Persimmon Bread

American Entree

­

PERSIMMON BREAD

­
INGREDIENTS
­
3 Hachiya persimmons
½ cup butter, softened
½ teaspoon vanilla extract
1⅓ cups sugar
3 eggs
1¼ teaspoon baking soda
½ teaspoon salt
2 cups flour
½ cup chopped walnuts
no-stick baking spray

SPECIAL UTENSILS
­
food processor
electric beater
9″ * 5 ” loaf pan
­
Makes 1 loaf. Takes 1 hour 55 minutes.

PREPARATION

Preheat oven to 350 degrees. Cut tops off of persimmons. Scoop out pulp. Add pulp to food processor. Puree pulp. Add butter and vanilla extract to large mixing bowl. Use high setting on electric beater until butter becomes creamy. Add sugar. Use high setting until butter and sugar become thoroughly blended Add eggs. Use medium setting on electric beater until well blended.

Add baking soda, flour, and salt to medium mixing bowl. Mix with whisk or fork until well blended. Gradually add flour mix to the butter/sugar mix while blending with electric beater set on medium. Add persimmon pulp. Mix completely with electric beater set on medium. Fold in walnuts with spatula. This is the batter.

Spray loaf pan with no-stick baking spray. Pour batter into loaf pan. Smooth surface with spatula. Bake for 1 hour at 350 degrees or until toothpick inserted into center comes out clean. Let cool for 10 minutes. Run knife or small spatula around loaf’s edge. Remove bread from loaf pan and place cupcakes on wire rack for 30 minutes or until cooled completely.

1) Persimmon bread tastes great  It makes you so happy that you burst with get up and go. NASA’s scientist Carl La Fong theorized that the energy  in persimmon bread would make NASA rockets get up and go easily out of Earth’s gravitational field. But the persimmon-bread powered rocket got up and went out of the Solar System in just one week. Now no one knows where the rocket might be.

What I Did Today

Destined to be pickles

Woke up, got up, showed, and dressed. Go me, you little bundle of energy.

Went to my office. I divided my time between making a recipe for Refrigerator Pickles, looking at my finances, and looking at bunnies outside my window.

Then I went to a doctor’s office for my second post-surgery visit. The doctor was early. I know! I was doing fine. I finished my visit early as well. I tried to leave by elevator, but accidentally went to the third floor instead of the first. But it was all to the good as I was able to hold the elevator doors open at both floors for a woman and her quite elderly mom. Let me tell you, it wasn’t easy keeping those doors open. But it all ended well.

Then I headed to a nearby gourmet supermarket. They didn’t have Kirby cucumbers or pickling cucumbers as they weren’t yet in season. I drove to a Middle Eastern supermarket near my home where pickling cucumbers were in season. I also purchased some Middle Eastern food items that are hard to get elsewhere.

I had some free time on my hands, so I organized a flash olympics at Poway’s main park. Such fun!

I made a humble dinner. Then I started making Refrigerator pickles. They’re marinating in the fridge. I’m keeping my fingers crossed.

I do hope you behaved yourselves while I was preoccupied.

Things I Haven’t Done In Years

My stunt double

1) Wake up rested.

2) Go the entire day without a headache.

3) Feel bursts of energy.

4) Feel a burst of energy.

5) Go the entire day without a backache.

6) Go any length of time without a headache.

7) Go any length of time without a backache.

8) Be able to read easily.

9) For any length of time. (Not only are my eyes nearsighted, but they don’t work together well.)

10) Keep calm when someone says mean things. I just can’t shrug it off.

11)  Accepted serenely the comment, “Don’t get upset.”

12) Go an entire day without dropping things.

13) Do simple manual tasks quickly and easily. Buttoning a shirt can take minutes. (Possibly from neurological problems.)

14) Go the entire day without feeling depressed, about my health, the future of American democracy, the world and just ‘cuz.

15) Not cough. I manage to generate lots of phlegm, perhaps because I have allergies or perhaps just because I’m me.

15) Go the entire without losing my cool because of 1) to 15) and because I’m somewhat Asberger.

 

Some days I can handle life. Some days I can’t.

I’m sorry that this post isn’t funny at all.

Imbakbaka From Lybia

Libyan Entree

IMBAKBAKA

INGREDIENTS

1 pound boneless chicken parts or 1⅓ pounds with bone in
3 garlic cloves
1 jalapeno (optional)
1 medium onion
3 tablespoons olive oil or vegetable oil
¾ teaspoon cayenne
½ teaspoon cinnamon
½ tablespoon coriander
½ teaspoon cumin
¼ teaspoon paprika
¼ teaspoon pepper
1 teaspoon salt
¼ teaspoon turmeric
3 tablespoons tomato paste
5 cups water
¾ pound elbow macaroni or other pasta
1 cup canned and drained garbanzo beans or diced carrots

Serves 6. Takes 45 minutes.

PREPARATION

Cut or divide chicken into 8 pieces. Mince garlic. Seed jalapeno and cut it into long, thin strips. Dice onion. Add oil, garlic, and onion to large pot. Sauté at medium-high heat for 5 minutes or until onion softens. Stir frequently. Add chicken, cayenne, cinnamon, coriander, cumin, paprika, pepper, salt, and turmeric. Sauté at medium-high heat for 4 minutes or until chicken pieces brown on all sides. Stir frequently.

Reduce heat to medium. Add tomato paste. Cook for 3 minutes. Stir enough to prevent burning. Add water and jalapeno strips.. (The water should completely cover the chicken.) Bring to boil using high heat. Stir enough to prevent burning. Add macaroni and garbanzo beans. Reduce heat to low. Simmer for 20 minutes. Stir occasionally.

TIDBITS

1) Many avant-garde diners want to eat their Imbakbaka while using a force field. In this scenario, the chef tosses the contents of the pot into the air. The force field prevents gravity from bringing the food down to the table. The diners simply scoop up the food dangling in the air with their spoons. With no food hitting the table, the need for dishes disappears. Clean up becomes much easier. This advantage is no small thing to busy restaurant owners. However, the energy needed to maintain these force fields for one chef will use up the energy supply of the entire world. Bummer.

Cranberry Sauce

Bosnian Appetizer

CRANBERRY SAUCE

INGREDIENTS

1⅓ cups sugar
¾ cup water
½ cup orange juice
1 pound cranberries

Makes 3¼ cups. Takes 1 hour 30 minutes.

PREPARATION

Add sugar, orange juice, and water to pot. Simmer at low-medium heat for 5 minutes or until sugar dissolves completely. Stir frequently. Add cranberries. Cook at medium heat for 15 minutes or until cranberries crack open and sauce is dark and thick. Remove sauce from heat.(Sauce should thicken more as it cools.) Cool in refrigerator for 1 hour or until ready. Goes well on poultry, pork, beef, and fish.

TIDBITS

1) Cranberries are good for you in all sorts of ways. I forget some of them. Apparently, cranberries don’t help the memory much.

2) The Picts and Celts in Ancient Britain were fierce warriors. They got their energy and stamina from eating cranberries. If the these ancient fighters ate too many cranberries they got tummy aches. They also found oodles and oodles of excess energy coursing through their veins. They became too hot. The Picts and Celts had to let some of their escape or they’d collapse.

3) So the first Britons took off all their clothes to cool off. Being nude, they painted their bodies blue for modesty’s sake. Then they charged the opposing army with a ferocity that’s never again been equaled.

4) But they didn’t wear hats or paint their heads. The skin on their heads turned red under the hot unforgiving sun. The invading Romans their skulls, crania, looked as red as the cranberry that the natives ate. So, the Romans called this red berry, the cranberry.

5) I almost forgot, a Roman chef, Quintus Cato, looked at the cranberry sauce in his mason jar and thought, “The mason jar is much taller than it’s wide. Is it possible to build like that as well?” He wrote of this idea to his pal, Emperor Vespasian of Rome. The energetic Emperor immediately ordered construction of the Colosseum, so named because it’s colossal in size. Now you know

Essequibo Chicken Recipe

Guyanese Entree

ESSEQUIBO CHICKEN

INGREDIENTSEssChic-

2 chicken breasts
1 red bell pepper
4 garlic cloves
2 stalks green onion
1 medium onion
2 medium tomatoes
3 tablespoons vegetable oil
1 teaspoon sugar
1 bay leaf
1/4 teaspoon celery seed or celery salt
1/4 teaspoon black pepper
1/2 teaspoon thyme
2 teaspoons cornstarch

Makes 4 bowls. Takes 40 minutes.

PREPARATION

Cut chicken into 1/2″ cubes. Seed bell pepper and cut it into strips 2″ long and 1/4″ wide. Mince garlic, green onion, and onion. Puree tomatoes.

Heat vegetable oil in saucepan at medium-high heat. Add sugar when bubbles start to form. Continue heating the mixture–it seems so wrong to say sauté sugar–for 30 seconds. Stir frequently. Add chicken cubes, green onion, onion, and garlic. Sauté at medium heat for 5 minutes. Stir occasionally. Add bell pepper, bay leaf, celery seed, black pepper, thyme, and tomato. Simmer on low heat for 20 minutes with the lid off. occasionally. Add in cornstarch. Stir. Serve. Enjoy.

TIDBITS

1) This recipe contains celery seed. Watch out because . . .

2) Ancient Romans believed celery to be a powerful aphrodisiac.

3) Modern scientists say celery contains androsterone. This pheromone, released by men’s sweat glands, attracts females.

4) Chocolate has been shown to make women happier.

5) Don’t reverse it guys and eat the chocolate while giving your date a bag of celery.

5) You spend more energy chewing celery than you get from eating it.

6) Celery rocks!

My Surefire Two-Day Weight Loss Program

Suppose you simply must lose weight in the next two days. How is this possible you ask? I am glad you asked. I am here to help. The best thing to do is give up desserts for the next 48 hours. However, when desserts look like the following it is clear an alternative path to quick weight is needed.

May I suggest the following?

1) Do nothing. Your cells are busy doing all sorts of tasks. This takes energy. Making energy depletes your fat cells.

2) Brush your hair. Dandruff is excess weight.

3) Cut your hair. Hair is excess weight.

4)Dice an onion. Tears are excess weight.

5) Have sex. Bodily fluids are excess weight. Good aerobic exercise, too.

6) Worry a lot. Worrying uses up energy.

7) Weigh yourself in the morning. It’s been quite a while since you’ve eaten anything.

8) Visit the toilet before weighing. Which brings us to a great, sure weight loss method.

9) Get a colonoscopy. A proper colonoscopy is good for an easy six-to-eight pound loss. Be sure to set aside a full twenty hours before the colonoscopy for Toilet Day. Kinda gross, but are you dedicated or not?

10) Oh wait, wait, wait, this is critical. The weight reading on your scale varies considerably depending on where you stand on it and how you stand, upright or listing to the side. Indeed, if you do this simple trick well enough, you can eat all the yummy desserts you want and skip all those pesky suggestions above.
