Chocolate Mousse

French Dessert

CHOCOLATE MOUSSE

INGREDIENTSChocolateMousse-

6 ounces bittersweet chocolate
3 eggs
1½ cups heavy cream
6 tablespoons sugar
1 teaspoon vanilla extract
1 can whipped cream (Optional in some households. Mandatory in mine.)
2 teaspoons chocolate shavings*

* = Already made chocolate shavings are hard to find. You may generate them by taking a grater or a knife to a bar of dark chocolate or
by using a food processor.

SPECIAL UTENSIL

PREPARATION

Add chocolate to pan. Cook on medium heat until chocolate melts completely Stir constantly. Put melted chocolate in large, first mixing bowl and let cool down to room temperature.

Separate egg whites from egg yolks. Add egg whites to second mixing bowl and beat them with whisk until you see peaks form. Add egg yolks to third mixing bowl and beat them egg yolks until they become fluffy. Add heavy cream, sugar, and vanilla extract to fourth mixing bowl. Whisk
until cream becomes frothy.

You may become frothy as well. Just don’t let anyone see you and if they do say you’re the chef and as chef you’re entitled to be this way and would you like to prepare dinner instead? No, I didn’t think so. Okay then, on with the recipe.

Fold egg yolks completely into melted chocolate. Fold egg whites completely into chocolate/egg white mix. Fold in heavy cream/sugar/vanilla extract mix until completely blended. Divide mousse equally between cups. Let guests garnish their mousses with a much whipped cream and chocolate shaving. Serve chilled.

Use sonic obliterator on any guests who use up the whipped cream. You don’t need the negativity of the succeeding, whipped-cream deprived guests.

TIDBITS

1) The plural of chocolate mousse is chocolate mousses.

2) The plural of moose is moose.

3) Why not?

4) Teddy Roosevelt ran for president in 1912 on the Bull Moose ticket.

5) In 1902, he saved a bear from getting shot. This idea inspired Morris Michtom to invent the teddy bear. Hundreds of millions of children have owned and loved this toy.

6) There’s a campaign picture from 1912 of Teddy Roosevelt riding a moose across a river.

7) This event inspired Silas B. Firefly to invent the chocolate moose. Chocolate moose were especially popular Easter treats for decades.

8) Indeed, we’d still be eating chocolate moose on Easter and other days as well if it weren’t for the disputed presidential election of 1960. Some people think there were enough voting irregularities in that campaign for Nixon to have won in a recount.

9) But a recount didn’t happen. Nixon thought a recount would have caused permanent divisions in America. Also, many culinary historians believe he made a deal with Kennedy. If he, Richard Nixon, would not contest the election, Kennedy would do all he could to drive the chocolate-moose manufacturers out of business, paving the way for chocolate-bunny dominance.

10) For Nixon was also a fervent chocolate-bunny lower and hated the more popular moose design. His parents never could find chocolate bunny to give their irate little Richard on Easter morning.

11) Although he never talked about it, the whole thing left Richard Milhous Nixon embittered for life. Nixon entered politics with a strong desire to set things right in America. He eventually became president.

12) As president, Nixon went to China. He negotiated treaties with them. As a result, Chinese food became wildly popular in America. We didn’t have to eat weird things in JelloTM molds any more. Nixon became wildly popular.

12) Then came Watergate. His involvement in those political shenanigans made him wildly unpopular. People forgot that all the undiscovered China dishes he brought back to this land. They forgot how good Jello could taste just by itself. Oh, and they forgot how he brought a stable, less threatening relationship with China. So, he resigned.

13) But his legacy of the chocolate Easter bunny lives on. We have not had a nuclear war since the chocolate bunny won our hearts.

14) And every president since Nixon gives a chocolate bunny to every world leader who visits America. Two bunnies, if the foreign dignitary visits the White House on Easter.

Grilled Ham and Dill Havarti Cheese Sandwiches and the Discovery of America

Fusion Entree

GRILLED HAM AND DILL HAVARTI CHEESE SANDWICH

INGREDIENTSHamAndDill-

6 tablespoons butter
8 slices of your favorite bread
1 pound slice deli ham
6 ounces dill Havarti cheese

PREPARATION

Cut butter into 4 equal pieces or pats. Cut havarti cheese into 8 equal slices. Add 1 pat of butter to skillet. Melt butter using medium heat. Add 2 bread slices to skillet. Quickly Add 1/4 of the ham slices and 2 havarti slices to one the bread slices. Put the other slice butter-side up on top of the ham and cheese.

Grill for 2 minutes on medium heat or until bottom slice is browned on bottom. (Unless you have a skillet made of transparent aluminum, you will have to use your spatula to take a peek.) Carefully flip sandwich over and grill other side for 2 minutes or until the new bread on the bottom is golden brown and cheese has melted. (Note: cooking times for this sandwich will tend to become shorter with each new sandwich as the skillet absorbs more and more heat.)

TIDBITS

1) On April 1, 1491, Chef Bjorn Havarti sailed west from Copenhagen, Denmark, to discover a shorter route to the empire of the Great Khan. His voyage lasted just two minutes Remarkably, Mr. Havarti had not succeeded in hiring and keeping a crew. To this day, in Denmark, attempting a great task with woefully insufficient resources is called, “pulling a Chef Bjorn.”

3) Apparently, the Danish chef had prepared a bon voyage dinner of lutefisk. Four of their senses damaged beyond repair by contact with lutefisk, the entire crew elected to stay ashore. Before Bjorn could raise funds for another voyage, Christopher Columbus would discover America*. Bjorn was destined to be forgotten for two tidbits.

4) * = Columbus was not the first to discover America. Arriving before him were the First Americans who crossed over the land bridge from Asia, possible voyagers from China, and Vikings. Apparently, America can be discovered many times. You just need a new starting point.

5) Okay, I look out my window and see America. I hereby state that I am the first one to discover America from my home in Poway, California. April 24th will now be known as Chef Paul Day.

5) Chef Bjorn learned his lesson and devoted his life to discovering a truly tasty food. On April 1, 1920, just 429 years later, he succeeded with his pièce de resistance, Havarti cheese. He died just one day later, exhausted but triumphant.

Sausage and Lentil Soup

American Soup

SAUSAGE AND LENTIL SOUP

INGREDIENTSSausageLentilSoup-

1 pound Italian sausage
2 tablespoons olive oil
2 garlic cloves
3 medium onions
1 1/4 cups brown lentils
2 stalks celery
2 carrots
1 bay leaf
3/4 teaspoon thyme
1/4 teaspoon pepper
1/2 teaspoon Italian seasoning
64 ounces chicken broth
12 leaves spinach

makes 8 bowls

PREPARATION

Sauté sausages in olive oil in pan on medium heat for 10 minutes or until done. Remove sausages. Cut sausages into slices 1/4″ thick. Dice garlic cloves and onions. Add garlic and onion to pan. Sauté garlic and onion on medium-high heat for 5 minutes or until onion is tender. Devein celery. Dice celery, carrots, and spinach. Add all ingredient to large pot. Cover pot and simmer on warm-low heat for 2 hours.

TIDBITS

1) This recipe uses garlic. Garlic wards off vampires.

2) Italy uses a lot of garlic. It has hardly any vampire sightings worth mentioning.

3) Garlic never wards off sausages. Italy has a lot of sausages.

4) So, it could be argued it’s all those Italian sausages that keep vampires away.

5) I’ve looked at garlic and Italian sausage. Neither item looks particularly scary to me. But then again, I’m not a vampire. However, most vampires don’t fear tax auditors as much as we humans do. This is because they don’t have jobs. They just bite necks of teenagers who don’t have the wit to get out of a scary building.

6) The United States, Russia, and China don’t have vampires. It’s safe to say the armies of these mighty nations are well equipped with garlic and Italian sausages.

Pico de Gallo

Mexican Appetizer

PICO DE GALLO

INGREDIENTSPicoDeGallo-

4 Roma tomatoes
1 medium white onion
1 jalapeno pepper (1/2 or even 1/4 if you like it milder)
1 tablespoon fresh cilantro
4 teaspoons lime juice
1/2 teaspoon salt

PREPARATION

Dice tomatoes, onion, and cilantro. De-seed and dice jalapeno. (Wash hands afterward. If you touch your face before washing, it will burn.) Put tomato, onion, jalapeno, cilantro, lime juice, and salt in bowl. Mix with spoon.

TIDBITS

2) Pico de gallo goes well with tortilla chips.

3) Guatemala has suffered through many years of civil wars. Peasants would often take to the hills to avoid the guerrillas and the government forces. The villagers’ main source of sustenance was the humble tortilla. However, old tortillas dry out and become hard to eat. So the peasants would fry their tortillas in oil to make tortilla chips which lasted longer.

4) Humanity began its ascent in the Americas with the development of the first tortillas in 10,000 B.C.. Beer provided the upward impetus across the Atlantic Ocean. Civilizations such as the Aztecs and the Mayans flourished because of the tortillas and indeed they developed advanced art, architecture, math, astronomy, and pico de gallo. America has the world’s largest economy because of its great tortilla chip and beer industries.

5) The Spanish royalty dispatched Christopher Columbus in 1492 to find these fabled tortilla lands. In 1519 Hernando Cortez conquered the Aztecs on Central Mexico securing a Spanish tortilla monopoly. Mexican tortillas would provide the sustenance for the many and mighty armies that held together the vast and numerous of the Spanish empire..

6) In 1993 China began producing flour tortillas. China will soon have the world’s largest economy.

Meatball Pizza

Italian Entree

MEATBALL PIZZA

INGREDIENTSMeatballPizza-

1/2 onion
1 red bell pepper
flour
pizza crust (bought or from below recipe)
1 14.5 ounce can diced tomatoes
1/2 cup pasta sauce
1/2 teaspoon garlic
1/2 pound ground beef
2 teaspoons Italian seasoning
1 cup grated mozzarella cheese
no-stick spray

SPECIAL UTENSIL

PREPARATION

Preheat oven to 400 degrees.

Slice onion and bell pepper into thin rings. Cut rings in half. Dust pizza pan with flour and spray with no-stick spray. Put pizza crust on pizza pan. Spread diced tomatoes and its juice evenly over the pizza crust. Spread pasta sauce evenly over the crust.

In small mixing bowl, smoosh garlic and ground beef together. Use hands to form meatballs 1/2″ inch cross. Sprinkle meatballs, Italian seasoning, and mozzarella evenly over pizza. Put pizza in oven and bake at 400 degrees for 10-to-15 minutes or until cheese or crust is golden brown.

TIDBITS

1) Favorite pizza toppings around the world:

America: bacon, ground beef, bell pepper, extra cheese, mushrooms (ugh. Sorry, I don’t like them), onion, pepperoni, sausage, tomatoes
Australia: shrimp, pineapple, barbecue sauce
Brazil: green peas, hard-boil eggs
China: thousand island dressing, eel sushi
Costa Rica: coconut, pineapple
France: flambée (bacon, onion, fresh cream)
Germany: egg, asparagus
India: pickled ginger, lamb, chicken tikka
Japan: ketchup, eel, squid, and Mayo Jaga (mayonnaise, potato, bacon)
Korea: sweet potato, shrimp
Netherlands: double meat, double cheese, double onion
Pakistan: curry
Russia: mockba (a combination of sardines, tuna, mackerel, salmon, and onions), red herring
Venezuela: corn, goat cheese

2) But if you really want to visit the cutting edge of pizza making you must go to Sweden where the following smorgasbord of toppings are popular: allspice, artichoke, banana, bacon, beets, bell pepper, Bearnaise sauce, cabbage, caper, carrot, chicken, chocolate, crab, curry, duck, eggplant, filet mignon, French fries, fruit cocktail, gorgonzola, guacamole, ham, hard-boiled eggs, honey. kebab meat. leeks, mashed potato, mayonnaise, onion, peanut, pepperoni, pickles, pineapple, raisin, salami, sausage, shallot, shrimp, white sauce, taco spices, tuna, and zucchini.

3) I really can’t explain Sweden’s unbridled culinary wildness. Swedish cuisine was much blander when I visited the country some years ago. Was there a mass poisoning of chefs by rotten lutefisk at a culinary convention? It’s quite possible; how can you detect bad lutefisk?

4) There are more pizza toppings in Sweden than are dreamed of in your philosophy.

Venezuelan Hot Dogs Recipe

Venezuelan Entree

VENEZUELAN HOT DOGS

INGREDIENTSvenezhd-

1 small onion
1/8 head cabbage
1 3 ounce bag plain potato chips (or whatever amount is close or preferred)
6 potato hot-dog rolls (regular okay)
6 pork hot dogs (beef okay)
mayonnaise
mustard
ketchup

SPECIAL UTENSIL

rice cooker with steamer insert

PREPARATION

Mince onion and cabbage. Smash the potato chips into little bits. My preferred way is to hit the potato-chip bag a number of times with my fist. (Don’t be so enthusiastic that the bag ruptures and little chips fly all over the kitchen.)

Fill bottom of rice cooker with enough water to cover hot dogs. Bring water to boil. Add hot dogs. Put in steamer insert. Add as many rolls as will fit on the insert. Cover with lid. Cook for 2-to-3 minutes or until rolls are warm and soft. Remove rolls. (Be sure to check; over-steamed rolls can get soggy.) Add remaining rolls and cook another 2-to-3 minutes. Remove rolls. Remove hot dogs with tongs or fork.

Put hot dog in roll. Spoon desired amounts of onion, cabbage, and potato chips on hot dog. Squirt mayonnaise, mustard, and ketchup on top of your creation until you are happy. (Eat with the cut of the roll facing up. This is a messy hot dog.)

TIDBITS

1) The recent leader of Venezuela was Hugo Chavez.

2) The United States did not have the best relationship with him.

3) But Venezuela’s hot dogs are great. Perhaps we could show the new Venezuelan leadership how much enjoy this dish.

4) We have good hot dogs as well. Our president could bring their president chili dogs and Coney Island dogs. My their president could give us Venezuelan hot dogs to bring back to the United States.

5) Hot Dog Diplomacy. We should give it a chance. After all, look what Ping-Pong Diplomacy did for China and America.

Bacon Buttermilk Pancakes Recipe

American Breakfast

BACON BUTTERMILK PANCAKES

INGREDIENTSbutt-

15 slices bacon (about 1 pound)
1/2 cup butter
1 cup cultured buttermilk blend
4 cups water
3 cups all-purpose flour
1/4 cup white sugar
1/4 cup baking powder
2 teaspoons baking soda
1/2 teaspoon salt
4 eggs

You can, of course, buy buttermilk instead of buttermilk blend, but your buttermilk will go bad if you don’t use it right away.

SPECIALTY UTENSILS

griddle or skillet

PREPARATION

Cut bacon strips in half. Fry bacon on medium-high heat until it starts to get crispy. Put bacon on towel-covered plate.

Melt butter. Use “batter” setting on electric mixer, or beater, to combine buttermilk blend, water, eggs, and butter. Combine in a second large mixing bowl: flour, sugar, baking powder, baking soda, and salt. Pour the contents of the second bowl into the first mixing bowl. Mix together with fork until just blended.

Fire up the griddle to 350 degrees. Use a 1/2-cup ladle to pour your batter onto the griddle. Put two half bacon strips in batter. Cook for 1 3/4 minutes on the first side and for 1 1/2 minutes on the second side or until brown on both sides.

Makes about 16 8-inch diameter pancakes. Come join bacon mania.

TIDBITS

1) Bacon makes you smart.

2) The choline, whatever that is, in bacon stimulates fetal brain development.

3) China began preserving and salting pork bellies around 1,500 B.C.

4) China was one of the first places on Earth to develop a complex, thriving civilization. It is the most populous nation in the world.

5) The Greeks were one of the first peoples in the West to preserve and salt pork. The Greeks developed modern Western philosophy.

6) The Romans preserved and salted pork. They built the largest empire Europe and the Mediterranean world has ever seen. America’s founding fathers consciously based our system of government on the Roman model.

7) Americans eat bacon all the time. America’s economy is the largest in the world.

8) But other countries’ economies are catching up. Their peoples are eating more bacon.

Cashew Chicken

Chinese Entree

CASHEW CHICKEN

INGREDIENTSCashChx-

4 boneless and skinless chicken breasts

MARINADE

2 teaspoons peanut oil
1/2 cup soy sauce
3 tablespoons chili powder
1/2 teaspoon ginger powder
1/2 cup honey
4 teaspoons corn starch
2 teaspoon malt vinegar

MAIN

2 cups cashews
1 stalk green onion

4 green bell peppers
1 medium white onion

3 teaspoons soy sauce
3/4 cup water
1/4 teaspoon white pepper
2 1/2 teaspoons sugar
2 1/2 malt vinegar
1/2 teaspoon sesame oil

1 cup rice

PREPARATION

MARINADE

Cut chicken breasts into 1-inch cubes. Place cubes in mixing bowl. Add soy sauce, chili powder, ginger powder, corn starch, and malt vinegar. Mix thoroughly with hands or until chicken cubes are completely coated with this mixture. Let marinate from 30 minutes to several hours, the longer the better. (That is if your stomach stimulated by the wonderful aroma received by your nose will let you.)

MAIN PART

While waiting for chicken to marinate, add cashews to saucepan and cover with water. Bring water to boil and simmer for about 6 minutes until cashews become soft. Remove pan from heat, drain water, and set softened cashews aside. Dice green onion.

Mince green bell peppers and white onion. Sauté bell peppers and onion in saucepan until onion become soft and clearer. Add in: marinade, soy sauce, water, white pepper, sugar, malt vinegar, and sesame oil. Heat on medium high until all the chicken cubes are no longer pink inside. Determine the color by cutting a cube open. (Unless, of course, you are SupermanTM and have x-ray vision.) Stir frequently.

While chicken is cooking, prepare rice according to instructions shown on bag. Combine chicken cubes, marinade, green onion, and cashews. Serve on top of rice and enjoy.

TIDBITS

1) Ancient Babylon’s women ate sesame seeds and honey to prolong health and beauty.

2) Ancient Roman’s soldiers ate the same things to get strength and energy.

3) I wonder how many times the sesame seed/oil mixture gave beauty to the Roman soldiers and strength to Babylonian women. I mean sesame seeds and oil aren’t smart at all. I could very see how these inanimate objects could confuse these two missions.

4) Danged ants keep running across my keyboard. What do they expect to find here? There’s no food here. Stupid ants.

5) Great! Now, I’ve lost my train of thought. Stupid ants.

6) I wish I could make a deal with them. Stay out of my house forever and I’ll dump every morsel of food that doesn’t get cooked–such as fat, yum–-or eaten.

7) But ants aren’t that smart. That’s why they sometimes crawl over my keyboard looking for food. Stupid ants. Whap! One fewer ant. One fewer ant for Paul’s office, one great victory for picnickers everywhere.

Teriyaki Chicken With Rice

Japanese Entree

TERIYAKI CHICKEN WITH RICE

INGREDIENTS

2 garlic cloves
1 1/2 teaspoons water (3 cups more later)
1 1/2 tablespoons cornstarch
1/2 cup sugar
1/2 cup soy sauce
1 1/2 tablespoons cider vinegar
1/4 teaspoon ginger
1/4 teaspoon Poultry MagicTM spice
3 chicken breasts

1 1/2 cups brown rice
3 cups water
2 yellow bell peppers
2 stalks green onion

PREPARATION

Preheat oven to 400 degrees. Mince garlic cloves. Cut chicken breasts into fourths. Dice yellow peppers and green onion.

Add garlic, water, cornstarch, sugar, soy sauce, cider vinegar, ginger, and poultry spice. Stir frequently while cooking on medium-high heat until sauce thickens and bubbles. Do not boil.

Pour sauce into baking dish, size 8-inches by 8-inches or greater. Put chicken into pan. Turn the chicken pieces around in the sauce until all sides are coated. Bake the chicken for about an hour or until done.

While chicken is baking, cook rice as directed on the bag of rice, use rice, or cook until rice is tender. Add minced bell peppers and green onion to top of rice.

Put rice mixture in bowl. Add teriyaki chicken and sauce.

TIDBITS

1) Don’t spill cornstarch. That white stuff gets everywhere.

2) “Teri” is Japanese for “luster” coming from the sauce and “yaki” means “grill.”

3) The “Why did the chicken cross the road?” joke came from vaudeville about a hundred years ago.

4) The most prestigious act out of ten vaudeville acts was the ninth.

5) I looked up “Fun facts about soy sauce” on GoogleTM and was given “Fun facts about strippers” as the second entry. I don’t believe I want to know the connection between soy sauce and strippers.

6) Often Chinese greet each other with “Have you had your rice today?” instead of “How are you?” Much nicer than “How’s it hanging?” don’t you think?
