case, you and your guests can toast marshmallows.

7) A good host always keeps the welfare of the guests in mind and adapts nimbly to any mishap.

Shakshuka, Israeli Breakfast Soup

IINGREDIENTSshakshu-

1 sweet red pepper
2 hot green chiles
1 white onion
2 garlic cloves
2 tablespoons extra virgin olive oil
24 ounces tomato sauce
1 tablespoon oregano
1/2 teaspoon salt
4 eggs

PREPARATION

Mince red pepper, green chiles, onion, and garlic. Put in skillet along with olive oil. Sauté on medium high heat for about 5 minutes or until onion is tender.

Add tomato sauce, oregano, and salt. Heat on high until sauce begins to boil, stirring frequently. Turn heat down to low. Add eggs. Cook until eggs are done to your satisfaction. Stir occasionally. This soup is often eaten directly from skillet.

Simple and quick with an impressive sounding name.

TIDBITS

1) People made soup as early as 6,000 BC.

2) Even then kids said, “Is it ready, yet?”

3) In 1772 BC Hammurabi of Babylon set down his famous set of 282 laws. Most of them dealt with business contracts and the family. None of them dealt with soup.

4) Current Nebraska law states a bar owner must be making soup at the same time beer is being sold.

5) So we’ve addressed the glaring soup admission in Hammurabi’s Code.

6) It took humanity over 3,700 years to do this.

7) In the meantime we’ve: discovered America via the land bridge from Asia, invented the printing press, and witnessed the creation and demise of the Twinkie.

French Roasted Potatoes Recipe

French Roasted Potatoes

INGREDIENTSFreRoPo-

2 small red potatoes
8 small brown potatoes
4 garlic cloves
1/4 cup extra virgin olive oil
1 tablespoon herbes de Provence
2 teaspoons Sunny Paris seasoning

PREPARATION

Preheat oven to 375 degrees. Cut potatoes into halves. Mince garlic cloves. Place potatoes into roasting pan. Pour olive oil over potatoes. Turn potatoes until thoroughly coated. Sprinkle garlic, herbes de Provence, and Sunny Paris seasoning over potatoes. Turn potatoes until coated with oil and spices.

Put roasting pan in oven. Bake for 1 hour or until they are fork tender. Stir potatoes three times while roasting so they don’t burn on one side.

Now you have those tasty potatoes you always admired in fancy restaurants. C’est bien.

TIDBITS

1) Sunny Paris seasoning consists of purple shallots, French basil, French tarragon, chervil, bay leaf, and dill weed.

2) The air we breathe is primarily nitrogen and oxygen.

3) The main ingredient in people is water.

4) This tidbit didn’t make sense. It’s gone.

5) We humans  share quite a few of the same chromosomes as a banana.

6) Which prompted Freud to speculate about that fruit.

7)) You can buy a banana slicer, called the Hutzler 571 Banana Slicer, on www.amazon.com. Read the reviews. They’re hilarious.
