Braised Chicken From Ivory Coast

Ivorian (Ivory Coast) Entree

 

BRAISED CHICKEN

 

INGREDIENTS

1 bouillon cube, Maggi* vegetable, other vegetable, or chicken
2 teaspoons ginger
½ teaspoon pepper
1 teaspoon salt
2 chile peppers
3 garlic cloves
1 tablespoon lemon juice
3 tablespoons vegetable oil
2¼ pounds boneless chicken breasts or thighs
3 tomatoes
1 medium onion

* = It’s almost impossible to overstate the prevalence of Maggi’s bouillon cubes in Africa.

SPECIAL UTENSILS

outdoor grill

Serves 4. Takes 1 hour 50 minutes.

PREPARATION

Crush bouillon cube. Add crushed bouillon cube, ginger, pepper, and salt to large mixing bowl. Mix with fork until well blended. Mince chile peppers and garlic cloves. Add minced chile pepper and garlic. Mix again with fork until well blended. Add lemon juice and vegetable oil. Mix again with fork until well blended. This is the marinade, Cut chicken into 3″ cubes. Add chicken to marinade. Toss chicken cubes until they are thoroughly coated with marinade. Let marinate in refrigerator for 1 hour. (Keep the marinade.)

While chicken marinates, use mandoline or knife to cut onion and tomatoes into ¼” slices. Cut slices in half. Preheat outdoor grill to 300 degrees. Add chicken cubes to grill. Turn chicken cubes every 3 minutes until no longer pink inside. Add equal amounts of chicken, onion and tomato to each plate. Drizzle with remaining marinade. Top with equal amounts of grilled chicken cubes.

TIDBITS

1) This recipe and many others tell you to cook something until its no longer pink inside. You can do this by cutting off a small bit and looking. Wouldn’t it be nicer to be able to use X-ray vision instead? Unfortunately, none of us possesses x-ray vision. But SupermanTM does. I’d bet Superman would be a great-steak house chef.

Common Sense Solutions To Ending Crime

Crime is bad. Let’s get rid of it. Is our present system of incarceration working? No. Who was responsible for this?  Who will fix it? I will. How? I’m glad you asked. Here is my thirteen-step program.

1) Convicted criminals will never get bacon or chocolate.  Our current system allows prisoners to enjoy socialized bacon and chocolate.  That’s no deterrence at all. Geez!

2) Criminals will eat lutefisk at every meal. For beverages, they will have a choice of lutefisk tea and castor oil

3) Convicted criminals will download software for all the law-abiding citizens in their community. They will work with customer service until the myriad of issues are resolved.

4) Convicted criminals will be forced to shop WalMart(tm) on holiday weekends. Municipal, county, state, and federal governments will save billions and billions of dollars on prison construction costs, prison maintenance, and prison staff.

5) Criminals who leave WalMart will be sent to maximum-security cells for life. It bears repeating, these ne’er do wells will still be without chocolate and bacon for life . They will still do software downloads for life.

6) These ne’er do wells will also be forced, in their short free periods, to read and re-read James Joyce’s Ulysses until their minds explode trying to understand it. Moreover we will, if allowed, by human rights organizations, serve lutefisk everyday to our hardened criminals.

7) The prison TV will only show ESPN’s Canadian Curling Highlights.

8) Jailers will give the inmates paper cuts every day.

9) You will be put in Facebook(tm) jail whenever you use the word “the.”

10) These baddies will eat all those Christmas fruitcakes that people insist on giving, but nobody wants.

11) Convicts will seed and dice the hottest of hot chile peppers then immediately rub their foreheads. (Don’t try this at home.)

12) Prisoners must keep places in line for the elderly at the DMV. Twice a week too.

13) Criminals will be forced to listen to every high-school and college commencent speech within a 50-mile radius of their prison. This includes all speeches by students, faculty, and guest speakers. Yes, this is a severe punishment, but we must have a credible, strong deterrent against crime.

No person alive would even contemplate committing any crime when faced with the above thirteen consequences. Crime would disappear from our great country within the year. Money spent on law enforcement could be used to balance budget and distribute free bacon and chocolate to all Americans.

Now behave, don’t make me come back there.

Ground Beef Curry From South Africa

South African Entree

GROUND BEEF CURRY

INGREDIENTSBeefCurry-

2 potatoes
1 yellow onion
1 red onion
2 cups fresh spinach
4 small tomatoes
4 cloves garlic
2 chile peppers
3 tablespoons vegetable oil
1 1/2 tablespoons fresh ginger
2 tablespoons curry powder
1/2 tablespoon turmeric
1 tablespoon garam masala
1 1/2 pounds ground beef

PREPARATION

Peel potatoes. Cut potatoes into cubes smaller than 1/2″. Peel and dice yellow onion. Peel and dice red onion. Dice spinach and tomatoes. Mince garlic and chile peppers. Add onion and vegetable oil to large pot. Sauté onions on medium-high heat for 5 minutes or until onions soften. Stir frequently. Add spinach, tomatoes, garlic, peppers, ginger, curry powder, turmeric, garam masala, and ground beef.

Cook for 5-to-10 minutes on medium heat or until beef browns. Add potato cubes. Reduce heat to low and simmer for about 30 minutes or until potatoes are soft. Stir occasionally.

Goes well with rice or Indian bread such as roti. The Guyanese version of roti is in this cookbook.

TIDBITS

1) Recipes for meat in a spicy sauce date back 3,700 years to Babylonia. Recipes were kept on clay tablets. Carrying around a hundred recipes would have required a wheelbarrow.

2) Did ancient Babylonia possess wheelbarrows? If not, that would explain why the Babylonian empire fell to invaders. The population was too busy carrying clay recipe tablets in their arms to defend themselves.

3) Two-third of all food eaten at restaurants in Britain is Indian. Wow. There are more Indian restaurants in London than in Bombay and New Delhi.

4) People will begin to crave for curry because the spices arouse and stimulate the taste buds. Sorry, people that’s all curry arouses.

5) In America, many more women appreciate a box of chocolates from their date than a bowl of curry particularly if the bowl has no lid and she’s holding it on her lap and your take the corner really fast or you accelerate really fast and the curry gets all over her dress and she kicks you out of the car and you have to walk home even though it’s your car and you never see her or your car again.

6) No, guys, it’s a much better idea to give your date a bouquet of flowers and box of chocolates and take her out to an Indian restaurant, for goodness sake.

Tunisian Harissa Recipe

Tunisian Appetizer

HARISSA

Harissa-

INGREDIENTS

12 dried chile de arbol peppers or milder red chile peppers
4 garlic cloves
3/4 teaspoon caraway seeds
3/4 teaspoon coriander
3/4 teaspoon cumin
1/2 teaspoon salt
1/2 tablespoon lemon juice
2 tablespoons olive oil

PREPARATION

Remove stems and seeds from peppers. (Always, always wash hands after handling chile peppers.) Put peppers in bowl of hot water. (This softens and relaxes the peppers.) Remove peppers after 30 minutes. Mince peppers and garlic cloves. Combine all ingredients in bowl.

Store in refrigerator for up to one month. This is one tough condiment.

TIDBITS

1) Caraway seeds reduce flatulence.

2) Moving quickly on, the word Tunisia comes from Tunis, the country’s capital, not the fish, tuna.

3) It’s a fact, Germany was never called Hamburgeria after its import port city of Hamburg.

4) The burg Hamburg is not named after ham. Ham is an English word. Hamburg is still in Germany and is likely to remain that way.

5) Unless of course, the movement of the Earth’s plates increase to such a phenomenal pace that Hamburg ends up being next to Boston sometime by press time for this book.

6) I would like to point out that if the Earth’s plates do move that fast there will be immense worldwide devastation. Book signings will be difficult to schedule.

7) Surfers though would have a great time. Those fast moving continents would generate tons of primo waves. Cowabunga, dude.
