Hot Dog Provencale

French Entree

HOT DOG PROVENÇALE

INGREDIENTS

2 6 ounce to-be-baked baguettes
2 garlic cloves
2 bay leaves
1 teaspoon marjoram
1 teaspoon rosemary
1 teaspoon tarragon
1 teaspoon thyme
½ teaspoon basil
½ teaspoon oregano
½ teaspoon parsley
¼ teaspoon black pepper
6 tablespoons spicy brown mustard
2 tablespoons mayonnaise
4 frankfurters, preferably Hebrew NationalTM
4 slices Swiss cheese

PREPARATION

Preheat to temperature shown on baguette bag or 375 degrees. Cut baguettes in half along their width. Cut each half baguette again in half, this along its height. Do the same for the other baguette. You should now have 8 baguette slices.

Mince garlic cloves. Remove stem from bay leaves and chop them into little bits.

Combine in mixing bowl: garlic, bay leaves, marjoram, rosemary, tarragon, thyme, basil, oregano, parsley, pepper, garlic, mustard, and mayonnaise. Stir with fork until blended.

Spread mixture equally onto the 8 baguette slices. Put 4 frankfurters onto 4 baguette slices. Put slices on cooking tray and put in oven. Cook according to instructions on baguette-loaf bag or 8 minutes at 375 degrees. Put a half slice of Swiss cheese on each baguette slice. Put cooking tray back in oven. Cook for 2 more minutes. The cheese should be melted and the bread crust golden brown. (This paragraph inspected by editor no. 2.)

Remove baguette slices and assemble. Your guests will come running to the dinner table with cries of “Oh, la, la,” and “C’est magnifique.” If they do not, use your guillotine.

TIDBITS

1) One of the last Roman emperors was Marjorianus. It is unlikely that he ever ate hot dogs.

2) The Romans did conquer and possess Gaul, the location of modern-day France, for hundreds of years.

3) The first Gallic province the Romans took was cleverly called Provence.

4) This area is still called Provence.

5) Americans eat lots of hot dogs. We barbeque them.

6) The French eat a few hot dogs. They also wrote stories about Barbar The Elephant.

7) Romans ate no hot dogs. They were conquered by barbarians.

Chicken Basquaise

French Entree

CHICKEN BASQUAISE

INGREDIENTS

1 green bell pepper
1 red bell pepper
1 large onion
2 garlic cloves
2 tablespoons fresh thyme
3 tomatoes
2 pounds chicken pieces, bone in or boneless
1 teaspoon salt or fleur de sel*
¼ cup olive oil
3 ounces thinly sliced prosciutto or Bayonne ham*
¾ cup white wine
1 bay leaf
1 cup chicken stock
2 teaspoon Spanish paprika, paprika, or espelette*
1 tablespoon fresh parsley

* = You can find fleur de sel, Bayonne ham, and espelette online, but they can be expensive.

SPECIAL UTENSILS

mandoline
8″ * 12″ casserole dish

Serves 6. Takes 1 hour 15 minutes.

PREPARATION

Preheat oven to 425 degrees. Seed bell peppers. Cut bell peppers and onion into ¼” slices with mandoline or knife. Cut slices in half. Dice garlic and thyme. Cut tomatoes into ½” wedges. If you are using chicken breasts, cut them in two. Rub chicken pieces with salt.

Add olive oil and prosciutto to large pan. Sauté for 2 minutes at high heat or until prosciutto becomes crispy. Stir frequently. Remove and drain on paper towels. Add chicken pieces to large pan. Sauté for 10 minutes at medium heat or until chicken turns golden brown. Flip chicken pieces every 2 minutes. Remove chicken and drain on paper towels. Add bell pepper, garlic, and onion. Sauté for 2 minutes at medium-high heat. Stir frequently. Add white wine and bay leaf. Simmer at low heat for 2 minutes. Stir frequently.

Add contents of pan, thyme, chicken stock, and chicken pieces to casserole dish. Sprinkle chicken pieces with Spanish paprika. Place tomato wedges between chicken pieces. Bake for 20 minutes at 425 degrees or until sauces thickens. While chicken bakes, dice parsley. Remove casserole dish from oven. Remove bay leaf. Place crispy prosciutto slice over chicken. Garnish with parsley.

TIDBITS

1) It is well known fact that the Basque word for basket is saskia

2) The Franks who overran Gaul, modern day France, after the fall of the Western Roman Empire loved peaches.

3) Indeed, they invaded purposefully to pick prized perfect peaches produced by the innumerable peaches orchards to be found there.

4) At first, frenetic fresh Franks gathered peaches with their hands.

5) But one can only carry off two peaches that way.

6) The ravenous ravagers ranged right to the Rhone valley. The Rhone Valley had for reasons unclear to current culinary historians had a surplus of over a million peach baskets.

7) An advance party of Franks plundered the valley and carried off all the peach baskets. Indeed, everyone of the frightening Franks walked away with maybe twelve baskets; we don’t know the exact number.

8) The First Franks never went anywhere without their baskets. The enraged basketless Second Franks chased them to southwest France.

9) The locals called them Saskia after the First Franks word for basket.

10) In time the Saskia lost their original language. A new language required a new name. The medieval French dubbed these people, Basques.

11) The Basques loved sports. In particular, they loved to play Basquaise Boule. The object of this game was to pass a ball around and try to toss it into a peach basket. Sometimes the players fashioned the ball out of chicken breasts, hence the name Chicken Basquaise. Chef Jean Paul La Grange created this dish to honor the new sport.

12) But wait! There’s more! In 1890, YMCA director James Naismith toured the land of the Basques. His synapses fired and he determined bring this sport back home. It’d be just the thing to tire out restless school kids. The game proved popular, at first, in his town of Springfield. But the kids eventually grew bored of having to climb up a ladder to retrieve the ball from the peach basket. Late one night, a gang of hoodlums calling themselves The Epic of Gilgamesh Haters cut the bottom off all the baskets.

13) But far from ruining the game, this vandalism, made the game much faster. Indeed the tempo of pass, shoot, score, pass, shoot, score now prevailed. The kids loved the game now. So did their parents. A year later, a senior taking Basque studies opined that as we’re living in America, why not call the name something American like basketball.

14) America embraced basketball and soon became a superpower. Now you know how.

Hawaij, Spice Mix from Yemen

Yemeni Appetizer

HAWAIJ
(spice mix)

INGREDIENTSHawaij-

2 tablespoons black peppercorns
3/4 teaspoon whole cloves
1/2 teaspoon caraway seeds
1 teaspoon cardamom
2 teaspoons coriander
2 1/2 teaspoons cumin
1 tablespoon turmeric

SPECIAL UTENSIL

spice grinder

PREPARATION

Grind peppercorns, cloves, and caraway seeds in spice grinder. Use fork to mix peppercorn, cloves, caraway, cardamom, coriander, cumin, and turmeric in small mixing bowl. Store mixture in airtight jar.

TIDBITS

1) According to Chaucer’s Canterbury Tales, cardamom is “the spice of Paradise.” It’s not clear how he knew that. Perhaps he had an Ouija board.

2) Since Ouija boards weren’t invented until the twentieth century, it’s clear Chaucer had a time machine. I would have read Canterbury Tales in High School with much more interest if I had known that.

3) According to some vague, unspecified, nebulous people, cardamom was the most popular spice in ancient Rome. Rome conquered Gaul. Gauls did not spice with cardamom. The frightening implication is clear.

4) Cardamom coffee is popular in the Arab world. The Arabs overran North Africa, the Fertile Crescent, the Spanish peninsula, Sicily, and Southern France in only 100 years. The conquering qualities of cardamom explains why it costs more than oil per ounce. Oil fuels countries’ economies, but cardamom is necessary for sheer national survival.

5) Cardamom is more popular in Sweden than any other spice. Sweden has never been conquered by a non-Nordic nation. Even nations with powerful armies respect countries with large cardamom stockpiles.

6) Cardamom is the world’s second most expensive spice. Only saffron cost more. I don’t even want to think what a global conflict over saffron would be like.

Frikadellen – German Hamburger Recipe

German Entree

FRIKADELLEN
German Hamburgers

INGREDIENTSFrikade-

1 onion (1/2 more used later)
1/2 onion
1 1/2 pounds ground beef
1 pound ground pork (or pork sausage)
2 eggs
1 tablespoon German mustard or deli mustard
6 tablespoons bread crumbs
1/4 teaspoon caraway seeds
1/2 teaspoon nutmeg
1/2 teaspoon black pepper
1 tablespoon parsley
1/4 teaspoon salt
8 Kaiser rolls
8 leaves lettuce

PREPARATION

Mince 1 onion. Slice 1/2 onion into rings. Thoroughly combine minced onion, beef, pork, eggs, mustard, bread crumbs, caraway, nutmeg, pepper, parsley, and salt in mixing bowl with hands. Contemplate the infinite while doing so.

Make 8 large meatballs with hands. Flatten them slightly to make thick patties. Fry patties in pan at medium heat for about 5 minutes on each side or until sides begin to brown. While patties are cooking slice 1/2 onion. Sauté onion slices in burger drippings until golden brown. (The onion rings, not you for goodness sakes.) Toast Kaiser rolls. (Hail, Kaiser rolls.)

Assemble the burger with: roll, patty, lettuce, and sautéed onion slices.

TIDBITS

1) The German word Kaiser means emperor and derives from Julius Caesar’s last name.

2) Julius Caesar crossed the Rubicon River in 49 B.C. starting a vicious round of civil wars that brought down the Roman Republic for good. Republics were pretty much non-existent round the world after that except in Iceland until the American Revolution in 1775.

3) Future despots though loved what Julius had done, conquering Gaul, overthrowing the Republic, and all that. So much so, they took his last name as their own or even taking the title of Caesar.

5) We see this trend in modern time. KleenexTM became so popular that all facial tissues are often known as KleenexTM.

6) Caesar also gave his name to Caesar’s salad. Blood on his hands sure, but his salad is truly tasty.

7) So if you want to achieve culinary immortality, conquer Gaul or some other country and set up your dictatorship or monarchy.

8) I have to go. I need to sneeze into my KleenexTM.
