Behold, The Bacon Flower

Great news! Culinary horticulturists from Alpine, California, have  at  last  succeeded  in  producing  the elusive bacon flower. This flower can be enjoyed as a thing of rare and exquisite beauty.

Or you can fry it up. It’ll taste just like bacon, because it is part bacon. We can all thank the whiz kids of San Diego County for this breakthrough in cross-breeding/cross pollination. Yay!

Braised Chicken From Ivory Coast

Ivorian (Ivory Coast) Entree

 

BRAISED CHICKEN

 

INGREDIENTS

1 bouillon cube, Maggi* vegetable, other vegetable, or chicken
2 teaspoons ginger
½ teaspoon pepper
1 teaspoon salt
2 chile peppers
3 garlic cloves
1 tablespoon lemon juice
3 tablespoons vegetable oil
2¼ pounds boneless chicken breasts or thighs
3 tomatoes
1 medium onion

* = It’s almost impossible to overstate the prevalence of Maggi’s bouillon cubes in Africa.

SPECIAL UTENSILS

outdoor grill

Serves 4. Takes 1 hour 50 minutes.

PREPARATION

Crush bouillon cube. Add crushed bouillon cube, ginger, pepper, and salt to large mixing bowl. Mix with fork until well blended. Mince chile peppers and garlic cloves. Add minced chile pepper and garlic. Mix again with fork until well blended. Add lemon juice and vegetable oil. Mix again with fork until well blended. This is the marinade, Cut chicken into 3″ cubes. Add chicken to marinade. Toss chicken cubes until they are thoroughly coated with marinade. Let marinate in refrigerator for 1 hour. (Keep the marinade.)

While chicken marinates, use mandoline or knife to cut onion and tomatoes into ¼” slices. Cut slices in half. Preheat outdoor grill to 300 degrees. Add chicken cubes to grill. Turn chicken cubes every 3 minutes until no longer pink inside. Add equal amounts of chicken, onion and tomato to each plate. Drizzle with remaining marinade. Top with equal amounts of grilled chicken cubes.

TIDBITS

1) This recipe and many others tell you to cook something until its no longer pink inside. You can do this by cutting off a small bit and looking. Wouldn’t it be nicer to be able to use X-ray vision instead? Unfortunately, none of us possesses x-ray vision. But SupermanTM does. I’d bet Superman would be a great-steak house chef.

Mulligatawny Soup

Irish Soup

MULLIGATAWNY SOUP

 

INGREDIENTS

2 carrots
2 stalks celery
1 pound chicken breasts
2 garlic cloves
1 medium onion
3 tablespoons olive oil
2½ tablespoons curry powder
2½ tablespoons flour
4½ cups chicken broth
1 green apple
⅓ cup rice
¼ teaspoon pepper
1 teaspoon salt
⅔ cup cream

SPECIAL UTENSIL

Dutch oven

Serves 6. Takes 1 hour minutes.

PREPARATION

Dice carrots and celery stalks. Cut chicken into ½” cubes. Mince garlic cloves and onion. Add carrot, celery, garlic, onion, and olive oil to Dutch oven. Sauté at medium-high heat for 5 minutes or until onion softens. Stir frequently.

Add chicken cubes, curry powder and flour. Reduce heat to low-medium and simmer for 3 minutes. Stir frequently. While chicken and veggies simmer, peel and core apple. Chop apple into ½” cubes.

Add chicken broth, apple cubes, rice, pepper, and salt. Bring to boil using high heat. Stir occasionally. Cover and reduce heat to low for 20 minutes or until rice is tender. Stir enough to prevent burning. Add cream. Simmer for 1 minute, stirring occasionally.

TIDBITS

1) When Ireland’s bunny population exploded in 1903, they ate up all the land’s carrots, celery, and apples. It became impossible to make delicious mulligatawny soup. This culinary disaster enraged the Irish. They turned concentrated this simmering anger on their foreign, British rulers. “When Ireland was Irish,” they said, “we always had all the ingredients to make mulligatawny soup.” Other resentments were brought up and from that year on, the Irish actively planned for independence.

Exciting News From 1995

I still find it astonishing that Russia, for a brief period in 1994, was unable to launch its nuclear missiles. Also consider that squirrels have three times brought down NASDAQ, a stock exchange, by chewing into its power cables.  Combine those two facts. Get squirrels to gnaw into the powerline between Moscow Electric and Russia’s nuclear arsenal. Get those critters to knock out Putin’s ablility to nuke the USA.

Or perhaps the Pentagon already has such plans. And they’re secret. Oopsie.

The other bits of news shown on the page on the right remain interesting in their own right. Particularly the one at the bottom.

Motivational Poster #1, Goals

Dear Reader,

Life is hard. But if we don’t try to achieve anything, we will be become listless and depressed. We can do little things, sure. However, if we accept these minor achievements as the limit of what we will do, we will end up accepting small deeds as the limit of what we CAN do.

We must attempt things we thought we could never do. Our reach must exceed our grasp. We must set ourselves spectacular goals. We must do things that make our heart race.

We must be able to shout to the heavens, “I live for adrenaline.”

My Mason Jars: Filled With Flours, Spices, and Herbs

Hi. I’m sorry for today’s short food blog. I went to two supermarkets to get ingredients for Tuluk, sort of a banana wrapped tamale from Vanuatu, and for Napolitaines, a cookie sandwich with raspberry jam, from Mauritius. I then came home to show Number Two Son how to assemble his documents and fill out his Federal Tax Form. I’m having a slight break now. Afterward, I will show him how to do his state taxes. What fun!

Sorry for the blurry photos. I blame plate tectonics.

Great Arctic Eats – Kiruna, Sweden

Are you a diner who avoids countries that fought in a World War, but loves good dessert rolls, meatballs, potato sausages, and the Northern Lights?  Do you get anxious and feel closed in towns with more than 20,000? Do you revel in Lutheran humor? If you answered yes to these questions, then you owe it to yourself to fly to Kiruna, Sweden. It’s your kind of town.

There are 30 restaurants listed in TripAdvisor(tm)! Thirty! It would take you ten days to visit them all, providing you went out for breakfast, lunch, and dinner. Truly, this is an Arctic dining paradise. Let’s  visit the top six eateries.

The top rated dining establishment is the highly loved Stejk Street Food. This established gets a 5.0 out of 5 from TripAdvisor’s food critics. Well done, Stejk Food. You’ll never forget the restaurant itself. It’s inside an warm, authentic Sámi tent. They serve tasty Swedish street food. Their Arctic reindeer and moose subs are fantastic. It’s also vegetarian friendly; try the halloumi (It’s a semi-hard unripened cheese made from sheep’s and goat’s milk.) The staff is friendly and professional. You really should go here.

Second on our restaurant tour is Cafe Safari. They are known for their great coffee. Definitely try their moose and reindeer. For dessert, you would do well to order their cakes. Treat yourself to its wonderful kladkaka, a scrumptious chocolate sticky cake. I’ve made this desert. Here’s a link to my kladdkaka, so can see what its like. This cozy restaurant is also vegetarian and vegan friendly. Don’t leave without sampling delicious ligonberries.

Winning the bronze medal is Camp Ripan kitchen. Its terse diners love it’s good Swedish, great ambience, and friendly staff. It’s vegetarian and vegan friendly.

People think highly of SPis Mat & Dryck’s is great mussels and Arctic char. Friendly staff serves good Swedish  and other European food.

Our fifth dining stop is the rather excitingly named Landstroms Kok & Bar. Patrons rave about its excellent reindeer, elk stew, and other local delicacies, all coming in big portions. Accompany your tasty meals with good beer. What more do you want?

The last dining establishment you must go to is Arctic Thai & Grill, for it serves good, tasty Thai food. Besides any restaurant with the words “Arctic Thai” is worth investigating.

Kiruna, unlike many of the other towns reviewed in Great Arctic Eats, has a road going in and out of it.  This feature cannot be overestimated, particularly if wish to get there by car. Pogo sticking or hang gliding there simply isn’t practical. However, once there, the town has many worthwhile things to see.

Be sure to visit Kiruna Kirkya .  This large wooden church was built a century ago for the Sámi people. It has been voted to be Sweden’s most beautiful building. And it’s downtown, so you can walk to it. Well, perhaps during a wintry snowstorm

Then reserve your spot on the Snowmobile Aurora Expedition with dinner. Snowmobiles, dinner, and the Aurora Borealis. What more do you want?

Go on TreriksrÖset.  According to Kiruna’s visitors, it’s a beautiful hiking trail with points of interest.

Visit LKAB’s Visitor Centre. It’s the world’s largest underground iron-ore mine. The town of Kiruna was built around this mine.

Finally, see the Esrange Space Center. It has a science museum, an observatory, and a planetarium. A family that visited noted they went there. They also recommend that you go there as well. Yeah, tourists in Kiruna really don’t waste many words, do they?

But perhaps the visitors’ words are taken away by the many wonderful things to see in and around town.
