Costa Rican Pork Casado

Costa Rican Entree

PORK CASADO

INGREDIENTSCasado-

8 tablespoons orange juice
4 tablespoons orange zest
2 teaspoons garlic salt
1 teaspoon chili powder
1 teaspoon cumin

¼ head cabbage
1 small carrot
1 small tomato
¼ teaspoon pepper
¼ teaspoon salt

1 cup basmati or white rice
1 onion (1 additional onion later)
2 red bell peppers
2 tablespoons vegetable oil (5 additional tablespoons later)

2 plantains
5 tablespoons vegetable oil

1 onion
4 pork loins

1 15-ounce can black beans

PREPARATION MARINADE

Coat pork loins throughly in orange juice, orange zest, garlic salt, chili powder, and cumin.. Let marinate for 30 minutes. Keep marinade.

PREPARATION – SALAD

Shred cabbage. Dice carrot and tomato. Add cabbage, carrot, tomato, pepper, and salt to mixing bowl. Mix with fork.

PREPARATION – RICE

Add rice to pot. Cook rice according to instructions on package. While rice cooks, mince 1 onion and red bell peppers. Sauté at medium-high heat for 5 minutes or until onion softens. Keep rice and onion/bell pepper mix warm.

PREPARATION – PLANTAINS

Peel plantains. Slice plantains in half lengthwise. Add 5 tablespoons vegetable oil and plantain to pan. Sauté on medium heat for 5 minutes or until plantains become tender and turn golden brown. Drain and keep warm.

PREPARATION – PORK

Cut onion into four slices. Grill onion and pork loins on barbecue grill at high or 450 degrees. Grill onions for 10 minutes or until they start to char. Turn them over once. Grill pork for 20 minutes or until it is cooked through (white inside) or starts to brown. Turn over every 5 minutes. Brush with marinade each time.

PREPARATION – FINAL

Put beans in pot. Cook on medium heat for 5 minutes or until sauce begins to bubble. Add pork to plate with grilled onion slice on top. Add rice to side and top with onion/red pepper mix. Add 2 plantains to the side. (Lots of sides, aren’t there?) Add cabbage to a remaining spot on plate and top with carrot and tomato.

(snarky comment. ☜ Weeks later: I was interrupted by a melee in the house, plate tectonics, or something, so I typed “snarky comment” as a place filler. Clearly, I had hoped to come back in a jiffy with a brilliant thought intact. However, my brilliance was as fleeting as the perfect ripeness of an avocado. So let this be a cautionary tale to everyone; write down your thoughts if you suspect a bout of plate tectonics coming on.)

TIDBITS

1) This recipe is made with orange zest. As far as I know there are no movies titles with the word zest in them.

3) But there is a classic movie called “Lust for Life” starring Kirk Douglas and Anthony Quinn. It’s about the life of Vincent Van Gogh.

4) Van Gogh was an artist. So am I. I had a vase displayed in the Gemente Museum in the The Hague, Netherlands.

5) I am much more into cooking now. The upcoming movie about my life is likely to be called, “Lust for Zest.”

6) Any dish I create gets eaten.

7) You are not allowed to eat paintings in art museums, particularly so at the Louvre in Paris.

8) Not even if you bring the correct spices and wine. However, you can eat popcorn at the movies. As of press time, however, few movie theaters serve gourmet dinners and fine wine. It’s a hard world out there.

Easter Bread

Portuguese Entree

EASTER BREAD

INGREDIENTSEasterBread-

3 eggs (11 more eggs later!)
1 1/4 cups milk
½ cup butter (1 teaspoon more later)
1 1/4 cups sugar
1 ½ tablespoons yeast
½ teaspoon aniseed
1/4 teaspoon lemon extract or lemon zest
1/4 teaspoon nutmeg
½ teaspoon salt
5 cups flour
no stick spray
1 tablespoon butter
10 eggs (1 more egg later)
1 egg

SPECIAL UTENSILS

2 mixing bowls
2 cookie sheets or pie plates

PREPARATION

Beat 3 eggs with whisk. Heat milk on medium-high heat until milk is about to boil. Stir constantly. Add hot milk to first large bowl. Add butter and sugar. Stir until butter melts and sugar dissolves. Add yeast. Wait for 10 minutes or until yeast starts to bubble. Add 3 beaten eggs. Mix with whisk until well blended. Add aniseed, lemon extract nutmeg, and salt. Mix with whisk.

Fold in flour one cup at a time. The dough should be soft. Knead dough by hand for 15-to-20 minutes or until dough is smooth. Coat second large bowl with 1 tablespoon butter. Place dough in second large bowl. Make sure dough is coated on both sides with butter. (This keeps dough from drying out. Cover bowl and leave out for 2 hours or until dough doubles in size.

Press dough down and divide into 11 round pieces about 1″ high . Spray both cookies sheets with no-stick spray. Put 5 pieces onto each cookie sheet. (The 11th piece will be used soon.) Use spoon to make a depression in the middle of each piece. Gently place an egg on its side in each depression for a total of 10 eggs. Let dough rise again until it doubles in size. Preheat oven to 350 degrees.

Divide 11th piece of dough into 20 strings, each one as long as an egg. Please two strings of dough over each egg so that they make a cross. (This helps keep the egg in place.) Beat last egg in small bowl with whisk. Use brush to coat all the dough pieces. Bake at 350 degrees for 30 minutes to 1 hour or until bread is golden brown. Watch to prevent burning. Remove from oven.

While bread bakes, melt 1 tablespoon butter. When ready, brush the 10 baked breads with melted butter. Note: the eggs can be eaten liked hard-eggs. The eggs in this dish symbolize rebirth and the bread cross represents the cross of Jesus.

TIDBITS

1) Every June 10th, Portugal celebrates the death of its great author, Luís Vaz de Camões. Luís wrote an epic poem celebrating Portugal.

2) Epic means long. Long poem means lots of hours of reading for students assigned his book.

3) Perhaps that’s why Portuguese students and everyone else celebrates his death and not his birth.

4) I did read his magnum opus and I am still alive. However, I’ve forgotten its title.

5) A coping mechanism? Perhaps.

6) You have to admire loquacious Luís dedication to his craft. Legend has him saving his manuscript from a shipwreck and swimming to shore one-handed while holding his work above water with the other.

7) An olympics sport to go along with synchronized swimming?

8) Synchronized one-armed novel swimming I like it.

9) I just remembered the name of his renowned book. It’s Os Lusíadas or The Lusiads in English.

10) Rubber bands were never mentioned in The Lusiads. Probably because they had yet to be invented.

11) But now, rubber bands are critical to Portugal’s economy. Indeed, rubber bands account for a whopping 3.7% of all Portuguese exports to Slovenia.

12) Pause and reflect.

13) Half the world’s cork comes from Portugal.

14) If Luís Vaz de Camões were writing today, his epic story of Portugal would certainly include many references to rubber bands and cork.

15) Or do you think he would write reality shows for Portuguese T.V.?

Kabsa Spice Mix

Saudi Appetizer

KABSA SPICE MIX

INGREDIENTSKabsaSpice-

2 1/4 teaspoons allspice
2 1/4 teaspoons cardamom
3/4 teaspoon cloves, ground
½ tablespoon coriander
½ tablespoon cinnamon
½ tablespoon fennel
3/4 teaspoon ginger
½ teaspoon lime or orange zest
½ tablespoon pepper
½ tablespoon turmeric

Makes 4 2/3 tablespoons

Note: The above list of ingredient assumes the spices to be already ground. However, spice mixes taste better when using grinding your own spices. However, if you think the effort in tracking down ginger root, cardamom pods, cinnamon stick, cloves, and peppercorns might turn you into an axe-wielding murderer, please consider using already ground spices.

PREPARATION

Mix ingredients together with fork.

TIDBITS

1) Isn’t that the shortest preparation instruction you’ve ever seen?

2) William Shakespeare could have had the shortest resume ever. All he would have needed to write was, “I am available.”

3) The smallest country in the world is Vatican City with an area of 0.2 square miles and 770 permanent residents. This tiny nation is the spiritual center for over one billion Roman Catholics.

4) Monaco gets the silver medal in the small-countries event with an area 0.7 squares miles and 32,000 people. It’s ruled by Prince Albert II. This nation maintains its independence from France only as long as the princely line produces heirs. Last time I checked the good prince had not produced kids, much less get married. Get cracking, Albert.
