Matambre, Argentinian Stuffed Flank Steak

Argentinian Entree

MATAMBRE
(stuffed flank steak)

INGREDIENTSMatambre-

2 pounds flank steak (or skirt steak)
2 eggs
2 carrots
1 celery stalk
2 garlic cloves
1 large onion
2 tablespoons olive oil (2 more tablespoons later)
¼ teaspoon pepper
¾ teaspoon salt
¾ teaspoon parsley
¼ teaspoon thyme
5 ounces spinach
2 tablespoons olive oil
5 cups beef stock
1½ cup red wine

Makes 4 plates. Takes 2 hours.

SPECIAL UTENSILS

Dutch oven
kitchen mallet
kitchen twine

PREPARATION

Butterfly steak if more than 1″ thick by slicing it lengthwise from one side to ½” of the other side. Pound the steak to flatten to less than ½” thick and to even out the thickness. Add eggs to pot. Bring to boil using high heat. Boil for 9 minutes. Remove eggs and let them cool. Peel eggs. Cut each into 4 slice along their lengths. While eggs boil, mince carrots, celery, garlic, and onion. Add carrot, celery, garlic, onion, and 2 tablespoons olive oil to pan. Sauté on medium-high heat for 5 minutes or until onion softens.

Rub pepper and salt into butterflied flank steak. Sprinkle carrot/celery/onion mixture, parsley, and thyme over steak leaving a ½” border along the sides. Layer the spinach over the oniony mixture. Top with egg slices.

Tightly roll up steak into a long roll. Tie steak with kitchen twine. Tie at 1″ intervals. Put 2 tablespoons olive oil in second pan. Add steak roll to Dutch oven. Sauté on medium-high heat for 5-to-8 minutes or until steak is golden brown on all sides. Turn steak roll occasionally to ensure even browning. Add beef stock and red wine. Reduce heat to low. Simmer for about 1½ hours or until meat is quite tender. Cover Dutch oven if liquid doesn’t completely cover the steak roll. Turn occasionally to ensure even cooking.

Remove beef and place on cutting board. Cut steak roll crosswise into ½” slices. Add slices to plate. Top with beef stock/wine as desired. Goes well with small boiled potatoes such as Yukon gold. This dish is also quite tasty when served cold. Save the leftover beef stock/wine. It makes an excellent base for soup.

TIDBITS

1) Matambre is an anagram for Beam MartTM.

2) Beam Mart is your one-stop place for all sorts of beams.

3) High beams is quite a popular sport. All of the high beams used in the Olympics are manufactured and sold by Beam Mart.

4) All.

5) India and Pakistan once were the favorites to host the Olympics for a particular year. Both tried to outdo each other with building new, state-of-the-art athletic venues and with wining and dining the Olympic committee. The competition between the two countries grew fierce. Tensions escalated rapidly. The two nations rushed infantry and tanks to their common border. Fighter planes and bombers were armed. Military commands took their “Launching Nuclear Weapons For Idiots” off their bookshelves. Generals started to jaywalk. Things looked grim.

6) Beam Mart stepped in. The company, in no-uncertain terms, told India and Pakistan to back off. If they went to war, Beam Mart would stop supplying high beams. No high beams for practicing, no gold medals for the high beams. No gold medals for the high beams, no prestige at all in the international community. Other nations, Liechtenstein included, would laugh at them. Pooh pooh even.

7) The generals wavered.

8) And no high beams for your fancy automobiles, thundered Beam Mart, if you go to war. But we must have something to show our peoples for all our effects, whimpered the military leaders.

9) So, Beam Mart sold them their famous Beam SmilesTM with only a 10% markup. The leaders of Pakistan and India quickly agreed to a comprehensive peace. And the people of both lands smiled and smiled and beamed and beamed.

10) This happy state of affairs didn’t last forever, of course, but things never again got as tense between these two countries ever again. The leaders know firsthand the power of Beam Mart and make sure never ever again to rattle their sabers so vigorously.

11) Of course, the world still has hot spots. In these cases, at least one of the angry nations has no desire to win Olympic gold medals for the high beams. It seems incredible that countries could act that way, but it’s true. There is a limit to corporate diplomacy, even for Beam Mart.

Korean Army Base Stew

Korean Entree

ARMY BASE STEW
(Budae Jjigae)

INGREDIENTSArmyBaseStew-

1 12-ounce can SPAMTM
4 hot dogs
1 12-ounce package firm tofu
1/2 yellow onion
3 stalks green onions
2 cloves garlic
4 cups chicken stock
2 tablespoons gochuchang (hot Korean paste)
1 tablespoon gochucharu (or red pepper flakes)
1 teaspoon sugar
1/2 tablespoon sesame oil

1 3-ounce package ramen (don’t use spice packet)

PREPARATION

Slice SPAM, hot dogs, and tofu into 1/2″ cubes or slices. Dice yellow onion, green onions, and garlic cloves. Add all ingredients except ramen to large pot. Bring to boil on high heat, about 10 minutes, stirring frequently. Reduce to low heat and simmer for 15 minutes. Stir occasionally. Add ramen (no spice backet) and simmer on low 5 minutes. Stir occasionally. It’s spicy and enjoyable.

TIDBITS

1) Koreans love SPAM. Who knew? Okay, smarty pants, besides Koreans.

2) Many Koreans went hungry during and just after the Korean War. Thousands and thousands averted starvation only by getting food from nearby American army bases. The most prevalent gift from the GIs were cans of SPAM. People there are still grateful for this food and SPAM has been adopted into Korean cuisine.

3) I’ve heard that SPAM is popular in the Philippines as well because of the SPAM American soldiers brought with them in 1944 to 1946. My father was stationed in the Philippines after the War as part of America’s SPAM diplomacy.

4) South Korea is a firm ally of America and a strong trading partner. North Korea, however, threatens us with nuclear attack. Why? Because America never got a chance to get its SPAM bearing armies into that land. SPAM brings peace and amity everywhere. Wonderful SPAM, glorious SPAM.

Dulce de Leche

Mexican Dessert

DULCE DE LECHE

INGREDIENTSDulceDeLeche-

1 14-ounce can condensed milk
1 14-ounce can evaporated milk

PREPARATION

Add condensed milk and evaporated milk to pot. Cook on medium heat for 10 minutes or until liquid begins to boil. Stir frequently. Reduce heat to low and cook for about 30 minutes or until liquid thickens and turns toffee color. Stir frequently to avoid burning and boiling over.

Serve by itself or with ice cream, pancakes, cakes, beans, bread, or crackers.. This will keep for months if poured into an airtight, sterilized jar and kept in the refrigerator. But that won’t happen, it’s too delicious.

TIDBITS

1) I had always thought dulce de leche to be Mexican. But no, a swirling controversy exists over its country of origin.

2) Indeed, Argentina once pressed the United Nations to declare dulce de leche an Argentinean culinary creation. Uruguay presented a counter claim and the world edged closer to conflict. The crisis receded when delegates from both countries partook of dulce de leche. This wondrous dessert is simply too delectable and filling to leave room for acrimonious debate and world slumbered its way back to peace.

3) Argentineans claim a maid was so distracted by attending to delegates to a peace conference that she forgot about the sweetened milk on the stove. She returned to find a caramel paste which everyone loved. A peace treaty was soon signed. I’m telling you; culinary diplomacy is the surest way to lasting, international peace

4) Legend has dulce de leche being used as medicine in India about 5,000 years ago. Some people even now use dulce de leche as an alternative medicine. Is there nothing this dessert can’t do?

5) One of Napoleon’s cooks accidentally made dulce de leche for his troops. Napoleon himself had a dessert named after him. Sure, he tried to conquered all of Europe, but we all have our bad points, don’t we? It’s time to move on and remember the desserts the French Emperor gave us and use them to build a lasting peace just like the Argentineans and Uruguyans.

Blackened Potato Crisps From Ghana

Ghanian Entree

BLACKENED POTATO CRISPS

INGREDIENTSBlackPotatoCr-

2 brown potatoes
3 clove garlic
2 tablespoons honey
1 tablespoon cayenne
3 tablespoons fresh ground ginger
1 tablespoon salt
3 cups oil

SPECIAL UTENSIL

electric skillet
food processor with thinnest slicing disk

PREPARATION

Wash potatoes. Use food processor to make thinnest possible potato slices. Dice garlic. Put potato slices, garlic, honey, cayenne, ginger,and salt into mixing bowl. Mix ingredients with hands until spices coat potato slices.

Put oil in skillet. There should be enough to cover potato slices. Heat skillet to 375 degrees. Put one potato slice in skillet. Oil is hot enough when the slice starts to dance around. Carefully put potato slices in hot oil. (Getting splattered by hot oil hurts quite a bit. May I suggest using the skillet lid as a shield between yourself and the oil?) To ensure even and crispy cooking, make sure none of the potato slices touch each other. You will most likely need to cook the potato slices in batches.

Fry each batch at 375 degrees for 7 minutes or until the slices become crispy. Remove slices with spoon with holes in it. Put slices in bowl. Remove remaining oil with paper towel. Repeat for each batch.

Promote world peace with this bit of culinary diplomacy.

TIDBITS

1) Nanotechnology is the latest rage in science.

2) Scientists hope to use nanotechnology to solve all sorts of tiny problems using tiny devices that are maybe a nanometer, one-billionth, meter wide.

3) I am going to make my culinary name with nanocuisine. Entrees, such as, coq au vin, would be made as small as a nanometer wide.

4) Nanocuisine would provide great opportunities for fusion cuisine. I could create a fish taco/cheese-egg salad/ salad Niçoise/paella/sauerkraut/ ham and cheese omelette,suaasat/lasagna,kung pao chicken/doro wat dinner with ease.

5) Indeed with nanocuisine most dishes would be mere molecules wide. I could easily make a dish that combined every appetizer, every soup, every salad, every entree, and every dessert.

6) So, I will cook the first truly global fusion dish.

7) The Nobel Cuisine prize cannot be far behind.

8) I just need to find a food processor that makes nanometer-thick slices.

Venezuelan Hot Dogs Recipe

Venezuelan Entree

VENEZUELAN HOT DOGS

INGREDIENTSvenezhd-

1 small onion
1/8 head cabbage
1 3 ounce bag plain potato chips (or whatever amount is close or preferred)
6 potato hot-dog rolls (regular okay)
6 pork hot dogs (beef okay)
mayonnaise
mustard
ketchup

SPECIAL UTENSIL

rice cooker with steamer insert

PREPARATION

Mince onion and cabbage. Smash the potato chips into little bits. My preferred way is to hit the potato-chip bag a number of times with my fist. (Don’t be so enthusiastic that the bag ruptures and little chips fly all over the kitchen.)

Fill bottom of rice cooker with enough water to cover hot dogs. Bring water to boil. Add hot dogs. Put in steamer insert. Add as many rolls as will fit on the insert. Cover with lid. Cook for 2-to-3 minutes or until rolls are warm and soft. Remove rolls. (Be sure to check; over-steamed rolls can get soggy.) Add remaining rolls and cook another 2-to-3 minutes. Remove rolls. Remove hot dogs with tongs or fork.

Put hot dog in roll. Spoon desired amounts of onion, cabbage, and potato chips on hot dog. Squirt mayonnaise, mustard, and ketchup on top of your creation until you are happy. (Eat with the cut of the roll facing up. This is a messy hot dog.)

TIDBITS

1) The recent leader of Venezuela was Hugo Chavez.

2) The United States did not have the best relationship with him.

3) But Venezuela’s hot dogs are great. Perhaps we could show the new Venezuelan leadership how much enjoy this dish.

4) We have good hot dogs as well. Our president could bring their president chili dogs and Coney Island dogs. My their president could give us Venezuelan hot dogs to bring back to the United States.

5) Hot Dog Diplomacy. We should give it a chance. After all, look what Ping-Pong Diplomacy did for China and America.
