Sloppy Joes

American Entree

SLOPPY JOES

INGREDIENTSSloppyJoes-

1 medium onion
2 garlic cloves
1 bell pepper
2 tablespoons olive oil
1 1/4 pounds ground beef
1 teaspoon chili powder
1/4 teaspoon salt
1/2 tablespoon brown sugar
1/4 cup water
2 cups tomato puree
3/4 cup ketchup
1 teaspoon Worcestershire sauce
1/4 teaspoon hot pepper sauce
5 hamburger buns or kaiser rolls

Makes 5 sloppy Joes. Takes 30 minutes

PREPARATION

Mince onion, garlic cloves, and bell pepper. Add onion, garlic, and olive oil to large skillet. Sauté for 5 minutes on medium-high heat or until onion softens. Stir frequently. Add ground beef, bell pepper, chili powder, salt, and brown sugar. Reduce heat to medium. Cook until meat for about 4 minutes or until ground beef is no longer pink. Stir occasionally.

Add water, tomato puree, ketchup, Worcestershire sauce, and hot pepper sauce. Cook for 5 minutes on medium heat or until sauce starts to thicken. Stir occasionally. While sauce cooks, toast buns. Spoon about 1/2 cup of the meat sauce onto each half of each hamburger bun.

TIDBITS

1) Sloppy Joe’s, a popular bar in Havana, Cuba, served the first Sloppy Joe’s. The world is grateful.

2) Columbus, the discoverer of Cuba, did not prove the world was round. We think the people 1492 believed the world was flat because Washington Irving, the author of The Legend of Sleepy Hollow, said so in a history book. This book, required reading for untold thousands of schoolchildren, warped our view of history for over a century.

3) It is however, undeniably true that no Sloppy Joe’s existed in fifteenth-century Europe. Records have yet to be found to be prove this, but Queen Isabella, yearning for a new quest after the successful conquest of the Moors sent Columbus on a transatlantic voyage to discover the Sloppy Joes. She felt the acquisition of the Sloppy Joe would give Spain such prestige that its empire would never be challenged. But Columbus never discovered the Sloppy Joe despite making three more voyages. That’s why all of Spain’s New World colonies are now all independent.

Paraguayan Corn Bread (sopa Paraguaya)

Paraguayan Entree

PARAGUAYAN CORN BREAD
(sopa Paraguaya)

INGREDIENTSCornBread-

6 tablespoons butter (used three times for 1, 2, and 3 tablespoons)
1 large sweet onion (or onion)
1 2/3 cups whole milk (or milk)
2 cups cornmeal
3/4 cup grated mozzarella (or white cheese)
1/2 cup grated cheddar (or yellow cheese)
3 eggs
1/4 teaspoon salt
1/4 teaspoon pepper

SPECIAL UTENSIL

bread-loaf pan

PREPARATION

Preheat oven to 400 degrees.

Mince onion. Separate egg yolks from egg whites. Melt 6 tablespoon butter. Coat sides of bread-loaf pan with 1 tablespoon of melted butter. Add 2 tablespoons of melted butter to frying pan. Sauté the onions at medium-high heat for 5 minutes or until onions soften. Reduce heat to low. Add milk, stirring constantly. Do not let milk boil. Reduce heat to warm if necessary. Add cornmeal gradually, stirring constantly until mixture becomes well blended.

Remove pan from heat. Add mozzarella cheese and cheddar cheese, 3 tablespoons melted butter, salt, and pepper. Mix with fork until cheese melts. Add egg yolk and stir again with whisk until well this batter is well blended. Stir eggs white with whisk in another mixing bowl until stiff peaks form. Fold egg whites carefully into batter.

Pour batter into buttered bread-loaf pan. Bake at 400 degrees for 30-to-40 minutes or until corn bread is golden brown or until toothpick comes out clean after insertion.

TIDBITS

1) Paraguay became independent from Spain in 1811. For years, maps listed the country as “Parrot Gay”. Some centuries ago a Jesuits settlers befriend a homosexual parrot. They named the gay parrot, Frank. The settlers eventually ate Frank. This region could have been called Parrot à l’orange.

2) Paraguay is now rated “boring” by many travelers.

3) In1812, Portugal helped celebrate Paraguayan independence by invading the little country. A period of anarchy followed by a dictatorships. None of these dictators did anything fun, such as promote soccer or karaoke.

4) Indeed, the dictatorship of Francisco Lopez, 1862 – 1869, was a particularly grumpy time. Not only were popular sports, arts and Wi-Fi connections neglected, but he managed to tick off the neighboring superpowers Argentina and Brazil. An unarguably unpleasant war followed where some 80% of adult males perished without ever having a chance to sing in karaoke clubs or even dance in conga lines.

5) By 1900, there were again equal numbers between males and females had been reestablished. My goodness, the Paraguayans were busy between the years 1869 and 1900.

6) Okay, there wasn’t an exact equivalence of males and females as the census of 1900 showed an odd number of people, 635,571 in Paraguay.

7) A moderate number of fair-to-middling strikes, anarchy, repression, and rebellions filled Paraguayan life until 1930. Soccer probably came to Paraguay during this time. We know even less about the state of Paraguayan soccer and conga lines during this era. Historians are frustratingly mute on this. But we know everything about a gay parrot that was dined upon hundreds of years ago. Go figure.

8) In 1932 Paraguay went to war with another country starting with the letter “B,” Bolivia over the supposedly oil rich lands of Chaco. This was sponsored by Standard Oil of New Jersey, who backed Bolivia, and Royal Dutch Shell, who supported Paraguay. Paraguay almost went to war with Chile which starts with the letter “C.” However, Chile, had no corporate sponsor and sat out the entire Chaco conflict.

9) Chaco rhymes with taco. Tacos are from Mexico. Tacos are a peaceful food.

10) Peace between Bolivia and Paraguay broke out in 1935. Paraguay got most of the Chaco land and Bolivia got guaranteed access to the sea via the Paraguay River. So some good came out of the war. Paraguay was safe for karaoke, conga lines, and vaudeville.

11) But not for long, a military revolt resulted a new dictator in 1936. Unrest, repression, lutefisk vendors, and murders cursed the country for decades. Soccer managed to flourish; it is a resilient.

12) In 2000, a stable civilian government finally took over. The new leaders vigorously support karaoke and conga lines. (Vaudeville disappeared worldwide decades ago.) Tourists are starting to flock to Paraguay. The future looks bright for this county.

13) However, researchers from the University of Dili, recently concluded that Paraguayans were among the crabbiest people on Earth.

14) You’d be crabby too if your country missed out on vaudeville. But soccer, karaoke and conga will heal all. And boring would sound pretty darn good after centuries of conflict. So there.

Key-Lime Pie

American Dessert

KEY LIME PIE

INGREDIENTSKeyLimePie-

1 14-ounce can sweetened condensed milk
1/2 cup key lime juice
4 egg yolks
1 8″ graham-cracker crust.
1 can whipped cream

SPECIAL UTENSIL

electric blender

PREPARATION

Preheat oven to 375 degrees.

Add condensed milk, key lime juice, and egg yolks to mixing bowl. Blend with electric blender set to “whip” or “cream” until well blended. Pour mixture into graham-cracker crust. Bake pie in oven at 375 degrees for 15 minutes or until toothpick inserted into the pie’s center comes out clean. Cool on wire rack for 2 hours.  Note, key lime pies made with real key lime juice are not green. Add whipped cream if desired. Or even lots and lots of whipped cream.

TIDBITS

1) Contrary to what I would have wished the Key Lime did not come from Key West nor even Key Largo. I researched this by going to Key West and by watching the 1948 movie, Key Largo. Key Largo starred Humphrey Bogart, Lauren Bacall, and Edward G. Robinson. None of these actors ate even a single Key Lime during the entire movie. After the movie? No one knows.

2) Key Limes were first grown in Southern Asia. Historians will tell you that Key Limes made their way to Spain, presumably by hitchhiking as these fruits don’t have legs. Actually, I doubt the whole hitchhiking theory as Key Limes do not have thumbs. You can tell they don’t just by looking at the tiny yellowish-green thingies.

3) Ship crews liked the take Key Limes as the fruit was high in vitamin C and prevented scurvy. Christopher Columbus took Key Limes on his voyages of discovery to the Americas. Indeed, culinary historians praise Spain for the bringing health-enhancing Key Lime to the New World.

4) Do other historians laud the European discoverers? Not so much, pointing to endless wars of conquest by the Spanish conquistadors, Old World diseases that decimated indigenous populations, and wholesale enslavement of the local tribes. Indeed, Europe didn’t balance things with the natives until they brought the hamburger to America in the 19th century. Kinda like a do-over.

Lime-Chili Popcorn

American Appetizer

LIME-CHILI POPCORN

INGREDIENTSLimeChiliPopcorn-

1/4 cup popcorn
2 tablespoons lime juice
1 teaspoon chili powder

SPECIAL UTENSIL

air popcorn popper

PREPARATION

Put popcorn in popper. Put bowl underneath popper’s opening. Keep bowl in place until all the kernels have popped. Sprinkle lime juice and chili powder into bowl with popcorn. Stir with long spoon or fork.

TIDBITS

1) There is moisture in each kernel. This liquid turns to steam as the popcorn heats up. Water cannot escape the kernel shell. Pressure builds up until the kernel explodes.

2) Popcorn dating from 3000 B.C. has been found in New Mexican caves. People were happy.

3) The first permanent income tax for the United States was established in 1913. Americans became cranky. We fought a bloody war in Germany from 1917 to 1918. We greatly expanded our navy.

4) Charles Manley developed the first good electric popcorn popper in 1925 and sold it to theaters. Americans became happy again. Our economy boomed. It was the Golden Age of Comedy.

5) The Great Depression struck in 1929. Harrowing economic hardships resulted in fascist dictatorships in Germany, Italy, and Spain. America kept its democratic form of government.

6) Why? Popcorn. Popcorn was one of the few treats millions of Americans could afford to eat while watching their beloved movies.

7) The recent and relatively peaceful break up of the Soviet Union occurred because of the easy accessibility of popcorn in contrast to its popcornless Revolution of 1917.

8) The Wampanoag tribe brought popcorn to the colonists for that famous autumnal feast in Plymouth, Massachusetts. The grateful settlers called the meal, “Thanksgiving.” We are still grateful.

Deviled Eggs

American Appetizer

DEVILED EGGS

INGREDIENTSdevdegg-

4 eggs
1/3 teaspoon paprika
1 1/3 tablespoons mayonnaise
1/3 teaspoon mustard powder

PREPARATION

Place eggs in a pot. Put water in pot. Bring water to boil. Cook for twelve minutes. (Read short sentences.) Do not overcook; a green coating on the yolk would look especially horrible for this recipe. Put eggs in bowl of cold water for fast cooling. Remove shells, cracking the eggs from the bottom first.

Cut eggs in half, lengthwise. Remove the egg yolks. Release your pent-up frustrations mashing them with your handy whisk. Mix in paprika, mayonnaise, and mustard powder.

Spoon this mixture back into the holes left by the removed yolks. Sprinkle only a lit bit more paprika over each entire egg for visual effect. Serve.

This is so easy. And it’s considered a gourmet food. Wow! There’s no excuse not to look suave and sophisticated at dinners or potlucks with this recipe.

TIDBITS

1) Paprika is by far the most popular spice in Hungary. The poppy seed is almost revered in that country. Hungarians refused to join the European Community until they were guaranteed unrestricted poppy-seed production. The European Union caved.

2) The ancient Egyptians boiled goose eggs. Apparently, those eggs are indigestible otherwise. A raw goose egg? Ugh. I’ll take the word of the ancients on this one.

3) Spicy stuffed eggs were eaten in 13th century Andalusia, a region of Spain. Spain discovered the New World in the late 15th century. Coincidence? Perhaps.

4) King Louis XV ate boiled eggs every Sunday. This practice ceased with his death.

5) The culinary term “deviled” arose in the late 18th century and referred to highly seasoned or fiery dishes.

6) My wife doesn’t like using the term “devil” in anything. So if you have another name for this dish, I’d appreciate hearing it.

7) Tampa’s baseball team used to be called the Devil Rays. They are now know as the Rays. So, other people must feel the same way.

8) My brother and I had egg holders when we were children in Australia. Neither of us ever played for the Rays. Coincidence? Perhaps.

Tropical Milkshake

TROPICAL MILKSHAKE

INGREDIENTS??????????

3 bananas (best when ripe)
1 cup coconut milk
1 cup milk
1 cup orange juice (no pulp)
2 tablespoons raspberry syrup

PREPARATION

Peel the bananas. Put bananas, coconut milk, milk (moo!), orange juice, and raspberry syrup in blender. Use “milkshake” setting. Blend until shake is sufficiently smooth for your taste.

TIDBITS

1) August 1 is National Raspberry Day. Why? I don’t know. How do you get a national day for anything? Is there a federal form or anything? Life can be so confusing.

2) Some raspberries have a golden-yellowish hue. These are mutant raspberries. Ooh, that sounds like a sci-fi movie from the 50s, Attack of the Mutant Raspberries.

3) It is not generally known that King Ferdinand and Queen Isabella of Spain sent Christopher Columbus west to discover new lands teeming with raspberries, raspberries needed to make Tropical Milkshakes.

4) Tidbit 3) is not generally known because it isn’t true.

5) But oh my gosh wouldn’t that have been more interesting.

6) And the natives could have given the illustrious Spanish monarchs the raspberry.

Moroccan Spiced Lentils Recipe

Moroccan Soup

SPICED LENTILS

INGREDIENTSSpiceLe-

1 1/3 cups red lentils
2 1/2 cups vegetable broth
1/4 teaspoon cayenne
1/2 tablespoon coriander
1 teaspoon cumin
1/2 teaspoon ginger
1/4 teaspoon black pepper
1/4 teaspoon salt
1/2 teaspoon turmeric

2 onions
1 tablespoon butter
2 small tomatoes

PREPARATION

Put lentils and broth in pot. Add cayenne, coriander, cumin, ginger, pepper, salt, and turmeric. Soak for 4 hours. Lentils should be split. (Hey, if you want some to leave slowly, you could say, “Make like a lentil and split.”)

While the lentils soak, go outside and pull weeds. When you come back, dice your onions and tomatoes. After your lentils have been sufficiently soaked (and how often does that phrase come up in normal conversation?) add onion and butter to pan. Sauté the onions on medium-high heat for 5 minutes or until the onions are tender. (Love me tender, love me true.)

Put onions and tomatoes in pot. Bring soup to boil. Turn heat down to low and simmer for 30-to-60 minutes or until lentils are tender. Serve to adoring family or guests who are about to go Morocco mad.

TIDBITS

1) You know, if I had a time machine this tidbit would have already been written.

2) Or maybe I’d use my time machine to always go back to the moment all my clothes were clean. I’d never have to do laundry again.

3) I think I’d go back to the moment when that Viking, Haarald, was about to invent lutefisk and give him a crunchy-shell taco. The culinary world would have been better off.

4) Oh, and the rest of the too. Eating lutefisk was the main reason the Norsemen assaulted England and continental Europe for centuries. I mean who wouldn’t feel like killing and pillaging after eating lutefisk?

5) Fortunately, the Vikings eventually came into contact with Moroccans in Spain. While bad for the inhabitants who had to suffer through countless battles to-ing and fro-ing across their backyards, it was a positive boon to the rest of Europe.

6) For once the fierce Norsemen discovered the spices of Morocco, they could preserve their food. They didn’t have to soak their fish in lye, a poison, to preserve it. They could even make Berbere shish kabobs. This made them very happy.

7) And the raids of the Scandanavian beserkers ended. Well okay not right away, but they did tail off.

Quesillo Recipe (Crème Caramel) From Dominican Republic

QUESILLO (Crème Caramel)

INGREDIENTSquesill-

1 1/2 cups pineapple juice (1/2 cup more later)
1 cup sugar
6 eggs 1/2 cup milk
1/2 cup pineapple juice

PREPARATION

Preheat oven to 325 degrees. Add 1 1/2 cups pineapple juice and sugar in pan. Cook at medium-high heat or until sugar dissolves completely. Stir frequently. Pour pineapple syrup into mixing bowl. Add eggs and milk. Use whisk or lowest setting on beater until egg/pineapple syrup mixture becomes frothy. Pour mixture into mold or casserole dish. Pour 1/2 cup pineapple juice on top.

Put in oven. Bake at 350 degrees for 1 hour or until inserted knife comes out clean. Let cool, if you can. The hungry hordes might not wait that long. You can serve the quesillo by itself or top it with the syrup from the casserole dish.

Tomato Potato Soup Provençale Recipe

Tomato Potato Soup Provençale

INGREDIENTSPoToPrS-

1 white onion
2 garlic cloves
2 tablespoons extra virgin olive oil
3 russet potatoes
6 Roma tomatoes
32 ounces chicken broth
1 tablespoon red wine
1 1/2 tablespoons herbes de Provence

PREPARATION

Mince onion and garlic. Put onion, garlic, and olive oil into frying pan. Sauté on medium high for 3-to-5 minutes or until onion is tender. Put onion and garlic into soup pot.

Peel and chop potatoes into cubes small enough to go into food processor. Mince potatoes. Mince tomatoes. Add to soup pot: potatoes, tomato, chicken broth, red wine, and herbes de Provence. Cook soup on high until it starts to boil. Turn down heat to warm and simmer for 40 minutes.

TIDBITS

1) The world’s best tomato festival, La Tomatina, is held in Bunol, Spain. It occurs on the last Wednesday in August. Up to 100,000 people attend. Why? Because it’s fun!

2) The festival hosts the world’s biggest tomato fight. Yippee. Up to 30,000 people participate, hurling some 200,000 overripe tomatoes at each other.

3) But just try throwing a rotten tomato at home or at the school cafeteria. Or at your local mayor or police officer for that matter.

4) And you get to eat fantastic tomato-based dishes before this culinary melee.

5) I wanna go there. I wanna go there. I wanna go there.

Ask Dr. Economics: Greece Needs Help

I came up with a solution to Greek Debt Crisis two years ago. Did the powers that be listen to me? Noooo. So what happened? A continuing crisis and worldwide instability. So, in the interest of the entire world I resubmit my solution.

The mounting debt of the Greek government is threatening to destroy the Greek economy, the Euro, the economies of Portugal and Spain, and the cohesiveness of the European Union. If that happens the world economy will collapse and we will have 30%, 50%, 80, maybe even 200% unemployment–you will lose that second job you never had. You’ll lose your house, your car, your package of Bar-S hot dogs that sit in the fridge you will lose. There will be revolution in the streets, only reality shows will be allowed on tv, ketchup in the supermarkets will be a thing of the past. There will be no more supermarkets. There will be NO MORE LATTES. Earthquakes will become the latest trend, hailstones will rain down non-stop. Bug-eyed monsters will roam the streets devouring Bactrian camels and humans.

This is all bad. What can we do to support Greece? Best thing to do is to buy Greek debt but as it might lose 70% of its value, you might want to spend your sofa coins on something better. Try vacationing in Greece. If that is not in your budget, try buying gyros, you that pita bread that is stuffed with that beef/lamb meat.

Now, if we all buy gyros demand for beef/lamb meat will soar. And Greece is the only country where the rare lambcow animal roams. Sure, America has lambs and it has cows, but not the one animal that is both. So, if demand for the Greek lambcow rises, Greek lambcows herders will gain more revenue. More revenue from lambcow herders means more taxes for the Greek government. The Greek government pays off its debt. The debt crisis is averted and we and our fellow Bactrian camels will not get eaten in the streets.

Eat all the gyros you can. Besides, they’re tasty.
