Chettinad Fish Fry

Indian Entree

CHETTINAD FISH FRY

INGREDIENTS

2 garlic cloves
1 shallot
½ tablespoon chili powder
¾ teaspoon coriander
½ teaspoon fennel powder
½ tablespoon garam masala
¾ teaspoon minced ginger
½ teaspoon turmeric
¼ teaspoon pepper
1 teaspoon vegetable oil (5 tablespoons more later)
1¼ pounds fish: cod, seer fish, or king mackerel
5 tablespoons vegetable oil
4 lemon wedges

Serves 4. Takes 1 hour 20 minutes.

PREPARATION

Mince garlic cloves and shallot. Add all ingredients except fish and 5 tablespoons vegetable oil to mixing bowl. Mix with fork or whish until you get a well blended paste. Cut fish into 8 pieces Pat cod dry. Pat paste onto fish pieces. Cover and refrigerate for 1 hour.

Add 5 tablespoons vegetable oil to large pan. Fry at medium-high heat until a little bit of paste starts to dance in the oil. Gently add fish pieces to hot oil. Fry for 3 minutes. Carefully flip fish pieces. Fry again for 3 minutes. Keep flipping and frying until fish turn brown on both sides, become crispy, and flaky. Garnish with lemon wedges. Goes well with rice.

TIDBITS

1) The two Chettinad Fish Fry fillets in the above picture look like wings. Birds have wings. They can fly. Fish that have highly modified pectoral fins can jump out of the water and glide for up to 650 feet.

2) Flying fish propel themselves out of the sea at 35 miles per hour. This speed far exceeds anything humans can manage. Of course, the limited range of the heavier-than-air fish rules out long distance races such as the mile. However, flying beat the pants out of human sprinters, whether it be the 100-yard dash or the even longer 100 meters.

3) This is why flying fish were banned from all international sprints. They never got the chance to compete in any Olympics. No, not even in 1896.

4) The Exocet missile is named after the Latin name for the flying-fish family. So, that is something.

Indian Spicy Shrimp

Indian Entree

SPICY SHRIMP

INGREDIENTS

1 green chile
3 tablespoons fresh cilantro
1 onion
2 tomatoes
1 teaspoon fennel seeds
2 tablespoons peanut, sesame, or vegetable oil
1 teaspoon chili powder
1 teaspoon cumin
½ teaspoon garam masala
1 teaspoon minced garlic
1 teaspoon minced ginger
½ teaspoon salt
½ teaspoon turmeric
1 pound shrimp, peeled deveined

Serves 4. Takes 40 minutes.

PREPARATION

Seed and mince green chile. Dice cilantro, onion and tomatoes. Add fennel seed and peanut oil and onion to pan. Sauté at medium-high heat for 5 minutes or until onion softens. Stir frequently. Add green chile, tomato, chili powder, cumin, garam masala, garlic, ginger, salt, and turmeric. Cover and reduce heat to low-medium. Simmer for 10 minutes. Stir occasionally.

Add shrimp. Keep covered and simmer at medium heat for 3 minutes or until shrimp turn pink. Garnish with cilantro. Goes well with naan, some other flatbread, or rice.

TIDBITS

1) Carl La Fong loved three things: algebra, geometry, and aquatic life. He hated people because so many of them despised geometry. Strike one. So many of them detested algebra. Strike Two. So many diners ate seafood. Strike three. People were out.

2) Then, La Fong won $823 million from the lottery. He decided to teach the oceans’ denizens algebra and geometry. So he set up La Fong’s Underwater Institute. The first year’s class began with shrimp. But there were plans to expand to include cod next year and after that who knew?

3) The shrimp liked algebra and loved how geometry could tell them how high that rock shelf in the distance would be without having to measure it. But the shrimp detested the endless geometric proofs. They became surly and boycotted classes in droves. The school collapsed for lack of students. La Fong grew bitter and made and ate Spicy Shrimp. “That’ll teach them,” said he.

Butter Chicken

Indian Entree

BUTTER CHICKEN

INGREDIENTS – MARINADE

2 pounds boneless chicken breasts or thighs
1 cup plain yogurt
1 teaspoon lemon juice
2 garlic cloves (3 more later)
1 teaspoon chili powder (1 teaspoon more later)
1 teaspoon cumin (1 teaspoon more later)
2 teaspoons garam masala (1 teaspoon more later)
½ teaspoon turmeric

INGREDIENTS – SAUCE

3 garlic cloves
1 medium onion
1″ ginger root
2 tablespoons vegetable oil or peanut oil
1 tablespoon butter (5 more tablespoons later)
5 tablespoons butter
1 bay leaf
¼ teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon garam masala
½ teaspoon salt
1 15-ounce can crushed or diced tomatoes
1 cup cream
4 naan loaves or rice

SPECIAL UTENSIL

blender

Serves 4. Takes 2 hours 15 minutes.

PREPARATION – MARINADE

Cut chicken into 1″ cubes. Mince 2 garlic cloves. Add all marinade ingredients to large mixing bowl. Mix with fork until thoroughly blended and chicken cubes are thoroughly coated. Cover and refrigerate for 1 hour.

PREPARATION – SAUCE

Add marinated chicken and vegetable oil to pan. Sauté at medium-high for 10 minutes or until the chicken cubes brown on all sides. Remove chicken and set aside. Mince 3 garlic cloves and onion. Grate ginger root. Add 1 tablespoon butter, garlic, and onion to pan. Sauté for 5 minutes at medium-high heat or until garlic and onion soften. Stir frequently. Add ginger. Reduce heat to medium. Sauté for 1 minute or until fragrant. Stir frequently.

Add 5 tablespoons butter, bay leaf, cayenne pepper, chili powder, cumin, garam masala, and salt. Simmer at low heat for 1 minute or butter melts and absorbs into the spices. Stir frequently. Add crushed tomatoes. Simmer at low heat for 10 minutes. Stir occasionally. Empty contents of pan into blender and puree them.

Add puree back to pan. Add cream and chicken cubes. Simmer on low heat for 12 minutes or until chicken is no longer pink inside. Stir occasionally. Serve with naan bread.

TIDBITS

1) In 1948, Stalin, the brutal dictator of the Soviet Union decided to force the Western Allies out of Berlin by blockading all rail and road access to the city. He figured that the Allied armed forces and Berlin’s citizens would give up in weeks as they’d have to leave to eat. Then the Soviets could take Berlin without fighting.

2) But by agreement, the Western Allies had access to Berlin via three air corridors. The American and British, by herculean efforts, air lifted millions upon millions of tons of coal to the city. They did the same for foodstuffs, flying in untold tons of: flour, fat, meat, fish, dried potatoes, sugar, powdered milk, yeast dried veggies, salt, and cheese.

3) But no butter.

4) Without butter, it’s impossible to make buttered toast. It’s hopeless to make tasty cookies without butter. Without tasty cookies, the way to live ebbs away. Without cookies, people grow listless and indifferent. President Truman realized that without cookies, the Berliners wouldn’t lift a finger to resist any Russian invasion.

5) But there was no room on the air transports to bring in butter.

6) So Truman in conjunction with German chicken farmers organized the Butter Chicken Brigade, Butterhühnerbrigade in German. They really do have a word for everything.

7) The German chicken handlers loaded their chickens with panniers brimming with tubs of butter. The Soviet soldiers surrounding Berlin couldn’t stop the chickens from running the blockade. Have you ever did to catch a chicken? It isn’t easy.

8) Anyway, Berliners, their resolve stiffened by the now possible cookies, united against the Russians. The Russians knew they could face them down. Soon afterward, Stalin lifted the blockade. The Butter Chickens of Berlin had preserved their city. Indeed, they’d saved the world.

9) Said to say, their only recognition came, strangely, enough from India which developed this dish in honor of the Berlin’s plucky chickens.

The Return of the Bad Advice Column

 

Dear Readers,

I feel a slight disruption in the force as if millions of people are crying out for bad advice. Why do we feel this need? Because we don’t follow good advice. We are contrary. We has filled this void of bad advice? No one, not for years. Your cries have called me back from retirement. I shall help you. I shall once more dispense bad advice. Oh, it will be stupendously bad, but your needs will be fulfilled. You will once again be happy. And what is wrong with that?

All you, dear reader, need to do is the comment on this blog with your questions. I shall reply with bad advice in the next column, probably once a month.

TLR asks: Should I put a nasty note on this truck?

Dear TLR: No, as tempting as that might be, you can’t out puswad a puswad. Unless, of course, you have access to a particle accelerator. First, rent a large tow truck. Put the puswad’s truck on the tow truck. You might need to buy and speed read, The Complete Freaking Moron’s Guide to Operating a Tow Truck. You should also buy, The Complete Freaking Moron’s Guide to Speed Reading. Okay, the offending truck is ready to be towed.

Drive your tow truck to a site with a large particle accelerator. Ask to be let in. Note: your chances of success go up if you say please and thank you. If they say no, you can probably bash down the gate with your heavy tow truck. One inside, get the mean person’s truck into the particle accelerator. You will have to work quickly if you bashed down the gate. Press the button marked, “Accelerate,” and whoosh, the meanie’s truck will soon reach a velocity close to the speed of light. Any collision between the truck and particle accelerator’s walls will disintegrate the truck. Sweep up the atomized bits of truck–cleanliness is always in style–and go back to the parking lot. Place the back of atomized truck pits where the truck originally took up four spots. Add a sign that reads, “Next time it will be you that gets atomized if you park like a jerk.” Now that will get the jerk’s attention.

KD asks: Will it ever be acceptable to openly roll one’s eyes when one sees someone do something ridiculous like hold up entering the bus to finish a text? O_O

Dear KD: Oh yes, it already is. However, just rolling your eyes is no longer enough. The texting doofus needs to be taught a lesson. Simply throw a loosely wrapped package of lutefisk, five pounds should be heavy enough, at the texter. The force and stench of the hurled lutefisk will knock him backwards and onto the sidewalk. He’ll a nasty bump on his head that he’ll never forget. Don’t worry about the people on the bus. They’ll be happy that the bus will no longer be delayed. They’ll also never have to smell that lutefisk again. It’s a win-win outcome for everyone.

CA asks: What is the sound of one hand clapping?

Dear CA: The metal thingy hanging from the metal of a giant six-foot high church bell is called a clapper. This is your clue. Simply climb up the side of a church–the Spanish missions in California are good places to try–and get inside. You’ll need to wear clothes that match the color of the church’s walls or you’ll be spotted and stopped. Once inside the bell, smash your hand into the side of the bell. The sound you’ll hear before becoming permanently deaf will be the sound of one hand clapping.

CC asks: What’s a good date plan for a couple that have been married for over 30 years?

Dear CC: After 30 years, you’ve probably done every possible type of date there is. Except, sky diving over an active volcano. Hire a pilot to fly you over the center of the lava spurting volcano. You might have to ask around a lot before you find one willing to do this. Be persistent.

Simply strap on your parachutes and jump out the plane. Be sure to wait for the pilot’s signal. Safety, as always, is important. When the time is right, pull the cord and your parachute will deploy. Did you take parachuting lessons? I hope so. Twist so that at the last moment you will veer away from the death-vomiting volcano.

Is this dangerous? Yes, it is. But if all goes well, you and your sweetheart will have drawn closer together, your love forged even stronger by fire. And sitting close to each other on a couch looking longingly into each other’s eye will be just what you’ll want to do for the rest of your lives.

MA asks: If you write a book about failure and it doesn’t sell, would it be a success?

Dear MA: I’m not equipped to answer such a deep philosophical question. But the Tibetan monks would be. Now, the Chinese government is really a super huge dictatorship. Millions of members are in the ruling Communist party. I wouldn’t be surprised at all, really, if Guinness Book of Records(tm) lists the Chinese government as the biggest dictatorship ever.

Anyway, being a dictatorship and all, the Chinese government tries real hard to suppress all discontent against them. They are indeed very thorough about this. And it’s an atheistic ruling body as well. So, it’s real hard to believe they’d let you see a monk. So you’ll have sneak your way to one.

Two possibilities exist. First, fly to Shanghai. Slip by customs without being noticed. May I suggest pointing at the sky and yelling, “Look, Halley’s comet!” Continue to be invisible as you ride trains and busses to a monastery. Ask a monk. Get an answer. Revel in the enlightenment before sneaking your way back home. Second. fly to Bombay, now Mumbai. Take the train to the Tibetan border. Hire a Sherpa guide. Bring oxygen canisters to help you breathe as you cross the Himalayas. Oh and a warm fur parka will help you with the intense cold. Don’t forget to watch for bullets. The Chinese and Indian armies are currently skirmishing with each other. As above, get your answer and come back home.

Saag Aloo

Indian Entree

SAAG ALOO

INGREDIENTS

½ tablespoon black or brown mustard seeds or combination
3 tablespoons ghee or vegetable oil
2 green chiles
1 inch ginger root
1 medium onion
2 garlic cloves
1 tomato
1½ pounds potatoes
10 ounces spinach
½ teaspoon coriander
½ tablespoon garam masala
¼ teaspoon pepper
½ teaspoon salt
½ cup water

Serves 4. Takes 1 hour.

PREPARATION

Seed and mince green chiles. Mince ginger and onion. Dice garlic cloves and tomato. Peel and cut potatoes into ½” cubes. Add ghee, potato, chile, ginger, onion, and garlic cloves to large pan. Sauté at medium-high heat for 5 minutes or until onion and garlic soften. Stir frequently. Add mustard seeds to second pan. Reduce heat to medium and toast for 2 minutes or until they splutter and pop. Stir frequently.

Add toasted mustard seeds, coriander, garam masala, pepper, salt, and water to pan with potato cubes. Cook at medium heat for 5 minutes. Add tomato. Reduce heat to low-medium and cook for 5 minutes or until liquid evaporates. Add spinach evenly over potato cubes. Cover, reduce heat to low and simmer for 10 minutes or until potato cubes are tender. Stir gently and just enough to prevent burning.

1) Look at these two still-life representations The one on the left was painted by Vincent van Gogh. Ponder on his distressing lack of accuracy. Chicken Vindaloo

Indian Entree

CHICKEN VINDALOO

INGREDIENTS – MARINADEchickenvindaloo

3 garlic cloves
1½” ginger root
3 medium tomatoes
¾ teaspoon cayenne pepper
1 teaspoon cinnamon
½ teaspoon ground cloves
½ teaspoon coriander
1 teaspoon cumin
4 teaspoons garam masala
1 teaspoon paprika
½ teaspoon pepper
1 teaspoon salt
½ tablespoon turmeric
1 tablespoon water
2 tablespoons white vinegar (2 more tablespoons later)

INGREDIENTS – OTHER

2 pounds boneless chicken thighs
2 medium potatoes
3 medium onions
2 tablespoons ghee or vegetable oil
2 cups chicken broth
2 tablespoons white vinegar

SPECIAL UTENSIL

blender

Serves 6. Takes 3 hours.

PREPARATION

Add all marinade ingredients to blender. Blend on medium setting until smooth. This is the marinade. Cut chicken thighs into 1″ squares. Add marinade and chicken squares to large mixing bowl. Mix until chicken is well coated. Cover and marinate in refrigerator for 2 hours.

While chicken marinates, peel potatoes. Cut potatoes into ½” cubes. Mince onions. Add ghee and onion to large pot. Sauté at medium-high heat for 5 minutes or until onion softens. Stir frequently. Add marinated chicken. Cook for 5 minutes on medium-high heat. Stir occasionally. Add potatoes, chicken broth, and 2 tablespoons white vinegar. Bring to boil using high heat. Reduce heat to low. Cover and simmer for 50 minutes or until potato is tender. Goes well with rice.

TIDBITS

1) After 75 years and invoking Crown Really Official Secrets (CROS), I can finally tell the heroic story of Mrs. Linda Voo.

2) It was 1941. The Battle of Britain was over. The Nazi air fleet had failed in its attempt to bomb the British people into submission. It was time to take the war to the German aggressors. But how? The British army was minuscule compared to Germany’s and had no way to land on the continent. Aha, by air! The British Air Royal Force, BARF, would attack the Hun’s war factories by air.

3) Though there was that delay when Winston Churchill secured the regisnation of the dyslexic Sir Orbert Abcon from the War Nimistry. It took over a month to correct the names he misspelled. Later that year, the newly renamed RAF commenced a massive bombing campaign of Berlin and the industrial centers of the Ruhr Valley.

4) What the bombers actually destroyed were a modern-art school–amazingly still thriving in Hitler’s Germany, but then again the Fuhrer was a frustrated art student and who knew he cottoned to modern art?–and two-dozen pig farms–the German war machine loved pork.

5) Take a deep breath to recover from the run-on sentence of the previous tidbit.

6) The continued futility of the RAF’s bombing campaign went on for months. Then in November, 1941, Lieutenant Nigel Voo failed to come back from a raid. The squadron was supposed to blow up a ball-bearing plant in Hamburg. Instead the heroic Voo and his crew were shot down after dropping bombs on nearby Anfurt’s annual ParcheesiTM tournament.

7) This tragedy enraged his wife, Linda, a tea lady at Biggins Hill airbase. She threw her teapot to the ground and shouted at the airmen, “You bloody idiots. You couldn’t find your way to a cod-and-chips store if you were standing in front of it. The Three Blind Mice have nothing on you lot.”

“Well now, see here, Mrs. Voo, those are unkind words, they are. We get lost, we do. It’s tough reading a map and trying to see landmarks especially at night,” said the squadron leader.

“Too right, you get lost, you ninnies. Why don’t you ask for directions?”

“Well, mum, we’re men. We don’t like to ask for directions. I mean they’re the enemy and were are flying thousands of feet above the ground. We couldn’t ask even if we wanted.”

“‘Tis bloody possible. I’ll show the likes of you.”

8) And she did. She flew in the lead plane. Whenever the squadron got lost, Mrs. Voo bungee jumped out the plane and asked a local farmer for directions. Sure, there was a war of annihilation going on, but German farmers always act courteous to any lady who drops in. The RAF’s bombers never missed a target what with Mrs. Voo and a thousand others like her flying with them . Germany was doomed.

9) Mrs. Voo’s code name was the anagram, Vindaloo. The British government even created an entree in India with that name just to provide cover.

Bean and Bacon Soup

American Soup

BEAN AND BACON SOUP

INGREDIENTSBean&BaconSoup-

1 pound dry navy beans (4 cups)
4 cups water
1 pound bacon
1 medium carrot
1 celery stalk
1 yellow onion
1 garlic clove
1 pound tomatoes
1 bay leaf
½ teaspoon paprika
1/4 teaspoon salt
½ teaspoon thyme
3 cups chicken broth
1/4 teaspoon Worcestershire sauce

Makes 6 bowls.

SPECIAL UTENSIL

Dutch oven

PREPARATION

Put navy beans and water in large pot. Bring to boil on high heat. Turn off heat, cover, and let beans stand in hot water for 1 hour.

Get busy while beans are standing. Cook, fry bacon on medium-high heat in Dutch oven until crispy. (Contemplate image of beans standing at attention.) Remove bacon and put on paper towels. Remove all but ¼ cup grease from Dutch oven. When cool, crumble bacon or cut it into ½” squares.

Dice carrot,  celery, onion, and garlic clove. Puree tomatoes. Sauté carrot, onion and garlic at medium-high heat for 5 minutes or until onion softens. Add bay leaf, celery, tomato puree, paprika, salt, thyme, chicken broth, and Worcestershire sauce to Dutch oven. Drain beans. Add beans to Dutch oven. Bring to boil on high heat. Stir frequently. Reduce heat to low, cover, and simmer for 2 hours or until beans are tender. Ladle soup into bowls and sprinkle with bacon.

TIDBITS

1) According to culinary lore, Lord Sandys once asked two chemists from Worcestershire to recreate an Indian sauce. Why Lord Sandys didn’t ask two cooks instead is a mystery. Anyway, the two great men’s effort resulted in a particularly malodorous liquid; it might have stunk worse than lutefisk. The chemists moved the stinky sauce to the basement. Why didn’t they just throw it out? Years later, they tasted it again. These men truly did not fear death. But it tasted great.

2) Okay.

3) Worcestershire sauce is made from fermented fish. Fish contains glutamates. Glutamates improve your mood.

4) Beer is made from fermented grain. Fermented grain improves your mood.

5) There are lot more establishments selling beer than ones offering fermented fish.

6) Or even lutefisk.

7) Oh my gosh, further research suggests that tidbit 1) is actually true and that L&P still make their sauce that way. I guess fermenting fish is pretty much like aging wine. Who knew?

8) In 1919, Worcestershire sauce was advertised as a way to grow beautiful hair.

9) I would think rubbing Worcestershire sauce on your head would make you smell like steak. Dogs would love you.

10) A famous photo from 1938, shows dictator Benito Mussolini and Prime Minister Neville Chamberlain alongside one of Lea & Perrin’s bottles.

11) It’s quite unlikely Mussolini rubbed the steak sauce on his head. The despot was entirely bald.

12) For Worcestershire sauce rubbed onto a man with a full head of hair isn’t visible. Oh sure, you can smell it, but you’re never quite sure if you’ve pinpointed the location to the right person.

13) On the other hand, Worcestershire sauce, or any other brown sauce for that matter, would have been quite evident on Mussolini’s bald dome.

14) One can imagine the rulers of Ethiopia and Albania pointing at the Italian dictator’s sauce-smeared head and laughing.

15) Mussolini would have wanted revenge for these insults. As a dictator, he could get it too. So, Benito had his armies conquer these countries.

16) Hitler saw how easy these conquests were and in 1939 invaded Poland. Great Britain and France declared war in response. And so, World War II began.

17) This is a cautionary tale. Always use good manners. Never make fun of people. The welfare of the world is at stake.

INGREDIENTSZapiekanka-

1 baguette
1/3 onion
1 red bell pepper
1 tablespoon butter
1/2 teaspoon turmeric
1/4 teaspoon black pepper
1/2 pound sliced ham or deli-meat of choice
1 cup grated cheese of choice
1/4 cup ketchup
1/4 cup mayonnaise
no-stick spray

PREPARATION

Preheat oven to 325 degrees. Cut baguette in half and slice each half open. Cut onion and red bell pepper into thin slices. Add onion, bell pepper, turmeric, pepper, and butter to frying pan. Sauté on medium-high heat for 5 minutes or until onion is soft.

Add onion/bell pepper mixture, ham to baguette pieces. Top pieces with grated cheese. Spray baking tray with no-stick spray. Put tray in oven. Bake at 325 degrees for 5 minutes or until bread is crispy and cheese is melted. Remove tray from oven. Squirt, or spread, ketchup and mayonnaise over each piece.

TIDBITS

1) In 1857, native Indian soldiers, sepoys, in the British army believed the new gunpowder cartridges were greased with cow fat and pig fat. This grease insulted the religious beliefs of the Hindu and Muslim soldiers who had to bite the cartridges before using them. This mistake in greasing by the British sparked a major native rebellion.

2) The rebellion resulted in the deaths of thousands of people, embittered the Indians toward the British, and greatly widened the rift between Hindus and Muslims. This gulf persisted resulting in the bloody religious riots of 1947 and three wars between India and Pakistan. Today, these two countries have nuclear weapons pointed at each other.

3) If only Britain had greased its cartridges with olive oil. Today, we also have vegetable oil. A fragile peace prevails over the world.

Chicken Tikka

Indian entree

CHICKEN TIKKA

INGREDIENTSChickenTikka-

4 chicken breasts
2 cups whole-milk yogurt
2 tablespoons lime juice
¼ cup chicken tikka masala
2 limes
1 teaspoon cilantro

SPECIAL ITEMS

grill

Serves 4. Takes 10 minutes preparation, overnight to marinate, and 30 minutes to cook.

PREPARATION

Slice chicken into 2″ squares. Put yogurt, lime juice, and chicken tikka masala in mixing bowl. Mix with fork. Add chicken squares to bowl. Thoroughly coat chicken squares with yogurt. Cover bowl and marinate in refrigerator overnight.

Preheat grill to 400 degrees. Cut limes into wedges.

Put coated chicken squares on skewers. Grill for 20 minutes or until chicken is tender and browned on all sides. Turn frequently. Remove chicken squares from skewers and place on plate. Sprinkle chicken squares with cilantro and garnish with lime wedges.

TIDBITS

1) Most jokes that are both popular and long lasting employ simple and universal themes. Such is the case with the ever popular “Why did the chicken cross the road? To get to the other side,” which involves the humble chicken and the surprise ending.

2) Well, it was a surprise ending when printed in The Knickerbocker in 1847.

3) The Chicken Crossing the Road joke became a staple of vaudeville shows during the late nineteenth century.

4) Potter’s American Monthly printed the first known, at least to me, variation of this joke. Here it is. “Why should not a chicken cross the road?” “It would be a fowl proceeding.” Yes, it took apparently a half century before someone altered the joke. But the comedic floodgates had been opened. Variations of this amusing jest appeared with greater and greater rapidity. Here are some of them:

He had a chicken stapled to his forehead.

6) Why did the chicken cross the Mobius strip?
To get to the same side.

7) Why did the dinosaur cross the road?
Because chickens weren’t around yet.

9) Why did the chicken simultaneously cross and not cross the road?
It was Schrodinger’s chicken.

10) Why did the Roman chicken cross the road?
It was afraid someone would Caesar!

11) Why did the chicken cross the road, roll in the mud and cross the road again?
Because it was a dirty double-crosser.

12) Why did George’s W. Bush think about the chicken crossing the road?
We don’t care why the chicken crossed the road. We just need to know if the chicken is on our side of the road, or not. The chicken is either against us, or for us.

13) Why Barack Obama’s chicken cross the road?
It wanted CHANGE!

14) Why did Captain Kirk’s chicken cross the road?
To boldly go where no chicken has gone before.

15) Why did the chicken cross the road?
To get away from Colonel Sanders.

16) Why did the chicken only cross the road halfway?
To lay it on the line.

17) Why did Ancient Egyptians mummify chickens when they died?
To help them get to the other side.

18) Why did the turtle cross the road?
To get to the shell station.

19) Why did the chicken cross the road?
It was a part of a chicken conga line.

Ground Beef Curry From South Africa

South African Entree

GROUND BEEF CURRY

INGREDIENTSBeefCurry-

2 potatoes
1 yellow onion
1 red onion
2 cups fresh spinach
4 small tomatoes
4 cloves garlic
2 chile peppers
3 tablespoons vegetable oil
1 1/2 tablespoons fresh ginger
2 tablespoons curry powder
1/2 tablespoon turmeric
1 tablespoon garam masala
1 1/2 pounds ground beef

PREPARATION

Peel potatoes. Cut potatoes into cubes smaller than 1/2″. Peel and dice yellow onion. Peel and dice red onion. Dice spinach and tomatoes. Mince garlic and chile peppers. Add onion and vegetable oil to large pot. Sauté onions on medium-high heat for 5 minutes or until onions soften. Stir frequently. Add spinach, tomatoes, garlic, peppers, ginger, curry powder, turmeric, garam masala, and ground beef.

Cook for 5-to-10 minutes on medium heat or until beef browns. Add potato cubes. Reduce heat to low and simmer for about 30 minutes or until potatoes are soft. Stir occasionally.

Goes well with rice or Indian bread such as roti. The Guyanese version of roti is in this cookbook.

TIDBITS

1) Recipes for meat in a spicy sauce date back 3,700 years to Babylonia. Recipes were kept on clay tablets. Carrying around a hundred recipes would have required a wheelbarrow.

2) Did ancient Babylonia possess wheelbarrows? If not, that would explain why the Babylonian empire fell to invaders. The population was too busy carrying clay recipe tablets in their arms to defend themselves.

3) Two-third of all food eaten at restaurants in Britain is Indian. Wow. There are more Indian restaurants in London than in Bombay and New Delhi.

4) People will begin to crave for curry because the spices arouse and stimulate the taste buds. Sorry, people that’s all curry arouses.

5) In America, many more women appreciate a box of chocolates from their date than a bowl of curry particularly if the bowl has no lid and she’s holding it on her lap and your take the corner really fast or you accelerate really fast and the curry gets all over her dress and she kicks you out of the car and you have to walk home even though it’s your car and you never see her or your car again.

6) No, guys, it’s a much better idea to give your date a bouquet of flowers and box of chocolates and take her out to an Indian restaurant, for goodness sake.
