Crispy Air Fryer Chicken Breast

American Entree

CRISPY AIR FRYER CHICKEN BREAST

INGREDIENTS

1 egg
¼ cup flour
½ cup panko bread crumbs
¼ teaspoon garlic powder
¼ teaspoon onion powder
½ teaspoon paprika
⅛ teaspoon pepper
¼ teaspoon salt
2 8-ounce chicken breasts
olive or avocado oil spray*

SPECIAL UTENSILS

air fryer
air-fryer parchment paper (optional)
* = or fill sprayer with olive oil. This helps spread the olive oil evenly on the chicken breasts.

Serves 2. Takes 50 minutes.

PREPARATION

Add flour to 1st shallow bowl. Add egg to 2nd shallow bowl. Beat egg with whisk or fork until well blended. Add panko bread crumbs, garlic powder, onion powder, paprika, pepper, and salt to 3rd shallow bowl. Mix with fork until well blended.

Dip chicken into bowl with flour. Coat chicken by pressing down on each side. Dip chicken into bowl with egg. Coat chicken by pressing down on each side. Dip chicken into bowl with panko Coat chicken by pressing down on each side. Spray both sides of chicken with oil. Repeat for remaining chicken breast.

Line bottom of air fryer with parchment paper. (This helps with cleaning the fryer.) Place chicken breasts in air fryer. Cook at 400 degrees for 15 minutes. Use tongs or fork to flip chicken. Air fry for another 10 minutes. (Times can vary a fair amount depending on the air fryer and the weight and thickness of chicken breast.) Goes well with wild adulation for the chef.

TIDBITS

1) The above photo shows a fork to left of the crispy fried chicken. You’ll need that fork to spear the chicken in case it tries for a quick getaway when you’re not looking.

2 The fork also intimidates nearby quests who’d steal your meal if they only could. Sometimes, you really need to be alert at mealtime.

Baked Scotch Eggs

British Entree

OVEN BAKED SCOTCH EGGS

INGREDIENTS

6 eggs (1 more later)
1 egg
1 pound pork sausage
¼ teaspoon pepper
½ teaspoon salt
¾ cup Panko bread crumbs or regular bread crumbs

SPECIAL UTENSIL

baking sheet
parchment paper
x-ray vision or SupermanTM

PREPARATION

Preheat oven to 400 degrees. Add sufficient water to cover eggs. Bring water to boil using high heat. Use slotted spoon to gently lower eggs into water. (You don’t want eggs to crack. Boil 6 eggs for 8 minutes. ( Or 4 minutes for runny yolks, 6 minutes for creamy yolks, and 10 minutes for hard-boiled. Drain and gently transfer eggs to bowl filled with cold water. Let cool, then peel.

While 6 hard-boiled eggs cool, add 1 egg to small mixing bowl. Beat egg with whisk or fork. Add pork sausage, pepper, and salt to medium mixing bowl. Mix with hands until well blended. Divide pork sausage mix into 6 balls. Add pork balls to flat surface.. Flatten each pork ball until it is a patty about 1″ thick. Place a boiled egg in the middle of each patty. Shape patty completely and evenly around egg.

Dip each patty in beaten egg, then dredge through bowl with seasoned bread crumbs. Cover baking sheet with parchment paper. Gently add sausage/bread-crumb egg to parchment paper. Bake coated eggs for 25 minutes or until bread crumbs turn golden brown and sausage is firm. (And no longer pink as well. X-ray vision helps here. If you don’t have such an ability, please see if Superman is available.) Turn coated eggs over once to ensure even cooking.

Serves 6. Takes 1 hour 10 minutes.

TIDBITS

1) As always, offer Superman a serving if you’ve used his x-ray vision. You’ll be stunned to find out how many people don’t thank super heroes for their help. Good manners are always in fashion.

2) Besides, what if you’re caught in a building that’s being consumed with a raging fire. Do you want Superman to sulk and dawdle because you’d neglected to thank him?

Fish Sticks

American Entree

FISH STICKS

INGREDIENTSFishSticks-

1 pound cod or pollock
2 eggs
½ teaspoon grated lemon rind
¼ teaspoon salt
1⅓ cups panko (Japanese bread crumbs)
no-stick spray

SPECIAL UTENSIL

baking sheet

Makes 24 fish sticks. Takes 30 minutes.                                                                                                                                                                                                                           Fish sticks imitating a doughnut

PREPARATION

Preheat oven to 450 degrees. Put cod and ice water in bowl. Put bowl in refrigerator until oven is ready.

Drain water from bowl. Pat fish dry with towel. Cut cod into sticks 3″ long and 1″ wide. Add egg to mixing bowl. Beat eggs with whisk until well blended. Add lemon rind and salt to mixing bowl. Whisk again. Immerse fish sticks in egg/lemon rind mix until well coated. Add panko to second mixing bowl. Dredge coated fish sticks through panko.

Spray baking sheet with no-stick spray. Arrange fish sticks evenly on baking sheet. Bake at 450 degrees for about 12-to-15 minutes or until fish sticks obtain the desired level of crispiness.

TIDBITS
