Split Pea Soup

American Soup

SPLIT PEA SOUP

INGREDIENTSSplitPea-

1 medium carrot
1 celery stalk
1 large onion
2 tablespoons butter.
9 cups water
2 cups (1 pound) dried split peas
1 teaspoon marjoram
1 bay leaf
1/2 teaspoon thyme
1/4 teaspoon pepper

SPECIAL UTENSIL

Dutch oven

PREPARATION

Mince carrot, celery, and onion. Add carrot, celery, onion, and butter to Dutch oven. Sauté veggies on medium-high heat for 5 minutes or until onion softens. Stir frequently. Add split peas, water, marjoram, bay leaf, thyme, and pepper. Bring soup to boil on high heat, stirring occasionally. Reduce heat to low and simmer for about an hour or until peas are tender.

Transfer as much soup to blender as will fit. Liquefy or puree soup. Repeat for all batches on soup. Serve and enjoy. Soup crackers and ham go well with this soup.

TIDBITS

1) Gregor Mendel, used pea plants to prove his theory of dominant and recessive genes.

2) His published results were quite close to his hypothesis. In fact his results were so near that one can use statistics to show he fudged his outcomes to prove his point. Bad Mendel.

3) If I had a time machine, I could have gone back in time and convinced Mendel to publish the actual results. He still would have been famous for his ground breaking work without becoming a homework problem for students in statistics. I mean what did Mendel’s son think of all of this?

4) Felix Mendelsson, the great composer of his violin concert and incidental music for A Midsummer’s Night Dream, is probably not the son of Gregor Mendel as Felix’s birth occurred in 1809 and Gregor’s didn’t come into the world until 1822. Geneticists and biologists concur with this assessment with near unanimity.

Paraguayan Corn Bread (sopa Paraguaya)

Paraguayan Entree

PARAGUAYAN CORN BREAD
(sopa Paraguaya)

INGREDIENTSCornBread-

6 tablespoons butter (used three times for 1, 2, and 3 tablespoons)
1 large sweet onion (or onion)
1 2/3 cups whole milk (or milk)
2 cups cornmeal
3/4 cup grated mozzarella (or white cheese)
1/2 cup grated cheddar (or yellow cheese)
3 eggs
1/4 teaspoon salt
1/4 teaspoon pepper

SPECIAL UTENSIL

PREPARATION

Preheat oven to 400 degrees.

Mince onion. Separate egg yolks from egg whites. Melt 6 tablespoon butter. Coat sides of bread-loaf pan with 1 tablespoon of melted butter. Add 2 tablespoons of melted butter to frying pan. Sauté the onions at medium-high heat for 5 minutes or until onions soften. Reduce heat to low. Add milk, stirring constantly. Do not let milk boil. Reduce heat to warm if necessary. Add cornmeal gradually, stirring constantly until mixture becomes well blended.

Remove pan from heat. Add mozzarella cheese and cheddar cheese, 3 tablespoons melted butter, salt, and pepper. Mix with fork until cheese melts. Add egg yolk and stir again with whisk until well this batter is well blended. Stir eggs white with whisk in another mixing bowl until stiff peaks form. Fold egg whites carefully into batter.

Pour batter into buttered bread-loaf pan. Bake at 400 degrees for 30-to-40 minutes or until corn bread is golden brown or until toothpick comes out clean after insertion.

TIDBITS

1) Paraguay became independent from Spain in 1811. For years, maps listed the country as “Parrot Gay”. Some centuries ago a Jesuits settlers befriend a homosexual parrot. They named the gay parrot, Frank. The settlers eventually ate Frank. This region could have been called Parrot à l’orange.

2) Paraguay is now rated “boring” by many travelers.

3) In1812, Portugal helped celebrate Paraguayan independence by invading the little country. A period of anarchy followed by a dictatorships. None of these dictators did anything fun, such as promote soccer or karaoke.

4) Indeed, the dictatorship of Francisco Lopez, 1862 – 1869, was a particularly grumpy time. Not only were popular sports, arts and Wi-Fi connections neglected, but he managed to tick off the neighboring superpowers Argentina and Brazil. An unarguably unpleasant war followed where some 80% of adult males perished without ever having a chance to sing in karaoke clubs or even dance in conga lines.

5) By 1900, there were again equal numbers between males and females had been reestablished. My goodness, the Paraguayans were busy between the years 1869 and 1900.

6) Okay, there wasn’t an exact equivalence of males and females as the census of 1900 showed an odd number of people, 635,571 in Paraguay.

7) A moderate number of fair-to-middling strikes, anarchy, repression, and rebellions filled Paraguayan life until 1930. Soccer probably came to Paraguay during this time. We know even less about the state of Paraguayan soccer and conga lines during this era. Historians are frustratingly mute on this. But we know everything about a gay parrot that was dined upon hundreds of years ago. Go figure.

8) In 1932 Paraguay went to war with another country starting with the letter “B,” Bolivia over the supposedly oil rich lands of Chaco. This was sponsored by Standard Oil of New Jersey, who backed Bolivia, and Royal Dutch Shell, who supported Paraguay. Paraguay almost went to war with Chile which starts with the letter “C.” However, Chile, had no corporate sponsor and sat out the entire Chaco conflict.

9) Chaco rhymes with taco. Tacos are from Mexico. Tacos are a peaceful food.

10) Peace between Bolivia and Paraguay broke out in 1935. Paraguay got most of the Chaco land and Bolivia got guaranteed access to the sea via the Paraguay River. So some good came out of the war. Paraguay was safe for karaoke, conga lines, and vaudeville.

11) But not for long, a military revolt resulted a new dictator in 1936. Unrest, repression, lutefisk vendors, and murders cursed the country for decades. Soccer managed to flourish; it is a resilient.

12) In 2000, a stable civilian government finally took over. The new leaders vigorously support karaoke and conga lines. (Vaudeville disappeared worldwide decades ago.) Tourists are starting to flock to Paraguay. The future looks bright for this county.

13) However, researchers from the University of Dili, recently concluded that Paraguayans were among the crabbiest people on Earth.

14) You’d be crabby too if your country missed out on vaudeville. But soccer, karaoke and conga will heal all. And boring would sound pretty darn good after centuries of conflict. So there.

Cemita, Mexican Sandwich

Mexican Entree

CEMITA
(Mexican Sandwich)

INGREDIENTSCemita-

2 garlic cloves
1 tablespoon minced onion
1 tablespoon butter.
1 teaspoon Mexican oregano
1/2 teaspoon pepper
1/4 teaspoon salt
1 cup bread crumbs
2 eggs
1 pound round steak (sliced 1/4″ to 1/2″ thick)
at least 3 tablespoons olive oil.
2 tablespoons lemon juice

2 avocados
1 onion
12 ounces queso blanco or mozzarella
4 round rolls with sesame seeds
1/2 cup salsa

SPECIAL UTENSIL

PREPARATION

Mince garlic. Add garlic, onion, and butter to pan and sauté on medium-high heat for 5 minutes or until onion is tender. Remove garlic and onion. Add garlic, onion, oregano, pepper, and salt to mixing bowl. Stir with whisk until well mixed. Whisk eggs in separate bowl.

Tenderize steaks with kitchen mallet if steaks not already tenderized. Bam! Bam! Coat both sides of steaks in garlic/onion/spice mix. Dip steaks into whisked eggs, then into breadcrumbs, coating both sides. Add olive oil to skillet. Sautée each steak on medium heat for 1.5-to-2 minutes for each side, until breading is crispy and golden brown. Add olive oil as necessary for each steak sautéed. Place steaks on paper towels to drain Sprinkle with lemon juice. Slice lemon and put a slice with each steak.

Peel and pit avocados. Cut avocados into thin slices. Thinly slice onion. Grate cheese. Toast rolls. Place steak Milanesa on bottom half of roll. Top steak Milanesa with 1/4th of the avocado slices, 1/4th of the onion slices, and 1/4th of the grated cheese. Evenly spoon 1/4th of the salsa on top of the cheese. Put the top half of roll on top of everything. Repeat for the other 3 sandwiches.

TIDBITS

1) “Cemita sandwich” is an anagram for “Ascetic ham wind.”

2) There is a town in Massachussets called Sandwich. Its police cars have “Sandwich Police” on their doors.

3) Jim Morrison was the lead singer for the band, “The Doors.”

4) The Parisians use baguettes for their sandwiches.

5) The bloody French Revolution was caused, in great part, by the high cost of bread.

6) “Bread” was another great rock band.

7) Rock beat scissors.

8) Ancient Egyptians did not have scissors. They played “Rock, Paper.” As paper beats rock, everyone picked paper. All their games ended in a tie.

9) Tie are a popular gift for Father’s Day.

10) Doris Day was a great actress and singer. She never took her clothes off in any of her movies.

11) Clothes get cleaned in a washer.

12) But often only one sock per pair survives the washing. Where does the missing sock go?

13) I think the socks go to an alternate universe.

14) Socks the Cat was President Bill Clinton’s pet.

15) I met someone who had the job of protecting Socks when President Clinton visited San Diego.

16) But no one protects the socks that go into our washing machines. Perhaps our washing machines have obtained consciousness and have learned to hate us, just like computer printers.

17) Printers should be called Marleys because they’re always jammin’.

18) I almost saw Bob Marley’s house when I visited Jamaica.

19) Jamaica’s jerk-chicken dish is wonderful.

20) Soda jerks were common in America before World War II when this great land had lots of stores with soda fountains. Now soda jerks and soda fountains are mostly gone. The Allies made the world safe for democracy, but not for going out for a soda.

21) I need a sandwich to regain my rosy outlook on life. Ahh.

Steak Milanesa

Mexican Entree

STEAK MILANESA

INGREDIENTSSteakMilanesa-

2 cloves garlic
1 tablespoon minced onion
1 tablespoon butter.
1 teaspoon oregano
1/2 teaspoon pepper
1/4 teaspoon salt
1 cup bread crumbs
2 eggs
1 pound round steak (sliced 1/4″ to 1/2″ thick)
at least 3 tablespoons olive oil.
2 tablespoons lemon juice
1 lemon

SPECIAL UTENSIL

kitchen mallet (if steaks not already tenderized. Useful for door-to-door salesmen as well.)

PREPARATION

Mince garlic. Add garlic, onion, and butter to pan and sauté on medium-high heat for 5 minutes or until onion is tender. Remove garlic and onion. Add garlic, onion, oregano, pepper, and salt to mixing bowl. Stir with whisk until well mixed. Whisk eggs in separate bowl.

TIDBITS

1) People have been grilling meat since the discovery of fire, about 500,000 years ago. This means cavemen could have been having lots and lots of barbecues. Anthropologists have been strangely mute on this, maybe due to the absence of prehistoric spatulas.

2) Grilling first became truly popular in the 1950s with the invention of the mass-produced barbecue cookbooks, spatulas, and barbecue sauces. We truly live in the best time ever.

Key-Lime Pie

American Dessert

KEY LIME PIE

INGREDIENTSKeyLimePie-

1 14-ounce can sweetened condensed milk
1/2 cup key lime juice
4 egg yolks
1 8″ graham-cracker crust.
1 can whipped cream

SPECIAL UTENSIL

electric blender

PREPARATION

Preheat oven to 375 degrees.

Add condensed milk, key lime juice, and egg yolks to mixing bowl. Blend with electric blender set to “whip” or “cream” until well blended. Pour mixture into graham-cracker crust. Bake pie in oven at 375 degrees for 15 minutes or until toothpick inserted into the pie’s center comes out clean. Cool on wire rack for 2 hours.  Note, key lime pies made with real key lime juice are not green. Add whipped cream if desired. Or even lots and lots of whipped cream.

TIDBITS

1) Contrary to what I would have wished the Key Lime did not come from Key West nor even Key Largo. I researched this by going to Key West and by watching the 1948 movie, Key Largo. Key Largo starred Humphrey Bogart, Lauren Bacall, and Edward G. Robinson. None of these actors ate even a single Key Lime during the entire movie. After the movie? No one knows.

2) Key Limes were first grown in Southern Asia. Historians will tell you that Key Limes made their way to Spain, presumably by hitchhiking as these fruits don’t have legs. Actually, I doubt the whole hitchhiking theory as Key Limes do not have thumbs. You can tell they don’t just by looking at the tiny yellowish-green thingies.

3) Ship crews liked the take Key Limes as the fruit was high in vitamin C and prevented scurvy. Christopher Columbus took Key Limes on his voyages of discovery to the Americas. Indeed, culinary historians praise Spain for the bringing health-enhancing Key Lime to the New World.

4) Do other historians laud the European discoverers? Not so much, pointing to endless wars of conquest by the Spanish conquistadors, Old World diseases that decimated indigenous populations, and wholesale enslavement of the local tribes. Indeed, Europe didn’t balance things with the natives until they brought the hamburger to America in the 19th century. Kinda like a do-over.

Chocolate Cream Pie

CHOCOLATE CREAM PIE

2/3 cup semisweet chocolate bits
8 ounces cream cheese
1/3 cup milk
1/2 cup sugar
1 9″ graham-cracker pie crust

whipped cream

SPECIAL UTENSIL

blender

PREPARATION

Use medium heat to melt chocolate bits in pot. Stir constantly. Add chocolate, cream cheese, milk, and sugar to blender Using “mix” setting on blender until thoroughly blended. Pour mixture into pie crust. Add whipped cream as desired.

TIDBITS

1) “How can you govern a country which has 246 varieties of cheese?” – Charles De Gaulle (French president) From the mid 1600s to the mid 1900s, France suffered from repeated uprisings, rebellions, and riots. The country also had a global empire for well over 200 years.

2) Ancient Romans so loved cheese that they had special kitchens, caerale, just for making cheese. Recurring civil wars convulsed the Empire for over 500 years. Rome also conquered all the lands around the Mediterranean and bit more.

3) The Western Roman Empire collapsed in 476 under the crushing weight of one barbarian invasions, barbarians who wanted Rome’s cheese. The Eastern Roman Empire fell almost a millennium later in 1453. Barbarian cheese lovers just couldn’t work up enough enthusiasm for the Eastern Empire’s limited cheese selection to make a really dedicated invasion.

4) Remembering the unbridled horrors of World War One and World War Two, world leaders got together in Paris, France, June 15, 1947, to form the World Cheese Organization (WCO.) The WCO has worked tirelessly ever since to ensure adequate cheese production and selection in all the nations. They know a country with good and plentiful cheese has no reason to invade its neighbors.

5) Robert Louis Stevenson (crackerjack writer) sums up humanity’s love for cheese when he said,”Many’s the long night I’ve dreamed of cheese – toasted, mostly.” Note, just in case, the WCO is also distributing cheese toasters to the all the people of this globe.

Caprese Burgers

Italian Entree

CAPRESE BURGER

INGREDIENTSCapreseBurgers-

1/2 onion
2 cloves garlic
1 1/2 pounds ground beef
1 tablespoon Italian seasoning
12 ounces pound mozzarella cheese
2 Roma tomatoes
1/4 teaspoon peppercorns (or black pepper)
6 hamburger buns
3 tablespoons extra-virgin olive oil
1/3 cup fresh basil
1/4 teaspoon sea salt

PREPARATION

Mince onion and garlic cloves. Mix onion, garlic, ground beef, and Italian seasoning. Form 6 patties.  Put patties in frying pan. Fry at medium-high heat with lid on for about 15 minutes or until the insides of the patties are done to the desired level of pinkness or brownness. Flip patties 2 times.

While patties are cooking, slice mozzarella into 24 slabs. Slice tomatoes 1/8″ thick. Grind peppercorns. Toast hamburger buns. Put a patty on each bun. Put 2 slabs on mozzarella on patty. Put 2 slices of tomato on mozzarella slabs. Put 2 slabs of mozzarella on bun top, then put 2 slices of tomato. Drizzle olive oil on and sprinkle the bottom half with ground pepper, and salt. Sprinkle top half with basil. Combine the bottom and top parts of the burger. Repeat for the next 5 burgers.

TIDBITS

1) In 408 A.D., Alaric besieged Rome with his Visigothic army. The Romans bought him off with 3,000 pounds of pepper. It is quite possible, though historians are by no means unanimous of this point, the Visigoths used this pepper to make caprese burgers.

2) In 410 A.D., their supply of pepper exhausted, the Visigoths were reduced to eating porridge. Clearly, this was not a stable situation. Alaric took his army once more to Rome. This time, the Romans refused to give the barbarians their pepper; Italian pork chops with pepper having become the latest culinary rage. The culinary-driven Visigoths stormed Rome, sacking it for 3 days while they searched for hidden stores of pepper.

3) Rome never recovered. The great chefs of Rome, deprived of pepper, gradually drifted off into banditry. The entire Roman Empire collapsed. The Dark Ages descended all over Europe not to be lifted for a thousand years.

4) This is why I always keep a lot of pepper in my kitchen.

Lime-Chili Popcorn

LIME-CHILI POPCORN

INGREDIENTSLimeChiliPopcorn-

1/4 cup popcorn
2 tablespoons lime juice
1 teaspoon chili powder

SPECIAL UTENSIL

air popcorn popper

PREPARATION

Put popcorn in popper. Put bowl underneath popper’s opening. Keep bowl in place until all the kernels have popped. Sprinkle lime juice and chili powder into bowl with popcorn. Stir with long spoon or fork.

TIDBITS

1) There is moisture in each kernel. This liquid turns to steam as the popcorn heats up. Water cannot escape the kernel shell. Pressure builds up until the kernel explodes.

2) Popcorn dating from 3000 B.C. has been found in New Mexican caves. People were happy.

3) The first permanent income tax for the United States was established in 1913. Americans became cranky. We fought a bloody war in Germany from 1917 to 1918. We greatly expanded our navy.

4) Charles Manley developed the first good electric popcorn popper in 1925 and sold it to theaters. Americans became happy again. Our economy boomed. It was the Golden Age of Comedy.

5) The Great Depression struck in 1929. Harrowing economic hardships resulted in fascist dictatorships in Germany, Italy, and Spain. America kept its democratic form of government.

6) Why? Popcorn. Popcorn was one of the few treats millions of Americans could afford to eat while watching their beloved movies.

7) The recent and relatively peaceful break up of the Soviet Union occurred because of the easy accessibility of popcorn in contrast to its popcornless Revolution of 1917.

8) The Wampanoag tribe brought popcorn to the colonists for that famous autumnal feast in Plymouth, Massachusetts. The grateful settlers called the meal, “Thanksgiving.” We are still grateful.

Peanut-Butter Ham

American Entree

PEANUT-BUTTER HAM

INGREDIENTSPeanutButterHam-

2 cloves garlic
1 small onion
1/4 cup honey
1 cup smooth peanut butter
2 tablespoons brown sugar
3/4 teaspoon ground mustard
3/4 teaspoon orange zest
1/4 teaspoon pepper
1 tablespoon soy sauce
4 1″-thick ham slices (about 1 1/2 pounds)

SPECIAL UTENSIL

2 9″x9″ casserole dishes

PREPARATION

Mince garlic and onion. Add garlic, onion, honey, peanut butter, brown sugar, mustard, orange zest, pepper, and soy sauce to blender. Blend using liquefy or puree setting. Cut each ham slice into 4 pieces. Add peanut butter/honey mixture and ham pieces to casserole dishes. Thoroughly coat ham pieces in peanut butter/honey mixture. Marinate in refrigerator for 4 hours.

Preheat oven to 350 degrees. Put casserole dish in oven. Bake at 350 for 30-to-40 minutes or until ham is hot all the way through.

TIDBITS

1) Chef Paul gives Jones Soda his coveted “Best Tasting Ham-Flavored Soda Award” for its 2007 Christmas edition of ham-flavored soda. While not needed to win the award, the soda company went the extra mile and made this beverage kosher and caffeine free. Well done.

2) Indeed, 2007 Jones Soda displayed great culinary creativity. Its attention-grabbing Christmas pack included Sugar Plum, Christmas Tree, Egg Nog and Christmas Ham flavors. Its Hanukkah selection gave us Jelly Doughnut, Apple Sauce, Chocolate Coins and Latkes sodas.

3) In 2006, Jones Soda rolled out: Dinner Roll, Green Pea, Sweet Potato, Turkey and Gravy, and Antacid sodas for the holiday season. Clearly, this company can’t be ignored by soda connoisseurs.

4) “I have not yet begun to fight.” – John Paul Jones, September 23, 1779, naval battle of Flamborough Head. It is doubtful that the illustrious commander drank sodas during the battle.

Pumpkin Pie

PUMPKIN PIE

2 eggs
1/4 teaspoon cardamom, ground
1/2 tablespoon cinnamon
1/4 teaspoon cloves, ground
3/4 teaspoon ginger, ground
1/4 teaspoon nutmeg
1/4 teaspoon salt
3/4 cup sugar
1 15 ounce can pumpkin mashed or puree
1 12 ounce can evaporated milk
2 8″-to-9″graham-cracker pie shell or 1 9″ deep dish graham-cracker pie shell
whipped cream for topping

PREPARATION

Preheat oven to 425 degrees. Add eggs, cardamom, cinnamon, cloves, ginger, nutmeg, salt, and sugar to large bowl. Beat eggs with whisk. Add pumpkin. Mix with whisk. Add evaporated milk. Mix again with whisk. Pour mixture into pie shell. Put filled pie shell in oven and bake at 425 degrees for 15 minutes. Reduce temperature to 350 degrees. Bake an additional 40-to-50 minutes or until toothpick inserted into the pie’s center comes out clean. Cool on wire rack for 2 hours. Serve with whipped cream. Yum.

TIDBITS

1) Pumpkins are grown on every continent except Antarctica.

2) Morton, Illinois is the Pumpkin Capital. Go visit its Pumpkin Festival in mid September.

3) Pumpkin seeds have been used to remove freckles.

4) Linus from the comic strip Peanuts believed in the Great Pumpkin. See the lyrics for “I’m dreaming of the Great Pumpkin” and other pumpkin songs.

6) In 2009, motorcyclists in Nigeria wore dried pumpkin shells on their heads to circumvent laws making them wear helmets.

7) Irish lore says Stingy Jack was too miserly to get into Heaven. But Jack had tricked the devil so he wasn’t welcome there either. Jack roamed the darkness between Heaven and Hell with a lit, carved pumpkin. This is probably the basis for pumpkin carving on Halloween. That and freckle fear.
