Busy, Busy Day

Woke up. Fell out of bed. Dragged a comb across my head. Then I left the Beatles’ song to have a much need massage. It went for an hour and my muscles must have been super tight as the masseuse worked hard on me. I almost said, “Stop.” I’ve said that maybe once in my many years of physical therapy. Then I helped my friend got her prescription. I then did about 90 minutes of latch hooking, which is part of my eye therapy. Did about 90 minutes of driving.

Back home I did finances, ground spices, cleaned some in the kitchen. I am now making two pumpkin pies.

Gosh my back hurts.

What I Did and Didn’t Do Today

I went to physical therapy today to get the muscles in my lower back and legs stretched. Indeed, I am making progress despite spectacular fall in the kitchen last night.

My tight muscles, tendons, thingies are, no doubt, I did not start as quarterback for ANY NFL team last weekend. And my prospects for playing this weekend are fading rapidly.

But I shall perservere. Soon you will, Paul “TD Man” De Lancey leading a lucky team to the Super Bowl. Go, Paul, go!

Nicaraguan Indio Viejo

Nicaraguan Entree

INDIO VIEJO

INGREDIENTS
­
1 green bell pepper (1 more later)
10 garlic cloves
2 pounds skirt steak or chicken breast
1 onion (2 more later)
1 green bell pepper
2 onions
5 tomatoes
2 tablespoons vegetable oil
2⅓ cups masa harina or 12 corn tortillas
3 tablespoons sour orange juice or lemon juice
1 teaspoon achiote powder or sweet paprika
1 teaspoon pepper
1 teaspoon salt
2 tablespoons fresh mint, spearmint, or cilantro

SPECIAL UTENSIL

Serves 6. Takes 2 hours.

PREPARATION
­
Seed and dice 1 green bell pepper. Dice 1 onion. Cut each garlic clove into four pieces. Add meat, garlic cloves, 1 green bell pepper, 1 onion, and enough water to cover to large pot. Bring to boil using high heat . Reduce heat to low and simmer for 1 hour 40 minutes or until meat is tender to the fork. Strain and reserve meat/garlic/bell pepper/onion. Use forks to shred meat. Save broth.
­
30 minutes before meat should be tender, seed and dice 1 green bell pepper. Dice 2 onions and tomatoes. Add diced bell pepper, onion, tomatoes, and vegetable oil to large pan. Sauté at medium-high heat for 5 minutes or until bell pepper and onion soften.
­
Add reserved meat/garlic/bell pepper mix, masa harina, sour orange juice, achiote, pepper, and salt. Stir constantly while adding enough reserved broth it obtains the consistency of a thick stew. Simmer on low for 10 minutes or until there are no flour lumps. Stir constantly. Dice mint. Garnish with mint.

TIDBITS
­
1) Maybe your guests hurt your feelings by asking for rice or fried plantains after you’ve cooked for two hours. In this case, visit your personal kitchen angel. She’ll fold her wings around you and say, “There, there.” You’ll feel all better.

Adana Kebab

Turkish Entree

ADANA ­KEBAB

­­
INGREDIENTS
­
½ small red onion or onion
1 tomato
⅓ cup breadcrumbs
1 pound ground lamb
½ tablespoon salt
2½ teaspoons sumac
5 teaspoons Urfa biber*
2 tablespoons ice cold water
¼ cup  fresh parsley
2 tablespoons olive oil

* = Also known as Urfa pepper and Isot pepper. Substitute with red pepper flakes.
­
Serves 4. Takes 1 hours 30 minutes.

PREPARATION
­
Thinly slice onion and tomato. Add bread crumbs, lamb, salt, sumac, Urfa biber, and ice-cold water to mixing bowl. Mix with hands until well blended. Form into 8 logs 5″ long. These are the kebabs. Chill in refrigerator for 45 minutes.
­
Add olive oil to large pan. Heat oil at medium-high heat until a few bread crumbs in the oil start to dance. Cover and grill for 5 minutes at medium-high heat or until lamb is no longer pink.inside. Turn once. Garnish with onion, tomato, and parsley. Goes well with pita loaves, lavash loaves, salad, and rice.

Recipe Failure Haiku

The Things That Keep Me From Fomenting Revolution

I’m pretty darn sure that if I didn’t have some hobby I’d be out in the streets fomenting revolution. Past periods of prolonged idleness for me goes a long ways towards explaining the crises of 2007, 2017, and 2019. We surely don’t want a recurrence of those troubled times. I know I don’t.

So, I’ve taken up cooking in a big way. This, of course, means purchasing wagon trains full of kitchen gizmos. Untold numbers of thingamabobs necessitate organzing on the level of a NASA space launch.

There, this is how I kept my self busy. This is how I kept our glorious republic strong and at peace.

And now, some of my kitchen gadgets and foodstuffs and how they’re organized.

My Kitchen Gizmos – For Ravioli

Good heavens, ravioli sure taste yummy. Homemade ravioli are even tastier. But gosh, making the pasta for the ravioli completely by hand is so time time consuming and leads to pasta with uneven thickness. That’s why I like my ravioli gizmos.

Look at the picture below. The hand-crank pasta machine is second to the left. Feed pasta in at the top. Turning the crank will turn out a pasta sheet on uniform thickness. The extra attachment on the far left helps make spaghetti.

The ravioli mold is on the right. It yields 21 small and even ravioli. It also makes assembly much easier.

And remember, spending money of gizmos isn’t frivolous when the gadgets are for the kitchen.

Dr. Paul’s Advice on Romance

People keep asking me, for no apparent reason, how to win a woman’s heart.

This is an easy one. I can’t figure why there are so many books on the subject.

So, how would I a woo a woman?

Simple, cook for her. A well-cooked meal will make a woman’s heart flutter.

Continue to prepare her dinners fit for the gods. She will love you devotedly all your life.

And oh, as my Grandma Anna used to say, “An outstanding chef will leave the kitchen as clean at the end as when he started.”

So if you clean up as you go, your everlasting love will be the greatest of all time. Just like Romeo and Juliet.

But they both killed themselves. Oh well, maybe you should make a little mess. Or just eat out.
