SPAM

Part of my kitchen

1) The derivation of the term “spam” for torrents of unsolicited e-mail and posts comes from a Monty Python skit where a diner serves SPAM, SPAM, SPAM, and more SPAM.

2) While tidbit 1) advanced the cause of literature and the arts, the following tidbits will extol SPAM’s contribution to culinary history.

3) SPAM was first canned in 1937. It’s jingle was: “SPAM, SPAM, SPAM, SPAM, Hormel’s new miracle meat in a can. Saves time, tastes fine, to eat something grand as for SPAM.”

4) SPAM featured in soldiers’ meal during World War II as it is a good source of protein and is easy to eat. Famous people have spoken out about Spam.

“SPAM was a war-time delicacy.”
– Prime Minister Margaret Thatcher

5) The SPAM Museum is Austin, Minnesota, “SPAM Town, USA.” Admission is free. Number One Son and I have been there. The poster picture on this blog is from the gift shop.

6) Restaurants in Austin, Minnesota serve SPAM. Sometimes it’s on the menu. Sometimes you just have to ask.

7) In 1989,Americans purchased 1,750 tons of SPAM. Purchases for other years is apparently a secret.

8) Hawaii has the largest per capita consumption of SPAM in the world. These islanders acquired their love for SPAM during World War II when millions of soldiers, marines, and seamen stationed there were fed vast amounts of SPAM.

9) There is an annual SPAM Jam block party in Waikiki. McDonald’s restaurants in Hawaii include SPAM, eggs, and rice on its breakfast menu.

10) Koreans love SPAM. Who knew? Okay, smarty pants, besides Koreans.

11) Many Koreans went hungry during and just after the Korean War. Thousands and thousands averted starvation only by getting food from nearby American army bases. The most prevalent gift from the GIs were cans of SPAM. People there are still grateful for this food and SPAM has been adopted into Korean cuisine.

12) I’ve heard that SPAM is popular in the Philippines as well because of the SPAM American soldiers brought with them in 1944 to 1946. My father was stationed in the Philippines after the War as part of America’s SPAM diplomacy.

13) South Korea is a firm ally of America and a strong trading partner. North Korea, however, threatens us with nuclear attack. Why? Because America never got a chance to get its SPAM bearing armies into that land. SPAM brings peace and amity everywhere. Wonderful SPAM, glorious SPAM.

14) Some years ago, I was asked to participate in the International Bento Contest. SPAM was part of my recipe.

Spam Burger From Hawaii

Hawaiian Entree

SPAM BURGER

INGREDIENTSSpamBurger-

3 cloves garlic
1 cup brown sugar
2 tablespoons lemon juice
3/4 cup pineapple juice
2 tablespoons red wine
1/4 cup soy sauce
1/2 cup water
1/4 cup cornstarch
1 12 ounce can SPAM

4 pineapple rings
4 slices mild cheddar cheese
4 lettuce leaves
4 hamburger buns

SPECIAL UTENSIL

PREPARATION

Mince garlic cloves. Put garlic, brown sugar, lemon juice, pineapple juice, red wine, soy sauce, water, and cornstarch in large mixing bowl. Stir with whisk or fork until brown sugar dissolves and cornstrach blends in. Cut SPAM into 8 strips. Add SPAM. Let SPAM marinate for 60 minutes.

Set skillet to 350 degrees. Put SPAM strips and pineapple rings in skillet. Fry for 4 minutes. Turn over SPAM and pineapple. Add cheese slices. Fry for another 4 minutes.

While SPAM strips and pineapple rings are frying, add marinade to frying pan. Simmer for 8 minutes on low heat, stirring constantly.

Put 2 SPAM strips with melted cheese on bottom buns. Ladle as much cooked marinade on top as desired. (If you desire a lot of sticky marinade, may I suggest a lot of napkins.) Add lettuce and complete with top hamburger bun.

Left over sauce goes great with stir fry.

Kenyan Maharagwe Soup Recipe

Kenyan Soup

MAHARAGWE
(Spicy red beans in coconut milk)

INGREDIENTSMaharagwe-

3 tomatoes
1 1/2 onions
2 tablespoons olive oil
1 1/4 teaspoons cayenne
1/2 teaspoon salt
1/2 tablespoon turmeric
1 13.5 ounce can coconut milk
1 15 ounce can dark red kidney beans

PREPARATION

Dice tomatoes. Mince onions. Put olive oil and onion in soup pot. Sauté for 5 minutes on medium-high heat or until onion is tender. Drain kidney beans. Add tomato, cayenne, salt, turmeric, coconut milk, and kidney beans to pot.

Cook on low-medium heat for 10 minutes. Stir occasionally. Serve to guests who do not wonder out loud why a dish from Kenya has coconuts.

TIDBITS

1) Kenya grows coconuts. It does! It does! I never knew. I just looked it up. There’s even a Kenya Coconut Development Authority (KCDA). So there.

2) Egypt has pyramids. Mexico has pyramids. Did ancient Egyptians ever voyage to Mexico?

3) I’d always pictured coconuts growing only in islands in the Pacific.

4) But then again, Iceland grows bananas. Iceland is a republic. So, Iceland is a banana republic. So is the United States.

5) Did you know Iceland has a list of approved names? If you pick off the list, the government will not recognize your baby’s name. In that case, you must go to court to win approval.

6) Have you ever bought bananas from Iceland? Iceland has no McDonald’s. It costs too much to ship McDonald’s approved beef and potatoes there.

7) Juneau, Alaska has a McDonald’s. It used up it’s all the supplies that were supposed to last it an entire month on opening day.

Spinach Stew From Central Africa

Central African Entree

SPINACH STEW

INGREDIENTSSpinStw-

3 small tomatoes
1 1/2 pounds fresh spinach (not that horrible frozen type)
1 1/2 medium yellow onions
1 green bell pepper
2 chile peppers
2 tablespoons vegetable oil
1/2 teaspoon cayenne pepper
1/2 teaspoon coriander
1/2 teaspoon salt
1/3 cup peanut butter
1/2 cup water

Makes 4 bowls. Takes 45 minutes.

PREPARATION

Peel tomatoes. Chop or dice spinach. Dice tomatoes, onions, bell pepper, and chile peppers. (For goodness sakes, wash your hands thoroughly before touching your face. If not, well it’s a mistake you’ll only make once.) Put tomatoes and onions in frying pan. Add vegetable oil. Sauté at medium-high heat until onion becomes tender.

Transfer sautéed onions and tomatoes to soup pot. Add bell pepper, chile pepper, spinach, cayenne pepper, coriander, salt, peanut butter, and water. Simmer on low heat for 15 minutes. Stir stew frequently enough to thoroughly blend in peanut butter and to prevent stew from burning.

Serve as is in bowl or atop a bed of rice.

TIDBITS

1) The Central African Republic is well named. The country is a republic and is in the center of Africa.

2) Greenland is not green, however. It’s rather icy. Which is great if you continually want a handy supply of ice for your Roy Rogers or Shirley Temples sodas, but not so good if you want to raise cattle, à la the television show, Rawhide.

3) It’s doubtful Roy Rogers or Shirley Temple visited Greenland. I’d like to visit but then again I’m not Shirley Temple or Roy Rogers.

4) The Vikings were the first Europeans to discover Greenland. Norse real estate agents named it that way to encourage new settlers to come there. The part about ocean view properties was indeed true, though.

5) And did you know that the vast percentage of the world’s landlocked countries, including the Central African Republic, do not have any McDonald’s?

Sopa De Mani – Bolivian Peanut And Potato Soup Recipe

Bolivian Entree

SOPA DE MANI
(Peanut and Potato Soup)

INGREDIENTS SopaDeM-

2 chicken breasts
4 cloves garlic
1 large onion
1 cup raw, unsalted peanuts
1 cup water
3 Yukon gold potatoes (to be chopped into pieces)
1 Yukon gold potato (to be cut into strips)
2 1/2 tablespoons vegetable oil (1/4 cup more later)
6 cups chicken broth
1 teaspoon cumin
1 teaspoon oregano
1/4 teaspoon black pepper
1/4 teaspoon salt

1/4 cup vegetable oil
1 teaspoon cilantro
1 teaspoon parsley

SPECIAL APPLIANCE

PREPARATION

Cut chicken breasts into 1/2″ cubes. Mince garlic and onions. Put peanuts and water into blender. Use chop setting until you get a smooth white liquid or paste. Peel potatoes. Cut 3 potatoes into 1/2″ slices. Cut each slice into 2 or 3 pieces. Cut 1 potato into 1/4″ by 1/4″ inch strips.

Put oil, garlic, and onion in frying pan. Sauté at medium-high heat for 5 minutes or until onions soften or start to turn golden brown. Stir frequently. Transfer sautéed garlic and onion to soup pot.

Add chicken cubes, peanut paste, potato pieces (not the potato strips), chicken broth, cumin, oregano, pepper, and salt to soup pot. Simmer on low heat for about 40 minutes or until potato pieces are soft. Stir occasionally. (It is also a good idea to stir occasionally when watching tv or you may be thrown out with that old sofa you’re sitting on.)

While soup is cooking, add 1/4 cup vegetable oil and strips from one potato to frying pan. Sauté on medium-high heat for about 5 minutes or until potato strips turn golden brown. Stir frequently enough to keep strips or fries from burning. (Note, hot oil splatters. Tip the frying pan away from you or hold a lid between you and the frying pan when stirring the fries.)

Ladle soup into bowls. Garnish equal bowl with an equal amount of cilantro, parsley, and fried potato strips .If desired, add as much LLAJUA, (spicy sauce) to each bowl.

TIDBITS

1) Bolivians love potatoes.

2) They did not love McDonald’s enough. McDonald’s left Bolivia  on December 1, 2001 after seven years of trying. Bolivians simply preferred their own style of cooking or were too poor to eat out .

3) Iceland does not have McDonald’s either. It costs too much to get potatoes from Germany.

4) Many of the poor countries between the Mediterranean Sea and South Africa are without McDonald’s. The same holds true for ex-Soviet republic in Central Asia.sauté

5) American forces fought in the Vietnam War in: Vietnam, Laos, and Cambodia. These countries do not have McDonald’s.

6) North Korea and Iran have nuclear-weapons programs. They are unfriendly to us and have no McDonald’s.

7) Indeed, most countries do not have McDonald’s restaurants in them are poor, have fought America, or have become hostile nuclear powers.

8) Think about that when you’re tempted to pass by an empty McDonald’s in some foreign land.

French Hamburger

French Entree

FRENCH HAMBURGER

INGREDIENTS

1 1/2 pounds ground beef
1 medium red onion
1/2 cup sour cream
1 tablespoon mayonnaise
1 teaspoon Grey PouponTM
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon lemon juice
1 packet onion soup mix

8 French rolls
romaine lettuce

PREPARATION

Mince the onion. Mix all top ingredients by hand. (Yes, it’s mushy.) Form 8 elongated patties. Fry patties on medium-high heat until juice coming from patties is no longer red or meat is no longer pink. Don’t turn patties over as frequently as you would for an American hamburger. There is plenty of moisture in these patties. You don’t have to worry as much about them drying out and early turning might cause them to crumble.

Toast French rolls. Put patty and lettuce on roll. This is a French hamburger. Any mustard must be Grey PouponTM. Sacré bleu.

TIDBITS

1) I was last in France in 1993. At that time, there were dozens of McDonald’sTM. The best one was in Nice. Most restaurants in France are only open during meal times. McDonald’sTM remains open throughout the day.

2) A McDonald’s in Budapest, Hungary, charged for ketchup.

3) I am a fifth-generation direct descendant of the great French Emperor Napoleon. He died on the fifth hour of the fifth day of the fifth month. I was born at that same time. Different years, of course. He also conquered a few more countries than I.

4) I bicycled across France in 1983. At that time, my French was on the level of a distracted third grader.

5) I had a burger in France. It came in a French roll.

Castro Burger

Cuban Entree

CASTRO BURGER

INGREDIENTS

1 pound ground pork
1/2 pound ground beef
1 onion
2 cloves garlic
1 teaspoon cumin
1/2 teaspoon ground mustard
1 teaspoon oregano
1/2 teaspoon black pepper
1/2 teaspoon salt
1 14.5 ounce cans diced tomatoes
6  Swiss cheese slices
Dill Sandwich StackersTM Pickles
yellow mustard
6 French rolls (Use Cuban bread if you can find it.)
No mayonnaise (This is a Cuban no no.)
PREPARATION

Mince onion and garlic cloves. Mix pork, beef, onion, garlic, cumin, mustard, oregano, pepper, and salt by hand. Form six patties. Fry patties in pan until golden brown.

Add diced tomatoes and juice. Cook until tomatoes and juice are hot. Toast rolls. Put patty on roll, followed by a scooping of diced tomatoes, a few pickles, and a slice of Swiss Cheese. Spread mustard on the top half of the roll and put on top of the patty and fixings. Andale.

TIDBITS

1) Some decades ago, Fidel Castro decided communist Cuba could do as well as McDonald’sTM. To back up this bold assertion, they announced the construction of roadside stands selling burgers and orange drinks. The meat in the burgers was guaranteed to contain at least 60% pork. They didn’t identify the meat comprising the other 40%.

2) This dish is in homage to Fidel Castro. Thanks Fidel, without you this dish would never have been created.

3) Fidel Castro was a good baseball player in his youth and probably would made it at least to minor leagues if he hadn’t decided to throw it all away to make a revolution.

4) Lenin caused the Russian Revolution which caused millions of people to die. His successor Stalin is responsible for tens of millions more.

5) Neither Lenin nor Stalin showed any aptitude for baseball. Coincidence, perhaps?

6) One of the first professional baseball teams in Russia played next to a missile base.

7) During the 1990s, Moscow’s utility company shut down all electricity to Russia’s command center for its nuclear strike force. Until Russia paid its electric bill, it’s nuclear missiles were useless.
