Qorma Laward (Afghan chicken stew)

Afghan Entree

QORMA LAWAND
(chicken stew)

INGREDIENTSQorbaLawand-

4 chicken breasts or 2 pounds chicken
3 garlic cloves
2 onions
2 teaspoons ginger
1 teaspoon lime juice
1/4 teaspoon pepper
1/4 teaspoon salt

2 tablespoons peanut oil or ghee (clarified butter)
½ teaspoon cardamom
½ teaspoon chili powder
½ teaspoon cinnamon
2 teaspoons coriander
½ teaspoon turmeric
½ cup water
1 ½ cups whole yogurt

PREPARATION

Cut chicken into 1″ cubes. Mince garlic cloves and onions. Put chicken, ginger, lime juice, pepper, and salt into large mixing bowl. Turn the chicken cubes until they are well coated. Place bowl in refrigerator for 1-to-2 hours.

Add 2 tablespoons peanut oil or ghee to large skillet or Dutch oven Add onion and garlic. Sauté at medium-high heat for 5 minutes or until onion softens. Stir frequently. Add cardamom, chili powder, cinnamon, coriander, and turmeric (Goodness, there are a lot of spices starting with “c.”) Reduce heat to medium and sauté for 2-to-3 minutes.

Add yogurt, coated chicken cubes, and water. Stir with whisk or spoon until blended. Bring to boil on high heat, stirring constantly. Reduce heat to warm, to avoid curdling the yogurt, and simmer for about 30 minutes. Add water as necessary to keep the qorba lawand from drying out. Stir occasionally. Goes well with naan bread or rice.

TIDBITS

1) Naan is a palindrome. So is Anna. So is Anna’s Naan. A Santa Anna’s naan at NASA is an even more ambitious palindrome.

2) Sha Na Na is a famous American rock and roll band. It is also an anagram for Has Naan. Coincidence, perhaps?

3) A big maze stands between you and naan. Oh no, can you find the way?

Tanzanian Mango Cream Recipe

Tanzanian Dessert

MANGO CREAM

INGREDIENTSMangoCr-

2 mangoes
1 1/3 cup sugar
1 cup heavy cream

PREPARATION

Peel mangoes. Cut fleshy part of mango in blender. Puree mango in blender. Put sugar and heavy cream in mixing bowl. Whip cream with whisk or electric beater until sugar dissolves and cream thickens. Pour pureed mango into mixing bowl. Mix with whisk until all is uniformly blended.

TIDBITS

1) Mango is not a palindrome.

2) However, it is anagram for Ma Nog.

3) Ma Nog led the extended Nog family of Tanzania from 1869 to 1914 and in 1888 developed egg nog. It was fantastic! The whole world took notice! The whole world loved egg nog! They all wanted it! Everyone ended sentences with exclamation points!

3) The late 1800s was best of times. It was the worst of times. It was the age of spiced dessert drinks. It was the age of militaristic imperialism.

4) In 1885, Germany invaded Tanzanzia, then Tanganyika, to secure the supply of Ma Nog’s egg nog. France and Britain the other big colonial powers resented Germany rolly polly Ma Nog egg monopoly.

5) Relations festered for decades between Germany and the Franco-British egg-nog alliance. War War One erupted in 1914. Supposedly it was because the Archduke Ferdinand was assassinated but newly declassified documents prove decisively the Tanzania egg nog cause.

6) Millions died in World War One. This war spawned a sequel, World War Two. Millions died in that war as well.

7) But in 1961 Tanzania became independent. It’s peace loving government with the kind acquiesence of Ma Nog’s grandchildren posted her delicious egg nog recipe in all the prestigious culinary journals.

8) We haven’t had a global war since. Yay for Tanzania and egg nog.

Moroccan Yogurt Sauce From Forthcoming Cookbook, “Eat Me”

Moroccan Appetizer

MOROCCAN YOGURT SAUCE

INGREDIENTSMorocYo-

1/2 tablespoon whole cloves
1 medium red onion
2 garlic cloves
1/3 cup fresh dates
1 tablespoon olive oil
1/2 tablespoon cardamom
1 cup plain full fat or whole yogurt

UTENSIL

spice grinder

PREPARATION

Grind cloves in spice grinder. Dice red onion and garlic cloves. Remove seeds from dates. Chop dates. (This is not license to go Lizzie Borden.)

Cook on medium-high heat: olive oil, onion, garlic cloves, and cardamom until onion is tender. Add chopped dates. Cook for 1 minute. Put contents in mixing bowl and add yogurt. Mix with fork or whisk. Serve right away if used for kebabs. (Kebab is not a palindrome.) This is also a great bread dip.

TIDBITS

1) Dates are good for you! Dates help cure sore throats.

2) Dates help reduce the intoxicating effects of alcohol.

3) Unfortunately, most people who get intoxicated know little of dates’ beneficial properties.

4) I mean, how many times has a traffic cop pulled over a weaving driver only to hear, “But officer, I was on my way to buy some dates at the supermarket. Honestly, I was.”

5) Were dates stockpiled by Chicago’s gangsters in the 1920s? They could have been used to make alcohol like any food with sugar. And if the police raided the date warehouse, the criminals could have claimed they were there to help wipe out the latest sore throat epidemic to hit the city. Hard to say. No one talked. No one is talking. Best to let the subject drop.
