Meat Pie

Australian Entree

MEAT PIE

INGREDIENTS – FILLINGMeatPie-

2 pounds chuck or round steak
2 onions
2 tablespoons olive oil
½ teaspoon nutmeg
½ teaspoon pepper
1/4 teaspoon salt (1/4 teaspoon more later)
1/4 teaspoon thyme
4 teaspoons Worcestershire sauce
1 1/2 cups beef stock
1/4 cup water
3 tablespoons flour (2 cups more later)

INGREDIENTS – BOTTOM PASTRY

2 cups flour
1/4 teaspoon salt
4 tablespoons butter (softened)
10 tablespoons water

INGREDIENTS – PIE

1½ tablespoon milk
4 sheets puff pastry
1 egg
4 tablespoons ketchup

SPECIAL UTENSILS

Dutch oven
4 meat-pie pans (5″ diameter is best)

PREPARATION – FILLING

Cut chuck into ½” cubes. Mince onions. Add onion and olive oil to Dutch oven. Sauté onion on medium-high heat for 5 minutes or until onion softens. Add meat, nutmeg, pepper, salt, thyme, Worcestershire sauce, and beef stock. Simmer on low heat for about 1 hour. Stir occasionally.

Combine ¼ cup water and 3 tablespoons flour in mixing bowl. Stir with whisk until you get a smooth, runny mix. Gradually add the flour/water mix into the Dutch oven. Stir with spoon until the filling thickens. Remove from heat and let cool.

PREPARATION – BOTTOM PASTRY

While filling is simmering, add 2 cups flour,  1/4 teaspoon salt, and butter to a second mixing bowl. Blend ingredients with whisk. Add 10 tablespoons water. Remove dough and knead on surface dusted with flour.

Preheat oven to 400 degrees. Let dough sit for 20 minutes. Flatten dough with rolling pin. (A large can of soup will do. A stick of dynamite is way too risky.)

PREPARATION – PIE

Line pie pans with bottom pastry. Add filling to each pan. Moisten rims of pies with milk. (This helps to tops stick with the bottom pastry.) Place a sheet of puff pastry on top of each pie. Trim away the excess puff pastry. Press edges of puff pastry onto rims of bottom pastry with fork. Beat egg with whisk or fork. Glaze tops evenly with egg.

Put pies in over. Bake at 400 degrees for 15-to-20 minutes or until golden brown. Spread ketchup over each pie. Have a nice cooling refreshment and enjoy. Press gang the least appreciative guest into cleaning up.

TIDBITS

1) Kangaroo is Australian Aborginee for, “I don’t understand what you’re saying.”

2) Melbourne, Australia has the largest public tram system in the world.

3) Australia is three times bigger than Greenland. So it’s no surprise that Melbourne has a bigger tram system than Nuuk, Greenland.

5) Curly Howard of the Three Stooges said “Nyuk, nyuk, nyuk” in many of his movie shorts.

6) The Denver Broncos quarterback, Peyton Manning, often yelled out “Omaha” during plays all through the 2013 NFL season. Some people think he was promoting the city of Omaha, Nebraska.

7) Was Curly really trying to promote Nuuk, Greenland?

8) That would be truly scary for Nuuk was called Godthaab until 1979 and Curly died in 1952.

9) Perhaps Curly had a time machine and visited modern Nuuk.

10) We should all be grateful Curly did not use his time machine to achieve world domination.

11) If you had a time machine you could go back to the point when you had just cooked yourself a wonderful dinner and eat it. You would never have to cook again. You’d just keep going back to that moment and eat that delightful dish over and over again.

12) But then no one would ever need to buy food again. Millions of farmers would be out of business. They’d riot. Worldwide collapse would ensue. To this, Curly would say, “Nyahh-ahhh-ahhh!”

Bruna Boner (Swedish beans)

Swedish Entree

BRUNA BÖNER
(Swedish beans)

INGREDIENTSBrunerB-

1 pound bag pink beans
6 cups water
4 teaspoons, or half-stick, butter
8 ounces brown sugar
1/4 cup white vinegar
2 tablespoons corn starch

PREPARATION

Put beans in large pot. Add enough water to cover beans with a few inches to spare. Let soak overnight or at least 10 hours. The beans will be crunchy if not sufficiently soaked. (You do not want to wake up, twenty years later, in the middle of the night screaming, “Why? Why did I not soak the beans long enough?”)

Drain the water. (This gets rid of any dirt on the beans.) Add 6 cups water. Cook on medium heat for 40 minutes. Stir every few minutes. Add more water if the water no longer covers the beans. Covering the pot with a lid also keeps water from evaporating.

Add butter. Cook on low-to-medium heat for 40 minutes. Stir every few minutes to avoid burning. Add more water if the water no longer covers the beans.

Add sugar. (If the brown sugar comes out of the box as a brick, saw it in half.) Cook on low-to-medium heat for 40 minutes. Stir every few minutes to avoid burning. Add more water if the water no longer covers the beans. (Engrave this advice in your memory.)

Add 1/4 to 1/2 cup vinegar, teaspoon by teaspoon, according to taste. If needed, thicken beans by adding cornstarch.

TIDBITS

1) This recipe comes from my grandmother Anna Erickson who was born in Murrum, Sweden, in 1889. I miss her.

2) Her family came to America through Boston, having heard of the hardships of Ellis Island in New York.

3) She grew up in Shickley, Nebraska. She later went back with my mother to visit. The whole town went to an outdoor movie, but was distracted by a rather lengthy meteor shower.

4) I grew up with this sort of Swedish food. Where the weird, modern Swedish pizzas came from I don’t know. It’s also strange that Bruna Bonër, or Brown Beans, uses pink beans. Wacky Swedes.

Shakshuka, Israeli Breakfast Soup

Israeli Breakfast Soup

Shakshuka

IINGREDIENTSshakshu-

1 sweet red pepper
2 hot green chiles
1 white onion
2 garlic cloves
2 tablespoons extra virgin olive oil
24 ounces tomato sauce
1 tablespoon oregano
1/2 teaspoon salt
4 eggs

PREPARATION

Mince red pepper, green chiles, onion, and garlic. Put in skillet along with olive oil. Sauté on medium high heat for about 5 minutes or until onion is tender.

Add tomato sauce, oregano, and salt. Heat on high until sauce begins to boil, stirring frequently. Turn heat down to low. Add eggs. Cook until eggs are done to your satisfaction. Stir occasionally. This soup is often eaten directly from skillet.

Simple and quick with an impressive sounding name.

TIDBITS

1) People made soup as early as 6,000 BC.

2) Even then kids said, “Is it ready, yet?”

3) In 1772 BC Hammurabi of Babylon set down his famous set of 282 laws. Most of them dealt with business contracts and the family. None of them dealt with soup.

4) Current Nebraska law states a bar owner must be making soup at the same time beer is being sold.

5) So we’ve addressed the glaring soup admission in Hammurabi’s Code.

6) It took humanity over 3,700 years to do this.

7) In the meantime we’ve: discovered America via the land bridge from Asia, invented the printing press, and witnessed the creation and demise of the Twinkie.

Chimole Recipe

Belizean Entree

CHIMOLE

INGREDIENTS

1 small pumpkin squash or acorn squash
1 small white potato
1/2 medium white onion
1/2 chayote
2 large, ripe red tomatoes
2 garlic cloves
2 medium whole cloves
1/2 tablespoon black peppercorns
1 tablespoon red recado
1/2 tablespoon black recado (Recado spices are available online.)
1 vegetable bouillon cube
1/4 teaspoon salt
1/4 tablespoon allspice
1/2 tablespoon oregano
1/4 teaspoon cumin
3/4 teaspoon red pepper
3 cups water
1 chicken breast
8 hard-boiled egg
4 or more flour tortillas (Use half as many if you have burrito-sized tortillas)

UTENSIL

spice or coffee grinder

Makes 6-to-8 bowls.

PREPARATION

Peel squash, onion, and white potato. Remove seeds from squash. Dice squash, potato, onion, chayote, and tomatoes. Mince garlic cloves. (Just in off the internet news. Five people stole 9.5 tons of garlic. They were caught by the Hungarian border police who noticed a strong garlic smell coming from the five cars.) Put squash, potato, onion, chayoite, tomatoes, and garlic cloves in large soup pot.

Put whole cloves and black peppercorns in spice grinder. Grind until you get a powdery substance. Crumble red recado, black recado, and bouillon cubes into soup pot. Add salt, allspice, oregano, cumin and red pepper. Pour in water and cook on low-to-medium heat with lid on for about 40 minutes or until all veggies are soft.

While the vegetables and spice are cooking, chop up chicken breasts into 1/2-inch cubes. Also, boil eggs for about 12 minutes and let them cool. Add chicken cubes to soup pot.

Ladle soup into bowls. Peel eggs and slice each three times. Put an equal number of egg slices on top of the soup in each bowl. Serve with at least two flour tortillas and one plate per person. The tortillas may be used for dipping or for making burritos from the soup.

TIDBITS

1) January is National Soup Month. What does this mean? I don’t know. Have you ever celebrated National Soup Month? Me either.

2) Soup is an anagram for opus. Opus means an artistic work such as an opera.

3) Soup is also an anagram for puos. Puos is the plural form of puo.

4) Soup lovers in America eat about ten billion bowls of soup a year.

5) Soup haters consume considerably fewer.

6) Nebraskan bar owners may not sell beer unless they are cooking soup. That and possessing a liquor license.

7) Andy Warhol ate tomato soup every day for lunch for over twenty years. He became a famous pop artist. However, hundreds of millions of people have devoured rivers of tomato soup without achieving the slightest bit of fame. So, who can say?

Chimole Recipe
