Deep Fryer French Fries

DEEP FRYER FRENCH FRIES

­
INGREDIENTS
­
1¼ pound russet potato
13 cups vegetable oil*
­
* = My deep fryer uses this amount. Amounts vary with each deep fryer. See instructions that come with deep fryer. Duck fat or beef tallow gives a better taste, but it should be completely melted before being put into the fryer.
­
SPECIAL UTENSILS
­

4 4-cup Mason jars

Serves 2. Takes 1 hour 20 minutes.
­
PREPARATION
­
If desired, remove potato skins with potato peeler. Use French-fry cutter to cut potato into strips. Place these French fries in a bowl. Cover and refrigerate for 40 minutes or until ready to fry.
­
Add oil to deep fryer. It should be between the MIN and MAX level on the bowl. Set temperature to 325 degrees. While temperature rises to 325 degrees, drain water from fries. Pat fries dry with paper towels.
­
Once the oil’s temperature reaches 325 degrees add French fries to frying basket. Carefully lower basket into oil. Put lid on fryer. Deep fry for 10 minutes or until fries just start to show color. Raise temperature to 360 degrees. Deep fry for another 3 minutes or until fries become crispy and turn golden brown. Drain oil. Sprinkle with salt, if desired. Serve with condiments such as ketchup, mustard, or mayonnaise. Serve hot.

Strain and drain oil into Mason jars. Reuse the oil until it has a foamy surface,  dirty, dark appearance, or a fishy aroma.

TIDBITS
­
1) How does NASA know if teeny, tiny objects exist in apparently empty stretches of outer space? It flings billions of potato strips into the apparently voids out there. NASA ensures uniform shapes and weights of these tater strips by employing French-fry cutters. The space agency flings these spud bits into space and tracks their orbits. If the orbit wobbles, another object exists close to the erratic fry. By such means NASA hopes to find every teeny, weeny, itsy, bitsy, speck in outer space.

Air Fryer French Fries

American Appetizer

AIR FRYER FRENCH FRIES

­
INGREDIENTS
­
¾ pound russet potato
⅛ teaspoon salt
⅛ teaspoon pepper
1 tablespoon duck fat or olive oil
­
SPECIAL UTENSILS
­
french-fry cutter
spray bottle
­
Serves 4. Takes 30 minutes.
­
PREPARATION
­­
Use french-fry cutter to cut potato into strips. Put french-fry strips into mixing bowl. Add french-fry strips,  pepper, and salt. Toss strips until well coated. Toss strips, spraying fries with duck fat as you do so. (You might need to melt duck fat into oil before putting it into a spray bottle.)
­
Add coated strips to air-fryer basket. Arrange them in a single layer, if possible. Try not to overlap. (You might need to cook in batches. Set temperature to 380 degrees. Set timer to 10 minutes. Shake air-fryer basket. Again set timer to 10 minutes or until fries turn golden brown and become crisp. Sprinkle with extra pepper and salt as needed.

TIDBITS
­
1) Potatoes figure prominently in so many tasty dishes.
­
2) What are they? French fries comes to mind. So does shepherd’s pie.
­
3) They also make tolerable, if short-lived, baseballs. “Hitting a tater” is a metaphor for hitting. Indeed, culinary historians point to a game in 1913 between Biloxi Shrimp and the Selma Grits where the teams used 423 taters to complete the game. An impromptu mashed potato festival followed the contest.. Be sure to visit Selma on May 5 for its annual Potato Revelry.
­
4) It’s little known that the English army used potatoes during its siege of La Mouche in 1387. The English trebuchets flung ton after ton into the starving town. Unfortunately for the besiegers, the highly nutritious potatoes enabled the villagers to stave off famine. The English then hurled potatoes at the town walls. Nothing. The English lifted the siege. The townsfolk rejoiced, but to this very day, no one there will ever dine on a potato. “Ouf.”
­
5) Potatoes also make great paperweights and subjects for still-life paintings. Potatoes also prove essential to filling a sack of potatoes with potatoes. Who knew?

What I Did Today

Augustus the Angry Avocado, leader of the pack

Got my french-fry cutter in the mail.

Went to exercise class. Felt like a Greek god who had let himself go a while back. Gosh, the arthritis in my shoulders hurts. Sometimes I have to move my arms in slow motion.

Swam to the island of Hawaii. Had a SPAM sandwich. SPAM is so, so big there. Drank a root beer in a glass that had a tiny umbrella in it.

Swam back home. How did I not get cramps? Whew.

Shopped at a supermarket. It did not have duck fat. Life is hard.

Herded some angy avocadoes back into the barn.

I  played Number Two Son in a game of Strat-O-Matic Football. He had last years Chiefs and I had last years Packers. He won 30-6.

I’m supposed to have physical therapy tomorrow morning and craft class at 1 pm. I don’t know if high winds tomorrow will cancel everything.

I’m going to check the planetary orbits of our Solar System. I’ll water some Horrible Histories and Death Valley Days after that.

French Fry Soup

FRENCH FRY SOUP

INGREDIENTS

½ pound French fries (leftovers or cooked)
2 cups chicken or vegetable broth
⅛ teaspoon pepper
¼ teaspoon salt
2 green onions
½ cup milk
6 tablespoons sour cream
½ cup cheese, grated (your favorite type)

SPECIAL UTENSIL

food processor

Serves 4. Takes 20 minutes.

PREPARATION

Add French fries, broth, pepper, and salt to pot. Bring to boil at high heat. Reduce heat to low-medium and simmer for 3 minutes or until fries become quite tender. Stir occasionally. Pour contents into food processor. Puree until smooth. Return contents back to pot.

Dice green onions. Add milk and sour cream to pot. Mix with fork until well blended. Simmer at low-medium heat. Gradually add cheese. Stir constantly until well blended. Simmer at low-medium heat until cheese melts. Stir enough to prevent sticking. Garnish with green onion.

TIDBITS

1) This is an excellent recipe for using up those mounds of French fries you get from eating out. If you go use the drive through at a McDonald’sTM or a Burger KingTM, each and every order of hamburger and chicken sandwich will be met by “Do you want fries with that?” I’ve ever been asked if I wanted fries with that after ordering fries. Being the kind soul that you are, you always say, “Yes.” Soon, you are bringing home enough French fries to catapult a NASATM capsule into orbit.

2) This mania for adding fries extends to formal sit-down restaurants. One has to be quite diligent to find a dish that doesn’t come with a side of fries. Ice cream is the only item that comes to mind.

3) People cannot possibly eat all the French fries they bring home. So they throw it in the trash. A lot of trash makes it to the oceans. Millions of tons of fries congregate to form huge floating islands, large enough for jet fighters. As of now, various countries,–I’m not a liberty to mention them–are eying these French-fry islands as floating air-force bases. Such an increase of air power, particularly in the western Pacific Ocean would certainly destabilize the balance of power over there. This would be dangerous. Prevent war! Use up all your left-over fries with this recipe.
