Slow Cooker Tacos Barbacoa

Mexican Entree

SLOW COOKER TACOS BARBACOA

INGREDIENTS – MARINADE

2 ancho chiles, dried or fresh
1 chipotle chile from can. (Keep 2 tablespoons of the can’s liquid)
¼ teaspoon cinnamon
½ teaspoon coriander
2 teaspoons epazote or oregano
4 garlic cloves
1 teaspoon salt (1 teaspoon more later)
1¾ cups water
1 tablespoon vinegar

INGREDIENTS – LAMB

3 pounds boneless lamb parts*
1 teaspoon salt
2 tablespoons vegetable oil
1 large bananas leaf or 3 avocado leaves**
2 cups bone broth, beef broth, or water

INGREDIENTS – GARNISH

1 medium onion
⅓ cup fresh cilantro
2 tablespoons lime juice
12 8″-flour tortillas

* = Beef is the most popular meat for this in Mexico. Goat is also popular. Regions in Mexico usually have a strong preference. But NO ground meat.
** = Bananas leaves and avocado leaves are mighty hard to find outside of Mexican or Asian supermarkets. If you cannot find them, use cornhusks, parchment paper, or tin foil as a substitute. Leaf or leaves should be able to cover the width of the slow cooker.

SPECIAL UTENSILS

food processor or blender
slow cooker
serving platter

Serves 6. Takes 9 hours 40 minutes.

PREPARATION – MARINADE

Remove stem and seeds from ancho and chipotle chile. Add all marinade ingredients to food processor. Puree in food processor.

PREPARATION – LAMB

Rub salt onto lamb. Cut lamb into as many pieces necessary to fit them in a slow cooker. Add oil to pan. Heat oil at high heat until it starts to ripple. Carefully, carefully add lamb pieces. Sauté lamb at high heat until all sides are well seared or you get a dark-brown crust on the lamb. Turn over to sear the other side of the meat.

Wrap lamb with banana leaf. Add wrapped lamb and marinade to slow cooker. Ladle broth over banana-leaf wrapped lamb. Set slow cooker and high and cook for 9 hours or until lamb becomes fall-apart tender. Shred lamb with forks. Keep liquid.

PREPARATION – FINAL

While lamb cooks, dice cilantro. Thinly slice onion. Cover serving platter with banana leaf. Place shredded lamb on banana leaf. Ladle juice from slow cooker over lamb. Sprinkle with lime juice. Warm tortillas by placing on pan with the heat set at medium. Remove as soon as they get warm. Or microwave tortillas for 10 seconds. Fill tortillas with lamb. Garnish with cilantro and onion. Goes well with with green salsa.

TIDBITS

1) The stars in our universe exhibit a red shift. That’s because they’re moving away from us. This observed red shift in our celestial orbs gave rise to the Big Bang Theory. The color red makes objects move things move from other things. For example, forest fires are red. Forest fires move away from their starting points.

2) Red picnic-table cloths, left unchecked, would move themselves away from the picnic table. This is why people have potlucks. The plates laden with potato salads, hot dogs, and corn on the cob provide enough weight to counteract the Moving Away Force (MAF) on the red table cloths.

3) The Germans experimented with red tablecloths in World War II. They hoped their table cloths would move away from the ground and into the path of Allied bombers. The red objects, however, moved away from the bombers as well. These Nazi tablecloths still continue outward trek. Look for them in the Asteroid Belt, if you have a powerful enough telescope.

4) Naturally, other red objects such as plates exhibit MAF. A totally red plate would leap off the kitchen table and crash through a window in a quest to join its brethren in the Asteroid Belt. Plates with only a tiny bit of red in them display a tiny MAF. (See above picture.) Such plates require only a little bit of food to keep them in place.

5) Of course, blue objects show Moving Toward Force (MTF.) This is why so many people end up wearing blue shirts. To be safe, you really should avoid blue and red altogether. If, however, you must use these colors, for Pete’s sake, you them in equal amounts. (See above picture again.)

The Wonder Dog – Part 2

Captain Pizarro surveyed the yellow-orange expanse and announced that we were going to eat those hot dogs or die. Pale-faced Lieutenant Kelso staggered to his feet to voice his support before pitching forward into a huge bowl of papaya-bisque soup. Corporal Conigliaro timidly suggested that eating rotting hot dogs might kill us, or worse, give us diarrhea. Sergeant Gagliano put both of his powerful hands on Conigliaro and volunteered the Corporal for the honor of tasting the hot dogs.

Conigliaro said that although he was aware of the immense honor, he was reasonably sure that army regs stated that a certified medical doctor had to test all suspect foods. He was only an unregistered quack and so, respectfully declined.

It appeared that some stupid health regulation written by some desk-bound, pencil pusher in the Pentagon was going to deny us this wondrous, alternate source of food. However, our Sarge immediately volunteered Private Romero, a veterinarian, to taste the frankfurters.

Bilko accepted the assignment but said that he was such a good vet that he could determine the quality of the franks just by looking at them. He headed straight to the Hut of Hell, stopping only at the infirmary to put on a gas mask. Moments later he returned, ashen and trembling, stating that they were safe to eat. Though I did hear him mumble as he headed back to his tent hot dogs should not display internal movement. The other airmen just heard our cook announce hot dogs for tomorrow’s lunch.

Around eleven o’clock Cookie started boiling the franks. Fortunately, a strong wind from the south blew the fumes away from the camp toward the town of Lake Harbor. About that time in an unrelated incident, Bert Taylor, a tea tester from that town, suddenly pulled his own head off and died.

We all lined up at the mess tent to eat our hot dogs in shifts of one hundred which was also the number of gas masks on hand. Well, the first shift manfully ate their hot dogs and immediately fell to the floor suffering from violent convulsions. Then Private Owchinko’s stomach burst open flinging his guts all over the mess hall. Soon, everyone’s guts erupted just like cooking popcorn. Owchinko turned his hideously contorted face toward me and said, “Dang, at least it wasn’t papaya.” He then died with a look of complete serenity on his face; well, at least as serene as one could get with an exploded stomach.

We carried the men outside and buried them properly. We put on all their tombstones, “He wouldn’t eat papaya.” Since bullets were scarce at our base, we gave our departed comrades ten hot-dog salutes. Most of these franks exploded in air giving off the same noise as rifle shots. However, some didn’t explode until they hit the ground. One hot dog, in particular, landed on a latrine and exploded, scattering its contents for hundreds of yards. Private Franco noted that the smells of the latrine improved the smell of the hot dog. However, Captain Pizarro displayed true genius when he stated these franks could be terrible weapons of war.

We drifted along in papaya hell until we received orders to fly over to Europe. The Germans had just broken through our lines in a massive offensive now known as the Battle of the Bulge. Disaster loomed and every airman was needed. We armed our bombers with our hot dogs, which now had been rotting for an additional four months in the hot, humid Hut of Hell.

Our 800th Bomber Group arrived just as the Germans seemed poised to overrun the heroic defenders of Bastogne. None of our infantry or armored divisions could get to them in time. None of the other bomber groups could get off the ground due to bad weather. However, we could and we did.

We bombed the hell out of those Nazis. A Tiger tank can take a direct hit from a Sherman tank just twenty yards away and drive away only mildly annoyed, but just one hit from our franks just ripped those tanks to bits. Down they fell, ton after ton of freedom franks. The foul, poisonous vapors from the exploding dogs suffocated the supporting German infantry. Our hot dogs created a huge hole in the German lines into which poured General Patton’s troops. Patton, that glory hog, claimed full credit for the American victory at Bastogne.

However, we knew better and so did many others. In fact, Winston Churchill, Prime Minister of Great Britain praised us saying, “This was their finest meat product.”

Chicken Vindaloo

Indian Entree

CHICKEN VINDALOO

INGREDIENTS – MARINADEchickenvindaloo

3 garlic cloves
1½” ginger root
3 medium tomatoes
¾ teaspoon cayenne pepper
1 teaspoon cinnamon
½ teaspoon ground cloves
½ teaspoon coriander
1 teaspoon cumin
4 teaspoons garam masala
1 teaspoon paprika
½ teaspoon pepper
1 teaspoon salt
½ tablespoon turmeric
1 tablespoon water
2 tablespoons white vinegar (2 more tablespoons later)

INGREDIENTS – OTHER

2 pounds boneless chicken thighs
2 medium potatoes
3 medium onions
2 tablespoons ghee or vegetable oil
2 cups chicken broth
2 tablespoons white vinegar

SPECIAL UTENSIL

blender

Serves 6. Takes 3 hours.

PREPARATION

Add all marinade ingredients to blender. Blend on medium setting until smooth. This is the marinade. Cut chicken thighs into 1″ squares. Add marinade and chicken squares to large mixing bowl. Mix until chicken is well coated. Cover and marinate in refrigerator for 2 hours.

While chicken marinates, peel potatoes. Cut potatoes into ½” cubes. Mince onions. Add ghee and onion to large pot. Sauté at medium-high heat for 5 minutes or until onion softens. Stir frequently. Add marinated chicken. Cook for 5 minutes on medium-high heat. Stir occasionally. Add potatoes, chicken broth, and 2 tablespoons white vinegar. Bring to boil using high heat. Reduce heat to low. Cover and simmer for 50 minutes or until potato is tender. Goes well with rice.

TIDBITS

1) After 75 years and invoking Crown Really Official Secrets (CROS), I can finally tell the heroic story of Mrs. Linda Voo.

2) It was 1941. The Battle of Britain was over. The Nazi air fleet had failed in its attempt to bomb the British people into submission. It was time to take the war to the German aggressors. But how? The British army was minuscule compared to Germany’s and had no way to land on the continent. Aha, by air! The British Air Royal Force, BARF, would attack the Hun’s war factories by air.

3) Though there was that delay when Winston Churchill secured the regisnation of the dyslexic Sir Orbert Abcon from the War Nimistry. It took over a month to correct the names he misspelled. Later that year, the newly renamed RAF commenced a massive bombing campaign of Berlin and the industrial centers of the Ruhr Valley.

4) What the bombers actually destroyed were a modern-art school–amazingly still thriving in Hitler’s Germany, but then again the Fuhrer was a frustrated art student and who knew he cottoned to modern art?–and two-dozen pig farms–the German war machine loved pork.

5) Take a deep breath to recover from the run-on sentence of the previous tidbit.

6) The continued futility of the RAF’s bombing campaign went on for months. Then in November, 1941, Lieutenant Nigel Voo failed to come back from a raid. The squadron was supposed to blow up a ball-bearing plant in Hamburg. Instead the heroic Voo and his crew were shot down after dropping bombs on nearby Anfurt’s annual ParcheesiTM tournament.

7) This tragedy enraged his wife, Linda, a tea lady at Biggins Hill airbase. She threw her teapot to the ground and shouted at the airmen, “You bloody idiots. You couldn’t find your way to a cod-and-chips store if you were standing in front of it. The Three Blind Mice have nothing on you lot.”

“Well now, see here, Mrs. Voo, those are unkind words, they are. We get lost, we do. It’s tough reading a map and trying to see landmarks especially at night,” said the squadron leader.

“Too right, you get lost, you ninnies. Why don’t you ask for directions?”

“Well, mum, we’re men. We don’t like to ask for directions. I mean they’re the enemy and were are flying thousands of feet above the ground. We couldn’t ask even if we wanted.”

“‘Tis bloody possible. I’ll show the likes of you.”

8) And she did. She flew in the lead plane. Whenever the squadron got lost, Mrs. Voo bungee jumped out the plane and asked a local farmer for directions. Sure, there was a war of annihilation going on, but German farmers always act courteous to any lady who drops in. The RAF’s bombers never missed a target what with Mrs. Voo and a thousand others like her flying with them . Germany was doomed.

9) Mrs. Voo’s code name was the anagram, Vindaloo. The British government even created an entree in India with that name just to provide cover.

The New Global Threat

The stability of the entire world is threatened by an emerging superpower, Papua New Guinea.PapuaNewGuinea1

Hah, you say. Where is Papua New Guinea? North of Australia. What does it produce? Rain, mud, and documentaries about newly discovered stone-age tribes within its borders.

What could such a country do? Buy a lot of SPAM or … conquer the Pacific Ocean.

How? I’m glad you asked. Everyone knows the best mud for beauty care comes from Papua New Guinea, or PNG. The demand for this mud in American and European spas grows fantastically every year. Soon, PNG will be awash with the world’s money. PNG can then allocate its new billions to buy used aircraft carriers, fighter planes, bombers, tanks, and landing craft listed irresponsibly on eBay.

This is where the nightmare starts PNG has a population of 4,600,000. (I counted them twice.) Even if it puts just 10% of its people in the military, it will have a striking force of 460,000. Who has the population, the might to stop them? Not neighboring Nauru with its tiny population of 11,000 and maybe soldiers.

Emboldened by this easy conquest, Tuvalu, Palau, Marshall Islands, Kiribati, and Tonga, with their combined population of 260,000 will fall like leaves in a Wisconsin autumn. This disaster will have worldwide ramifications. Does anyone doubt the Palauan contingent keeping the peace in South Ruritania will remain under such dire circumstances? No, they will go home to fight a war of liberation. The whole idea of UN peace-keeping forces will unravel. Minor skirmishes will become full fledged regional wars. So it goes.

Soon, Micronesia and Vanuatu will topple. I don’t know much about them so let’s move onto the Solomon Islands and Fiji–biggish but still smaller than PNG. We cannot let these two nations fall. We cannot let PNG monopolize the best snorkeling sites in the world. Have you snorkeled at Key Largo? Well, let me tell you, the snorkeling at Fiji is much better. And by the way, conquest of these countries would enable PNG to block all airborne and seaborne trade across the Pacific. The snorkeling industry and the world economy would collapse.

What can Americans do? Simple. Cut off the funds for PNG’s drive for conquest. Whenever getting a mud treatment at your local spa, be sure to ask for good ol’ American mud. It’s good for your face. It’s good for world peace.
