Curry Chicken Potjiekos From Namibia

Namibian Entree

CURRY CHICKEN POTJIEKOS

INGREDIENTS

2 garlic cloves
2 onions
2″ ginger root
3 pounds chicken, breast, thighs, or drumsticks
1 tablespoon butter
2 tablespoons vegetable oil
1½ tablespoons curry powder
1 teaspoon ground cloves
½ teaspoon coriander
½ teaspoon nutmeg
½ teaspoon salt
½ tablespoon turmeric
2½ cups chicken stock
3 carrots
1 pound potatoes
1 bay leaf

ORDINARY UTENSILS (If, as likely, the above conditions aren’t met. )

Serves 4. Takes 2 hours 20 minutes.

PREPARATION

Dice garlic cloves and onions. Grate ginger. Add butter, vegetable oil and as many chicken pieces as will without touching to pan. Sauté at medium-high heat for 5 minutes or until chicken browns all over. Flip chicken enough to ensure even browning. (You might need to cook in batches.) Remove chicken and set aside. Add garlic and onion to pot. Sauté at medium-high heat for 4 minutes or until garlic and onion soften. Stir frequently. Add curry powder, ground cloves, coriander, ginger, nutmeg, salt, and turmeric. Sauté at medium heat for two minutes. Stir frequently.

Return chicken to pot. Add chicken stock; enough to cover chicken. Cover and simmer at low heat for 1 hour. While pot simmers, dice carrots. Peel and cut potatoes into ½” cubes. Add bay leaf, carrot, and potato or until carrot and potatoes soften. Stir until well blended. Cover and simmer at low heat for another ½ hour. Remove bay leaf. Stir occasionally.

Shaun Bean – in many movies, including National Treasure and the BBC series Sharpe.

Brie Larson – in many movies including, Short Term 12. The doctor who delivered was Brita Larson and was a friend of my grandmother. I have visited Dr. Larson’s old farm in Sweden.

Hamilton Burger – D.A. on the show Perry Mason. Fictitious character with a great name.

John Candy – best known for the Canadian TV show, “Second City.”

Cherry Jones- in many movies including The Perfect Storm..

Rosemary Clooney – Chart-topping singer during the 1950s.

Tim Curry – in many movies, plays, etc, including Rocky Horror Picture Show.

Ginger Rogers – Great dance and actress. Starred in many movies with Fred Astaire.

Meatloaf – Born Marvin Lee Aday. Famous singer. Made Bat Out of Hell album.

Barry Pepper – in many movies including Saving Private Ryan.

Condoleezza Rice – Press Secretary of State, the second person to President George W. Bush

Tim Salmon – All Star outfielder for the California Angels.

Shirley Temple – Great actress. Ambassador for the US. Childhood acquaintance of my mother. Gave her name to a drink of grenadine, ginger ale* soda, and maraschino cherry. * = There’s a bit of controversy here. Some people insist that the soda is lemon lime.

Darryl Strawberry – All star right fielder for the New York Mets.

Pork Loin With Sherry and Red Onions

American Entree

PORK LOIN WITH SHERRY AND RED ONIONS

INGREDIENTSporkloinwithsherry

4 garlic cloves
9 pearl onions
2 tablespoons fresh parsley or 2 teaspoons dried
2 red onions
¼ cup butter
2 pounds pork tenderloin
1 cup sherry or red wine
½ teaspoon pepper
1 teaspoon rosemary
½ teaspoon salt

SPECIAL UTENSILS

mandoline

Serves 6. Takes 5 hours 40 minutes.

PREPARATION

Dice garlic gloves, pearl onions, and parsley. Use mandoline or knife to cut red onion into ¼” slices. Add butter, garlic, pearl onion, and red onion to one or more pans. Sauté on medium-high heat for 5 minutes or until garlic, pearl onion, and red onion soften. Stir frequently.

Add garlic, pearl onion, red onion, parsley, pork tenderloin, sherry, pepper, rosemary, and salt to crock pot. Cover and cook on high setting for 5 hours. Remove pork and gently tear along grain with knife and fork into ½” slices. Put pork slices on plates. Ladle liquid and onions on and alongside pork.

TIDBITS

1) Sherry and Red Onions were a song and dance team in the MGM studio during the 30s and 40s. While never quite achieving the same fame as Ginger Rogers and Fred Astaire, many film critics rhapsodize wistfully over their love duet, “I Love You More Than Meatballs” in the unforgettable film, Dinner at Half Past Eight.

2) Tragedy struck the talented couple at the on-Broadway premier of the musical, A Second Piece of Pie. The audience loved it. Gallant gentlemen threw hundreds of rose bouquets at the lovely, but allergic Sherry who sneezed her way into the Guinness Book of RecordsTM. Adoring ladies threw red onions on stage in honor of the male star’s name. Unfortunately some of them swooned and this affected their aim adversely. Red “Twenty Bumps” Onions retired the very next day. So did the singer Cactus Bob Henderson as soon as he heard the news.

Jollof Rice From Liberia

Liberian Entree

JOLLOF RICE

INGREDIENTSJollofRice-

1 pound chicken breast
1 pound bacon
2 medium yellow onions
1 yellow bell pepper
4 Roma tomatoes
1/4 cup vegetable oil (1/4 cup more later)
1/2 teaspoon ginger
1/4 cup vegetable oil
2 6 ounces cans tomato paste
3 cups water
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon thyme
1 teaspoon crushed red pepper

2 cups rice
4 cups chicken broth

Needs 2 pots and 1 skillet

PREPARATION

Cut chicken breast into 1″ cubes. Cut bacon strips into pieces 1″ wide. Mince onions, bell pepper, and tomatoes. Add chicken, bacon, and 1/4 vegetable oil into skillet. Sauté at medium-high heat for 10 minutes or until chicken begins to brown. Stir occasionally.

While chicken/bacon sautés, Add onion, bell pepper, tomato, ginger, and 1/4 cup vegetable oil or to large pot. Sauté for 5 minutes on medium-high heat or until onion softens. Stir occasionally.

Add chicken/bacon mix from skillet to veggie mix in pot. Add tomato paste, water, salt, pepper, thyme, and red pepper. Simmer on low heat for 20 minutes. Stir occasionally.

Cook rice according to instructions on bag, substituting chicken broth for water. If no instructions are available, put broth in pot. Cook with high heat until broth starts to boil. Turn heat down to low. Add rice. Simmer for 20-to-30 minutes or until all the broth is absorbed by the rice or the rice is tender.

Ladle meat/veggie/sauce over rice and serve.

This is an exciting meal to make for those who are making their first forays into cooking as this dish requires being active at all times. However, if you pass this rite of culinary passage with flying colors you’ll be able to do anything. Anything. Excelsior!

TIDBITS

1) Liberia has a low percentage of redheads. England has never warred with Liberia.

2) 4% of Europe’s population is redheaded. England has fought many times there. No part of that continent is owned by England save tiny Gibraltar.

2) England fought many wars with Scotland. That land is now joined with England. 13% of Scots have red hair. Coincidence?

4) Redheads require up to 20% more anesthesia to be knocked out. That is why gingers are twice as likely to skip going to the dentist.

5) The Karma Sutra says ginger is a potent aphrodisiac.

6) The FDA says ginger is generally recognized as safe.

7) So you can see why ginger is so expensive. At one point, a pound of ginger rated an entire sheep in barter. When the barter ratio of sheep to ginger rose higher than that, outlaw gangs switched from rustling sheep to rustling ginger. When the barter ratio rose even more, wars broke out.

9) Gingers never get gray hair.

9) The great film actress Ginger Rogers had red hair. But she never caused a war. She didn’t even drink alcohol. She preferred ice-cream sodas.

Bombay Potatoes (Aloo) recipe

Indian Entree

BOMBAY POTATOES
(Aloo)

INGREDIENTSBombPot-

4 brown potatoes
1/2 teaspoon salt
1/2 white onion

1 tomato
3 tablespoons vegetable oil
1 teaspoon ginger powder (freshly ground is preferred)
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 tablespoon garam masala
1/2 teaspoon ground mustard
1/2 teaspoon sesame seeds
2 teaspoons coriander
1 bay leaf
1/2 tablespoon lemon juice
1/2 tablespoon sesame oil.

PREPARATION

Put enough water in pot to cover 4 potatoes. While water is heating to a boil, wash potatoes. Cut each potato into about 12 pieces. Mince onion. After water comes to a boil, add potatoes and salt to pot. Boil until potatoes are done but still firm to the fork. This takes about 6-to-10 minutes.

Dice tomato. Put .vegetable oil and onion in frying pan. Sauté on medium-high for about 5 minutes or until onions are soft. Reduce heat to medium-low and add tomato, ginger, chili, cumin, garam masala, mustard, sesame seeds, coriander, bay leaf, lemon juice, and sesame oil. Cook for 2 minutes, stirring frequently.

Add potato pieces. Stir potatoes gently until they are fully coated with oil and spices and soft to the fork.

TIDBITS

1) Ginger has been in the kitchen for 5,000 years.

2) Ginger, the spice, not anyone named Ginger. Goodness.

3) Ginger has been and still is used for curing upset stomaches and motion sickness.

4) Ginger reduces headaches by blocking prostoglandis, whatever that is, responsible for inflaming blood vessels in the brain.

5) Ginger brings other health benefits. It’s a truly amazing spice.

6) Ginger Rogers brought amazing grace and style to the movies. She really could act and dance.

7) Roy Rogers was a famous cowboy actor. He also owned a chain of restaurants called Roy Rogers.

8) They served hamburgers. You could put your fixin’s on them. I don’t think any of them were ginger.
