De Lancey’s Fun Festival Tours of Finland

Come with me and see the fun festivals of Finland.

June – Mosquito Swatting Championships – The Swedish town of Övertorneå holds its own event when the town was denied permission to use chemicals to kill the little, flying biters. So the good Swedes made a festival about killing the pests. Contestants here get 15 minutes to kill mosquitos. The record for this town is 135. Finland has its own such festival, which is held sometime during the mosquito season.

Mid June – Swamp Soccer World Cup – Love soccer? Lover a shorter game? Love mud?  Head on over to Hyrynsalmi, Finland.  200-to-300 teams from all over the world compete.  There are five different ways to compete: men’s, women’s, mixed, men’s hobby, and Masters of Swamp. Six players are on each side. Each half lasts for 12 minutes. There are no offside penalties. This is fantastic for all those who never understood the rule in the first place.

Summer – Ant Nest Sitting Festivals – Finland hosts Ant Nest Sitting Competitions. Contestants sit on an ant hill for as long as they can stand the ant bites. This competition is held all over the country during the summer months. It truly helps to have a high threshold for pain or an ass harder than bronze.

Summer – Wife Carrying Championships – It’s in Sonkajaarvi, Finland Sonkajaarvi, Finland Couples race around a track well stocked with obstacles such as logs and a deep pool. At one time, the woman in the event had to be the man’s wife, but neighboring women are allowed. The designated wife must weigh 49 kilograms or 108 pounds. You might think a good wife for this race would be as tiny as possible. But no, the winners earn the wife’s weight in beer.

July – Cattle Calling Championship – Can’t speak Finnish, but still love to make yourself heard? Alapitka, Finland, puts on the renowned Cattle Calling Championship. Techniques of the champions are closely guarded secrets. However, successful participants tend to know the names of the cows. Courtesy while chatting with your cow goes a long way to winning the championship.

Early July – Finnish Dialect Speaking Championship – You say you want to attend a contest that is conceptually easy to win? One that’s not physically demanding? Then the Finnish Dialect Speaking Championship in Kuopio is the event for you. Keep in mind, past winners tend to possess a strong command of this Nordic language.

August – Finish Sauna World Championship – Held in Heinola, Finland. Simply stay the longest inside Finnish sauna in a temperature of 110 degrees centigrade, 240 degrees Fahrenheit. Maybe you have a competitive nature, while having the inactive disposition of a rock. Then this competition is for you. Compete! Maybe you like the idea of thousands of spectators and TV audiences watching your nearly naked, sweaty body, covered with only a towel. Compete! It’s held in August, when it’s outside anyway.

Mid August – Cell Phone Tossing – Be sure to make your way to Savonlinna, Finland during mid August for its prestigious Cell Phone Throwing Championship. The traditional part has participants throwing the cell phones over their shoulders. The longest toss wins. Cranky folks, such as myself, who have never quite adjusted to the new technology and hurl one phone after another, are usually the tournament favorites.  However, in 2012. it was a well-adjusted man named Eric Karjalainon won. He said he prepared for this event mostly by drinking.

Late August – Air Guitar World Final –  Air guitar enthusiasts won’t want to miss the Air Guitar season. Prestigious events are held in Germany along with Japan’s own elimination tournament. However, the crème de la crème of air guitardom is the World Final, held in Oulu, Finland. The Final’s aim is to promote world peace. With this in mind, organizers have banned holding a gun while performing your air-guitar number. The winner goes home with the unique Flying Finn guitar, handmade by the great Mr. Matti Nevalainen. Dedicated air-guitar fans really must obtain advanced tickets to the VIP Area. These tickets give you the best views of the stage and a truly tasty buffet well stocked with local delicacies.

Note: festival dates are prone to change. Check before you book. You don’t want to lug your air guitar all the way to Finland only to discover the Air Guitar World Final took place a week ago.

Japanese Rice Omelette

Japanese Entree

RICE OMELETTE
(Omurice)

INGREDIENTS – FRIED RICE

3 ounces boneless chicken
1 small onion
1½ tablespoons butter (1½ tablespoons more later)
1½ cups cooked rice (warm)
¼ cup ketchup
¼ teaspoon pepper
½ teaspoon salt

INGREDIENTS – OMELETTE

4 eggs
2 tablespoons milk
1½ tablespoons butter
1 ketchup bottle for squirting

SPECIAL UTENSILS

no-stick pan
paper towels

Serves 2. Takes 30 minutes.

PREPARATION – FRIED RICE

Slice chicken into ½” cubes. Mince onion. Add 1½ tablespoons butter and onion to regular pan. Sauté onion at medium heat for 3 minutes. Stir frequently. Add chicken. Sauté for 2 minutes or until chicken is no longer pink. Add rice, ketchup, pepper, and salt. Reduce heat to medium and sauté for 2 minutes or until rice is hot and coated with ketchup. Remove and cover to keep warm.

PREPARATION – OMELETTE

Add eggs and milk to mixing bowl. Blend with whisk. Add 1½ tablespoons butter to no-stick pan. Melt butter using medium heat. Add ½ of the blended eggs. Tilt pan so that egg mixture covers the surface. Cook egg mixture using medium heat for 1 minute or until egg starts to set on the bottom, but is still runny on top. Sprinkle ½ of the fried rice onto the setting egg mixture, leaving 2″ of egg uncovered on the left and right sides. Use spatula to fold uncovered sides over the rice as far as they can go.

Tilt pan to the right so that the right side of the omelette gets curved slightly by the pan. Then tilt the pan to the left for the same result. Put serving plate on top of pan. While holding plate, turn pan upside down so that the egg side of the omelette is on the top. Cover with paper towel to remove oil and to gently shape omelette into the shape of an American football. Remove towel and artistically drizzle omelette with ketchup. Repeat for the second omelette.

TIDBITS

1) The above picture of Omurice looks a lot like a triangular sail. This is no accident. Look at the Viking ship shown in the picture below.

 

 

 

 

 

2) Now, add a happy face to the triangular sail.

 

 

 

 

 

3) Let’s put those two pictures together.

 

 

 

 

4) Whoa! The pictures are nearly identical.. The Vikings did get the idea for their sail from the Japanese rice omelette. These pictures prove the Erik the Happy saga is true beyond all questioning.

5) In the Happy saga, Erik and his crew of oarsmen set off from Sweden to raid Northumbria. But, he refused to ask for directions and ended up in Japan. While there, Erik dined on a rice omelette. His synapses fired and he made the sail you see above. Voyaging back to Sweden with a sail was a snap.

6) Erik the Happy told Ragnar Lothbrok how easy sailing can now be, Just two months later, in the summer of 792. Ragnar built a long boat and added a triangular sail. He sailed to Northumbria and sacked the monastery of Lindisfarne. Much bloodshed and looting ensued. The age of the Vikings had begun. Now you know.

Fun Festivals – Air Guitar World Final

Air guitar enthusiasts won’t want to miss the Air Guitar season. Prestigious events are held in Germany along with Japan’s own elimination tournament. However, the crème de la crème of air guitardom is the World Final, held in Oulu, Finland in late August. The Final’s aim is to promote world peace. With this in mind, organizers have banned holding a gun while performing your air-guitar number. The winner goes home with the unique Flying Finn guitar, handmade by the great Mr. Matti Nevalainen. Dedicated air-guitar fans really must obtain advanced tickets to the VIP Area. These tickets give you the best views of the stage and a truly tasty buffet well stocked with local delicacies.

Don’t forget to pack your air guitar or you’ll be forced to buy one at the local Ouluan shops and you’ll know what high prices you’ll see there.

Fun Festivals – Saidaiji Eyo Naked Man Festival

If you happen to be in Japan on the third Saturday of February, you might wish to see the Naked Man Festival. The best one is reportedly held in Okayama, although how they decided this is difficult to measure. The men, clad only in loincloths race toward Saldaiji Temple to collect lucky sticks. I can just see a naked man saying, “Honestly officer, I’m not fleeing an enraged husband. I’m participating in the Naked Man Festival.” The officer will roll his eyes. “Like I haven’t heard that one before.”

Participants need to register in advance with Saldaiji temple and buy a loincloth. It’s February. You will be cold. Then you run around the temple for two hours and through a fountain of frigid water. This purifies your body and soul. Fully purified, the race becomes competitive. Indeed, the event has become quite a team sport with many teams sponsored by local businesses. The goal is to catch one of two wooden sticks, shingi, thrown into the racers midst by a temple priest. Catching a shingi confers good fortune for a entire year.

Spectators vie for 100 lucky items thrown in the crowd. These items aren’t as lucky as the shingi, but you don’t have to strip nearly naked and run through a fountain of icy water either.

Amazingly enough, there’s a more subdued version of this for the local children. This strengthens the bonds between residents.

Tourists can shop at the excitingly named street of Go Fuku Dori.

Saluting Our Nation’s Fallen on Memorial Day

I give a big salute to all of America’s servicemen and servicewomen who paid the ultimate sacrifice on battlefields and battle seas around the world. May they rest in peace. May we always remember them.

My father fought the evil Nazis in Germany in 1945. After the war ended there, his division, the 86th infantry, was transferred to the Pacific Ocean to fight the Japanese. It is likely he would have been in any invasion of Japan as his division had had amphibious training. He did not die in Germany and he did not die in Japan as the war ended before his division could have been sent into action.

The fact that he came to pick up his life again, to marry, and to have kids, my brother and I, makes me appreciate even more our men and women who never made it home.

I am proud of them.

Flags of the World – Red and White

How many times has this happened to you? You’ve been scrupulously observing quarantine regulations. But you’re finding abiding them harder and harder to take. You find yourself developing a serious case of cabin fever. Finally, you can stand it no longer, so you rush outside. But before you know it, you’ve somehow organized a massive military uprising. Your forces, armed men and women who were drawn to you by your animal magnetism, have conquered a large part of a large country.

You find yourself filled with rebellion remorse. You try to give back your conquered lands, but the brave lads and lasses who fought for you won’t have any of that. “Go back to school,” you say to them. They say, “We missed our deadlines for turning in our essays. No teacher is going to accept the excuse ‘I couldn’t get term paper done as I was participating in a rebellion. ‘Begone,” the teacher will say, ‘like I haven’t heard that one.’ So, we will all get Fs. Our GPAs will plummet. We’ll lose our scholarships. We’ll have to drop out of university. But we won’t be able to get a job anywhere because taking part in bloody insurrection is such a resume stain.”

So, there you have it. You’re stuck with your new country. But won’t the old country that still exists be angry at you? You betcha! Won’t they be chomping at the bit to reconquer their lost lands? Absolutely. Can they do it? No, you inadvertently overpowered their armed forces earlier. Remember? What happens if they ally with some powerful nation and attack you?

That is the nightmare scenario. The only way to stop this international coalition from forming against you is to fool the world into thinking your country isn’t a new, that it’s really part of an old and peaceful nation. How do we do this?

Simple, pick a flag that looks like the one from another country. How do I do that?

May I suggest limiting the colors of your new flag to red and white? There are simply scads of countries that use only red and white in their banners. Look at the Polish flag.

 

 

 

 

 

 

 

 

Poland is at peace with everyone. Adopt this flag and the foreign armies will think you’re at peace with everyone. If you don’t want to use the Polish flag, possibly for copyright reasons, you flip it on its side, like this. And add a little cross and you get . . . Malta.

 

 

 

 

 

 

 

 

Malta is a tiny and peaceful land. But choices for your flag still abound. Remove the cross and rotate the flag one more time and you get . . .  Monaco’s and Indonesia’s flags.

 

 

 

 

 

 

 

 

Monaco is far too tiny to invade anyone and Indonesia hasn’t tried anything like that decades. And now, if you still want a flag that’s guaranteed to confuse your fledgling nation’s with those of more-established countries but is a little bit more stylish, may I suggest that your peruse the following red-and-white flags.

 

 

You don’t even have to draw your flagian, not really a word, from a real country’s banner. Look at the Swiss and Red Cross flags.

 

 

 

 

 

 

 

 

 

They’re almost the same flag! One of the two entities just switched colors with the other. Is this okay? And if you stare at the Swiss flag long enough will you see the Red Cross flag and vice versa? Something to think about.

Other countries have red-and-white flags, but didn’t make the cut for displaying their flags.  Anyway, honorable mention goes to:  Denmark, Georgia, and Japan.

So now you have many, many red-and-white flags to choose from. You new nation needn’t fear invasion, secure in the knowledge that the rest of the world will confuse your country with another. And that’s a good feeling.

Tea Eggs

Taiwanese Appetizer

TEA EGGS

INGREDIENTS

12 eggs
6 tablespoons soy sauce
2 tablespoons oolong tea or black tea
3 star anise pods
3 bay leaves
3″ stick cinnamon
4 cloves
½ teaspoon fennel seeds
½ teaspoons Szechuan peppercorns or Tellicherry peppercorns or peppercorns
2 teaspoons light brown sugar
½ teaspoon salt

Serves 6. Makes 12 tea eggs. Takes at least 1 hour plus up to overnight for extra marinating.

PREPARATION

Add eggs to large pot. Cover with water. Bring to boil using high. Bring to boil. Reduce heat to low-medium and simmer for 10 minutes. Cover and remove from heat for 10 minutes. Remove eggs from pot and put in a large bowl filled with cold water and a few ice cubes. Tap eggs all over with spoon until the eggshells are cracked all over. (Do not peel.)

Put eggs and all other ingredients in pot. Cover with cold water. Bring to boil. Reduce heat to low, cover, and simmer for 20 minutes to 1 hour. (Longer simmering times result in darker and more flavored eggs. Remove from heat. Let cool for at least 20 minutes. (You can let the eggs marinate in the refrigerator for hours or even overnight for a stronger flavor.) Peel and serve. The remaining liquid makes a tasty tea.

1) Seven-ElevensTM in Taiwan sell tea eggs.

2) In Japan, the Seven-Elevens serve salmon on rice with butter and soy sauce, octopus salad, squid salad, cured mackerel on rice, beef dishes, cheeses, fruit cups, bento chicken, ginger chicken, and teriyaki chicken. And scotch.

3) If you’re in Thailand and in the mood for new and exciting potato chips, why head to the local Seven-Eleven? You can find there chips with the following exciting flavors: chocolate, French salad, pizza, honey-garlic pork, sweet and spicy, Peking duck with sauce, nori, crab curry, fried shrimp, sushi, taro fish, and finally hot chili squid when mildly spiced chili squids chips simply won’t do.

Yakitori

Japanese Entree

YAKITORI

INGREDIENTS

½ cup mirin
1⅓ cups sake or dry white wine
½ cup soy sauce
¼ cup sugar
1 pound boneless chicken thighs
4 green onions

SPECIAL UTENSILS

grill
8 10″-bamboo skewers

Makes 6 skewers. Takes 1 hour 15 minutes.

PREPARATION

Soak skewers in water. Add mirin, sake, soy sauce, and sugar to pan. Bring to boil using high heat. Stir frequently. Reduce heat to low-medium heat and simmer for 10 minutes or until sauce thickens and is reduced by half. Stir frequently. Remove sauce from heat and let cool.

Slice chicken thighs into 1″ squares. Slice green onions into 1″ long pieces. Alternate threading chicken squares and green-onion slices onto skewers. Warm grill to medium heat. Add as many skewers as possible without them touching each other. Grill chicken/green onion skewers on each side for 2 minutes or until chicken is no longer pink on outside. Generally skewers with sauce. Grill each side for 2 minute. Repeat 2 more times or until chicken is no longer pink inside. Serve with unused sauce.

TIDBITS

1) Not all Americans in 1776 favored independence from Great Britain. The Tories remained loyal to their mother country. Tories, in general, were far more talkative than their revolutionary counterparts. The patriots derided the loyalists as “Yaky tories,” or in its shortened form, “Yakitori.”

2) On August 27, 1776, the British under General Howe routed the Continental Army, To celebrate, Tory chef, Abner Davis, made the victorious commander this tasty dish. General Howe loved his dinner and asked repeatedly for more helpings. The well-fed commander soon became sleepy and didn’t wake until noon. These hours of inactivity gave General Washington the time he needed to retreat his battered army. The Americans regrouped and trained until they could stand up to any British army. The chance to crush the Revolution was lost. America would become independent.

3) In 1856, Commodore Matthew Perry lead a U.S.. squadron to Japan. He gave the Japanese many gifts, including the recipe to Yakitori. This is how Japanese cuisine came to Japan.

Pabellón Criollo

Venezuelan Entree

PABELLÓN CRIOLLO

INGREDIENTS – PULLED MEAT

3 garlic cloves (2 more cloves later)
1 medium onion
1 tomato
2 pounds flank steak
1 bay leaf
¼ teaspoon cumin (¼ teaspoon more later)
1 teaspoon oregano
¼ teaspoon pepper (¼ teaspoon more later)
3 quarts water (or enough to cover ingredients)

INGREDIENTS – BLACK BEANS

2 garlic cloves
1 small onion
¼ cup olive oil or oil (¼ cup more later)
1 green bell pepper
1 15-ounce-can black beans
¼ teaspoon cumin
¼ teaspoon pepper
½ teaspoon salt

INGREDIENTS – RICE & PLANTAINS

1⅓ cups rice
2 plantains or bananas
½ cup olive oil or oil

SPECIAL UTENSILS

3-quart pot
4 plates with 3 sections. These are mighty hard to find if you’re looking for them at the last moment.

Serves 4. Takes 2 hours 50 minutes.

PREPARATION – PULLED MEAT

Dice 3 garlic cloves, medium onion, and tomato. Add diced garlic, onion, tomato, flank steak, bay leaf, ¼ teaspoon cumin, oregano, ¼ teaspoon pepper, and enough water to cover ingredients. Bring to boil using high heat. Cover and reduce heat to low. Simmer for 2 hours 30 minutes or until meat is tender to the fork. Remove and discard bay leaf. Remove meat and place on plate. Pull flank seat apart with forks. Save stock for future soups.

PREPARATION – BLACK BEANS

While flank steak simmers, mince 2 garlic cloves and small onion. Seed and dice green bell pepper. Add garlic, onion, green bell pepper, and ¼ cup olive oil to pan. Sauté at medium-high heat for 5 minutes or until onion softens. Stir frequently. Add black beans, ¼ teaspoon cumin, ¼ teaspoon pepper, and salt. Reduce heat to low and simmer for 20 minutes. Stir occasionally.

PREPARATION – RICE & PLANTAINS

About 30 minutes before flank steak should be ready to be pulled apart, cook rice according to instructions on package. Peel plantains. Cut plantains into slices 1″ wide diagonally along the length of the plantain. Add plantain and ½ cup oil to pan. Sauté slices for 3 minutes on each at medium heat or until plantain softens and browns.

PREPARATION – FINAL STEP

This step is much easier if you have a plate that is divided into 3 sections. Carefully add enough pulled flank steak to make a pie wedge that takes up ⅓ of the plate. Carefully add enough beans next to the flank steak to make a pie wedge taking up ⅓ of the plate. Carefully add (Yes, you are doing things carefully here.) enough rice to take up the remaining ⅓ of the plate. Add ¼ of the plantain slices to the outside of the rice pie-wedge.

Zap, with your sonic obliterator, any guests who fail to appreciate just how much heart and soul went into the preparation of this dish.

TIDBITS

1) This dish, pabellón criollo, is enormously popular, among Venezuelans. So much so, that Venezuelans will bring the ingredients for this dish wherever they travel or migrate.

2) And boy, they sure have migrated. On May 1, 16,870 BC priests revealed to the proto-Venezuelans that their gods would be having a millennium-long jamboree in a land beyond the Great Mother Sea. Of course, everyone knows the best time to petition gods is when they’ve been drinking, eating pulled beef, and dancing and singing up a storm.

3) So, all the proto-Venezuelans took to their rafts and floated and paddled their way down the east coast of South America, suffered ice storms in the Straights of Magellan, endured fresh-water deprivation, and got eaten by gigantic sharks and whales.

4) All of which sucked, especially when compared to jamboreeing with the gods. So once there, the proto-Venezuelans stayed and planted rice. This is how rice came to India, Vietnam, China, and Japan.

5) The proto-Venezuelans were pretty happy. Then the gods’ beer ran out. The deities became surly and hurled thunderbolts and really hard bread rolls at the humans.

6) Life sucked again. Enough to brave the perils of an ocean voyage back home. This is how peoples from Asia settled the Americas, not by the headline hunters who crossed the land bridge from Siberia to Alaska.

Fish and Chips

British Entree

FISH AND CHIPS

INGREDIENTSFishAndChips-

2½ pounds potatoes (King Edward or Maris if you can get them.)
1⅓ cups flour (3 additional tablespoons later)
1 teaspoon pepper
1 teaspoon sea salt or salt
1¼ cups (10 ounces) beer
2 cups peanut oil
5 cups (or enough to cover fish) vegetable oil
4 7-ounce cod, pollock, or haddock fillets
3 tablespoons flour
malt vinegar (to be added by guest)

SPECIAL UTENSIL

deep fryer

Makes 4 servings. Takes 1 hour 30 minutes
Note:: Cooking times vary a lot between fryers or with the amount of food you put in them, so you’ll need to check the fryer periodically.

PREPARATION

Peel potatoes. Slice potatoes along their lengths into ½” by ½” strips. Add potato strips to first bowl filled with cold water. Let soak for 1 hour to remove starch. Pat the potato strips with paper towels until the strips are completely dry.

This is important. If you leave moisture on your potato strips, then your chips, if you are British, or your French fries, if you’re American, will not turn out well and the Earth will leave its orbit and spiral into the Sun. Enough said.

While potato strips are soaking, add 1⅓ cups flour, pepper, and salt to large, second mixing bowl. Mix thoroughly with whisk. Add beer. Stir with whisk until there are no lumps and mixture has the consistency of whipping cream.

When the potato strips have only 15 minutes left to soak, pre-heat oven to 200 degrees. (You will be making this entree in batches. Put fried fish and completely done fries warm in oven until everything is ready.) Add peanut oil and vegetable oil to deep fryer. Heat oil to 275 degrees. Carefully add ¼ of potato strips to deep fryer. Fry potato strips for 5 minutes or until any of them start to brown. There are now officially French fries or chips. (Pauses for ceremony.) Remove chips from fryer, drain, and set aside. Repeat for each batch of potato strips.

Add 3 tablespoons flour to third bowl. Add fish fillets, one at a time to bowl. Turn fish fillets around until they are coated with flour. This flour keeps the batter from slipping off later. Add flour-covered fish fillets to mixing bowl with batter. Slowly turn fish fillets until they are thoroughly covered with batter.

Increase heat on deep fryer to 375 degrees. Carefully add fish fillets to deep fryer. Fry for 6-to-10 minutes or until batter is crisp and golden brown. Turn fillets two or three times with wooden spoon to ensure even frying. Remove fish fillets with slotted spoon and place on wire rack above plate and let drain.

Add partially cooked French fries to deep fryer for second time. Keep heat at 375 degrees. Fry French fries for 10-to-20 minutes or until they are golden brown and crispy. Remove French fries with slotted spoon and dry with paper towels.

Serve fish and chips and malt vinegar to adoring, appreciative guests. Dredge unappreciative guests through any remaining batter. You were cooking with hot oil, for goodness sake.

TIDBITS

1) Gratuitous Capitalizing of Words has not been allowed in English speaking countries since 1945. Indeed, World War II was fought to preserve our minimalist capitalization approach.

2) You see, Germany capitalizes all nouns. Germany wants the whole world to capitalize nouns. Why does Germany want all this capitalization? Who would benefit from this?

3) The German ink makers. Capitalized letters take more ink than small letters. More capitalized letters means more ink. More ink means more income for the ink makers. No German government from 1814 to 1945 was strong enough to resist the dictates of the German Ink Makers’ League, GIML. So, when GIML told their leaders to invade one country after another to open up new market for ink, their governments obliged.

4) Things looked bad for the minimal-capitalizing countries in mid1940. The British Expeditionary Force was trapped against the beaches of Dunkirk. If this force had surrendered, Britain, the last hold out against German Capitalizing aggression, would have had to give up all resistance.

5) Fortunately in 1940, a young physicist named Peter Sakes, was in a London pub waiting for his fish and chips. Boom! A gigantic explosion blew apart the kitchen walls. Hot cod and hot potato strips flew into the eating and drinking areas. Patrons ran screaming from the establishment. A light clicked in Sakes’ head. Perhaps the same process used to explode fish and chips could be employed to make nuclear fission. A nuclear bomb would surely stop the invincible German armies.

7) Prime Minister Churchill agreed and gathered all British scientists to develop the atomic bomb. Well, the whole thing took longer than expected; the heat from cooking oil proved insufficient to trigger a nuclear chain reaction. So the Americans came on board with their Manhattan Project and by August, 1945, had an atomic bomb to use on Japan.

8) The atomic bomb came too late to use on Germany which had already surrendered. However, the mere hope the bomb had brought to Churchill had given him to will to resist. We owe our freedom and our small-lettered nouns to Mr. Sakes and his idea. Here’s to him and fish and chips!
