Blackened Turkey Dogs

Cajun Entree

BLACKENED TURKEY DOGS

INGREDIENTS

6 turkey hot dogs
6 hot dog buns
½ teaspoon paprika
⅛ teaspoon salt
¼ teaspoon cayenne pepper
¼ teaspoon Poultry MagicTM spice
¼ teaspoon cumin
¼ teaspoon thyme
No-stick cooking spray

PREPARATION

Preheat skillet to 350 degrees. Mix paprika, salt, cayenne, poultry spice, cumin, and thyme on large plate. Coat all sides of the turkey dogs with spray.

Place the turkey dogs on plate and roll them until they are coated with spices. Place turkey dogs in skillet and cook for 8 to 12 minutes making a quarter turn every 1 to 2 minutes, or until spices blacken.

Toast buns. (Why do hot dogs and hot-dog buns come in different amounts? Why has no president done anything about it?) Put turkey dogs in buns. If you like Cajun cooking, you should need no condiments, such as ketchup. But as the French say, “Chaque à son gout.”

TIDBITS

1) I have never seen deliberately blackened hot dogs anywhere. This dish is a product of my feverish imagination. It’s good, though.

2) In 1755 and 1758, the British exiled French Canadians from Acadia. Many moved to Louisiana where they became known as Cajuns.

3) Cajun food is spicy. Canadian food is not. Nor is Eskimo cuisine. Eskimos do not have hot sauce.

4) I mostly grew up in Arcadia, California.

5) Cayenne is the capital of French Guiana. French Guiana is in South America. Why is this land not independent? Do the people love French cooking?

6) Cayenne is mostly grown in Mexico, Asia, Africa, New Mexico, and Louisiana. But apparently not much in a land that has a capital named Cayenne.

7) National Hot Dog Day is July 18.

8) Babe Ruth is believed to have once consumed twelve hot dogs and drunk eight sodas between games of a doubleheader.

9) Americans eat about 150 million hot dogs on the Fourth of July.

10) Humphrey Bogart was a big fan of hot dogs. Coincidentally, he won an Oscar for his performance in The African Queen.

11) Mustard is the favorite hot-dog topping among adult Americans. Kids, however, prefer ketchup.

12) Maybe this recipe will change that.

De Lancey’s Canadian Fun Festival Tours

March 8 to 29 – Festival of Animated Objects -Held in Calgary, Canada. See puppet shows and performances with other animated thingys touch on dark, troubling themes. Even though, many of the shows are supposed to be family friendly, it all seems rather ominous. Watch animovies projected onto a historic grain elevator. A historic one, no less. Programming includes live performances, screenings, lectures, workshops, and exhibitions for all ages.

Last Weekend in July – Nanaimo Marine Festival and Bathtub Races –  As always, there will be amazing firework displays, decorations, and food everywhere. Arts and crafts stalls will dot the landscape, as well an entertainment stage, and a children’s tent. Visit the farmers’ markets, and do other stuff. Let’s face it the highlight of this festival is, and will always, be the stupendous bathtub race. It’s known appropriately enough as the Great International World Championship Bathtub Race. The race crosses the 36-mile Strait of Georgia.

Last Weekend in July – Elvis Impersonator Festival – Perhaps the best Elvis impersonator festival in the world occurs in the summer at the Collingwood Elvis festival which thank goodness, is held in Collingwood, Ontario. This festival draws a variety of people . . . Oh heck, no it doesn’t. Only lovers of Elvis’ music will go. Oh, and Elvis impersonators. Expect to see lots and lots of Elvis impersonators. This is a good thing, however, if you don’t love Elvis’s music and if you don’t love his songs, then why are you attending an Elvis festival? And eat the food the King ate. See how many fried banana and peanut butter sandwiches you can devour during the festivities.

July 30 to August 2 – Icelandic Festival in Manitoba – Embrace your inner Northern European spirit by raiding your way to the Icelandic Festival in Gimli, Manitoba. You’ll find tasty Icelandic food to eat. See the Icelandic fashion show. Visit musicians and artists who offer up Icelandic music and Icelandic crafts. But really the most exciting part of the festival is the Viking Village. See people dressed up a Viking warriors. Go to every single Viking Combat Demonstration. And oh my gosh, oh my gosh, don’t, just don’t, let your children miss the half-hour long Kiddie Shield Wall event.

September 2 to 4 – Poutine Festival – Make your way to the Poutine Festival in Drummondville, Quebec. Poutine, perhaps Quebec’s most famous dish, consists of French fries, beef gravy, and cheese curds or mozzarella. Listen to wonderful music while tasting caloric culinary greatness. Heart specialists are standing by. The highlight of the event is seeing which poutinier food truck will win the coveted Gold Fork for making the festival’s best poutine. * =  If history is anything to go by, next year’s excitement will take place anytime from July to September.

September 13 to 14 – Accordion Extravaganza! – Clear your musical palate by attending the Accordion Extravaganza! in Edmonton, Alberta. Pop in on all sorts of concerts, workshops, dances, and competitions, all featuring the accordion. Accordion lovers will melt in ecstasy here.

Pizzaghetti

Canadian Entree

PIZZAGHETTI

INGREDIENTS – PIZZA CRUST

2 cups all-purpose flour (1 tablespoon more later)
¾ cup water
2 tablespoons vegetable oil
½ teaspoon sugar
½ teaspoon salt
½ tablespoon active dry yeast
no-stick spray
1 tablespoon flour

INGREDIENTS – TOPPINGS

½ pound spaghetti
no-stick spray
1½ cups pasta sauce
½ pound sausage meat*
¼ pound sliced pepperoni*
2 cups mozzarella cheese

* = Substitute with your preferred toppings, if you like.

SPECIAL UTENSILS

bread maker
16″ pizza pan

Serves 6. Takes 1 hour 50 minutes.

PREPARATION – PIZZA CRUST

Add flour, water, oil, sugar, salt, and yeast to the bread maker. Do not put the yeast directly on top of the salt. Salt is bad for yeast and yeast makes the dough rise. “Ask not what your yeast can do for you. Ask what you can do for your yeast.”

Set the timer or the menu on the bread maker to “Dough.” Wait for the required time, maybe up to an hour. In the meantime preheat the oven to 400 degrees and liberally spray the pizza pan with no-stick spray. This will prevent the crust from forming a glue-like bond with the pan.

Take the dough out of the bread maker and roll it out until the dough covers the pizza pan. If you do not possess a rolling pin, any canned food can will do as long as it is at least six inches tall. Spray the pan and coat it with 1 tablespoon flour before spreading the dough.

PREPARATION – TOPPINGS

Preheat oven to 400 degrees. Read instructions for spaghetti on package. Subtract 3 minutes from the suggested time. (The spaghetti will continue to cook in the oven.) Drain.

Spray pizza pan with no-stick spray. Put pizza crust on pizza pan. Spread pasta sauce over entire crust. Make ½” sausage balls. Arrange sausage balls and pepperoni slices evenly over sauce. Distribute spaghetti evenly over pizza. Sprinkle cheese over everything. Bake pizza in oven at 400 degrees for 16 minutes or until cheese turns golden brown.

Note: This another version of pizzaghetti that simply has spaghetti and sauce served next to one or two slices of pizzas. To me, the version presented here is much more exciting.

TIDBITS

1) I must say that this is an exciting dish.

2) It’s so simple now, yet so many never had the wit to combine pizza with spaghetti.

3) But Patrice Grandchat did. Culinary financial analysts report that Mlle. Grandchat now has so much money that she’s about to launch a hostile takeover of AmazonTM. “I have a lot of things in my closets and attic that I’d like to sell,” said the billionaire Quebecoise.

4) I want to be as rich as Mlle. Grandchat. If I were that wealthy, I’d never have to think twice about spending ten cents on a recyclable plastic bag at the supermarket checkout stand. So, here are my forthcoming money-making food dishes.

A) PB&S: Peanut Butter and Steak. Simply slather your steak with peanut butter. There’s a version of this entree where the steak gets stuffed with peanut butter. This is the famous Stuffed PB&S.

B) Ravioli Burger: Substitute the meat patty in your burger with ravioli.

C) Camcowpigturducken: This is a chicken inside a duck inside a turkey inside a pig inside a cow inside a camel. Vegetarians are warned away from this dish. It’s also a diet-busting meal.

D) Taco Ice Cream: Who doesn’t love tacos? Who doesn’t love ice cream? I tell you, putting a crushed taco inside cream is a stroke of genius.

E) Roast Marshmallow Beef: It’s often called RMB by its legion of fans. Nothing’s more fun than roasting marshmallows over a campfire. And roast beef is the tastiest meat entree around. And what better way to get food fussies to eat their roast beef than hiding it inside a dessert?

F) Coke Dogs: Coca ColaTM is the world’s favorite soda. The hot dog is America’s most beloved meal. Simply boil your frankfurters in a pot of Coca Cola instead of water.

G) Bean Kabobs: Finally a way to grill beans! We never could before because beans would, of course, fall through the grill. But they won’t when they’re skewered between pork cubes and onion slices.

Fun Festivals – Rock, Paper, Scissors

I wish I had known about the following event when I was more athletic, agile, and the intellectual terror of the world. But whatever your skill level, run, jump and hop to the Rock, Paper, Scissors World Championship in Toronto, Canada. Rock, paper, scissors (RPS) is often called the best non-violent resolution to conflicts the world over. It must be so; Canadian RPS grand masters have successfully kept their country out of major conflicts for decades. Culinary personal trainers will tell would be contestants to dedicate 30 minutes each day to finger-flexing, wrist-twisting, and elbow-bending exercises if they wish to do at all well at the championship. Cross training by playing chess is often recommended as well.

RPS hit the big time when, In 2004, Fox Sports Net(tm) televised its championship. The success of the movie Dodgeball piqued the entertainment’s industry in kids’ sports. Indeed in 2007 the documentary  Rock Paper Scissors: A Greek Tragedy, depicted concerns that the Rock-Paper-Scissors game would lose its soul soul to corporate America, In fact  some RPS leagues even had Bud Light Girls(tm) performing at tournaments.

Some people with too much time on their hands said that RPS is not really sport, like curling. Proponents of RPS say, “Na, na, poo, poo to you” pointing to the high level of concentration needed to perform well, like in chess. Top-notch players watch themselves in mirrors to see if they show any tells; moves that tell the opponent what you’re going to do. Just like poker.

This is the spot where’d I tell you when the tournament is the take place and describe entry fees, side events, etc. Alas and alack, Toronto hasn’t held a championship in years. Neither have other major cities. At its peak, RPS tournament ran at a loss, even with corporate sponsorship. Also, fans are fickle, they’ve deserted RPS for trendier sports such as hopscotch and curling. So, no more RPS. Life is hard.

Fun Festivals – Elvis Impersonator Festival in Collingwood, Ontario

Perhaps the best Elvis impersonator festival in the world occurs in the summer at the Collingwood Elvis festival which thank goodness, is held in Collingwood, Ontario. It’s usually held the last weekend in July. Dang! That’s only two days from now. I don’t now if there will Covid restrictions. Sorry, there’s only so much the King can do.

This festival draws a variety of people . . . Oh heck, no it doesn’t. Only lovers of Elvis’ music will go. Oh, and Elvis impersonators. Expect to see lots and lots of Elvis impersonators. This is a good thing, however, if you love Elvis’s music and if you don’t love his songs, then why are you attending an Elvis festival?

And eat the food the King ate. See how many fried banana and peanut butter sandwiches you can devour during the festivities. Take a break and go to the nearby beach. With your Elvis batteries recharged, come back and see how many Elvises you can spot. Will he be wearing a leather jacket or a white jumpsuit? Will you see him by a goat? Will you see him on a boat? Will you see him in the park? Will you see him in the dark? Will you see him, oh so fair? Will you see him everywhere? Yes.

Elvis impersonators should note that applications are taken on a first come, first served basis. Also, don’t wear sequins. The judges know the King never wore sequins. So you will be marked down. Your so scored will be lowered enough that you’ll have no chance of winning the impersonation contest. You will return home, a broken man. Come to think of it, I don’t if a woman has ever competed. I imagine there’s been female Elvises, but I don’t know if they’ve competed here. If you do go to Collingwood to see the Kings, please let me know. At any rate there are four competitions: Canadian professional, Canadian nonprofessional, international nonprofessional and international professional.

The rest of us should put on our blue suede shoes and rock on at the Awesome Street Dance. Conclude your dancing with the midnight vigil for Elvis. Then get up in time for the Hunka Hunka Pancake Breakfast by the town hall. Bring your King size appetite. And Hell or high water won’t keep the true Elvis devotee from attending the Classic Automobile , Viper and Corvette Elvis Parade. Scads of impersonators will swarm in the cars and around them, swiveling their hips and singing away.

Get tickets well in advance for An Evening of Elvis Champions Past entertainers. You’ve spent a lot of money getting here, spending money on food, and souvenir. You deserve the best impersonators.

Tourtiere (Canadian Meat Pie)

Canadian Entree

TOURTIERE
(meat pie)

INGREDIENTSTourtiere-

1 pounds ground pork
½ pound ground beef
1 medium onion
1 small brown potato
1 garlic clove
¼ teaspoon allspice
¼ teaspoon cinnamon
¼ teaspoon ground clove
¼ teaspoon nutmeg
¼ teaspoon pepper
¼ teaspoon salt
¼ teaspoon thyme
1¼ cups water

1 small egg
1 pastry for 9″ double-crust pie

SPECIAL INGREDIENT

9″ pie pan

Takes 2 hours

PREPARATION

Dice onion. Peel potato. Slice potato into ½” cubes. Add top thirteen ingredients, ground pork to water, to large pan Bring to boil using high heat. Stir frequently. Cover, reduce heat to low-medium, and simmer for 30 minutes or until onion and potato are soft. Stir occasionally, enough to keep ingredients from burning. Add water as necessary to keep mixture moist.

Line pie pan with layer of pastry. Add pork/beef/potato mix to pie pan. Let cool at room temperature, about 30 minutes. Preheat oven to 400 degrees. Cover pork/beef/potato mix with top layer of pastry. Use fork to push edges of the pastry layers together. Use knife to make 6 1″ slits in top pastry layer. Add egg to small mixing bowl. Beat with whisk. Brush top pastry layer with thin egg coating. Bake at 400 degrees for 40 minutes or until golden brown.

2) The more aquatically minded tourists head to Nanaimo, British Columbia, for its four-day marine festival. All sorts of fun events take place, but really everyone is looking ahead to the the World Championship Bathtub Race (WCBR) which takes place on the last day. It’s a 36-mile race across the Georgia Straits which presumably is nearby. Serious contestants $3,000 on their tubs outboard motors. And after the race, why not cruise the Canadian coast in your tub? Traveling by airplane, car, train, or even cruise ship is so 2014. Just be sure to carry a good life jacket and stay close to shore, and avoid big ships.

4) Clear your musical palate by attending the Accordion Extravaganza! in Edmonton, Alberta. Pop in on all sorts of concerts, workshops, dances, and competitions, all featuring the accordion. Accordion lovers will melt in ecstasy here. Accordion haters will spontaneously combust. Culinary psychologists speculate that the three leading causes of divorce are: 1) monetary problems, 2) infidelity, and 3) irreconcilable–Woo! I spelled that word right on the first try–differences over accordion music.

5) Looking for something to do after your significant other combusted? Then make your way to the Poutine Festival in Drummondville, Quebec. Poutine, perhaps Quebec’s most famous dish, consists of French fries, beef gravy, and cheese curds or mozzarella. Listen to wonderful music while tasting caloric culinary greatness. Heart specialists are standing by.

6) Sluggish after overindulging with poutine? It’s delicious, who could not? Then have someone take you to Calgary, Alberta, International Festival of Animated Objects.. Puppet shows and performances with other animated thingys touch on dark, troubling themes. Even though, many of the shows are supposed to be family friendly, it all seems rather ominous.

7) Clear your head of scary puppets by attending any number of Scottish festivals around Canada, where they eat Scottish food, dance to Scottish music, and do all sorts of Scottish things.

8) Continue to embrace your inner Northern Europeaniness by raiding your way to the Icelandic Festival in Gimli, Manitoba, in August. The festival features a Viking encampment AND demonstrations of Viking warfare. Woot! Way Cool! Way Cool! I want to go there. I want to go. Take me with you, I’ll be ever so good. I’ll cook and clean, and everything. There is also a Viking parade which is also way cool. And don’t forget the crowning of the Fjalkona, the Maid of the Mountain. The Fjalkona is held to be the female incarnation of Iceland. Heavy responsibility, you bet! This is festival is so cool. Please take me with you.

Great Arctic Eats – Iqaluit, Nunavut, Canada

Hankering for the siren call of Canadian-Arctic cuisine? But also want to trace the failed footsteps of early explorers seeking the fable Northwest Passage? Well then, Iqaluit is a must stop for you.

The highest rated restaurant according to TripAdvisor is 

The Gallery with its superb and varied dishes is the town’s highest-rated restaurant. While dreadfully lost tourists from Indonesia might appreciate its nasi goreng, most connoisseu rs rave about its local dishes such as: musk-ox stew, Arctic cassoulet made from caribou, musk ox, game sausage, bacon, and duck, and of course, its Arctic bouillabaise.

French-food gourmands will certainly want to make the will-sappingly long and expensive flight to Iqaluit to dine at The Granite Room at Discovery Lodge Hotel. And my gosh, burgers lovers take note. The Snack–yes that is its name–has the best burgers ever.

The best Lebanese cuisine in Iqaluit is still found at Yummy Shawarma. Why go all the way to the tumultuous Middle East? Drop in at the Stonehouse & Grill for the artists’ hangout and great bar. Don’t leave  without sitting down at the wonderfully named Kickin’ Caribou for the best poutine in town.

Enjoyers of dog-team racing and igloo building cannot afford to miss Toonik Tyme. This annual festival runs from April 11 to April 20 and celebrate the Sun’s return. Good morning indeed! The Allaniat Arts Festival goes from June 27 to July 1. Enjoy art, music, film, dance, theater, and … Circus Acts. Arctic Circus! And don’t forget, Iqaluit celebrates Nunavut Day on July 9 with throat singing!,  drum dancing, and traditional cuisine.

Poutine

Canadian Entree

POUTINE

INGREDIENTSPoutine-

5 Yukon gold potatoes (or medium potatoes)
1 1/2 cups grated mozzarella cheese
1 1/2 cups beef gravy
5 cups vegetable oil

SPECIAL ITEMS

long-sleeve shirt (this dish can splatter hot oil)
deep fryer

Makes 4 bowls. Takes 1 hour.

PREPARATION

Cut potatoes into strips 1/4″ to 1/2″ wide. Soak potato strips in cold water for 30 minutes. Drain. Pat strips dry. Put oil in deep fryer. Heat oil to 375 degrees. Put potato strips in fryer. Fry strips at 375 degrees for 10-to-15 minutes or until they become crisp and turn golden brown. You will need to cook in batches. Remove fries. Put fries on paper towels to remove grease.

While the last batch of potato strips is frying, warm gravy in small pot. Put fries on large plate. Place cheese curds on top of fries and ladle gravy over everything.

TIDBITS

1) Cajun roux also splatters . It’s made of flour and oil and is dark brown. It is heat at 500 degrees making splatter from it quite painful. Chef Paul Prudhomme calls it, “Cajun napalm.”

2) They’re tasty, I know, but the most dangerous foods to eat while driving, according to the insurance industry are:

Coffee – A hot, spillable liquid. Owie! Major distraction.
Hot soup – Hot soup while driving? Are you crazy?
Tacos. – Great but messy. Go for the easier to hold burrito.
Chili – Messy and hot. Again, go for the burrito.
Hamburgers – The grease from the burger makes your hand slip on the driving wheel. Burgers cooked under heat lamps have a lot less grease. A lot less taste, too. It’s a life versus taste trade off.
Barbecued food – The sauce will go everywhere. So will your car if you eat barbecued while driving.
Fried chicken – Greaser to eat than burgers.
Jelly or cream-filled doughnuts. They squirt on the steering, the gas pedal, and the brake.
Soft drinks – Carbonation up the nose is so distracting
Chocolate – Melts on your hands, not in even your mouth. Your hands slip on the steering wheel.

Horchata From Mexico

Mexican Dessert

HORCHATA

INGREDIENTSHorchata-

2 cups uncooked long-grain rice (white is best)
2 cups water
3 1/2 cups milk
1 tablespoon cinnamon (freshly ground is best)
1 1/4 cups sugar
1 tablespoon vanilla extract

PREPARATION

Put rice and water in blender. Blend using highest setting for 2 minutes. Put blender container in refrigerator overnight.

Add cinnamon, sugar, and vanilla extract to rice/water in blender. Blend at highest setting for 5 minutes. Pour mixture into large pitcher. Add milk. Stir with long wooden spoon. This goes well served over ice. Olé

TIDBITS

1) The director for the middle school near my home loves the song, “Tequila.” However, he and the school disapprove of alcohol, so the band changed the word in the song to “horchata.”

2) “Horchata” is an anagram for “CAA, Thor.” The initials for the Canadian Automobile Association is CAA. Thor was a powerful Norse god. I think this means Thor drives a car and is a naturalized Canadian.

3) What types of car would Thor drive? A Thunderbird.

Baked Maple-Covered Doughnuts Recipe

American Dessert

BAKED MAPLE-COVERED DOUGHNUTS

INGREDIENTSMapleDo-

DOUGHNUT

1 cup pastry flour or regular flour if not available
1/2 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons milk
2 large eggs
3 tablespoons vegetable oil

MAPLE GLAZE

1 cup confectionary sugar
1 tablespoon milk
1/2 teaspoon vanilla extract
3 tablespoons maple syrup

SPECIAL UTENSILS

doughnut mold, or tray, for 6 doughnuts
no-stick spray.

PREPARATION – DOUGHNUT

Preheat oven to 375 degrees.

Combine flour, sugar, baking powder and salt in medium mixing bowl until all ingredients appear to be well mixed. Add milk, eggs, and vegetable oil to another medium bowl. Blend with whisk until mixture starts to get foamy. Pour the milk mixture into the flour mixture and blend with whisk until all is combined.

Spray doughnut mold with no-stick spray. Scoop combined mixture into each dough form until half full. Put in oven and bake at 375 degrees for 10 to 12 minutes. Doughnuts should be done when they spring back when gently poked.

Remove doughnut mold from oven. Let sit for about 3 to 4 minutes. Gently pry doughnuts from mold with knife or small wooden spatula and put on plate.

PREPARATION – MAPLE GLAZE

Combine confectionary sugar, milk, vanilla extract, and maple syrup.. Use blend setting on electric beater to mix these ingredients. Use ladle or large spoon to pour glaze over the doughnuts. Use spoon to smooth the glaze on the doughnuts. Cool doughnuts in refrigerator until glaze sets.

Eat your share before your family or friends do.

TIDBITS

1) Canada’s new $50 and $100 bills smell like maple syrup. Way cool.

2) It’s part of the bills’ anti-counterfeiting measures.

3) The maple leaf symbolizes Canada and appears on the Canadian flag.

4) Swedish meatballs smell great and symbolize that nordic nation.

5) It would be great if Swedish currency smelled like that.

6) I like the idea of baking money.

7) “Patty cake, patty cake, baker man, bake me a bill as soon as you can.”
