Oklahoma Venison Burger

American Entree

­

OKLAHOMA VENISON BURGER

­
INGREDIENTS­
­
1 onion
1 pound ground venison or ground beef
⅛ teaspoon pepper
¼ teaspoon salt
4 hamburger buns
1 ½tablespoon vegetable oil
4 slices American or cheddar cheese
1 tablespoon vegetable oil
­
SPECIAL UTENSIL
­
mandoline
­
Serves 4. Takes 35 minutes.
­
PREPARATION
­
Use mandoline to cut onion into slices 1/16″ thick. Add venison, pepper, and salt to mixing bowl. Mix with hands until well blended. Divide venison into 4 balls..
­
Add venison balls to flat surface. Top venison balls with equal amounts of onion slices. Use large spatula to smash venison balls into patties ¼” thick. (Make sure the onion slices are totally smashed into the patty.)
­
Add vegetable oil to pan. Use spatula to add as many flattened patties to pan ast will fit without touching. (You might to cook in batches.) Cook patties at medium heat for 4 minutes or until the bottom of the patties brown and the edges start to crisp.
­
Use large spatula to carefully turn over patties. Cook for another 3 minutes or until onion bits turn golden brown, or caramelize, and patties reach desired level of doneness. Top patties with a cheese slice. Cook for 1 minute more or until cheese melts. While venison patties cook, toast buns. Assemble burger with your favorite toppings and dig in. Yum.

TIDBITS
­
1) Smashing onion into burgers during the Great Depression was a way to stretch expensive beef. This idea is credited by culinary historians for lifting America of the Great Depression.
­­
2) On the other hand, their cousins, the culinary physicists, are using particle accelerators to test the properties of Oklahoma Venison Burgers, OVB, under extreme conditions. What do they hope to find? They’re not saying. We should worry.
­

Serbian Pljeskavica

Serbian Entree

SERBIAN PLJESKAVICA

(Ser­bian Burger)

­

INGREDIENTS
­
1 garlic clove
1 large onion (1 small one later)
2 tablespoons olive oil or vegetable oil
1 pound ground beef
¾ pound ground pork
1 teaspoon Spanish paprika or paprika
no-stick spray
8 pita loaves*
some kajmak** (optional)
some ajvar*** (optional)
1 green onion
1 small onion
your favorite condiments.****

* = Lepinje buns are more authentic, but also very hard to find.
** = Can be found online. Substitutes are crème fraîche, crema Mexicana, sour cream, or clotted cream
*** = Can be found online. Substitutes are baba ganoush, chili oil, or relish made with bell peppers and eggplant
**** = Kajmak, ajvar, onion are the most authentic condiments for a Serbian. However, red onions, cabbage, pickles, cucumbers, and lettuce are used sometimes.

Serves 4. Takes 1 hour 20 minutes.
­
PREPARATION
­
Mince garlic clove and 1 large onion. Add garlic, onion and olive oil to pan. Sauté at medium-high heat for 5 minutes or until onion softens. Add minced garlic and onion, ground beef, ground pork, and Spanish paprika to mixing bowl. Mix with hands until well blended. Divide meat into 4 portions. Flatten meat portions until they are 6″ wide patties. Cover and let cool in refrigerator for 45 minutes.
­
Spray pan with no-stick pray. Add patty to pan. Fry each patty at medium heat for 4 minutes. Flip patty and cook on low-medium for 4 minutes. Repeat for each patty . Put patty on pita loaf. Spread kajmak and ajvar as desired on patty. Thinly slice green onion and small onion. Place ¼ of the onion slices on kajmak and ajvar. Sprinkle with ¼ of the green onion. Top with 2nd pita loaf. Repeat 3 more times.

TIDBITS
­
1) Pljeskavica is pronounced just like it looks.
­
2) Just like hot dog is pronounced, “hot dog.”
­
3) Of course, pljeskavica is an anagram for “java pickles.”
­
4) If you haven’t heard of java pickles, it’s because they’re not wildly popular.
­
5) Or even popular at all.
­
6) To make java pickles, add coffee grounds to the coffee filter.
­
7) Then instead of water, pour pickle brine into the coffee maker’s reservoir.
­­
8) Turn on your coffee maker and wait.
­
9) Take your java pickles to your next potluck.
­
10) You won’t be asked to bring anything ever again.
­
11) The moral of all this, is that there are some anagrams people aren’t meant to create.
­
12) Better to search for lepinje buns. This quest would keep you off the streets where you’d only foment revolution.

13) And why can’t we have lepinje delivered to our home?
­
14) Of course, you could try the superbly efficient AmazonTM to send some to your home.
­
15) What’s this? Amazon has no lepinje!
­
16) Why can’t we have a lepinje truck cruising the neighborhood everyday? The truck would play pleasant Serbian folk tunes, so we’d know the lepinje man was on his way.
­
17) And while we’re at it, why not have the truck carry bread, carry bread from all over the world?
­
18) And herbs from all over the world? One herb can only be found in desolate areas of northwestern China and rarely at that. And let me tell you, the Chinese police and military frown on such unsupervised activities. “But Colonel, I was only looking for a rare herb,” you’d say. The official’s reply would surely be, “Like, I’ve never heard that one before.” And you’d go to a Chinese prison.
­
19) Since incarceration is bad, we’ll have to hold out for a local bread and herb truck.
­
20) And add spices and produce. I can’t tell you how many times I didn’t have the right bread, herb,  spice, or produce. “You may say that I’m a dreamer, but I’m not the only one,” John Lennon. Let’s make that truck so. Let’s turn our street into a culinary garden of Eden.

Thai Burger Wrap

THAI BURGER WRAP

INGREDIENTS

1½ pounds turkey meat
1 medium carrot, about ¼ cup
3 stalks green onion
¼ teaspoon sesame oil
½ teaspoon chili powder
2 garlic cloves
½ teaspoon ground ginger
2 tablespoons smooth peanut butter
¼ teaspoon salt
¼ teaspoon pepper
½ tablespoon peanut oil
¼ cup fresh cilantro
2 teaspoons mayonnaise

romaine or iceberg lettuce

PREPARATION

Mince garlic cloves. Mix all top ingredients thoroughly by hand. Make about 4 patties. Fry patties on medium-high heat for about 5 minutes, flipping them once. Wrap patty with a leaf of romaine lettuce. Wash hands before greeting dinner guests, likable or not.

TIDBITS

1) Steve Martin was a romaine-lettuce salesman appearing on a Saturday Night Live takeoff of Family Feud.

2) Thailand used to be called Siam. The musical, The King and I, was set in Thailand. The non-fiction book, on which it was based, is much more serious in tone.

3) Thailand was never conquered by the Europeans.

4) At one time, Thailand’s new army officers were required to master golf.

5) Golf is a good way to learn cussing.

6) There is no 6).

Pizzaghetti

Canadian Entree

PIZZAGHETTI

INGREDIENTS – PIZZA CRUST

2 cups all-purpose flour (1 tablespoon more later)
¾ cup water
2 tablespoons vegetable oil
½ teaspoon sugar
½ teaspoon salt
½ tablespoon active dry yeast
no-stick spray
1 tablespoon flour

INGREDIENTS – TOPPINGS

½ pound spaghetti
no-stick spray
1½ cups pasta sauce
½ pound sausage meat*
¼ pound sliced pepperoni*
2 cups mozzarella cheese

* = Substitute with your preferred toppings, if you like.

SPECIAL UTENSILS

bread maker
16″ pizza pan

Serves 6. Takes 1 hour 50 minutes.

PREPARATION – PIZZA CRUST

Add flour, water, oil, sugar, salt, and yeast to the bread maker. Do not put the yeast directly on top of the salt. Salt is bad for yeast and yeast makes the dough rise. “Ask not what your yeast can do for you. Ask what you can do for your yeast.”

Set the timer or the menu on the bread maker to “Dough.” Wait for the required time, maybe up to an hour. In the meantime preheat the oven to 400 degrees and liberally spray the pizza pan with no-stick spray. This will prevent the crust from forming a glue-like bond with the pan.

Take the dough out of the bread maker and roll it out until the dough covers the pizza pan. If you do not possess a rolling pin, any canned food can will do as long as it is at least six inches tall. Spray the pan and coat it with 1 tablespoon flour before spreading the dough.

PREPARATION – TOPPINGS

Preheat oven to 400 degrees. Read instructions for spaghetti on package. Subtract 3 minutes from the suggested time. (The spaghetti will continue to cook in the oven.) Drain.

Spray pizza pan with no-stick spray. Put pizza crust on pizza pan. Spread pasta sauce over entire crust. Make ½” sausage balls. Arrange sausage balls and pepperoni slices evenly over sauce. Distribute spaghetti evenly over pizza. Sprinkle cheese over everything. Bake pizza in oven at 400 degrees for 16 minutes or until cheese turns golden brown.

Note: This another version of pizzaghetti that simply has spaghetti and sauce served next to one or two slices of pizzas. To me, the version presented here is much more exciting.

TIDBITS

1) I must say that this is an exciting dish.

2) It’s so simple now, yet so many never had the wit to combine pizza with spaghetti.

3) But Patrice Grandchat did. Culinary financial analysts report that Mlle. Grandchat now has so much money that she’s about to launch a hostile takeover of AmazonTM. “I have a lot of things in my closets and attic that I’d like to sell,” said the billionaire Quebecoise.

4) I want to be as rich as Mlle. Grandchat. If I were that wealthy, I’d never have to think twice about spending ten cents on a recyclable plastic bag at the supermarket checkout stand. So, here are my forthcoming money-making food dishes.

A) PB&S: Peanut Butter and Steak. Simply slather your steak with peanut butter. There’s a version of this entree where the steak gets stuffed with peanut butter. This is the famous Stuffed PB&S.

B) Ravioli Burger: Substitute the meat patty in your burger with ravioli.

C) Camcowpigturducken: This is a chicken inside a duck inside a turkey inside a pig inside a cow inside a camel. Vegetarians are warned away from this dish. It’s also a diet-busting meal.

D) Taco Ice Cream: Who doesn’t love tacos? Who doesn’t love ice cream? I tell you, putting a crushed taco inside cream is a stroke of genius.

E) Roast Marshmallow Beef: It’s often called RMB by its legion of fans. Nothing’s more fun than roasting marshmallows over a campfire. And roast beef is the tastiest meat entree around. And what better way to get food fussies to eat their roast beef than hiding it inside a dessert?

F) Coke Dogs: Coca ColaTM is the world’s favorite soda. The hot dog is America’s most beloved meal. Simply boil your frankfurters in a pot of Coca Cola instead of water.

G) Bean Kabobs: Finally a way to grill beans! We never could before because beans would, of course, fall through the grill. But they won’t when they’re skewered between pork cubes and onion slices.

Great Arctic Eats – Utsjoki, Finland

Are you a diner who shuns crowds, but loves saunas* and watching reindeer ? Do you love words with “aa” in them, such as “kalastaa,” the Finnish word for “fish?” Indeed, do you love Finland but feel uncomfortable with large crowds of Finns who often congregate in the country’s large cities? Do you wish to dine above the Arctic Circle? Well make your way to Utsjoki, Finland, the little town that has it all.
* “Sauna” is “sauna” in Finnish. See? You’re speaking like a native already.

There are five restaurants listed in TripAdvisor(tm).  So, the competition for your patronage will be fierce indeed. Let’s  visit the local eateries.

The top rated dining establishment is the esteemed Restaurant Deatnu. They serve traditional Sámi dishes. Yes, they do wonders with reindeer, local berries, and fresh fish. The restaurant has a nice view and a friendly staff. But please, please try the salmon soup.

°

Next on our restaurant adventure is Restaurant Aurora Holidays. They serve great local food. Try their delicious reindeer and cod. For dessert, you would do well to order their great sticky cakes. The restaurant looks out on a soothing river. Maybe you’ll even see some wildlife. This pleasant restaurant is run by the family who owns it.

Winning third place is  Utsjoen Kylatalo Gilsa. It’s known for its hot drinks. Not only is it a charming cafeteria will the flavor of local culture, it also has a grocery store. It’s your one-stop place for food. And remember, you’ll love their buns.

All self-respecting towns will have a great hamburger joint. Annukan Grill fits this bill nicely. And oh my gosh, oh my gosh, they have a reindeer burger. I want to go there!

Honorable mention goes to Restaurant Pub Rastigaisa. It serves pizza and has a bar. This restaurant received many reviews written in Finnish, so you know the locals frequent it.

Utsjoki, unlike many of the other towns reviewed in Great Arctic Eats has a road going in and out of it. It can even boast of a spectacular bridge going into Norway. So you’ll be able motor into town. No dog sleds and hiking needed to get to Utsjoki. Well, I suppose you could charter a plane from Helsinki, but if you want to travel by yourself and see soothing scenery, travelling the last leg of your trip by car really is the way to go. Anyway, there are many must-see sites in Utsjoki.

Be sure to visit Kevo Strict Nature Reserve.  This place boasts of extremely beautiful hiking routes. You’ll find you self losing track of time while viewing the entrancing scenery. So, be sure to bring a watch with an alarm on it, as the park gets dark at night.

By all means, see the enchanting church huts. They’re beautiful in their simplicity. All in all, it’s wonderful way to learn Finnish history while staying outdoors. None of that entering the bowels of a stuffy museum for us. The site sports a splendid, little craft shop and a waffle cafeteria. What more could want?

Drive over the nearby Sàmi Bridge. It’s boasts an elegant, yet impressive dressing. It’s perched over a river dividing Finland from Norway. The bridge and its surrounding are especially beautiful in the twilight. Plus, it doesn’t take much time to take it all in. Just drive your car over the bridge. If you want a quick bit of beauty, this bridge is for you.

Try to see the beautiful Utsjoen Kirkko. This is the northernmost church in the European Union. So there. The church’s architecture is both pleasant and impressive. Go inside and spend some soul-soothing time with God.

If you prefer guided tours rather than thrashing about by yourself, look up Aurora Holidays or Tundrasafari Finland. And at the end of a glorious visit, simply unwind at Utsjoki DiscGolfPark.

Great Arctic Eats – Cambridge Bay, Canada

Great Arctic Eats – Cambridge Bay, Canada

Do you like to eat well, but hate crowds? Do you quail at visiting the same local restaurants one more time? Do you wish to chill out in new soundings? Well, I have the place for you. It’s Cambridge Bay in Nunavut, Canada. Chilling out and shunning teeming urbans mobs will be easy peasy in this getaway  above the Arctic Circle.

There are four restaurants listed in TripAdvisor(tm).  So, the competition for your dining dollars will be fierce. Let’s sample the local cuisine.

The top rated dining establishment is the highly regarded Kuugaq Cafe. They serve the best muskox that I know of. You simply cannot visit here without dining on their tasty muskox chili and muskox chili. And if you love fish, may I suggest their delicious Arctic Chow chowder? Kuugaq Cafe regales its dinners with superb lattes and baked goods. The owners don’t neglect the international culinary scene either. Try their tasty Trinidad stew and pizza quesadilla.

Next on our restaurant tour is the fine Saxifrage Resto-Cafe. This cafe cooks great Arctic Char. (I mean Cambridge Bay really is the only place in the world for serious Arctic char connoisseur to visit.)  Saxifrage also delights its customers with juicy hamburgers and truly good fries. This cafe is known for friendly service. The staff also provides Chinese food to go on Sundays 4 to 6 pm. What more could you want? How about free medium coffee with every meal? There you go.

Winning the culinary bronze medal is Arctic Island Restaurant. It serves a good breakfast. It’s specialties are Caesar’s salad and Black Forest cake. Visiting workers will be pleased to know that they can have their meal waiting for them at their hotel room when they come back from work.

Honorable mention goes to the KFC/Pizza Hut restaurant. People have complained of its cost, poor quality, and lack of variety. For Pete’s sake people, this KFC/Pizza Hut lies 400 miles north of the Arctic Circle. It’s by far the best fast-food combo that far north. I’m amazed that KFC/Pizza Hut had the courage to build a restaurant in such an isolated place. All their ingredients must be flown in from over a thousand miles away. Not many many vendors of fresh pepperoni near the North Pole.

Speaking of flying to Cambridge Bay, the best way to get there really is by airplane. Hikers will surely be discouraged by the miles and miles of open water between the end of the North American continent and Cambridge Bay’s Island. And I have to imagine that you really won’t be able to carry the tons of food you’ll need to get there. No, fly to Cambridge Bay, even if you adore white landscapes. Book that flight to Cambridge Bay Airport (YCB.) You’ll have to fly the last leg by charter. There are no flights that go all the way from your North American metropolis to this Arctic outpost no matter what those air-fare sites will claim.

Speaking of hikers, lovers of outdoor rambling will love the trail of Ovayok Territorial Park. See the awesome panoramic views, the wildlife, and the trails when the visibility is good.

You won’t want to miss the Canadian High Arctic Research Station. It’s open to the public. Does your city have an Arctic Research Station open to the public? No, I didn’t think so. You must reserve your guided tour. I never suspected you’d need to do this. Is it like trying to get tickets for the next Star Wars(tm) movie? By all means, make the reservation. You don’t want to sleep outside in a sleeping bag in that frigid air just to reserve your place. Or just show up and look at the station’s brochure.

Do you hate coming home only to find out that you’ve missed a hot-spot tourist attraction that everyone has raved about? Don’t let this happen to you. Stampede the Arctic Coast Visitor Centre. They’ll fill you in.
°

Montenegrin Burger

Montenegrin Entree

MONTENEGRIN BURGER
(Pljeskavica)

INGREDIENTS

4 garlic cloves
1 small onion (1 more small onion later)
1 pound ground beef
1 pound ground lamb
2 teaspoons paprika
¾ teaspoon pepper
½ teaspoon salt
⅓ cup sparkling or fizzy water
6 pita* halves (optional)
1 small onion
1 Roma tomato

* = It’s most authentic with lepinja, a Montenegrin flatbread. It can be powerful hard to find.

SPECIAL UTENSIL

outdoor grill

Makes 6 burgers. Takes 2 hours 30 minutes.

PREPARATION

Mince garlic and onion. Add garlic, onion, beef, lamb, paprika, pepper, salt, and sparkling water to large mixing bowl. Mix with hands until well blended. Cover and refrigerate for 2 hours.

Make 6 patties from meat. Add patties to grill. Grill at medium heat for 6 minutes. Flip patties and grill for another 6 minutes or until meat is done to your liking. Cut onion into 6 slices. Cut tomato into 6 slices. Insert patty and onion and tomato slices into each pita half.

TIDBITS

1) The Montenegrin Burger is eerily similar to the famed Pac-ManTM . Is this a case of parallel development or was one of the two inspired by the other? You decide.

Afghan Burgers

Afghan Entree

AFGHAN BURGERS

INGREDIENTS

3 cups crinkle-cut fries or enough to cover cookie sheet
4 eggs
1 cup fresh cilantro
3 garlic cloves
1 red onion
3 sausages, beef or chicken
3 tablespoons vegetable oil
⅓ cup water
2 Roma tomatoes
½ cup vinegar
½ teaspoon pepper
½ teaspoon salt
5 lavash or roti loaves

SPECIAL UTENSILS

11″ x 17″ cookie sheet
newspaper or paper*
tin foil*

* = This really is a street food. It is meant to be held. If you don’t have paper, and perhaps, foil on the bottom, your hands will get greasy and food will go all over everything.

Serves 5. Takes 55 minutes.

PREPARATION

Cook French fries according to instruction on package. While fries cook, boil eggs, for 6 minutes for soft boiled to 12 minutes for hard boiled. While eggs boil, dice cilantro, garlic cloves and red onion. Slice each sausage into 8 round pieces. Add sausage pieces and vegetable oil to pan. Sauté sausage pieces at medium-high for 5 minutes or until they are brown on all sides. Turn sausages enough to prevent burning. Add water. Reduce heat to medium. Cook at medium heat for 3 minutes or until pieces are no longer pink inside.

Cut each egg into 6 slices. Cut tomatoes into ½” slices. Add vinegar, pepper, and salt to onion. Stir with fork until well blended. Cut lavash loaves into 4″-wide strips. Evenly add ingredients to the lavash strips in the following order: egg, tomato, red onion/vinegar/pepper/salt, fries, sausage, cilantro, and garlic. Roll up food-laden lavash strips. Wrap the lavash roll-ups with paper, being careful to fold paper under the bottom of the roll-ups. Then do the same with the tin foil.

TIDBITS

1) As noted above in the recipe, the Afghan burger is a street food.

2) It is less well known, however, is that it is the world’s first street food. And even less known than that is that the Afghan burger was invented in Poway, California, two million years ago*, 100,000 years before Lucy, homo habilis, the supposed first human roamed the Earth.

* = Also written as 2.0 mya. These tidbits are nothing, if not scientific.

3) Patty, homo streetfoodus and chef extra ordinaire, invented the Afghan burger, while pondering the infinite* and keeping an eye out for vicious mountain lions.

* = Homo streetfoodus’ counting system was one, two, infinite. So, her dreaming of infinity was not as grandiose as it might have seemed. But then she had a smaller brain than we do, so it all worked out.

4) Anyway, while Patty contemplated a herd of infinitely-legged gazelles, the sky began to thunder. Zap! Zap! a lightning bolt struck one of the gazelles. The force and heat of the bolt was so intense that the gazelle exploded into dozens of fully cooked sausages. It is by fortuitous events that humanity advances.

5) Pow! Zap! The storm raged. A lightning bolt hit an elm tree turning into paper. Then the storm stopped, enabling tin traders from Cornwall, homo satnavus, to arrive.

6) Then food traders from Boston*, homo marathonus, showed up at Poway; even then Poway was the place to be. They gave Patty fresh cilantro, garlic, red onions, potatoes, vegetable oil, pepper, salt, and vinegar.

* = The Boston of two million years ago was much smaller than the current city. You wouldn’t have recognized it.

7) “All we need is some eggs.” said Patty. Fortunately, and this was one of those rare days when things really came together for humanity*, a herd of chickens migrated by, leaving an infinite number of eggs.

* = Indeed, Patty won a million dollars in the lottery that very day. However, as she and the others had no notion of money, the winning ticket went uncashed.

8) And so, Patty made Afghan burgers for the happy band of traders. And the burgers said that they were good. And Patty was well pleased. But they were quite hot. Truly and forsooth, through the millennia. as people lost the enormous finger calluses they had 2.0 mya, this version of the hot, juicy Afghan burgers caused more and more pain. Eventually, the Afghan burger disappeared into the sands of time. Fortunately, an unknown chef hero resurrected the entree, this time using flatbread to soak up the hot juices. Afghan burgers are now taking the culinary world by storm.

9) Culinary paleoanthropologists, however, don’t know why this dish is called the Afghan burger when there is no patty in it but created was by Patty, and was first made in Poway, California, not Afghanistan. We may never know. Further research is indicated.

Air Koryo Hamburger (World’s Worst Hamburger)

North Korean Entree

AIR KORYO-TM HAMBURGER
(World’s worst burger)

INGREDIENTSAirKoryoBurger-

1 pound ground whitish mystery meat that’s been lurking in the fridge for months OR mixed ground pork and turkey
1 tablespoon salt
1 tablespoon sugar
4 teaspoons yellow mustard
4 leaves wilted lettuce
4 thin bits wilted onion
4 thick yellow buns

Makes 4 burgers. Takes 15 minutes and 30-to-60 minutes to cool down completely.

PREPARATION

Add ground mystery meat, salt, and sugar to large mixing bowl. Mix with hands. Make four patties. Add patties to pan. Cook patties on low-to-medium heat for 2-to-4 minutes on each side or until no pink remains and the outside is still white. Do not brown in any way.

Remove patties from pan. While patties lose all warmth, 30 minutes should do it, spread mustard on each bun half. Do not under any circumstance toast or heat buns. Add onion slice, or fragment, to each bun bottom. Add patty to each bun top. Then put wilted lettuce leaf* on top on each patty. Ideally, the lettuce leaf should totally obscure the meat patty. Assemble burger.

To make it tasty, cook as above except: use beef, half the amount of salt, omit the sugar, use fresh lettuce and onion, use ketchup, and toast buns. Serve hot.

* = Don’t worry if you find only fresh lettuce at your supermarket. Simply put lettuce on patty while it’s being fried on its second side. Let lettuce cool down along with patty. Voilà, wilted lettuce.

TIDBITS

1) Air Koryo has been rated the world’s worst airline in the world for the last five years. Amazingly, there are people who are so eager to fly it that destinations don’t even matter. Flying Air Koryo is like stepping into a time warp. The airline uses propeller planes that haven’t seen service anywhere else for decades. Particularly valued seats are next to the noisy engines or where the plane shakes the most. Some people return year after year to fly Air Koryo’s unique aircraft. Enthusiasts, you bet.

2) Air Koryo’s “burger” comes with a paper bag having the ominous words, “For your refuses.”

3) North Korea clearly is a threat to the world. Almost as much as lutefisk vendors.
