Lemon Drizzle Cake from Britain

British Dessert

LEMON DRIZZLE CAKE

INGREDIENTS – CAKE

1½ cups sugar
2 tablespoons lemon zest (takes 2-to-3 lemons)
1 cup butter
4 eggs
¼ cup milk
5 teaspoons baking powder
¼ teaspoon salt
2¼ cups flour
1 cup confectioners’ sugar
4½ tablespoon lemon juice

SPECIAL UTENSILS

electric beater
9″ * 12″ baking pan
parchment paper

Serves 12. Takes 1 hour 5 minutes to prepare and 30 minutes to cool.

PREPARATION

Preheat oven to 340 degrees. Add sugar, lemon zest, butter, eggs, milk, baking powder, and salt to large mixing bowl. Blend with electric beater set on high until mixture becomes fluffy. Fold in the flour with a spatula until cake mix is well blended. Line baking pan with parchment paper. Ladle cake mix into baking pan. Smooth cake mix with spatula. Bake at 340 degrees for 35 minutes or until cake turns golden brown, becomes springy, and a toothpick inserted into the center comes out clean.

While cake bakes, add confectioners’ sugar and lemon juice to mixing bowl. Stir with whisk or fork until confectioner’s sugar dissolves. Use toothpick to poke holes in the warm cake. Spoon drizzle over cake. Let cake sit in tin until it’s cools completely. Remove cake and cut into squares.

TIDBITS

1) In 1844, Alexander Cartwright was eating a corner piece of Lemon Drizzle Cake. His piece looked very much like the one like the one shone in this recipe. Then a mosquito landed on his cake. He flicked it off. This act inspired him to invent the sport of Lemon Drizzle. LD as it was called, was supposed to have been played a lot like baseball. However, the athletes would show up and stuff themselves cake after cake until they didn’t feel athletic anymore.

2) Then in 1845, Mr. Cartwright forbade the eating of Lemon Drizzle Cake. Once, players actually played baseball, they loved it. So much so, that it became the national pastime.

Fluffy Curd Cake From Lithuania

Lithuanian Dessert

FLUFFY CURD CAKE

INGREDIENTS

½ cup milk
6 tablespoons semolina
3 eggs
3 tablespoons melted butter
5 tablespoons sugar
1 pound curds
¼ cup hard bread crumbs

SPECIAL UTENSILS

electric beater
8″ * 8″ casserole dish or casserole dish

PREPARATION

Serves 9. Takes 1 hour.

Add milk to medium mixing bowl. Add semolina. Set aside to let semolina swell. Separate eggs. Add butter and sugar to large mixing bowl. Mix with whisk or fork until sugar dissolves. Add egg yolks. Mix with whisk or fork until well blended. Crumble curds, if necessary. Add curds. Mix with whisk or fork until well blended.

Preheat oven to 370 degrees. Add milk/semolina to curd mix in large mixing bowl. Mix with whisk or fork until well blended. Add egg whites to small bowl. Use electric beater set on high. Whip egg whites until they form stiff beaks.

Spread bread crumbs into baking dish. Carefully pour semolina/curd mix into baking dish. Gently shake baking dish, or smooth with spatula, until mix is level. Carefully spoon egg whites onto semolina/curd mix. Bake for 30 minutes or until mix rises, hardens, and turn golden brown, or stick a toothpick in the center of the curd mix. If nothing sticks, it is ready. Serve warm.

TIDBITS

1) The game of dominoes remains the world’s most relaxing game. Sure, a nap loosens you up like nothing else can. But suppose you want it all? Let’s say you want to stay awake AND chill out. This is why we play dominoes. Modern dominoes uses black, solid tiles with white dots on them.

2) But back in 1919, the Lithuanian chef, Andrius Balkus, noticed that a square of his Fluffy Curd Cake looked like a gaming tile. Also, the tops of some of the squares seemed similar to each other while different to the rest. His Fluffy Curd CakesTM used the same rules as modern dominoes, But problems arose right away. People argued constantly about what the tops of the squares looked like. Also, game after game ended when hungry players ate the curd squares. We now play dominoes.

Vanilla Pudding

American Dessert

VANILLA PUDDING

INGREDIENTS

3½ tablespoons cornstarch
⅛ teaspoon salt
½ cup sugar
2½ cups milk
1 tablespoon butter, softened
½ tablespoon vanilla extract

Serves 4. Takes 1 hour 45 minutes.

PREPARATION

Add cornstarch, salt, and sugar to saucepan. Mix with spatula. Add milk slowly, while stirring gently with spatula. Heat for 5 minutes using medium heat or until mixture thickens. Stir constantly to prevent burning. Remove from heat. Add butter and vanilla. Stir gently with spatula until well blended.

Chill in refrigerator for 1 hour 30 minutes or until mixture firms into pudding.

TIDBITS

1) Stars are made from vanilla pudding. How do we know this?

2) Stars are white.

3) Vanilla pudding is white.

4) The Sun is hot. That is because it’s yellow and not made from vanilla pudding.

5) If you were somehow able to catapult your vanilla pudding millions of light years away it would be far too small to be seen, even by the Hubble telescope

6) Indeed, you would need to buy trillions of pounds of: cornstarch, salt, sugar, milk, butter, and vanilla extract to fling a visibile vanilla-pudding star into the far reaches of space.

7) But don’t do it. Every van in the world would be needed to deliver your ingredients. The global economy would collapse. Oh my gosh, we’d have nothing left to make cake! For millions of years! What would we do for birthdays? I beg of you, reconsider this giant-star project!

Caramelized Banana Cake

Cape Verdean Dessert

CARAMELIZED BANANA CAKE

INGREDIENTS

4 eggs
½ cup butter, softened
1½ cups sugar (1¼ cups more later)
½ cup milk
⅛ teaspoon salt
2⅓ cups wheat flour or flour
2 teaspoons baking powder
no-stick spray
4 ripe bananas
⅓ cup water
1¼ cups sugar
no-stick spray

SPECIAL UTENSILS

electric beater
8″ * 12″ cake pan
9″ * 13″ cookie tray
sonic obliterator

Serves 10. Takes 1 hour 20 minutes.

PREPARATION

Separate eggs into yolks and whites. Add butter and 1½ cups sugar to large mixing bowl. Mix with electric beater set on medium until well blended. Add egg yolks, milk, and salt. Mix with electric beater set on medium until well blended. Gradually add wheat flour. Mix with electric beater set on medium until well blended. Add baking powder and egg whites. Mix with electric beater set on medium until this dough is well blended and fluffy. Spray cake pan with no-stick spray.

Cut each banana into 6 circles. Add water and 1¼ cups sugar to pan. Warm sugar using low-medium heat until it begin to melt. Stir enough to keep sugar from burning and clumping. Reduce heat to low and continue warming sugar until it melts completely and turns a caramel brown. Stir constantly. Pour this caramel immediately into cake pan. (Don’t let it set.) dish. Smooth with spatula.

Place banana circles evenly over caramel. (Be careful if caramel is hot.) Spoon dough over bananas. Bake for 30 minutes at 350 degrees or until a toothpick stuck in middle of cake comes out clean. Loosen cake by sliding spatula around the edges and, as far as possible, under the bottom. Put cookie tray on top of cake pan. Carefully turn cake pan and cookie tray upside down. Tap cake pan with knife. Say a brief prayer. Lift cake pan. Cake should come out cleanly onto cookie tray. Let sit until cool. Serve to adoring guests. Zap unappreciative ones with sonic obliterator.

TIDBITS

1) One of the most beloved form of communal games of gambling is craps. Just go to any casino. Any time you hear a loud roar of happiness, it is quite likely it came from the craps table. Of course, as with all gambling choices in a casino, you will likely go home a loser. But you have more fun losing than people playing slot machines. And that’s the main thing.

2) There are two games that come to mind for people to play face to face. They are chess and dominoes.

3) However, chess is mostly a silent game. It’s bad form to disturb, in any way, the player about to make a move. People can take the longest time pondering whether to move their bishop or not. Or where. How long can some players take to move?

4) Eons.

5) Culinary sociologists have determined that chess is the game of choice for prison wardens. The wardens deal with violent and otherwise troublesome prisoners by placing them in solitary confinement.

6) There is always a chess game going in solitary confinement. The guard tells the ingoing inmate whether he is playing for white black. The player looks at the game. His mind goes a mile a minute thinking over the 172,329 possible moves. This takes a while, and lo and behold. just as he moves his chess piece, his time in solitary is over.

7) The head guard then picks the current troublemaker in the chess-game cell and informs this inmate that his is playing the opposite color from that of the previous cell mate.

8) Solitary Prison Cell has become all the rage. Inmates have begun to commit offenses just to play chess in solitary. Prisoners have begun to form chess gangs. The most popular gang names are the White Knights and the Black Bishops. For a while, wardens tried segregating these groups.

9) However, as this policy is proving insufficient in decreasing prison violent, the guards are starting to take away solitary-chess privileges for frequent rule offenders. These men can only play dominoes, a much less violent game. It’s still addicting, though.

10) When prisoners are released, the dominoes players need a good fix of the game. This is why you see people playing dominoes outside a remote, rural general store. But there aren’t many such establishments any more. So dominoes junkies naturally flock to anything that has the big dots on them that dominoes has. What do they do? They can’t play chess anymore. That games doesn’t have dots. Beside, the ex-cons have been conditioned against playing that game? So what do they do?

11) They play craps. The dice in craps have plenty of dots on them, enough for any dominoes junkie. However, as we established in the first tidbit, people who plays craps lose all their money.

12) Then what do these one-time felons due for their dot fix? They eat food with dots on them. Like caramelized banana cake. The bananas in ths dessert look like the dots on a domino tile. (See the above photo.) This is why this dessert is so enormously popular around the world. Now you know.

Carrot Cake

American Dessert

CARROT CAKE

INGREDIENTS – MAINcarrotcake

4 eggs
1⅓ cups sugar
⅔ cup light brown sugar
3 cups shredded carrots
1 cup vegetable oil
¼ teaspoon allspice
2 teaspoons cinnamon
¼ teaspoon ginger
¼ teaspoon salt
2 cups cake flour or flour
½ tablespoon baking soda
1 cup chopped walnuts or pecans or combination
no-stick spray

INGREDIENTS – ICING

6 tablespoons butter (softened)
1 pound confectioner’s sugar
8 ounces cream cheese (softened)
1 teaspoon vanilla extract

SPECIAL UTENSILS

electric beater
9″ x 13″ casserole dish
3 mixing bowls (Or are you an outstanding chef like my Grandma Anna wished us all to be and who cleanse bowls and utensils as you cook?)
sonic obliterator

Makes about 30 2″-squares. Takes 2 hours.

PREPARATION – MAIN

Preheat oven to 350 degrees. Add eggs to first large mixing bowl. Use medium setting on electric beater until frothy. (The eggs, not you.) Gradually add sugar and light brown sugar. Blend using electric mixer set on whip until well blended. Add carrots, vegetable oil, allspice, cinnamon, ginger, and salt. Blend with mixer set on medium-high until well blended.

Add flour and baking soda to second large mixing bowl. Mix with whisk. Add flour/baking soda from second mixing bowl to first mixing bowl. Blend using electric beater’s medium-high setting. Add nuts and stir with spoon.

Spray casserole dish with no-stick spray. Pour eggs/sugar/spice/baking soda mixture into casserole dish. Smooth with spatula. Bake at 350 degrees for 35-to-45 minutes or until toothpick inserted in center of cake comes out clean. Let cool on wire rack for 1 hour. Use spatula to smooth icing over carrot cake.

(Okay, little secret here. After 15 minutes, you can cool the cake down considerably faster by putting the casserole dish in cold water in the sink. Be sure the water is only halfway to the top of the casserole dish. If your casserole dish is too big for the sink, simply put it in the bathtub. Again, let the water go no higher than halfway up the side of the casserole dish. If someone happens to see your cake cooling in the bathtub and makes a snarky comment, zap him with your sonic obliterator. You don’t need that negativity in your life.)

PREPARATION – ICING

While cake bakes, add butter, confectioner’s sugar, cream cheese, and vanilla extract to third mixing bowl (Note: this cookbook always employs the Oxford comma when providing a list of ingredients. Long live the Oxford comma! Vexation to its enemies!) Ahem, beat ingredients using electric beater set on cream until ingredients become a fluffy icing.

TIDBITS

1) The famous French painter, Paul Cézanne believed, “A single carrot newly observed will cause a revolution.”

2) Eleven years after Cézanne died, the Russian Revolution began. People in the streets of St. Petersburg, the Russian capital, had been starving. They couldn’t afford the price of a loaf of bread.

4) Desperate to maintain order, the czar and his ministers bought up food from all over the world. They purchased cabbages from Germany, eggs from Sweden, and carrots from the gardens of Cézanne’s children. The authorities even bought beans, cotija cheese, and tortillas from Mexico. Surely, the rioters would be placated by burritos. I mean, who doesn’t like a burrito?

5) Unfortunately, as in the case of many government programs, well intentioned though they might be, something went wrong. The newly formed Russian Ministry of Burrito Assembly put a raw carrot in every burrito.

6) The Russian rebel rabble not appreciate the taste of the raw carrot, bean, and cheese burrito. They did not like its texture either. They did not like it in the city square. They did not like in their hair. They did not like it in the air. They did not like it anywhere.

7) So the Russians did not eat these burritos. And they grew hungrier and hungrier.

8) Then an artist named Ivan Popoff came across one of the burritos lying–Oh gosh, I hope I conjugated this evil verb correctly–split open on the street. Something about the burrito’s carrot struck him. “Oh ho,” he said, “I am observing this carrot in an entirely new way.” Lenin, a passerby, heard this and immediately started the Russian Revolution.

9) Millions died during the Russian Revolution and the ensuing decades. We should all pay more attention to French post-Impressionist painters.

Carrot Cake

American Dessert

CARROT CAKE

INGREDIENTS – MAINCarrotCake-

Danish Egg Cake (æggekage)

Danish Entree

EGG CAKE
(æggekage)

INGREDIENTSEggCake-

12 ounces bacon
1/2 small onion
¼ cup fresh basil
8 eggs
¼ cup flour
1½ cups milk
¼ teaspoon pepper
½ teaspoon salt
no-stick spray

SPECIAL UTENSILS

electric beater
large oven-proof pan

PREPARATION

Preheat oven to 430 degrees. Cut bacon into ½” squares. Mince onion. Dice basil. Fry bacon in an on medium-high heat until golden and crispy. Stir frequently. (Be careful. Use one hand to hold the lid between you and the bacon or tilt the pan away from you when you stir.) Remove bacon and set on paper towel to drain. Clean pan.

Add eggs, flour, milk, pepper, and salt to mixing bowl. Mix with electric beater send on lowest setting until well blended and eggs begin to fluff. Spray oven-proof pan with no-stick spray. Add egg/flour mixture to pan. Reduce heat to medium. Cook for 4 minutes.

Place pan in oven Bake at 430 degrees for 15 minutes or until pancake becomes golden brown. Remove pancake from oven. Sprinkle bacon squares, onion, and basil on middle of egg pancake.

TIDBITS

1) Denmark in Danish is Danmark. Danmark was named after a man called Dan. Cool. When I become supreme ruler of the world, this planet will be known as Paul.

2) Rabbit jumping shows are popular in Denmark. These events have an even greater following in its birthplace, Sweden, where it is known as “Kaninhoppning”.

3) Rabbithopping-USA and the U.S. Rabbit Agility Association sponsor America’s rabbit jumping contests. It’s still much more popular in Sweden and Denmark. Sweden has been at peace since 1814; Denmark since 1945. America has fought multiple wars since then. Coincidence? Perhaps.

Burmese Semolina Cake (sanwin makin)

Burmese Dessert

SEMOLINA CAKE
(sanwin makin)

INGREDIENTSSemolinaCake-

1 16-ounce can coconut cream
or 2 14-ounces cans coconut milk.
3 eggs
2 tablespoons sesame seeds
1 cup semolina or cream of wheat
1 cup sugar
¼ cup ghee or butter
½ teaspoon cardamom

Note: if you need to make coconut cream from coconut milk, you will need to keep cans of coconut milk in the fridge overnight.

SPECIAL UTENSIL

8″ square cake pan

PREPARATION – COCONUT CREAM (If you can’t find it in stores.)

Chill coconut milk cans in refrigerator for 24 hours. Open cans and scoop out the thick cream on the top. Keep 16 ounces, or 2 cups, of coconut cream. Use the rest of the coconut cream and the liquid in the bottom of the cans to make coconut-based smoothies

PREPARATION – ONCE YOU HAVE COCONUT CREAM.

Preheat oven to 325 degrees. Separate egg yolks from egg whites.

Add sesame seeds to pan. Fry sesame seeds for 3 minutes at medium heat or until seeds brown. Stir constantly. Remove seeds from heat.

Add semolina to large pot. Slowly add in the coconut cream, stirring each time to prevent lumps. Add sugar. Stir until sugar dissolves. Bring to boil using medium heat for 3-to-5 minutes or until mixture begins to thicken. Stir constantly. Add ghee. Cook for 2 minutes or until mixture thickens to the point that it leaves the side of the pot. Remove from heat.

Add cardamom and eggs yolks to pot. Mix with whisk until this batter is well blended. Add egg whites to small mixing bowl. Whisk egg whites until they thicken and form peaks. Fold egg whites into batter. Pour batter into cake pan. Top with sesame seeds. Bake at 325 degrees for about 45 minutes or until cake start to brown or a toothpick inserted in center comes out clean.

Let cool in cake pan. Cut into squares and serve warm.

1) The Burma-Vita company first produced Burma ShaveTM in 1925. The product was said to include products from Burma. Antarctic Shave wouldn’t have worked. It BurmaShavewould have had to included ice and cubes and penguin meat. No one would have wanted to shave with that, particularly during the summer.

2) At first Burma Shave only sold a bit better than Antarctic Shave.

3) Then Burma Shave came out with a brushless shaving cream. To promote this new, improved product they came up with a brilliant advertising campaign. They put a series of six small signs in a row alongside major roads. Early motorists got a chuckle out of reading them.

4) And they bought Burma Shave. The company became the second-largest seller of brushless shaving cream. The number-one company sold more.

5) Sales of Burma Shave after declined after the development of the atomic bomb.

6) This is probably coincidence.

7) But roadside Burma-Shave signs got put up less and less often with new advancement of nuclear weaponry. Indeed, about a year after the world almost went wonky during the Cuban Missile Crisis, the signs all got taken down.

8) Why do advertisers always say, “new and improved?” Shouldn’t “improved” be implied? Is there really a possibility of companies proudly putting out an product that’s “new and worsened?” How can something be improved if it’s new? You can only improve something that’s been around for a while.

9) Indeed, the first ICBM was just plain new. Now, the second generation of ICBMs could have be improved, but the whole ICBM concept was no longer new. Could the company that made the ICBMs have boasted of “new and improved” nuclear warfare. If so, I must have missed the radio jingle.

10) But the fond memories of the Burma-Shave signs never left our hearts. They would show up again and again in literature, including the very best of cat-herding novels, The Fur West.

11) There is no evidence that cats ever read the Burma-Shave signs. Cats do not shave. Coincidence?

Chocolate Sticky Cake

Swedish Dessert

CHOCOLATE STICKY CAKE

(kladdkaka)

INGREDIENTSChocolateSticky-

½ cup butter
2 eggs
1¼ cups sugar
½ cup unsweetened cocoa powder
½ cup flour
½ tablespoon vanilla extract
1 tablespoon confectionery sugar
no-stick spray

SPECIAL UTENSIL

9″ round cake pan or baking dish

PREPARATION

Preheat oven to 350 degrees. Melt butter in small saucepan then let cool. Add eggs and sugar to mixing bowl. Mix with whisk until well blended. Add butter, cocoa powder, flour, and vanilla extract. Mix with whisk until batter is well blended.

Spray cake pan with no-stick spray. Pour batter into cake pan. Bake batter at 350 degrees for about 20 minutes or until set on top. A toothpick stuck into the cake edge’ should come out dry, but dry when stuck into the middle. Sprinkle with confectionary sugar. Smile.

And oh, this really is sticky. Not a finger food at all, unless, of course, you like sticky, chocolaty fingers. Then, by all means, go for it.

TIDBITS

1) One of my grandmothers came from Sweden. I called her, “Gramma Anna.” “Gramma Anna” is an anagram for “Anagram, man!”

2) The unabridged list of anagrams for “cake” in the known universe is: “cake.”

3) However, I’m happy to point out that there are hundreds and hundreds of anagrams for “chocolate cake.” The best anagrams for these happy words are: “Cheat cake? Loco!” “Elect Coach Oak,” “Coach look! Taco.” “Locate eco hack,” “A taco? Ole. Check,” and “Eek, Coach! A clot!”

4) Eden can be found in Sweden. Take a look. Adam and Eve got kicked out of the Garden of Eden for eating an apple from the Tree of Knowledge. They also became mortal and would die. And they would have to eat lutefisk to survive. We are still living with their error in judgment.
