Belgian Apple Fritters

Belgian Dessert

APPLE FRITTERS

INGREDIENTSAppleFritters-

2⅓ cups flour
16 ounces beer
5 large apples
4 cups vegetable oil (or enough to cover apple slices)
½ cup confectionery sugar
1 tablespoon lemon juice

SPECIAL UTENSIL

electric beater
electric skillet

makes 30 apple fritters

PREPARATION

Add flour and beer to large mixing bowl. Use electric beater on medium setting until there are no lumps and the mixture thickens in batter. If mixture is liquidy after lumps have disappeared, put mixture into refrigerator for 5 minutes. Peel and core apples. Cut into 6 rings each. Coat apple slices into flour/beer mixture.

Add oil to skillet. Heat electric skillet to 375 degrees. Add coated apple slices to skillet. The oil should cover the slices. Fry apple slices for about 2 minutes on each side or until golden brown. Remove fried slices, or fritters, and place on paper towels. Repeat until done. Sprinkle fritters with lemon juice and dust with confectionery sugar.

TIDBITS

1) Belgians believe eating cabbage on Shrove Tuesday will prevent Belgium’s cabbages from being devoured by caterpillars and flies. Works for me.

2) Shrove Tuesday occurs on Tuesday. Further research shows Shrove Tuesday occurring before Ash Wednesday, the start of Lent. Shrove Tuesday is also known as Mardi Gras, or Fat Tuesday. Traditionally, people would eats lots of high caloric foods on this day before giving up their tasty temptations for Lent.

4) Indeed, Shrove Tuesday is also known as Pancake Day in protestant Britain, New Zealand, and Canada and in catholic Ireland as inhabitants on those happy countries would traditionally eat pancakes and engage in run-on sentences on that day. It’s gratifying to know that food, pancakes in this case, brings amity, peace, and contentment to nations with histories of political and religious differences. All we are saying is give pancakes a chance.

La Mitraillette (Belgian Sandwich)

Belgian Entree

LA MITRAILLETTE

INGREDIENTSLaMitraillette-

1 yellow onion
1 tablespoon butter (2 more tablespoons later)
2 pounds ground beef
5 Yukon gold potatoes or medium potatoes (if you wish to make your own French fries)
1 cup French fries (if you don’t wish to make your own French fries)
2 baguettes
2 tablespoons butter
1/4 cup ketchup
1/4 cup mayonnaise

PREPARATION OF FRENCH FRIES (or used already made French Fries)

Cut potatoes into strips 1/4″ to 1/2″ wide. Soak potato strips in cold water for 30 minutes. Drain. Pat strips dry. Put oil in deep fryer. Heat oil to 340 degrees. Put potato strips in fryer. Fry strips at 340 degrees for 5-to-10 minutes or until they become crisp and turn golden brown. You will most likely need to cook in batches. Remove fries. Put fries on paper towels to remove grease. If you are using already-made fries, put fries in pan and fry on medium heat for 5 minutes or until thoroughly heated. Stir occasionally.

PREPARATION OF SANDWICH

Dice onion. Put onion and 1 tablespoon butter in frying pan. Sauté at medium-high heat for 5 minutes or until onion is tender. Stir frequently. Remove onion. Make 8 small beef patties. Fry patties on medium high-heat for 5 minutes or until meat is no longer pink. Flip patties occasionally.

While beef is cooking, cut baguettes in two along their width. Cut open demi-baguettes. Spread 2 tablespoons butter on the inside of the baguette pieces. Toast the baguettes pieces butter side down in frying pan on medium-high heat for 2 minutes. Assemble sandwiches with bottom halves of baguettes, onion, ground beef, French fries, ketchup, mustard, and top halves of baguettes .
TIDBITS

1) “La mitraillette” means “the machine gun” in French. Machine Gun Kelly was a famous gangster. Gene Kelly was a renowned dancer. Gene Krupa was a great band leader from the Big Band Era.

2) E.R.A. stands for Earned Run Average and equals (earned runs/innings pitched) * 9. Yay!

3) You should make sure your ground beef turns brown in this recipe. The ground is beneath your feet. Most people and tyrannosaurus rexes have two feet. And so it goes.

Chicken Provencale Recipe

French Entree

CHICKEN PROVENÇALE

INGREDIENTSChicPro-

2 chicken breasts
2 teaspoons herbes de Provence
1/2 teaspoon mignonette pepper (Tellicherry black pepper, Muntok white pepper, coriander)
2 tablespoon olive oil
2 red bell peppers
1 green bell pepper
3 garlic cloves
1/2 cup white wine

SPECIALTY UTENSIL

Serves one wrestler in training for the Olympics, two people with regular appetites, and four guests who got into your private stash of Belgian truffles before even trying this lovingly prepared meal and are never getting invited again.

PREPARATION

Pound chicken breasts to a half-inch thickness. (Remembering the day’s swarm of rude drivers on your ride home helps immeasurably.) Cut chicken breasts into fourths. Coat chicken pieces with herbes de Provence and mignonette pepper. Cut bell peppers into strips about 1/2″ inch wide and 2″ long. Mince garlic cloves.

Put olive oil in frying pan. Add bell-pepper and garlic. Sauté on high heat for a minute or until olive oil boils. Stir frequently. Add white wine and chicken pieces.

Cover and reduce heat to low-medium for about 5 minutes or until chicken is cooked through. You can cut a piece in half. If the chicken is still pink inside, sauté everything a few minutes more. If both halves are all white, eat one half. It’s your kitchen.

TIDBITS

1) The Olympics first occurred in Ellis, Greece in 776 BC as a way to honor Zeus. Wrestling was perhaps the most popular event.

2) Contestants and trainers appeared nude partly to prevent women from surreptitiously participating.

3) The Olympics started to die out around 260 AD what with barbarians invading the Roman Empire and civil wars erupting every few weeks. In 391 Emperor Theodosius outlawed the games because they were pagan.

4) No summer Olympics, no chance for winter Olympics. No winter Olympics, no bobsledding. No bobsledding, no thriving winter tourist industry. No thriving winter tourist industry, no taxes for the government. No taxes, no money to fund an army for the Empire.

5) Indeed, quite soon after Theodosius’ decision, massive waves of barbarians assaulted the poorly defended Roman Empire, defeating it quite easily.

6) The death of the Roman Empire plunged Europe into the Dark Ages for about a thousand years. Way to go, Theodosius.

7) Today the Olympic Committee is considering dropping wrestling from the games claiming lack of interest.

8) Perhaps there would be more interest if we brought back nude wrestling.
