Ma’mounia, Iraqi Wheat Pudding

Iraqi Dessert

MA’MOUNIA
(wheat pudding)

INGREDIENTSMa'mounia-

3 cups water
1¼ cups sugar
½ teaspoon lemon juice
⅓ cup unsalted butter or regular butter
¾ cups semolina or whole wheat flour
½ tablespoon orange blossom water
1 teaspoon rose water
½ teaspoon cinnamon (addition 1 teaspoon later)
1 teaspoon cinnamon
1 tablespoon slivered almonds
whipped cream (optional or is it?)

PREPARATION

Add water and sugar to pot. Cook on low heat, stirring constantly, until sugar dissolves. Bring mixture to boil on medium-high heat. Add lemon juice. Stir constantly. Reduce heat to low and simmer for 10 minutes, stirring occasionally. Remove from heat.

Melt butter. Add butter and semolina to second pot. Cook on medium heat for 5 minutes or until mixture turns golden brown. Stir constantly. Gradually add sugary mixture from first pot and to semolina mixture in second pot. Bring to boil on medium-high heat, stirring constantly. Reduce heat to low. Add orange blossom water, rose water, and ½ teaspoon cinnamon. Simmer for 10 minutes or until mixture thickens. Stir constantly.

Sprinkle 1 teaspoon cinnamon and slivered almonds evenly over bowls. Add whipped cream if desired.

TIDBITS

1) Writing first happened in Iraq over 5,000 years ago. It was used on the world’s first written story, The Epic of Gilgamesh. You can still buy it. And use it in literature classes. The Epic of Gilgamesh, tormenting millions of downtrodden students for millennia. Always spell millennia correctly. Doing so makes everything better.

2) Iraq is also responsible for the first accurate calendar. America provided the next advancement time keeping when in 1930 or so it produced the world’s first pin-up calendars. American men wished for more such calendars. Then they found they had no excuse for not filing their income taxes on time. Be careful what you wish for.

3) The Philippines, however, is responsible for the first attempted ban of fruit-flavored condoms believing flavor should only be added to things that get eaten. Ahem.

Peanut Butter Pumpkin Pie

American Dessert

PEANUT BUTTER PUMPKIN PIE

INGREDIENTSPeanutButterPumpkinPie-

2 eggs
¼ teaspoon cardamom, ground
½ tablespoon cinnamon
¼ teaspoon cloves, ground
¾ teaspoon ginger, ground
¼ teaspoon nutmeg
¼ teaspoon salt
¾ cup sugar
½ cup creamy peanut butter
1 15-ounce can 100% pure pumpkin
¼ cup honey
1 12-ounce can evaporated milk
2 x 8″-to-9″graham-cracker pie shells or 1 x 9″ deep dish graham-cracker pie shell
whipped cream for topping

PREPARATION

Preheat oven to 425 degrees. Add eggs, cardamom, cinnamon, cloves, ginger, nutmeg, salt, and sugar to large bowl. Beat eggs with whisk. Add peanut butter, pumpkin, and honey. Mix with whisk. Add evaporated milk. Mix again with whisk. Pour mixture into pie shell. Put filled pie shell in oven and bake at 425 degrees for 15 minutes. Reduce temperature to 350 degrees. Bake an additional 40-to-45 minutes or until toothpick inserted into the pie’s center comes out clean. Cool on wire rack for 2 hours. Serve with life-giving whipped cream. Yay.

TIDBITS

1) Florida’s highest point is only 345 feet above sea level.

2) This is why few people travel to Florida for downhill skiing. That, and Florida’s lack of snow.

4) But even if Florida’s snowfall increased significantly, downhill skiing there would still not be popular. The state has no ski lifts, no not one.

5) And how do we know the altitude at the bottom of the high point’s slope isn’t something like 318 feet? That would only be a drop of 27 feet. And maybe it’s a gentle slope. Maybe it takes you a mile to ski down that 27 feet. Such a rate of descent would discourage most thrill-seeking skiers.

6) Of course, that slope might be exciting enough for snails. Do snails even have skis? I don’t know; I don’t run with that crowd.

Carrot Cake

American Dessert

CARROT CAKE

INGREDIENTS – MAINCarrotCake-

4 eggs
1⅓ cups sugar
⅔ cup light brown sugar
3 cups shredded carrots
1 cup vegetable oil
¼ teaspoon allspice
2 teaspoons cinnamon
¼ teaspoon ginger
¼ teaspoon salt
2 cups cake flour or flour
½ tablespoon baking soda
1 cup chopped walnuts or pecans or combination
no-stick spray

INGREDIENTS – ICING

6 tablespoons butter (softened)
1 pound confectionery sugar
8 ounces cream cheese (softened)
1 teaspoon vanilla extract

SPECIAL UTENSIL

electric mixer
9″ x 13″ casserole dish
3 mixing bowls (Or are you an outstanding chef like my Grandma Anna wished us all to be and clean bowls and utensils as you cook?)
sonic obliterator

PREPARATION – MAIN

Preheat oven to 350 degrees. Add eggs to first large mixing bowl. Beat eggs with electric mixer until frothy. (The eggs, not you.) Gradually add sugar and light brown sugar. Blend using electric mixer set on whip until well blended. Add carrots, vegetable oil, allspice, cinnamon, ginger, and salt. Blend with mixer set on whip until well blended.

Add flour and baking soda to second large mixing bowl. Mix with whisk. Add flour/baking soda from second mixing bowl to first mixing bowl. Blend with electric mixer set on cake until blended. Add nuts and stir with spoon.

Spray casserole dish with no-stick spray. Pour eggs/sugar/spice/baking soda mixture into casserole dish. Smooth with spatula. Bake at 350 degrees for 35-to-45 minutes or until toothpick inserted in center of cake comes out clean. Let cool on wire rack for 1 hour.

(Okay, little secret here. You can cool the cake down considerably faster by putting the casserole dish in cold water in the sink. Be sure the water is only halfway to the top of the casserole dish. If your casserole dish is too big for the sink, simply put it in the bathtub. Again, let the water go no higher than halfway up the side of the casserole dish. If someone happens to see your cake cooling in the bathtub and makes a snarky comment, zap him with your sonic obliterator. You don’t need that negativity in your life.)

PREPARATION – ICING

While cake bakes, add butter, confectionery sugar, cream cheese, and vanilla extract to third mixing bowl (Note: this cookbook always employs the Oxford when providing a list of ingredients. Long live the Oxford comma! Vexation to its enemies!) Ahem, beat ingredients using electric beater set on cream until ingredients become a fluffy icing.

TIDBITS

1) The famous French Painter, Paul Cézanne believed, “A single carrot newly observed will cause a revolution.”

2) Eleven years after Cézanne died, the Russian Revolution began. People in the streets of St. Petersburg, the Russian capital, had been starving. They couldn’t afford the price of a loaf of bread.

4) Desperate to maintain order, the czar and his ministers bought up food from all over the world. They purchased cabbages from Germany, eggs from Sweden, and carrots from the gardens of Cezanne’s children. The authorities even bought beans, cotija cheese, and tortillas from Mexico. Surely, the rioters would be placated by burritos. I mean, who doesn’t like a burrito?

5) Unfortunately, as in the case of many governmental programs, well intentioned though they might be, something went wrong. The newly formed Russian Ministry of Burrito Assembly put a raw carrot in every burrito.

6) The Russian rabble rebel not appreciate the taste of the raw carrot, bean, and cheese burrito. They did not like its texture either. They did not like it in the city square. They did not like in their hair. They did not like it in the air. They did not like it anywhere.

7) So the Russians did not eat these burritos. And they grew hungrier and hungrier.

8) Then an artist named Ivan Popoff came across one of the burritos lying–Oh gosh, I hope I conjugated this evil verb correctly–split open on the street. Something about the burrito’s carrot struck him. “Oh ho,” he said, “I am observing this carrot in an entirely new way.” Lenin, a passerby, heard this and immediately started the Russian Revolution.

9) Millions died during the Russian Revolution and the ensuing decades.

10) We should all pay more attention to French post-impressionist painters.

South African Custard Pie (Melktert)

South African Dessert

CUSTARD PIE
(melktert)

INGREDIENTS – PASTRYMelkTert-

2 cups flour (1 teaspoon plus 3 tablespoons more later)
1 teaspoon baking powder
¼ teaspoon salt (¼ teaspoon more later)
½ cup chilled butter (1½ tablespoons more later)
¼ cup water
1 teaspoon flour

INGREDIENTS – FILLING

4 eggs
4 cups milk
1½ tablespoons butter
½ cup sugar (½ cup plus 1/4 cup plus ½ teaspoon more later)
1 cinnamon stick
¼ teaspoon salt
2 tablespoons cornflour
2 tablespoons cornstarch
3 tablespoons flour
¼ cup sugar
1 teaspoon vanilla
¼ cup sugar
½ teaspoon ground cinnamon
½ teaspoon sugar

SPECIAL UTENSILS

2 9″ pie tins
rolling pin
electric mixer or beater
sonic obliterator

Makes 2 pies. Takes 2 hours 40 minutes. Well, it should take that long, unless of course, while in the midst of preparation someone drank some of the milk you needed for this recipe, so you rushed to the store to buy milk and just before you got to the checkout stand four people rushed their carts in front of you, and then you got home only to find you had to take your child to sword-swallowing lessons. In this case, preparation will take longer.

PREPARATION – CRUSTS

Preheat oven to 400 degrees. Add 2 cups flour, baking powder, an¼ teaspoon salt to large mixing bowl. Mix with whisk. Grate ½ cup butter or cut into small pieces. Add grated butter. Use hands to blend grated butter with flour mix. Add water. Use hands to smoosh, a new culinary term, water into butter/flour mix. Form mix into dough ball using hands.(Add additional water as necessary to keep dough ball together.)

Dust rolling pin and surface with 1 teaspoon flour. Split dough ball into two. Roll out each dough ball into circles into a 10″ circle. Place a dough circle into each pie tin. Poke pie crusts a few times with a fork. (This releases excess air.) Bake crusts for 6-to-10 minutes or until they start to turn golden brown. Keep oven at 400 degrees while you prepare filling. (Depending on the number of mixing bowls you have, you might want to clean them as you get the chance.)

PREPARATION – FILLING

Separate eggs. Add egg whites to small bowl. Beat egg whites with electric mixer set on beat until they stiffen. Add egg yolks to another small bowl. Beat yolks with fork.

Add milk to pot. Bring milk to slow boil using medium-high heat. Stir constantly. Add 1½ tablespoons butter, ½ cup sugar, cinnamon stick, and ¼ teaspoon salt. Reduce heat to low and simmer for 5 minutes. Stir as frequently as you can.

Add cornflour, cornstarch, 3 tablespoons flour, and ¼ cup sugar to new mixing bowl. Mix with whisk until well blended. Add about ¼ of the hot-milk mixture (about 1 cup to this bowl. Mix with whisk until well blended. Add egg yolks. Mix again with whisk. Add vanilla and entire corn flour/flour/sugar/hot-milk contents to simmering pot. Keep pot simmering using low heat for 10 minutes or until mixture thickens. Stir as frequently as you can. Remove from heat and let cool for 15 minutes.

Lower temperature of oven to 375 degrees.. Add egg whites and ¼ cup sugar to pot. Mix with whisk. Pour filling into pie crusts. Bake for 15-to-25 minutes or until filling sets. (A toothpick inserted into the middle should come out clean)

Remove pies from oven. Add ground cinnamon and ½ teaspoon sugar to small bowl. Mix with fork. Sprinkle pie with ground cinnamon/sugar mixture. Let cool for 15 minutes and then chill for 30 minutes in the refrigerator. (Note: some people favor serving this dessert warm. A fierce debate rages.)

Congratulations! You’ve done a lot to make this wonderful dessert for your guests. Relax with a nice, cold root beer or even something stronger. If your guests do not appreciate your heroic efforts, zap them with your sonic obliterator. You don’t need that negativity in your life. ☺

TIDBITS

1) Hippos can get sunburned!

2) No wonder hippos kill people crossing rivers. Sunburns make them cranky. I got a bad sunburn recently. Made me cranky, I can tell you. But I didn’t kill anyone. Yay for me.

4) Hippos need sunscreen. Who would apply the sunscreen to these creatures? Someone brave.

Belgian Apple Fritters

Belgian Dessert

APPLE FRITTERS

INGREDIENTSAppleFritters-

2⅓ cups flour
16 ounces beer
5 large apples
4 cups vegetable oil (or enough to cover apple slices)
½ cup confectionery sugar
1 tablespoon lemon juice

SPECIAL UTENSIL

electric beater
electric skillet

makes 30 apple fritters

PREPARATION

Add flour and beer to large mixing bowl. Use electric beater on medium setting until there are no lumps and the mixture thickens in batter. If mixture is liquidy after lumps have disappeared, put mixture into refrigerator for 5 minutes. Peel and core apples. Cut into 6 rings each. Coat apple slices into flour/beer mixture.

Add oil to skillet. Heat electric skillet to 375 degrees. Add coated apple slices to skillet. The oil should cover the slices. Fry apple slices for about 2 minutes on each side or until golden brown. Remove fried slices, or fritters, and place on paper towels. Repeat until done. Sprinkle fritters with lemon juice and dust with confectionery sugar.

TIDBITS

1) Belgians believe eating cabbage on Shrove Tuesday will prevent Belgium’s cabbages from being devoured by caterpillars and flies. Works for me.

2) Shrove Tuesday occurs on Tuesday. Further research shows Shrove Tuesday occurring before Ash Wednesday, the start of Lent. Shrove Tuesday is also known as Mardi Gras, or Fat Tuesday. Traditionally, people would eats lots of high caloric foods on this day before giving up their tasty temptations for Lent.

4) Indeed, Shrove Tuesday is also known as Pancake Day in protestant Britain, New Zealand, and Canada and in catholic Ireland as inhabitants on those happy countries would traditionally eat pancakes and engage in run-on sentences on that day. It’s gratifying to know that food, pancakes in this case, brings amity, peace, and contentment to nations with histories of political and religious differences. All we are saying is give pancakes a chance.

Dutch Apple Pie

Dutch Dessert

APPLE PIE

INGREDIENTS – CRUSTApplePie-

¾ cup butter (another 6 tablespoons later)
1½ cups flour (another 1 cup later)
2 tablespoons brown sugar (another ¼ cup later)
¼ teaspoon salt

INGREDIENTS – FILLING

5 Granny Smith or green apples
3 tablespoons cornstarch
⅓ cup sugar (another ¼ cup later)
½ cup water
½ teaspoon cinnamon
¼ teaspoon nutmeg
½ teaspoon vanilla extract
½ cup heavy cream

INGREDIENTS – TOPPING

1 cup flour
¼ cup sugar
¼ cup brown sugar
6 tablespoons butter

SPECIAL UTENSIL

9″ pie plate

PREPARATION – CRUST

Melt ¾ cup butter. Add 1½ cups flour, brown sugar, ¾ cup melted butter, and salt to large mixing bowl. Mix with hands until well blended and mixture becomes a big ball. Press mixture into pie plate.

PREPARATION – FILLING

Peel and dice apples. Add cornstarch, ⅓ cup sugar, water, cinnamon, and nutmeg to mixing bowl. Stir with whisk until smooth. Add mixture to saucepan. Bring to boil using medium-high heat. Cook for 2 minutes or until mixture thickens. Stir constantly. Remove mixture from heat. Add apples and vanilla extract. Stir with whisk. Pour filling into crust. Preheat oven to 360 degrees.
PREPARATION – TOPPING

Add 1 cup flour, ¼ cup sugar, ¼ cup brown sugar, and 6 tablespoons butter to mixing bowl. Mix with whisk until well blended. Crumble topping mixture over filling. Bake at 360 degrees for 40-to-50 minutes or until topping turns golden brown.

TIDBITS

1) The Spanish Inquisition sentenced the entire Dutch population to death in 1568. Tough love, you bet.

Algerian Fruit Salad (chlada fakya)

Algerian Dessert

FRUIT SALAD
(chlada fakya)

INGREDIENTSFruitSalad-

½ honeydew or cantaloupe
2 apples
2 bananas
5 oranges
6 strawberries
½ teaspoon cinnamon
2 tablespoons sugar
¼ cup lemon juice
⅓ cup orange juice
2 tablespoons orange blossom water
1 teaspoon vanilla extract

PREPARATION

Peel and seed honeydew. Cut honeydew and apples into ½” cubes. Peel bananas and cut into ½” slices. Peel and seed oranges. Separate orange wedges. Cut orange wedges in half. Remove stems from strawberries. Cut each strawberry into 6 pieces.

Add honeydew, apple, banana, strawberry, and orange to large mixing bowl. Gently toss fruit. Add cinnamon, sugar, lemon juice, orange juice, orange blossom water, and vanilla extract to small mixing bowl. Mix with whisk until sugar dissolves. Sprinkle liquid over fruit in large mixing bowl. Toss gently. Serve immediately or chill for up to 2 hours. Toss again after chilling.

TIDBITS

1) Albert Camus was born in Algeria. He won a Nobel Prize.

2) Claude Cohen-Tannoudji was born in Algeria. He won a Nobel Prize.

3) I was not born in Algeria. I have not won a Nobel Prize.

4) Monsieur Camus played goalie for the University of Algiers soccer team.

5) I played goalie a few time in Australian league play.

6) So, playing soccer doesn’t help you win a Nobel Prize. And Monsieur Cohen-Tannoudji got his prize without any known soccer playing. And calling the game football doesn’t help either.

Burmese Semolina Cake (sanwin makin)

Burmese Dessert

SEMOLINA CAKE
(sanwin makin)

INGREDIENTSSemolinaCake-

1 16-ounce can coconut cream
or 2 14-ounces cans coconut milk.
3 eggs
2 tablespoons sesame seeds
1 cup semolina or cream of wheat
1 cup sugar
¼ cup ghee or butter
½ teaspoon cardamom

Note: if you need to make coconut cream from coconut milk, you will need to keep cans of coconut milk in the fridge overnight.

SPECIAL UTENSIL

8″ square cake pan

PREPARATION – COCONUT CREAM (If you can’t find it in stores.)

Chill coconut milk cans in refrigerator for 24 hours. Open cans and scoop out the thick cream on the top. Keep 16 ounces, or 2 cups, of coconut cream. Use the rest of the coconut cream and the liquid in the bottom of the cans to make coconut-based smoothies

PREPARATION – ONCE YOU HAVE COCONUT CREAM.

Preheat oven to 325 degrees. Separate egg yolks from egg whites.

Add sesame seeds to pan. Fry sesame seeds for 3 minutes at medium heat or until seeds brown. Stir constantly. Remove seeds from heat.

Add semolina to large pot. Slowly add in the coconut cream, stirring each time to prevent lumps. Add sugar. Stir until sugar dissolves. Bring to boil using medium heat for 3-to-5 minutes or until mixture begins to thicken. Stir constantly. Add ghee. Cook for 2 minutes or until mixture thickens to the point that it leaves the side of the pot. Remove from heat.

Add cardamom and eggs yolks to pot. Mix with whisk until this batter is well blended. Add egg whites to small mixing bowl. Whisk egg whites until they thicken and form peaks. Fold egg whites into batter. Pour batter into cake pan. Top with sesame seeds. Bake at 325 degrees for about 45 minutes or until cake start to brown or a toothpick inserted in center comes out clean.

Let cool in cake pan. Cut into squares and serve warm.

TIDBITS

1) The Burma-Vita company first produced Burma ShaveTM in 1925. The product was said to include products from Burma. Antarctic Shave wouldn’t have worked. It BurmaShavewould have had to included ice and cubes and penguin meat. No one would have wanted to shave with that, particularly during the summer.

2) At first Burma Shave only sold a bit better than Antarctic Shave.

3) Then Burma Shave came out with a brushless shaving cream. To promote this new, improved product they came up with a brilliant advertising campaign. They put a series of six small signs in a row alongside major roads. Early motorists got a chuckle out of reading them.

4) And they bought Burma Shave. The company became the second-largest seller of brushless shaving cream. The number-one company sold more.

5) Sales of Burma Shave after declined after the development of the atomic bomb.

6) This is probably coincidence.

7) But roadside Burma-Shave signs got put up less and less often with new advancement of nuclear weaponry. Indeed, about a year after the world almost went wonky during the Cuban Missile Crisis, the signs all got taken down.

8) Why do advertisers always say, “new and improved?” Shouldn’t “improved” be implied? Is there really a possibility of companies proudly putting out an product that’s “new and worsened?” How can something be improved if it’s new? You can only improve something that’s been around for a while.

9) Indeed, the first ICBM was just plain new. Now, the second generation of ICBMs could have be improved, but the whole ICBM concept was no longer new. Could the company that made the ICBMs have boasted of “new and improved” nuclear warfare. If so, I must have missed the radio jingle.

Chocolate Sticky Cake

Swedish Dessert

CHOCOLATE STICKY CAKE

(kladdkaka)

INGREDIENTSChocolateSticky-

½ cup butter
2 eggs
1¼ cups sugar
½ cup unsweetened cocoa powder
½ cup flour
½ tablespoon vanilla extract
1 tablespoon confectionery sugar
no-stick spray

SPECIAL UTENSIL

9″ round cake pan or baking dish

PREPARATION

Preheat oven to 350 degrees. Melt butter in small saucepan then let cool. Add eggs and sugar to mixing bowl. Mix with whisk until well blended. Add butter, cocoa powder, flour, and vanilla extract. Mix with whisk until batter is well blended.

Spray cake pan with no-stick spray. Pour batter into cake pan. Bake batter at 350 degrees for about 20 minutes or until set on top. A toothpick stuck into the cake edge’ should come out dry, but dry when stuck into the middle. Sprinkle with confectionary sugar. Smile.

And oh, this really is sticky. Not a finger food at all, unless, of course, you like sticky, chocolaty fingers. Then, by all means, go for it.

TIDBITS

1) One of my grandmothers came from Sweden. I called her, “Gramma Anna.” “Gramma Anna” is an anagram for “Anagram, man!”

2) The unabridged list of anagrams for “cake” in the known universe is: “cake.”

3) However, I’m happy to point out that there are hundreds and hundreds of anagrams for “chocolate cake.” The best anagrams for these happy words are: “Cheat cake? Loco!” “Elect Coach Oak,” “Coach look! Taco.” “Locate eco hack,” “A taco? Ole. Check,” and “Eek, Coach! A clot!”

4) Eden can be found in Sweden. Take a look. Adam and Eve got kicked out of the Garden of Eden for eating an apple from the Tree of Knowledge. They also became mortal and would die. And they would have to eat lutefisk to survive. We are still living with their error in judgment.

My Favorites for the World Cup Semifinals

Brazil over Germany. I’m feeling very hemispheric right now. I’m also upset about the vicious tackle that took out a Brazilian star. I didn’t see it, but still. I just got reminded how SoccerBallWest Germany and Austria effectively colluded in a World Cup match in 1982 to keep Algeria from advancing. Grr! Besides I like Brazilian food a lot more. BRA is the three letters internet reports use for Brazil or Brasil. Women wear bras. I like women. GER for Germany, is one letter away from being germ. Germs make us sick. Advantage, Brazil.

Netherlands over Argentina. I’m not feeling hemispheric loyalty anymore. Besides, I lived in the Netherlands and enjoyed it very much. My brother played soccer in the Netherlands for the American International School. No one in our family has even been to Argentina. Got to love those orange uniforms. The Dutch monarchy is descended from the House of Orange. A popular drink in the Netherlands is Oranjeboom, or Orange Tree. There’s also Dutch ovens. I love Dutch ovens. They make cooking so much easier. There’s no such item or beer, that I know off that has anything about Argentina in its name. Poffertjes is a great Dutch dessert. Sure, the Argentinian barbecue is great, but I’m in a mood for dessert. Oh, and hot air rises in Holland. A real estate agent  once told my mother and I that. I have no such confirmation for Argentina.
