Shrimp Soup (Chupe de Camarones)

Chilean Soup

SHRIMP SOUP
(Chupe de Camarones)

INGREDIENTSshrimpsoup

6 slices white bread
1 12-ounce can evaporated milk
1 medium onion
1 small carrot
1 stalk celery
1 red bell pepper
2 cups water
½ cup white wine
1¼ pounds shrimp, deveined with shells still on
2 tablespoons butter
½ teaspoon oregano
¼ teaspoon pepper
½ teaspoon salt
1 teaspoon thyme
¼ pound grated Parmesan cheese
½ teaspoon parsley

SPECIAL UTENSIL

Makes 6 bowls. Takes 50 minutes.

PREPARATION

Remove crust from bread. Add bread and evaporated milk to 1st mixing bowl. Let sit for 15 minutes. Mix with fork

While bread/milk mixture sits, mince onion. Dice carrot, celery, and red bell pepper. Remove shrimp shells from shrimp. KEEP shrimp shells. Add water, white wine, shrimp shells, carrot, and celery to pot. Bring to boil using high heat. Stir occasionally. Reduce heat to low and simmer for 10 minutes. Remove from heat. Pour pot through colander into 2nd mixing bowl. Discard shrimp shells, carrot, and celery.

Add onion, bell pepper, and butter to pan. Sauté at medium-high heat for 5 minutes or until onion and bell pepper softens. Stir frequently. Add oregano, pepper. salt, and thyme. Stir.

Add soaked bread and sautéed onion and bell pepper to pot. Cook at medium heat for 5 minutes. Stir frequently Add shrimp and Parmesan cheese. Cook for 3 minutes or until shrimp turns pink and cheese melts. Garnish with parsley.

TIDBITS

1) Tyrannosaurus Rexes had tiny arms.

2) Shrimp have tiny arms.

3) Coincidence?

4) No. Culinary archeologists–Woo hoo, spelled it right the first time–have long known that shrimp are descended from T-Rexes.

5) About 65 millions years ago a massive meteor hit Earth. The impact threw up so much debris that no sunlight got through. It was like going off daylight savings time, getting up at 6 a.m. and finding it still dark outside. Then you have to drive your kid to school in the dark and struggle to get in and out of the school parking lot. But you can’t get through the parking lot because one million other parents are driving their kids as well and oh my gosh, someone cuts in front of you and you were just trying to get out of the parking lot and you honk so your horn.

Oh my gosh, that parent who cut you off, just flipped you off!

“Jerk!” You honk again.

Oh my gosh, she flips you off once more.

“Eat lutefisk, telemarketer,” you find yourself saying.

She gets out of the car and strides towards you. You get out of your car. She sprays you with air freshener. You do the same to her. It’s about to get really ugly when the principal runs between the two of you. “Leave this parking lot at once,” he roars. So you and your nemesis get back in your car. But you can’t leave the parking lot, there are still two millions cars trying to turn left at the signal and the signal stays green for only twenty seconds.

6) Same with the extinction of the dinosaurs, except their parking lot was metaphorical.

7) And that long-ago meteor caused blocked out the Sun for decades, resulting in the death of most plants. The herbivorous dinosaurs died off for lack of food. The carnivorous dinosaurs starting dying off along with their prey.

8) Except for the T-rexes who happened to be at a convention by the ocean. One powerful hungry T-Rex, his name was Billy, saw a fish swimming close to the beach. His tiny arms were just the right size to grab this meal.

9) The rest of the rexes saw this and entered the ocean in search of sustenance. The numerous rexes began to deplete the fish supply. Fortunately, the kings of the dinosaurs didn’t need massive bodies, huge heads with dozens of knife like teeth to catch fish. So over time, the rexes diminished in size until they became the shrimp we see today.

10) Okay, okay, along the way they grew a lot of arms, but that development is harder to explain.

Potato Waffle with Hot Dog, Wars, and Manners

Norwegian Entree

POTATO WAFFLE WITH HOT DOG
(potetvafler met pølse)

INGREDIENTSPotatoWaffles-

5 russet potatoes or 2 pounds brown potatoes
4 tablespoons butter
12 hot dogs or hot-dog shaped sausages
4 eggs
3 cups milk
2 ½ cups flour
½ tablespoon baking powder
1 teaspoon salt
1 tablespoon sugar
no-stick spray

makes 12 potato waffles with hot dog

SPECIAL UTENSIL

PREPARATION

Peel potatoes. Cut each potato into eight pieces. Put potato pieces into large pot. Add enough water to cover potato bits. Bring water to boil on high heat. Reduce heat to low and simmer for about 20 minutes or until potato is tender. Drain potato bits. Add butter to pot with potato pieces. Mash potatoes with potato masher.

While potato bits simmer, add hot dogs to pot with enough water to cover them. Boil on high heat for 5 minutes. Turn off heat.

Also while potato bits are simmering, add eggs and milk to mixing bowl. Mix with whisk until well blended. Add flour and baking powder to pot. Mix with whisk. Add egg/milk mixture, salt and sugar to pot. Mix with whisk until smooth.

Spray waffle maker with no-stick spray. Fry waffles according to instructions with waffle maker or until waffles are golden brown. Remove waffle. Wrap waffle around hot dog. Smaker godt (Tastes great.)

TIDBITS

1) An apple a day keeps the doctor away.

2) Garlic keeps vampires away.

3) Garlic infused apples would keep vampires doctors away.

4) There are no vampire doctors in Norway.

5) Thus, the Norwegians may eat whatever food they want and still feel safe.

6) Waffles are great comfort food. So are hot dogs.

7) Eating a waffle-wrapped hot dog will make you quite happy. Ecstatic even. Best not to overdo it. All things in moderation.

8) Potatoes, not pancakes as was once believed, enabled the Prussian kingdom survive the Seven Years War, 1756 – 1763. Invading armies destroyed the crops that grew above ground, such as wheat, but couldn’t find the potatoes lurking underground. The Prussian peasants simply waited for the marauders to leave, dug up the potatoes, ate them, and survived.

9) However, you cannot hide waffles or even hot dogs in the ground for any length of time and expect to find them edible. Which is why peasants never planted waffles.

10)) The Seven Years War of tidbit 8) fame really did take seven years.

11) However, the Hundred Years War, which ran from 1337-1453, took 116 years.

12) Similarly, Panama hats do not come from Panama.

13) They come from Ecuador.

14) Ecuador is not that far from Chile.

15) In Chile. It is impolite to eat using your hands.

16) So if you are carrying a potato in your Panama hat, because you never know when a ruffian soldier frisks you for a loaf of rye bread, be sure to eat it with a fork.

17) It might be hard to eat a raw potato with a fork. Eating mashed potatoes would be easier.

18) However, your Chilean friends will think that coming to their houses with mashed potatoes on your head is also impolite. And they will tell you so.

19) However, your Chilean hosts might forebear from social criticism if you are a vampire doctor.

20) It’s all so confusing. It’s why we have etiquette experts.

Chilean Pastel De Papas (Potato meat pie)

Chilean Entree

PASTEL DE PAPAS
(Potato Meat Pie)

INGREDIENTSPastelDePapas-

3 medium brown potatoes
2 small red potatoes
1 chicken breast
3 garlic cloves
1 large onion
2 tablespoons olive oil
1 tomato
3 tablespoons tomato sauce
1 pound ground beef
1/4 teaspoon cayenne
1 teaspoon cumin
1/2 tablespoon paprika
1 teaspoon parsley
1/4 teaspoon pepper
1/2 teaspoon salt
2 tablespoons shredded cheese (panquehue if you can find it. ☺)
2 eggs
1/4 cup Parmesan cheese
no-stick spray

SPECIAL UTENSIL

9″ casserole dish

PREPARATION

Preheat oven to 350 degrees. Dream of a vacation in a Greek villa overlooking the crystal blue Aegean Sea while you peel potatoes. Put all potatoes in pot. Boil on high heat for 20 minutes.

While potatoes are cooking, cut chicken into 1/2″ cubes and mince garlic, onion, and tomato. Put garlic, onion, and olive oil in frying pan or skillet. Sauté for 5 minutes or until onions are tender. Stir frequently. Add tomato, tomato sauce, chicken, beef, cayenne, cumin, paprika, parsley, pepper, and salt. Cook for 5 minutes on medium heat stirring occasionally.

Remove potatoes from pot after they have been boiled for 20 minutes. Put potatoes in large mixing bowl. Mash them, mash ‘em good. Add eggs, shredded cheese and Parmesan cheese. Mix with whisk or fork until well blended.

Spray casserole dish with no-stick spray. Put meat mixture in casserole dish. Put mashed potatoes on top of meat mixture. Put casserole dish in oven. Bake at 350 degrees for 30-to-35 minutes or until top starts to turn brown.

Put your feet up. Call in someone to do the dishes and have a nice, cooling drink until your wonderful culinary creation is ready. Esta bien.

TIDBITS

1) This recipe uses two kinds of cheese.

2) Supposedly in the late 1800s a tidal wave stranded the USS Arakwe on Chilean soil. Looters approached the heavily damaged gunboat. The sailors couldn’t reach their cannonballs, so they loaded the ship’s big guns with large cheese balls and drove off the ruffians. Unfortunately, this story seems to be a myth.

3) A similar story has Uruguay winning a naval battle with Brazil in the 1840s through the use of stale balls of cheese. The television show, Mythbusters, analyzed cheese cannonballs and concluded cheese-cannon balls could punch holes out of an 1840 sail.

4) In World War Two, a Japanese submarine surfaced adjacent to the USS O’Bannon. The American sailors riddled the submarine with their destroyer’s smaller guns. However, they couldn’t lower their ship’s heavy guns enough to sink the sub. The Japanese realized this and came out the top hatch to fire their rifles on the Americans.

Apparently, the American sailors didn’t carry enough small arms to silence the Japanese rifle and pistol fire, so they threw potatoes at their adversaries. The Japanese thinking the potatoes were actually grenades fled back into their submarine. The American destroyer rapidly sailed away to a distance where they could bring their ship’s heavy guns to bear upon the Japanese and sink their sub.

Some versions deny completely the involvement of food in this story. Oh heck.
