The Vice President Doesn’t Like Me

 

Some time ago*, Joe Biden, the Vice President, of this august land sent me a post titled, “I’ve had it up to here.” I don’t know what I’ve could have done to upset him. I’ve never even met him. If someone teepeed his house, all I can say is that I didn’t do it. Sure I ran for the presidency back in 2012, as part of the Bacon & Chocolate ticket. Sure I could have won. Sure, I could have taken enough votes away from the democrats for the republicans to have elected Romney. But I didn’t. Obama’s president and Biden’s vice president and I’m not and Candace Bowen isn’t the VP, and that’s that. We got over the election. I thought Obama and Biden could do the same.

And just when I thought it had all calmed down, I got the following post from the Vice President:

“Dig Deep, Paul”

Again, Joe, I protest. I didn’t do anything. If someone sent you a pizza to your home, I’m not paying for it. This is a typical college prank. I’m not digging deep.

My I suggest you calm down with a nice, cold root beer. Life’s too short.

* = I have no idea when. Indeed, the sequence of events might be off. Having a poor memory could be a good thing if I ever have to deny knowing anything.

Caesar’s Salad

Mexican Entree

CAESAR’S SALAD

INGREDIENTSCaesarsSalad-

1 head romaine lettuce
4 bread slices
2 garlic cloves
1/4 cup olive oil (1 tablespoon more later)
2 ounces anchovies, cut in half (optional)

1 egg
2 teaspoons Dijon mustard
1/4 teaspoon pepper
1/4 teaspoon salt
2 tablespoons lemon juice
½ teaspoon Worcestershire sauce
1 tablespoon olive oil
1 tablespoon red wine vinegar

1/3 cup grated Parmesan cheese

PREPARATION

Separate romaine lettuce into leaves. Tear leaves into 1″ squares. Remove crusts from bread slices. Cut bread into ½” cubes. Cut one garlic clove into four pieces and rub them along the salad bowl. Discard. (Oh no, no, discard the garlic pieces, not the salad bowl. Goodness, careful sentence structure matters.)

Add the other garlic clove and 1/4 cup olive oil to pan. Sauté at low-medium heat for 5 minutes or 300 seconds. Discard garlic clove. (It’s a bad day to be garlic.) Add bread cubes to pan. Sauté at medium heat for 5 minutes or until bread cubes are crisp on all sides. Stir frequently. Remove crisp bread crumbs or croutons and place them on paper towels to drain.

Add romaine squares and croutons to salad bowl. (Add optional anchovies here.)

Add egg, Dijon mustard, pepper, salt, lemon juice, Worcestershire sauce, olive oil, and red wine vinegar to blender. Use mix or middle setting to blend ingredients for 30 seconds. Pour this dressing into salad bowl. Lightly toss salad. Sprinkle salad with Parmesan cheese.

Note, pregnant women and small children should not eat raw eggs.

TIDBITS

1) Anchovies are a happening item. Italian prostitutes of the 18th century used anchovies when making their famous “spaghetti alla puttanesca” for their customers.

2) The Romans used anchovy entrails to make an aphrodisiac, to reduce ulcers, to cure dysentery, or to season their food.

3) So if you were a Roman woman and a man had you over for dinner and he served anchovy sauce, you might want to wonder about him.

4) On the other hand, we could dramatically cut the cost of health care by requiring all pizzas to come with anchovies. We wouldn’t need hospital or medical insurance, just a large anchovy with extra cheese.

5) And the aphrodisiacal–whoa spell check is okay with that–qualities of anchovy pizzas would mean we wouldn’t have to see those ViagraTM ads on T.V. anymore.

6) But PlayboyTM would sport ads about anchovies all the time.

7) The entire economy would be directed to processing anchovies.

8) Military spending would fall to zero.

9) Our anchovy-driven sexual frenzies would leave us wide open to conquest by our enemies.

10) But anchovies also contain a toxin called domoic acid whichcan drive a seagull insane if ingested in too large a quantity.

11) Which is why the United States Army has warehouses full of anchovies. Within 15 minutes of an enemy invasion, the roofs of all these warehouses retract to reveal millions of vats just brimming with anchovies.

12) America’s heroic seagulls would then gorge themselves on their favorite food, became crazy and attack the invaders, just like in Alfred Hitchcock’s, The Birds.

13) America cannot be conquered.

14) But then any country with sufficient anchovies and pelican couldn’t be conquered.

15) Countries would have an incentive to stockpile these items.

16) I fear an anchovy-and-pelican race between nations.

17) But if worse comes to worse, we will blast the Barney-the-Dinosaur song at our enemies until they cry uncle.

18) Let us banish this frightening scenario by sipping on a wonderful, ice cold root beer. Ah, life is good again.

Danish Meatballs in Curry (boller i karry)

Danish Entree

MEATBALLS IN CURRY
(boller i karry)

INGREDIENTS – MEATBALLSMeatballsCurry-

4 garlic cloves
2 small onions
½ pound ground beef
½ pound ground pork
1 cup bread crumbs
1 egg
1/4 teaspoon pepper
1/4 teaspoon salt
5 cups beef stock

INGREDIENTS – CURRY SAUCE

2 tablespoons butter
2 tablespoons curry powder
1 leek
1 medium onion
4 tablespoons flour
3/4 cup cream
1 teaspoon chives
1 teaspoon parsley

Serves 6, particularly if everyone eats 1/6th of this.

PREPARATION – MEATBALLS

Mince garlic cloves and 2 small onions. Mix ground beef, ground pork, bread crumbs, garlic, onion, egg, pepper, and salt with hands in mixing bowl. Make 1″ meatballs.

Add beef stock to large pot. Bring beef stock to boil on high heat. Carefully add meatballs to pot. Reduce heat to low and simmer for about 20 minutes or until meatballs begin to float. Remove meatballs from pot and set aside. Save the beef broth in pot.

PREPARATION – CURRY SAUCE

While meatballs simmer, dice leek, and medium onion. Add butter, curry powder, leek, and diced medium onion. Sauté on medium-high heat for 5 minutes or until diced medium onion softens. Stir frequently. Add flour. Mix well with spoon. Gradually mix in 2 1/2 cups of broth taken from pot or until sauce thickens. Add cream and meatballs. Reduce heat to low. Simmer for 10 minutes. Stir occasionally. Sprinkle chives and parsley on top. This dish goes well over rice.

TIDBITS

1) The meatball is really a smaller version of meatloaf. Some people have meatballs as a topping for their pizzas.

2) Wouldn’t a meatloaf pizza be exciting? Imagine getting a 16″ pizza topped with three 9″ by 6″ meatloaves. It would feed an army.

3) The Roman Empire is known for its all conquering armies. It’s less known for its culinary achievements. That’s a shame as Rome is the birthplace of the meatball. Rome rocks.

4) Okay, ancient Rome didn’t rock for everyone, the slaves, for example, come to mind as do the people of the many conquered nations.

5) One might wonder how the Roman Empire kept all its conquered peoples from continually revolting. After all, the legions marched everywhere and took longer than waiting in lines at Disneyland to get from their barracks to disaffected regions.

6) The answer is in the massive stockpiles of meatballs kept at all the crossroads of the Empire. As long as the Roman authorities could rush meatballs to its conquered peoples, no riot ever grew so large the slowly arriving legionnaires couldn’t handle it.

7) Rome almost fell to barbarians, in the third century A.D., when they lost the province of Dacia with its rich cattle lands. Fewer cattle, fewer meatballs. Fewer meatballs, more riots. More riots not stopped with meatballs, more revolts. And that meant legions got withdrawn from the frontiers to put the revolts. Barbarians poured across the sparsely defended border.

8) It really appeared as Rome was going to fall. Fortunately the cattlemen of Dacia organized cattle drives to still safe provinces such as Cisalpine Gaul and Thracia. “Head ‘em up, move ‘em out.” Meatball production bounced back within a few decades and the Empire recovered.

9) In 405, however, the health sage, Atticus Bananicus, convinced the legionnaires to go vegetarian. As a result, many of Rome’s cattlemen switched to raising free-range chickens.

10) But in 406, Bananicus was seen by legionnaires eating a meatball pizza. The dormant meatball tastes of the Roman soldiers came out of hibernation. All at once, every soldier demanded meatballs. But there were no longer enough meatballs for the army and the peoples of Rome. The army garnered all the meatballs, leaving none for the restive populace. Unquenchable revolts erupted everywhere. The entire Roman army abandoned the frontier, getting decimated putting down the ferocious uprisings.

12) Alaric and the Visigoths–that sounds like a 60s rock band doesn’t it?–sacked Rome in 410 A.D.. The Roman Empire never rebounded from this disaster and soon collapsed. Always keep meatballs in your refrigerator. It’s frightening to contemplate what would happen if our supermarkets ran out of that peace-ensuring food.

13) Food connoisseurs are invited to read book II of Marcus Gavius Apicus’ “De re coquinaria libri decem (Cuisine in Ten Books)” to see the world’s first recipe for meatballs. And feel at peace.

Sausage and Pepperoni Pizza

Italian Entree

SAUSAGE AND PEPPERONI PIZZA

INGREDIENTSSausagePeppPizza-

1 pizza crust
2 cups pasta sauce (see recipe)
8 ounces sausage meat
4 ounces sliced pepperoni
1⅔ cups mozzarella cheese

SPECIAL UTENSIL

16″ pizza pan

PREPARATION

Preheat oven to 400 degrees. Put pizza crust on pizza pan. Spread pasta sauce over entire crust. Make ½” sausage balls. Put sausage balls and pepperoni slice evenly over sauce. Bake pizza in oven at 400 degrees for 10-to-15 minutes or until cheese turns golden brown.

TIDBITS

1) Pizza has a long and rich history. So does the game of rock, paper, scissors.

2) The game started as rock, rock, rock in Vivaldi Gorge in the year 3,200,010 BC.. The game was played with real rocks and always ended in a tie. Caveman Ogg never lost. He even considered going pro, but stopped from a lack of corporate sponsors.

3) Ten years later Ogg accused Lucy from Olduvai Gorge of cheating. The enraged Ogg used the rock to brain his foe. Ogg fictionalized the account of his bloody deed on his cave’s walls. This was the start of the literary crime genre. So some good came out of it.

4) Lucy’s kin attacked Ogg’s family, driving them far away. In 1949 Drs. Leakey started looking for human bones in Vivaldi Gorge. Ten years later, they switched to Olduvai Gorge and found the bones of Lucy next to a tablet inscribed with the cryptic code of W-0, L-0, T-1,723. 5) In 1845, Alexander Cartwright formalized the rules of baseball. Baseball with its clear victor took America and much of the world by storm. Dr. Simon Iota did change the game of rock, rock, rock to rock, paper, scissors, paper in 1867. But the new rules came too late. Baseball would reign supreme. Rock, paper, scissors is hardly played and is never shown on T.V., except maybe on ESPN4 at 4 a.m. on Tuesdays.

Great Arctic Eats – Barrow, Alaska

For Barrow, TripAdvisor rates Sam & Lee’s as the best restaurant. Pepe’s North of the Border has the best Mexican cuisine.  Arctic Pizza serves the best pizza, and Osaka beating out all competition forbarrow the best Japanese.

Try to get to Barrow in time for Nalukataq, the spring whaling festival of the Inupiaq Eskimos. Come for the goose and caribou soup. The highlight of the festival is the Eskimo blanket toss where people dance on a giant, suspended blanket and then get tossed high into air. What fun!

The culinary scene in Svalbard is vibrant despite being in the land of four-month-long nights and having only 2,642 people. Indeed, the town of Longyearbyen has thirteen fine restaurants. According to TripAdvisor, the highest rated restaurant is Huset. It’s also the northernmost gourmet restaurant. Pizza Crust

Italian Entree

PIZZA CRUST

INGREDIENTSPizzaCr-

2 cups all-purpose flour
3/4 cup water
2 tablespoons vegetable oil
1/2 teaspoon sugar
1/ 2 teaspoon salt
1 1 /2 teaspoons active dry yeast
no-sticking cooking spray

SPECIAL UTENSILS

bread maker
16″ pizza pan

PREPARATION

Measure out the flour and set aside. Pour the water into the bread maker. If you measure the water before the flour, the flour will stick to the sides of the measuring cup. Not the end of the world, of course, but a minor disruption in the Force, nevertheless.

Add oil, sugar, salt, and yeast to the bread maker. Do not put the yeast directly on top of the yeast. Salt is bad for yeast and yeast makes the dough rise. “Ask not what your yeast can do for you. Ask what you can do for your yeast.”

Set the timer or the menu on the bread maker to “Dough.” Wait for the required time, probably a bit more than an hour. In the meantime preheat the oven to 400 degrees and liberally spray the pizza pan with no-stick spray. This will prevent the crust from forming a glue-like bond with the pan.

Take the dough out of the bread maker and roll it out until the dough covers the pizza pan. If you do not possess a rolling pin, any canned food can will do as long as it is at least six inches tall. It is best to spray the can or coat it with a thin layer of flour before spreading the dough.

TIDBITS

1) The word “yeast” is Sanskrit for “to seethe or boil.”

2) Sanskrit is an ancient language.

3) SansabeltTM is a modern company that makes pants without belts.

4) Babe Ruth sure could belt a baseball out of the park. He was known as “The Sultan of Swat.”

5) You can form the words “tuna loaf” out of “The Sultan of Swat” and still have letters left over.

6) The yeast we use in our food is goes by Saccharomyces cerevisiae, which means “sugar fungus”

7) Why are all Latin words so long?

8) I think the Roman Empire fell because its words were so long. Can you imagine a breathless sentry running back to the Roman legions to say the Goths were just beyond the hill, massing to launch a devastating surprise attack? But because of the long Latin words, the poor sentry passes out before he can deliver all of his message. The Roman army remains ignorant of the impending attack. It doesn’t prepare for battle. The Goths slaughter the Romans. The Roman Empire falls.

9) The Dark Ages descend over Europe.

10) For a real long time.

11) Longer even than the time you spend in a dentist’s chair where time actually slows down. Albert Einstein came up with his idea of relativity while having his teeth drilled.

Meatball Pizza

Italian Entree

MEATBALL PIZZA

INGREDIENTSMeatballPizza-

1/2 onion
1 red bell pepper
flour
pizza crust (bought or from below recipe)
1 14.5 ounce can diced tomatoes
1/2 cup pasta sauce
1/2 teaspoon garlic
1/2 pound ground beef
2 teaspoons Italian seasoning
1 cup grated mozzarella cheese
no-stick spray

SPECIAL UTENSIL

PREPARATION

Preheat oven to 400 degrees.

Slice onion and bell pepper into thin rings. Cut rings in half. Dust pizza pan with flour and spray with no-stick spray. Put pizza crust on pizza pan. Spread diced tomatoes and its juice evenly over the pizza crust. Spread pasta sauce evenly over the crust.

In small mixing bowl, smoosh garlic and ground beef together. Use hands to form meatballs 1/2″ inch cross. Sprinkle meatballs, Italian seasoning, and mozzarella evenly over pizza. Put pizza in oven and bake at 400 degrees for 10-to-15 minutes or until cheese or crust is golden brown.

1) Favorite pizza toppings around the world:

America: bacon, ground beef, bell pepper, extra cheese, mushrooms (ugh. Sorry, I don’t like them), onion, pepperoni, sausage, tomatoes
Australia: shrimp, pineapple, barbecue sauce
Brazil: green peas, hard-boil eggs
China: thousand island dressing, eel sushi
Costa Rica: coconut, pineapple
France: flambée (bacon, onion, fresh cream)
Germany: egg, asparagus
India: pickled ginger, lamb, chicken tikka
Japan: ketchup, eel, squid, and Mayo Jaga (mayonnaise, potato, bacon)
Korea: sweet potato, shrimp
Netherlands: double meat, double cheese, double onion
Pakistan: curry
Russia: mockba (a combination of sardines, tuna, mackerel, salmon, and onions), red herring
Venezuela: corn, goat cheese

2) But if you really want to visit the cutting edge of pizza making you must go to Sweden where the following smorgasbord of toppings are popular: allspice, artichoke, banana, bacon, beets, bell pepper, Bearnaise sauce, cabbage, caper, carrot, chicken, chocolate, crab, curry, duck, eggplant, filet mignon, French fries, fruit cocktail, gorgonzola, guacamole, ham, hard-boiled eggs, honey. kebab meat. leeks, mashed potato, mayonnaise, onion, peanut, pepperoni, pickles, pineapple, raisin, salami, sausage, shallot, shrimp, white sauce, taco spices, tuna, and zucchini.

3) I really can’t explain Sweden’s unbridled culinary wildness. Swedish cuisine was much blander when I visited the country some years ago. Was there a mass poisoning of chefs by rotten lutefisk at a culinary convention? It’s quite possible; how can you detect bad lutefisk?

4) There are more pizza toppings in Sweden than are dreamed of in your philosophy.

Hawaiian Pizza

Hawaiian Entree

HAWAIIAN PIZZA

no-stick spray
1 pizza crust
1 cup pineapple chunks
1/2 cup pineapple juice
1/2 teaspoon brown sugar
1 cup pasta sauce
6 ounces deli-sliced ham
2 tablespoons Parmesan cheese

SPECIALTY ITEM

PREPARATION

Preheat oven to 400 degrees. Spray pizza pan to keep the pizza from sticking. (It’s not a good feeling to have your great looking, great smelling pizza fall apart because it sticks to pan when you try to serve it.) Put crust on pan. Mix pineapple juice, brown sugar, and pasta sauce until sugar dissolves. Spread mix evenly over crust.

Cut deli-sliced ham into 1″ squares. Place ham squares and pineapple chunks on crust. Sprinkle Parmesan cheese on top. Put pizza in oven and bake at 400 degrees for 10-to-15 minutes or until cheese or crust in golden brown. Now you have a Hawaiian pizza. Life is good.

TIDBITS

1) In 334 BC Alexander the Great, invaded the Persian Empire, changing culinary history forever.

2) In 327 BC, while conquering much of the known world, he discovered sugar cane.

3) Alexander the Great came so close to dying in battle in 334BC.

4) If he had died then, he wouldn’t have conquered the Persian Empire. If he hadn’t have conquered the Persians, he wouldn’t have been able to bring back sugar to the Mediterranean.

5) In 1493, Columbus introduced sugar to the New World.

6) Sugar was so prized by European nobility up until 1800 that many bloody wars were fought over islands with thriving sugar plantations. These plantations required vast numbers of slaves to work them.

7) So if Alexander had died at a young age in battle as Alexander the Mediocre, a lot of conflict and misery might have been avoid.

8) On the other hand, we’d have no doughnuts, no cakes, and no brownies. And no pizza too; the yeast in the pizza requires sugar to rise.

9) So, Alex’s wars of conquest resulted in some good as well. Life’s life that.

10) 2001, sugar is found in outer space. Yay!
