Poutine

Canadian Entree

POUTINE

INGREDIENTSPoutine-

5 Yukon gold potatoes (or medium potatoes)
1 1/2 cups grated mozzarella cheese
1 1/2 cups beef gravy
5 cups vegetable oil

SPECIAL ITEMS

long-sleeve shirt (this dish can splatter hot oil)
deep fryer

Makes 4 bowls. Takes 1 hour.

PREPARATION

Cut potatoes into strips 1/4″ to 1/2″ wide. Soak potato strips in cold water for 30 minutes. Drain. Pat strips dry. Put oil in deep fryer. Heat oil to 375 degrees. Put potato strips in fryer. Fry strips at 375 degrees for 10-to-15 minutes or until they become crisp and turn golden brown. You will need to cook in batches. Remove fries. Put fries on paper towels to remove grease.

While the last batch of potato strips is frying, warm gravy in small pot. Put fries on large plate. Place cheese curds on top of fries and ladle gravy over everything.

TIDBITS

1) Cajun roux also splatters . It’s made of flour and oil and is dark brown. It is heat at 500 degrees making splatter from it quite painful. Chef Paul Prudhomme calls it, “Cajun napalm.”

2) They’re tasty, I know, but the most dangerous foods to eat while driving, according to the insurance industry are:

Coffee – A hot, spillable liquid. Owie! Major distraction.
Hot soup – Hot soup while driving? Are you crazy?
Tacos. – Great but messy. Go for the easier to hold burrito.
Chili – Messy and hot. Again, go for the burrito.
Hamburgers – The grease from the burger makes your hand slip on the driving wheel. Burgers cooked under heat lamps have a lot less grease. A lot less taste, too. It’s a life versus taste trade off.
Barbecued food – The sauce will go everywhere. So will your car if you eat barbecued while driving.
Fried chicken – Greaser to eat than burgers.
Jelly or cream-filled doughnuts. They squirt on the steering, the gas pedal, and the brake.
Soft drinks – Carbonation up the nose is so distracting
Chocolate – Melts on your hands, not in even your mouth. Your hands slip on the steering wheel.

Chutney Hamburgers Recipe

Guyanese Entree

CHUTNEY HAMBURGERS

INGREDIENTSChutnHB-

1 1/2 pounds ground beef
2/3 cup mango chutney (or use Mango Chutney recipe)
6 hamburger buns
1/4 cup deli-sliced pepper rings

SPECIALTY ITEM

electric skillet (or plain skillet)

PREPARATION

Put ground beef and chutney in mixing bowl. Smoosh thoroughly by hand. Form six patties about 1″ thick. Set skillet to 350 degrees. Fry on each side for about 3 minutes or until cooked to your desired level of doneness. (This is your excuse to sneak a bite.)

Put patty on bun. Add 1/6 of the pepper rings to patty. Put other bun on top. You’re now a chutney-hamburger king. Oh, and don’t forget to make the other 5 chutney burgers.

TIDIBITS

1) According to the “Michigan Farmers Care” website, a fun fact about beef is, “Cattle farmers conserve the land by implementing natural resource management practices that include soil tests, brush and weed control programs, grazing management plans, minimum or no-till systems, and range quality and grass utilization monitoring.”

2) Doesn’t conjure up images of the tv show Rawhide does it?

3) I was hoping something more along the lines of “Cows can in fact be taught to tango. However, due to their limited memories they have to be retaught every night.

4) “This, of course, proved to be quite expensive. This is why only the best-funded outfits put on Cow Tango Shows.” Wild Bill’s Dancing Cows was the most popular one.

5) “Cow Tango shows reigned for only one year, 1889, when the craze suddenly collapsed.

6) “Thrown out of work, tango cows headed for neighboring farms. But they didn’t stay welcome very long. Farmers wearied of the cows’ poor work habits and late-night carousing whenever they fermented their own milk.

Irish Hamburgers Recipe

Irish Entree

IRISH HAMBURGERS

INGREDIENTSIrCorBB-

1 4-to-5 pound ready-to-cook corned beef brisket
6 russet potatoes
3 large carrots
1 large white onion
1/2 head cabbage
water
6 hamburger buns

SPECIALTY UTENSIL

PREPARATION

At the crock pot’s low setting, the brisket can take 10-to-14 hours to become tender. The high setting will cut this time by about half.

Put ready-to-cook corned beef brisket in crock pot. Add water to crock pot until it covers the brisket. You may need to cut the brisket into smaller pieces depending on the size of your crock pot. Cook for 10-to-14, possibly overnight, or until brisket is tender.

Clean potatoes and carrots. Cut potatoes carrots, onions, and cabbages in slices no thicker than 1/2″ inch and add them to the crock pot. and vegetables. Add water until it covers the brisket and vegetables. Cook on low setting for about 2 hours or until vegetables are tender.

So far, this has been a simplified, but still traditional meal of corned beef. But new culinary horizons beckon. Beef burgers beget beguilingly Irish burgers, beggorah.

Put a slice of corned beef from crock pot on bun. Top that with a slice of onion and cabbage also from the crock pot. Add a squiggle of mustard and complete with top bun. A Irish burger to be sure.

Use remaining ingredients in crock pot as a traditional corned beef meal or as in the next recipe, corned-beef soup.

TIDBITS

1) This recipe uses carrots. The world famous cartoon character Bugs Bunny loved carrots.

2) Bugs Bunny was named after one of his creators at Warner Bros. studio, Buggsy Hardaway.

3) Bugs Bunny was officially born on July 27, 1940 in a rabbit warren under Ebbets Field, home of the Dodgers, in Brooklyn. Although previous incarnations occurred in the late 1930s, his official cartoon debut occurred on that date in a cartoon feature called a “Wild Hare.”

4) Bugs went on to have a illustrious cartoon career starring in several beloved shorts and even a few movies. This patriotic bunny also squared off successfully against the nefarious German and Japanese leaders of World War II. Bugs even appeared in two-minute films designed to get Americans to buy war bonds.

5) It’s possible without Bugs Bunny’s buy-war bonds films America would not have had enough funds to prosecute the war against the Axis powers.

6) And indeed, America’s fighting men were grateful. Bugs Bunny was the official mascot of at least one air training school and two air squadrons.

7) Bugsy Siegel’s story is somewhat different. Born into the real world, Bugsy rose to prominence as a bootlegger and notorious co-founder of Murder, Inc. Switching to gambling, Bugsy founded the Flamingo Hotel in Las Vegas, Nevada. He was gunned down in 1947.

8) There you have it. One Bugsy has made the world laugh for decades and won a world war. The other Bugsy not so much.

Bombay Potatoes (Aloo) recipe

Indian Entree

BOMBAY POTATOES
(Aloo)

INGREDIENTSBombPot-

4 brown potatoes
1/2 teaspoon salt
1/2 white onion

1 tomato
3 tablespoons vegetable oil
1 teaspoon ginger powder (freshly ground is preferred)
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 tablespoon garam masala
1/2 teaspoon ground mustard
1/2 teaspoon sesame seeds
2 teaspoons coriander
1 bay leaf
1/2 tablespoon lemon juice
1/2 tablespoon sesame oil.

PREPARATION

Put enough water in pot to cover 4 potatoes. While water is heating to a boil, wash potatoes. Cut each potato into about 12 pieces. Mince onion. After water comes to a boil, add potatoes and salt to pot. Boil until potatoes are done but still firm to the fork. This takes about 6-to-10 minutes.

Dice tomato. Put .vegetable oil and onion in frying pan. Sauté on medium-high for about 5 minutes or until onions are soft. Reduce heat to medium-low and add tomato, ginger, chili, cumin, garam masala, mustard, sesame seeds, coriander, bay leaf, lemon juice, and sesame oil. Cook for 2 minutes, stirring frequently.

Add potato pieces. Stir potatoes gently until they are fully coated with oil and spices and soft to the fork.

TIDBITS

1) Ginger has been in the kitchen for 5,000 years.

2) Ginger, the spice, not anyone named Ginger. Goodness.

3) Ginger has been and still is used for curing upset stomaches and motion sickness.

4) Ginger reduces headaches by blocking prostoglandis, whatever that is, responsible for inflaming blood vessels in the brain.

5) Ginger brings other health benefits. It’s a truly amazing spice.

6) Ginger Rogers brought amazing grace and style to the movies. She really could act and dance.

7) Roy Rogers was a famous cowboy actor. He also owned a chain of restaurants called Roy Rogers.

8) They served hamburgers. You could put your fixin’s on them. I don’t think any of them were ginger.

Peruvian Hamburger

Peruvian Entree

PERUVIAN HAMBURGER

INGREDIENTS

AJI AMARILLO SAUCE

1 tablespoon butter
2 green onions
1 tablespoon aji amarillo pepper
1 tablespoon peanut oil
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon ketchup
1 tablespoon lime juice
1/4 teaspoon sea salt
1/4 teaspoon black pepper
1/4 teaspoon Meat MagicTM spice

PATTY

3 garlic cloves
2 tablespoons onion
1 aji panca pepper
1 tablespoon peanut oil
1 tablespoon butter
2 teaspoons parsley flakes
1 1/2 pounds ground beef

6 lettuce leaves
6 hamburger buns

PREPARATION OF AJI AMARILLO SAUCE

Dice green onions. Melt butter in medium saucepan. Add green onions, aji amarillo pepper, and peanut oil. Saute at medium-high heat for about 2 minutes or until all ingredients are well blended. Stir constantly.

Put above sauteed mixture in mixing bowl. Add mayonnaise, sour cream, ketchup, lime juice, sea salt, black pepper, and meat spice. Whisk together.

PREPARATION OF PATTY

Mince garlic, onion, and aji panca pepper. (Keep your aji panca pepper and your aji amarillo pepper in TupperwareTM. Moths love aji peppers. Who knew they were such gourmands?) Melt butter in pan. Add peanut oil and butter. Saute at medium-high for 2 to 3 minutes or until onion softens. Stir constantly.

Combine sauteed aji-panca-pepper mixture in mixing bowl with ground beef, garlic, onion, and parsley flakes. Makes 6 patties.

Cook the patties until no pink color remains. Toast 6 buns. Coat the buns with the aji amarillo sauce. Add a lettuce leaf and patty and assemble the hamburger.

This is great. It is also spicy. Beverages such as milk go well with spicy foods. The milk coats the pain receptors in your mouth.

(This is important information if, for example, you’re in a restaurant in St. Louis with friends of yours from the Department of Economics from the University of Wisconsin and you’re dared to eat a truly spicy pepper.)

TIDBITS

1) Peru has a hamburger chain called Bembos.

2) If I ever get to Peru, I’m going to eat there. After that, I’m going to visit the ancient Incan ruins at Machu Picchu. Did you know there’s a McDonald’s there?

3) Pizarro and his Spanish conquistadors conquered the Incans of Peru in the 1520s.

4) Ancient Peru gave Europe and America the potato. Western Civilization gave Peru the hamburger.

5) Together these two great foods make up that wondrous meal burger and fries.

6) Without Peru and the Incans we could never say, “Would you like fries with that?”

7) So in a way, the Spanish arrival in Peru was a good thing.

8) At least on a culinary level.

Chinese Hamburger Bash From Forthcoming Cookbook

Chinese Entree

CHINESE HAMBURGER BASH

INGREDIENTS

1 medium onion
2 green bell peppers
2 garlic cloves
1 1/2 ground turkey
1 pound ground beef
12 ounces extra-firm tofu
1/2 tablespoon peanut oil
1/2 tablespoon sesame oil
1/3 cup honey
1/3 cup soy sauce
1/3 cup red wine vinegar
1 cup diced tomato
1/2 teaspoon ginger
1/2 teaspoon Meat MagicTM spice
2 teaspoons cornstarch
About 16 buns
No-stick spray

SPECIAL UTENSIL

Large spatula

PREPARATION

This recipe is rightly called a bash. It makes about 16 to 20 patties.

Mince onion, bell peppers, and cloves. In large bowl, mix all ingredients except buns. (Don’t mince your own buns; that would be a disaster.) Be sure to make patties smaller than your spatula.

Coat bottom of frying pan with no-stick spray. Cook burgers on medium-high heat. These hamburgers are moister and more prone to crumble than their American counterparts. So, make sure you have the entire patty on top of the spatula before you turn them over. Turn them over carefully. Do not flip them. Turn them over once.

TIDBITS

1) There have been many mass migrations and conquests throughout history. Some examples are: Alexander the Great’s conquests, Rome’s conquest of the Mediterranean, Germanic tribes overrunning the Roman Empire, Arab conquests of North Africa, Mongol invasions of China, Persia, and Russia, and Spanish victories in Central and South America.

2) What do all these bloodthirsty conquerors have in common?

3) None of them ate hamburgers.

4) With or without cheese.

5) They didn’t even eat sliders.

6) Geez, the Romans ate thrush tongues, for goodness sake. What would it have hurt them to eat a Chinese Hamburger?

7) And the Vikings ate lutefisk. Lutefisk! Think of all the monasteries, towns, and libraries that were sacked because the Vikings ate lutefisk instead of Mexican hamburgers.

8) And then there would have been no Dark Ages. Learning would have flourished. We would have had colonies on the moon by the 17th century if only the Vikings had eaten burgers.

9) Or even sliders.
