Colombo Powder

French Guianese Appetizer

COLOMBO POWDER

INGREDIENTS??????????

¾ teaspoon cloves
3½ tablespoons coriander seeds
3½ tablespoons cumin seeds
½ teaspoon fennel seeds
1 tablespoon fenugreek seeds
1½ tablespoons black, brown, or yellow mustard seeds
1 tablespoon peppercorns
3½ tablespoons turmeric
½ teaspoon ground ginger.

SPECIAL UTENSIL

spice grinder

Makes 1 cup. Takes 15 minutes.

PREPARATION

Add cloves, coriander seeds, cumin seeds, fennel seeds, fenugreek seeds, mustard seeds, and peppercorns to pan. Cook in pan at medium-high heat for 5 minutes or until seeds turn golden brown or start to crackle. Stir frequently. Put toasted spice mix in spice grinder. Grind spices into powder.

Add turmeric to pan. Cook on medium heat for 3 minutes or until turmeric turns golden brown. Add turmeric, ginger, and ground spices to mixing bowl. Mix with whisk until well blended. Store spice mix in air-tight jar.

TIDBITS

1) The above photo is right-side up. The powder would still be just as good upside down. The same can’t be said for Pineapple Upside Down Cake. Just try flipping that dessert over to make Pineapple Right Side Up Cake. If lucky, your host would simply show you the door. If unlucky, the cook would atomize you with her sonic obliterator, an essential utensil for all serious chefs.

2) Don’t open your Colombo powder in a weightless environment such as the space shuttle. The stuff would get everywhere. Contact with the astronauts would make them look jaundiced. They would have to be quarantined and an astronaut never forgets. Or is that an elephant? Certainly, an elephant astronaut would never forget. In any case, keep your Colombo powder sealed.

Melon Salsa

Mexican Appetizer

MELON SALSA

INGREDIENTSMelonSalsa-

1 jalapeno pepper
½ medium honeydew melon
1 peach
1 red bell pepper
½ teaspoon cilantro
1½ tablespoons lime juice

PREPARATION

Remove seeds from jalapeno pepper. (Remember to wash hands after doing this.) Remove seeds from honeydew melon, peach, and red bell pepper. Dice jalapeno pepper, honeydew, peach, and red bell pepper. Add all ingredients to serving bowl. Mix with whisk until well blended. Goes well with chicken, fish, and tortilla chips.

TIDBITS

1) This dish is not that spicy hot as it contains only one jalapeno pepper. However, there are people who sweat profusely even at the sight of a hot pepper. Some people are even tempted to strip off all their clothes in order to get relief from the spicy heat.

2) If your one of these people may I suggest attending the Global Rainbow Gathering in La Paz, Mexico? The festival runs from November 1 to 30 and celebrates peace and love. And nudity, but you’ll already be nude because you panicked from the spicy heat of a jalapeno pepper and doffed your clothes in front of everybody. But it’ll be okay because many of the other revelers will naked as well. You’ll feel one with the universe and friends with everyone as sample the plentiful marijuana. Discuss healing the world with your new-found friends while getting a massage from Sunshine. Don’t expect to imbibe alcohol here; the emphasis is on good, clean fun.

3) Crave nocturnal excitement ‘round Christmas time? Visit Oaxaca, Mexico, on December 23 for the Night of the Radishes. No, this is not a low-budget sequel to The Night of the Living Dead. It is the height of after-dusk vegetarian excitement. Radish growers neighboring towns assemble for perhaps the largest radish-carving competition in the world. See culinary artists depict scenes from the Bible, history, and mythology from huge, carved radishes. Enjoy gigantic radish salads while watching spectacular firework displays. This festival is a must for the radish lover in all of us.

4) Visit the Zacatecas, Mexico for its La Morisma celebration. Held in late August, this festival features a staged battle between thousands of Christian and Moorish warriors. I had never heard of Moorish soldiers getting to Mexico, so it all sounds historically dubious. Men and women, people of all ages dress up in period uniforms and recreate fictitious battles for three days. Whoa. Fine wandering bands of musicians provide additional entertainment. Note, people who fit it well with the Global Rainbow Gathering usually do not enjoy this event. It’s an either or sort of thing.

Portuguese Fish Sauce (molho cru)

Portuguese Appetizer

FISH SAUCE
(molho cru)

INGREDIENTSMolhoCru-

3 garlic cloves
6 tablespoons fresh parsley
1 onion
2 teaspoons olive oil
1 teaspoon crushed red peppers
½ teaspoon pepper
1 package saffron
⅓ cup cold water
1 cup cider vinegar

PREPARATION

Mince garlic and parsley. Dice onion. Add all ingredients to serving bowl. Mix with whisk until well blended. Put bowl in refrigerator for 30 minutes. Serve cold. This dish also works well for marinating fish.

TIDBITS

1) Want to really run with the bulls? Visit the Portuguese island of Terceira for the Sanjoaninas festivites in August. Simply hold a rope that is tied to a running bull. Okay, it is suggested that you run as well. Prove your courage to your loved one by scampering as close to the enraged, huge, muscular, sharp horned beast as possible. A gore wound is guaranteed to give you a story you can tell your friends forever. Go for it!

2) Admittedly, painful injuries just aren’t everyone’s cup of tea. Well, if you’re one of these people may I suggest the Orange Throwing Competition in Ivrea, Italy? Held forty days before Lent, it’s perfect for the warrior in all of us yearning to participate in a safe war. (And how many of those occur these days?) Watch a parade. Blend in, pretend to savor the historical significance of some long ago battle. Then pelt other tourists and locals with overripe oranges. If life gives you rotten oranges, hold a festival.

3) Sometimes you just feel like being a dick. That’s a good time to head to Tyrnavos, Greece for its Phallus Festival. Start your celebration of Dionysus, the Greek god of wine and whoopee, by eating spinach and nettle soup. Then go crazy and bop others on their heads with an enormous phallus–fake, not your own. This all ensures a good harvest and occurs at the start of Lent.

4) The Festa della Madonna Bruna in Matera, Italy, is perfect for everyone thirsting for vengeance against the law for that $400 in towing fees and fines they gave you for parking illegally in a spot where you couldn’t see the no-parking signs twelve feet off the ground and twenty yards behind you. Ahem. Police, locals, and participants battle for the possession of the float honoring the Madonna. Held on July 2, it’s good fun, it’s legal, and doesn’t cause run-on sentences.

Ugandan Chapati

Ugandan Appetizer

CHAPATI

INGREDIENTSChapati-

1 garlic clove
¼ red onion
2 cups flour
1 teaspoon salt
⅔ cup water (about)
1 tablespoon vegetable oil (additional 12 tablespoons later)
12 tablespoons vegetable oil (1 tablespoon per side of chapati)

PREPARATION

Mince garlic and red onion. Add flour and salt to large mixing bowl. Mix with whisk. Make dough by slowly adding water. Knead or smoosh with hands after each addition of water. The dough has enough water when it sticks together and is just a bit moist. Add 1 tablespoon oil to dough. Knead with hands. Add minced garlic and red onion and knead dough once more. Cover dough and let sit for 20 minutes.

Separate dough into 6 balls. Roll dough out into circles ¼” to ½” thick. Add 1 tablespoon oil to pan for each side of chapati. Heat oil using medium-high heat. Fry dough circles, chapati, one at a time. Fry each side for 1-to-1½ minutes or until golden brown. Monitor the frying of the chapati. You will need to reduce the cooking time or temperature as the temperature of the oil increases.

Chapati goes great with rolex, Ugandan rolled eggs.

TIDBITS

1) It is not advisable to keep nitroglycerine around the house when making chapati.

2) What if you dropped the mixing bowl on the floor? Well, the loud noise it would make might cause the nitroglycerine to explode.

3) Then where would you be?

4) All over the place. All over the neighborhood in fact.

5) Even if you managed to pull yourself together after all this fuss, your chapati would be a goner. And how would you start over with your kitchen destroyed? Don’t even think of asking your neighbors to use their kitchen. You now have a reputation as a messy cook. People will shun you until you give them chocolate doughnuts and chocolate doughnuts are mighty hard to share.

Veldt Bread From Namibia

Namibian Appetizer

VELDT BREAD

INGREDIENTSVeldtBread-

3½ cups wheat flour
1 tablespoon baking powder
3½ tablespoons brown sugar
½ teaspoon cinnamon
¼ teaspoon ginger
¼ teaspoon ground cloves
½ teaspoon salt
¼ cup butter (additional 2 tablespoons later)
⅔ cup low-fat milk
1 egg
½ teaspoon vegetable oil
2 tablespoons butter

SPECIAL UTENSIL

PREPARATION

Preheat oven to 360 degrees. Add flour, baking powder, brown sugar, cinnamon, ginger, ground cloves, and salt to large mixing bowl. Stir with whisk or fork. Add butter, milk, egg, and vegetable oil. Knead bread for at least 5 minutes or until dough becomes smooth.

Melt 2 tablespoons butter. Coat loaf pan with melted butter. Add dough to loaf pan. Smooth surface of dough. Bake at 360 degrees for 35-to-40 minutes or until a toothpick inserted into the loaf comes out clean or the loaf sounds hollow when tapped.

Butter goes fantastic with this bread, particularly so if the bread is still warm.

TIDBITS

1) There is a lot of sand in Namibia.

2) The sand there is usually on the ground and not in the air.

3) Sand lies on the ground in other countries as well. This is because sand is heavier than air.

4) Mostly. There’s little sand in Greenland. We can only conclude that Greenlandic sand weighs less than Namibian sand. That or Greenlandic sand has achieved consciousness and has learned how to fly.

5) NASA is quite interested in Greenland’s flying sand. They might go to Mars using it.

Borhani, Bangladeshi Spicy Yogurt Drink

Bangladeshi Appetizer

BORHANI
(spicy yogurt drink)

INGREDIENTSBorhani-

½ teaspoon coriander seeds
½ teaspoon cumin seeds
½ teaspoon brown mustard seeds or regular mustard seeds
2 green chiles.
4 tablespoons fresh mint leaves
½ teaspoon black salt or rock salt or coarse salt
1 teaspoon coarse or regular salt
3½ cups plain yogurt
1¼ cups water

SPECIAL UTENSIL

PREPARATION

Add coriander seeds, cumin seeds, and mustard seeds to pan. Cook using medium-high heat for 5 minutes or until seeds start popping. Grind popped seeds in spice grinder. Seed and mince green chiles. Mince mint leaves. Mix green chile and mint together with finger to form a paste. (Be sure to wash hands afterwards. Finger can stand handling chiles. The other parts of yourself cannot. They will burn.)

Add ground seeds, chile/mint paste, black salt, coarse salt, yogurt, and water to blender. Puree until smooth. Put borhani, yogurt drink, in refrigerator until it is cold. Note this drink is definitely an acquired taste.

TIDBITS

1) Borhani is an anagram for Ho Brain.

2) Ho Brain was a punk-rock band from Seattle. On April 17, 1984, they performed their smash hit single, “Culture War.” Although this song was written to be scathing, if unintelligible, satire of America’s cultural imperialism, their frenzied audience took it to mean that the government was tampering with the city’s yogurt supply.

3) The Seattle Yogurt Riots of 1984 lasted for four days during which thousands were arrested and newspaper headlines everywhere ended in exclamation points. The riots petered out as the rowdies gradually realized they never really ever ate plain yogurt. Ho Brain went on to do a world tour of Washington and Oregon before getting lost in an infinite berry patch. And so it goes.

Egg Coffee

Norwegian Appetizer

EGG COFFEE

INGREDIENTS??????????

9 cups water (1⅓ cups more later)
½ cup freshly ground coffee
⅓ cup water (1 cup more later)
egg
1 cup water.

PREPARATION

Add 9 cups water to large coffee pot or pan. Bring water to boil. While water comes to boil in coffee pot, add coffee, ⅓ cup water and egg to mixing bowl. Mix with whisk or fork. (This mixture looks like potting soil.)

Add coffee/water/egg mix to boiling water. Boil for 3 minutes. Remove coffee pot from heat. Add 1 cup water. Let coffee settle for 10 minutes. Pour coffee through strainer or coffee filters.

This coffee is a lot less bitter than the regular brews and should require less than the normal amount of cream and sugar or none at all.

TIDBITS

1) Historians claim coffee was discovered about a thousand years ago by an Ethiopian goatherd whose goats were bounding with caffeinated energy. How do we know this when we don’t even know how single socks keep disappearing in our clothes dryers?

2). It’s frightening to think that if the goats had only a few more weeks of caffeinated existence, the highly energetic critters could have done their grazing chores in no time at all. They would then have had time to ponder the infinite. Sure, their brains are tiny compared to ours, but hyped up on caffeine they would have to figure that a goat’s life is to give milk and goat meat.

3) To give goat meat means to die. Fast thinking goats wouldn’t have liked that. No, not one bit. And back then goats far outnumbered humans. They would have learned goat karate, attacked us, and gained their independence in regions where human warriors didn’t wear armor. Not long after that the coffee-drinking goats would have developed their own armor, their own spears, and their own catapults. We humans would have been overwhelmed by vast, well-equipped goat armies. We would have had to become vegetarians and the goat’s servants. It nearly happened.

Peanut Sauce (pinda saus)

Dutch appetizer

PEANUT SAUCE
(pinda saus)

INGREDIENTSPeanutSauce-

1 garlic clove
½ teaspoon lemon juice
¼ teaspoon lemongrass
¾ cup milk
¾ cup smooth peanut butter
4 tablespoons soy sauce
¼ teaspoon brown sugar
¼ teaspoon sambal oelek (omit if you can’t find it or desire a less spicy sauce)

PREPARATION

Mince garlic clove. Add garlic, lemon juice, and lemongrass to pan. Sauté on medium-high heat for about 3 minutes or until garlic softens. Stir frequently. Add milk, peanut butter, soy sauce, brown sugar, and sambal oelek. Cook on medium heat for 5 minutes or until it just starts to boil. Stir frequently. Reduce heat to low and simmer for 3 minutes until mixture thickens. Stir frequently.

Goes well with: sticky rice, satays, bami goreng, egg rolls, and loempias.

TIDBITS

1) The Netherlands supplies 70% of the world’s bacon. Yay!

Achiote Sauce

Mexican Appetizer

ACHIOTE SAUCE

INGREDIENTSAchioteSauce-

4 ounce achiote brick or dry paste
1 cup lemon juice
3/4 cup orange juice
3/4 cup water
3 garlic cloves
1 medium onion
5 jalapeno peppers
2 tablespoon chili powder
1 tablespoon cilantro
2 tablespoons olive oil
1 ½ tablespoons butter
2 tablespoons white vinegar

makes 4 cups

PREPARATION

Add achiote brick, lemon juice, orange juice, and water to mixing bowl. Stir with whisk until achiote dissolves. Remove seeds from jalapenos. (Be sure to wash your hands immediately afterward or touching your face will make it sting like the dickens.) Dice garlic, onion and jalapenos. Melt butter. Add onion, jalapeno, butter, chili powder, cilantro, olive oil, and vinegar to mixing bowl. Mix with whisk until well blended. Goes well with Mayan tacos and nearly everything Mexican. Well, maybe not flan.

Kabsa Spice Mix

Saudi Appetizer

KABSA SPICE MIX

INGREDIENTSKabsaSpice-

2 1/4 teaspoons allspice
2 1/4 teaspoons cardamom
3/4 teaspoon cloves, ground
½ tablespoon coriander
½ tablespoon cinnamon
½ tablespoon fennel
3/4 teaspoon ginger
½ teaspoon lime or orange zest
½ tablespoon pepper
½ tablespoon turmeric

Makes 4 2/3 tablespoons

Note: The above list of ingredient assumes the spices to be already ground. However, spice mixes taste better when using grinding your own spices. However, if you think the effort in tracking down ginger root, cardamom pods, cinnamon stick, cloves, and peppercorns might turn you into an axe-wielding murderer, please consider using already ground spices.

PREPARATION

Mix ingredients together with fork.

TIDBITS
