Cinnamon Rolls (Kanelbullar)

Swedish Dessert

CINNAMON ROLLS
(Kanelbullar)

INGREDIENTS – DOUGH

⅔ cup butter (⅓ cup more later)
1½ cups milk
1 egg (1 egg more later)
2 teaspoons cardamom
¾ teaspoon salt
½ cup sugar (⅓ cup more later)
2½ teaspoons yeast
5 cups bread flour or flour (2 tablespoons more later)

INGREDIENTS – FILLING

2½ tablespoons cinnamon
⅓ cup sugar
¼ cup brown sugar
⅓ cup butter, softened

INGREDIENT – ASSEMBLY

2 tablespoons flour
1 egg
1½ tablespoons water
3 tablespoons pearl sugar*, sparkling sugar, or sugar

* = Pearl sugar is remarkably hard to find in supermarkets. Try Whole FoodsTM, the food department of IKEATM, or the cake decoration sections of JoannTM, Michael’sTM. and other hobby stores. Alternatively, smash sugar cubes with a kitchen mallet.

SPECIAL UTENSILS

2 cookie sheets

Makes 16 rolls. Takes 2 hours 45 minutes.

PREPARATION – DOUGH

Add ⅓ cup butter and milk to pan. Cook using low-medium heat until butter melts. Stir often. Add butter/milk and 1 egg to small mixing bowl. Mix with whisk until well blended. Add cardamom, salt, ½ cup sugar, yeast, and 5 cups flour to large mixing bowl. Mix with whisk until well blended. Add butter/milk from small mixing bowl to large mixing bowl. Whisk until well blended.

Add flour/butter/milk/sugar/yeast mix to bread maker. Run bread maker using dough setting for 10 minutes. Add dough to large mixing bowl. Cover and let rise for 1 hour or until doubled in size.

PREPARATION – FILLING

While dough doubles in size, add cinnamon, ⅓ cup sugar, brown sugar, and ⅓ cup softened butter to small mixing bowl. Mix with whisk until well blended.

PREPARATION – ASSEMBLY

Dust flat surface with 2 tablespoons flour. Add dough to center of dusted flat surface. Roll out dough until is a 12″ x 16″ rectangle. Spread filling evenly over rolled-out dough. Tightly roll dough along 16″ side until you get a 12″ long log. Cut log into 16 round discs or rolls. Cover with kitchen towel for 45 minutes or until doubled in size.

While dough rises, add 1 egg and water to cup. Mix with whisk or fork until well blended.

Preheat oven to 425 degrees. Line cookie sheets with parchment paper. Place rolls on parchment paper. Brush rolls with egg/water. Sprinkle pearl sugar on rolls. Bake at 425 degrees for 7 minutes or until golden brown.

TIDBITS

1) October 4 is Cinnamon Bun Day in Sweden. Sweden is a wonderful country.

2) So is Britain. Even during hard times when its RAF was on the ropes fighting the Luftwaffe, which could turn the sky black with its fighter planes.

3) British pilots were superb. But no matter how many dogfights the British aces won, they still lost planes. No one could get around the fact that the RAF was running out of metal to build new Spitfires and Hurricanes.

4) Britain needed a miracle. It occurred when Chef Ollie Erickson of London’s Royal Swedish Bakery mentioned the dual nature of cinnamon rolls to Prime Minister Winston Churchill. “They’re tasty as Heaven when fresh, but absolutely impenetrable when dry.”

5) The boffins at Churchill’s Toy Shop learned how to make Spitfire-shaped cinnamon molds. One only needed to pour cinnamon-roll batter into these molds, remove the molds, and let the shaped dough dry. These cinnamon-roll Spitfire proved to be impervious to the Luftwaffe’s machine-gun and cannon fire. Not only that, bakeries turned out cinnamon-roll fighters by the baker’s dozens. The RAF rapidly established supremacy in the skies and soon won the Battle of Britain.

6) Britain also mass produced thousands of cinnamon-roll tanks. America with its preference of bacon and eggs over cinnamon rolls, had many more steel-rolling mills than bakeries. So, it mass produced tanks and planes the old-school way, with steel. Germany simply could not compete against both dough and steel. Germany lost. The world was once again made safe for breakfast.

Beef Jerky

American Appetizer

BEEF JERKY

INGREDIENTSBeefJerky-

1 pound flank steak, London broil or round steak
¼ teaspoon chili powder
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon pepper (Freshly ground is best)
¾ teaspoon liquid smoke
6 tablespoons soy sauce
5 tablespoons Worcestershire sauce
2 tablespoons brown sugar

Serves 4. Takes 13-to-20 hours.

SPECIAL UTENSILS

PREPARATION

Slice beef across the grain into strips ¼” thick. Add all other ingredients to large mixing bowl. Mix ingredients with whisk until well blended and brown sugar dissolves completely. Add beef strips to bowl. Mix by hand until strips are well coated. Cover bowl or put in large, sealable plastic, bag. Place in refrigerator for 8-to-12 hours. Stir at least once.

Preheat oven to 160 degrees. Remove meat from marinade and pat dry with paper towels. Put wire rack on top of baking sheet. Place marinated strips on top of wire rack. Do not let strips touch each other. Bake at 160 degrees for 5-to-7 hours or until strips are ready. Strips will be ready when jerky is dry enough to easily tear off a piece, yet will not snap when bent. Preserve jerky strips from air and humidity by storing them in mason jars or sealable plastic bags.

TIDBITS

1) Origami flourished in Texas during the dark, final months of the Confederacy. The Union blockade ships had deprived the state of all sorts of fun things: fine linen, playing cards, refrigerators*, baseball bats, anything that reeked of fun. All they had left was paper. Which was used for spitwads and even sent to the front lines, where they proved utterly useless in thwarting the bluecoat advance. Soon however, the thriving art colony of Tyler, Texas experimented with making animals out of paper. The Texas Art of Origami was born. Drovers, far from sources of paper, turned to making thin strips of cooked beef for their origami material. And so, beef jerky was born.

2) *Culinary historians are at a loss to explain these apparent artifacts in the Texas of 1865.

Poulet Yassa (chicken stew)

Guinean Entree

POULET YASSA
(chicken stew)

INGREDIENTSChickenStew-

3 pounds boneless chicken
3 garlic cloves
6 medium onions
⅔ cup lemon juice
¼ teaspoon pepper
¼ cup vegetable oil
½ cup chicken stock
1 bay leaf
½ teaspoon cayenne pepper
2 tablespoons Dijon mustard
½ teaspoon salt

SPECIAL EQUIPMENT

Dutch oven

Makes 6 bowls. Takes at least 6 hours, including refrigeration.

PREPARATION

Cut chicken into 1″ cubes. Mince garlic. Thinly slice onions. Add chicken, garlic, onion, lemon juice, and pepper to large mixing bowl. Mix with hands until chicken cubes are thoroughly coated. Marinate chicken in refrigerator for at least 5 hours or overnight.

Remove onion slices and chicken cubes from large mixing bowl. (Keep lemony marinade.) Add chicken cubes, onion slices and oil to Dutch oven Sauté at high heat for 10-to-15 minutes or until onion softens and chicken is no longer pink on outside. Stir frequently. Add lemony marinade from large mixing bowl, chicken stock, bay leaf, cayenne pepper, Dijon mustard, and salt to Dutch oven. Simmer at low heat for 30 minutes-to 1 hour or until chicken is done and most of the liquid is gone. Goes well with couscous or rice.

TIDBITS

1) The Great Chicken Festival is held in December in Cacciatore, Alaska. Chickens from all over the world come to see and to be seen. Highlights of the festival are the clean-and-jerk weight lifting event and the Great Chicken Golf Invitational. You’ll have seen nothing like it.

2) The World Chicken Festival occurs in September in London, Kentucky. Contests include the rooster crowing, clucking, and strutting, survival egg dropping, and chicken-wing eating. London, Kentucky is located in the Daniel Boone National Forest. Daniel Boone was the first man to successfully tame Eastern Kentucky’s huge herds of feral chickens. This is why we know about him.

Fish and Chips

British Entree

FISH AND CHIPS

INGREDIENTSFishAndChips-

2½ pounds potatoes (King Edward or Maris if you can get them.)
1⅓ cups flour (3 additional tablespoons later)
1 teaspoon pepper
1 teaspoon sea salt or salt
1¼ cups (10 ounces) beer
2 cups peanut oil
5 cups (or enough to cover fish) vegetable oil
4 7-ounce cod, pollock, or haddock fillets
3 tablespoons flour
malt vinegar (to be added by guest)

SPECIAL UTENSIL

deep fryer

Makes 4 servings. Takes 1 hour 30 minutes
Note:: Cooking times vary a lot between fryers or with the amount of food you put in them, so you’ll need to check the fryer periodically.

PREPARATION

Peel potatoes. Slice potatoes along their lengths into ½” by ½” strips. Add potato strips to first bowl filled with cold water. Let soak for 1 hour to remove starch. Pat the potato strips with paper towels until the strips are completely dry.

This is important. If you leave moisture on your potato strips, then your chips, if you are British, or your French fries, if you’re American, will not turn out well and the Earth will leave its orbit and spiral into the Sun. Enough said.

While potato strips are soaking, add 1⅓ cups flour, pepper, and salt to large, second mixing bowl. Mix thoroughly with whisk. Add beer. Stir with whisk until there are no lumps and mixture has the consistency of whipping cream.

When the potato strips have only 15 minutes left to soak, pre-heat oven to 200 degrees. (You will be making this entree in batches. Put fried fish and completely done fries warm in oven until everything is ready.) Add peanut oil and vegetable oil to deep fryer. Heat oil to 275 degrees. Carefully add ¼ of potato strips to deep fryer. Fry potato strips for 5 minutes or until any of them start to brown. There are now officially French fries or chips. (Pauses for ceremony.) Remove chips from fryer, drain, and set aside. Repeat for each batch of potato strips.

Add 3 tablespoons flour to third bowl. Add fish fillets, one at a time to bowl. Turn fish fillets around until they are coated with flour. This flour keeps the batter from slipping off later. Add flour-covered fish fillets to mixing bowl with batter. Slowly turn fish fillets until they are thoroughly covered with batter.

Increase heat on deep fryer to 375 degrees. Carefully add fish fillets to deep fryer. Fry for 6-to-10 minutes or until batter is crisp and golden brown. Turn fillets two or three times with wooden spoon to ensure even frying. Remove fish fillets with slotted spoon and place on wire rack above plate and let drain.

Add partially cooked French fries to deep fryer for second time. Keep heat at 375 degrees. Fry French fries for 10-to-20 minutes or until they are golden brown and crispy. Remove French fries with slotted spoon and dry with paper towels.

Serve fish and chips and malt vinegar to adoring, appreciative guests. Dredge unappreciative guests through any remaining batter. You were cooking with hot oil, for goodness sake.

TIDBITS

1) Gratuitous Capitalizing of Words has not been allowed in English speaking countries since 1945. Indeed, World War II was fought to preserve our minimalist capitalization approach.

2) You see, Germany capitalizes all nouns. Germany wants the whole world to capitalize nouns. Why does Germany want all this capitalization? Who would benefit from this?

3) The German ink makers. Capitalized letters take more ink than small letters. More capitalized letters means more ink. More ink means more income for the ink makers. No German government from 1814 to 1945 was strong enough to resist the dictates of the German Ink Makers’ League, GIML. So, when GIML told their leaders to invade one country after another to open up new market for ink, their governments obliged.

4) Things looked bad for the minimal-capitalizing countries in mid1940. The British Expeditionary Force was trapped against the beaches of Dunkirk. If this force had surrendered, Britain, the last hold out against German Capitalizing aggression, would have had to give up all resistance.

5) Fortunately in 1940, a young physicist named Peter Sakes, was in a London pub waiting for his fish and chips. Boom! A gigantic explosion blew apart the kitchen walls. Hot cod and hot potato strips flew into the eating and drinking areas. Patrons ran screaming from the establishment. A light clicked in Sakes’ head. Perhaps the same process used to explode fish and chips could be employed to make nuclear fission. A nuclear bomb would surely stop the invincible German armies.

7) Prime Minister Churchill agreed and gathered all British scientists to develop the atomic bomb. Well, the whole thing took longer than expected; the heat from cooking oil proved insufficient to trigger a nuclear chain reaction. So the Americans came on board with their Manhattan Project and by August, 1945, had an atomic bomb to use on Japan.

8) The atomic bomb came too late to use on Germany which had already surrendered. However, the mere hope the bomb had brought to Churchill had given him to will to resist. We owe our freedom and our small-lettered nouns to Mr. Sakes and his idea. Here’s to him and fish and chips!

Ground Beef Curry From South Africa

South African Entree

GROUND BEEF CURRY

INGREDIENTSBeefCurry-

2 potatoes
1 yellow onion
1 red onion
2 cups fresh spinach
4 small tomatoes
4 cloves garlic
2 chile peppers
3 tablespoons vegetable oil
1 1/2 tablespoons fresh ginger
2 tablespoons curry powder
1/2 tablespoon turmeric
1 tablespoon garam masala
1 1/2 pounds ground beef

PREPARATION

Peel potatoes. Cut potatoes into cubes smaller than 1/2″. Peel and dice yellow onion. Peel and dice red onion. Dice spinach and tomatoes. Mince garlic and chile peppers. Add onion and vegetable oil to large pot. Sauté onions on medium-high heat for 5 minutes or until onions soften. Stir frequently. Add spinach, tomatoes, garlic, peppers, ginger, curry powder, turmeric, garam masala, and ground beef.

Cook for 5-to-10 minutes on medium heat or until beef browns. Add potato cubes. Reduce heat to low and simmer for about 30 minutes or until potatoes are soft. Stir occasionally.

Goes well with rice or Indian bread such as roti. The Guyanese version of roti is in this cookbook.

TIDBITS

1) Recipes for meat in a spicy sauce date back 3,700 years to Babylonia. Recipes were kept on clay tablets. Carrying around a hundred recipes would have required a wheelbarrow.

2) Did ancient Babylonia possess wheelbarrows? If not, that would explain why the Babylonian empire fell to invaders. The population was too busy carrying clay recipe tablets in their arms to defend themselves.

3) Two-thirds of all food eaten at restaurants in Britain is Indian. Wow. There are more Indian restaurants in London than in Bombay and New Delhi.

4) People will begin to crave for curry because the spices arouse and stimulate the taste buds. Sorry, people that’s all curry arouses.

5) In America, many more women appreciate a box of chocolates from their date than a bowl of curry particularly if the bowl has no lid and she’s holding it on her lap and your take the corner really fast or you accelerate really fast and the curry gets all over her dress and she kicks you out of the car and you have to walk home even though it’s your car and you never see her or your car again.

6) No, guys, it’s a much better idea to give your date a bouquet of flowers and box of chocolates and take her out to an Indian restaurant, for goodness sake.

Book Review for Candace C. Bowen’s, “Jack of Hearts”

Candace C. Bowen, queen of the romance novels, has written another brilliant, page-turning novel. Set in Victorian Britain, the fiesty Katherine Kelly journeys to London’s seedy, dangerous East End to find her sister.

Katherine combs the dark back alleys for her sister, Mary. She sets out on this task alone; Mary has become and a prostitute and has been disowned by her status obsessed family.She reluctantly accepts the assistance of the handsome Constable Edward Stanhope, the only man to believe in her.

Katherine and Edward rapidly fall in love. However, reconciling their desires with the stifling moral codes of Victorian England and gaining acceptance from her family prove to be as difficult as saving her sister from bloody Jack the Ripper.

I bought her novel Spur of the Moment and I was immediately hooked by her style, enough romance for women and sufficient blood and guts for men. I thoroughly recommend Jack of Hearts.

I have had the great good fortune to co-edit a murder anthology, Bump Off Your Enemies, with her. She is as easy to work with as she is exceptional in her writing.
