Boston Brown Bread

American Appetizer

­

BOSTON BROWN BREAD

­
INGREDIENTS
­
1 tablespoon butter
¼ teaspoon allspice
¼ teaspoon baking powder
¾ teaspoon baking soda
½ teaspoon salt
⅔ cup yellow cornmeal
¾ cup rye flour
½ cup whole wheat flour
½ cup raisins (optional)
1¼ cups buttermilk
½ cup molasses
½ teaspoon vanilla extract

SPECIAL UTENSILS
­
3 coffee cans (Use the 14.5 ounce size or as near as you can get.)
aluminum foil
kitchen twine
8″*13″ casserole dish

Serves 8.  Takes 2 hours 45 minutes.
­
PREPARATION
­
Preheat oven to 325 degrees. Grease coffee cans with butter. Add allspice, baking powder, baking soda, salt, cornmeal, rye flour, wheat flour, and raisins (optional) to large mixing bowl. Mix with whisk or fork until well blended..
­
Boil water. Add buttermilk, molasses, and vanilla  to medium mixing bowl. Mix with whisk or fork until well blended. Add buttermilk into large bowl containing dry ingredients. Gently mix with spatula until just combined. This is the batter.
­
Spoon batter equally into the 3 coffee cans. The batter should not reach higher than ⅔ the way up the cans. Cover the top of the cans will aluminum. Tie aluminum securely to the cans with kitchen twine. Add cans to casserole dish. Put casserole on middle rack in oven. Leave rack partway out. Pour boiling water into casserole dish until the water level is ¾ the way up to the top of the dish. (This method is safer and easier than lifting a dish full of boiling water into the oven.)

Bake at 325 degrees for 1 hour 20 minutes or until the top of a loaf will spring back when lightly touched or until loaves start to pull away from coffee cans. Remove aluminum foil. Place cans on cooling rack. Let cool for 1 hour. Turn over cans and tap the bottom to cans to get loaves to slide out. Goes well with cream cheese or baked beans.

1) Boston Brown Bread is round. This is no accident.
­
2) Bread Bread , however, is rectangular and made from bits and pieces of other bread loaves.
­
3) Ned Ted Dredd bakes the most famous Bread Bread.
­
4) It is said that Ned hails from Jamaica and wears dreadlocks. He’a also kinda scary. People dread seeing his dreads coming toward them.
­
5) And that he is also a medical student at Kingston’s prestigious Kedd Medical University. It’s buildings are painted red to get its premeds used to the sight of blood.
­
6) So, by all means visit Kedd Med Dread Dread Ned Ted Dredd’s Bread Bread Bakery.

7) Any back in Boston, keen, lean, and mean Bob “Beantown” Beanstalk was drilling for samples deep into the Earth’s crust.
­
8) For he was a, was a …

9) Crustologist. You know the sort that drill into the crust looking for things that interest an amazingly small number of people.
­
10) Anyway, “Beantown” was hopping–no, it’s spelled hoping–to find beetle exoskeletons in his core sample from one-mile down.
­
11) For it’s well known that Ancient Egypt’s pharaohs and priests were absolutely gaga about beetles. They bred beetles to be pets. They held beetle relay races on religious holidays, They used rubies to fashion jewelry to look like beetles.

12) Anyway, Beanstalk believed pharaohs dated back 10,000,009 years. Then if he could find similarly ancient beetles ‘neath the streets of Boston, then he would prove that Egypt was at one time adjacent to what is now New England.
­
13) Incoming news! Just before press time, Boston Public Works just fired Bob Beanstalk. No reason was given.
­
14) But just before getting the sack, and just before lunchtime, a hungry Bob looked at a brown, round soil sample. “Boy,” he said, “I am really hungry for some good, fresh bread.”
­
15) As it so happened, Beanstalk’s wife  had filled his lunch pail with: butter, allspice, baking powder, salt, cornmeal, rye flour, whole wheat flour, raisins, buttermilk, molasses, vanilla extract, an 8″*13″ casserole dish, 3 round cans of coffee, aluminum foil, kitchen twine, six gallons of water, and two bunsen burners. After drinking all that coffee, frenetic Beantown’s synapses fired at an alarming rate and he soon created the first Boston Brown Bread out of the contents of his lunch pail.

Great Arctic Eats – Nome, Alaska

Are you a diner who loves to eat, but is skittish around people? Do you feel naked going outside without a parka or, at the very least, a good sweater? Do you want to see huskies race across a finish line? If you answered yes to these questions, then you owe it to yourself to fly to Nome, Alaska where the beaches are never crowded and the seafood is oh so fresh.

There are 15 restaurants listed in TripAdvisor(tm)! Let’s dine at the top five eateries.

The most exciting establishment is Pingo Bakery – Seafood House. This eatery really is the place to go to if you only have time for one meal in Nome. (Although why you’d travel all the way to Nome for just one meal is beyond me. However, to each his own.) It has charming service, quaint atmosphere, fresh items in their outstanding bakery, and homemade ice cream. However, their seafood remains the star of this establishment. They serve seafood omelettes, for goodness sake.  (You can even order a half-size omelette.) You get a choice of roasted halibut or red king crabmeat. And there’s three seafood pizzas: salmon and artichoke heats, roasted halibut, and crab with roasted garlic and mushrooms. Can you get these culinary wonders at your local pizzerias? No, I didn’t think so. They also serve Belgian waffles and if you’re adventurous, the Chef’s Surprise Breakfast. Go there!

Second on our restaurant tour is Bering Tea Co. They earned a perfect 5.0 rating. Congratulations, Bering Tea! They are known for their great coffee and tea. Especially their coffee. People love their coffee. They will make coffees to your specifications and with your choice of toppings and other ingredients. They offer wonderful handmade snacks. Go there early for tasty omelettes as they sell out quickly. Bering Tea has a reputation for being the friendliest eatery/cafe in town. And it’s next to Pingo Bakery. Is this a great town or what?

Winning the bronze medal is Milano’s Pizzeria. This restaurant serves the best pizza in all of Nome. The atmosphere is rustic and local. Milano’s serves up many other cuisines beside pizza including sushi, Korean, and lobster. If you want to tour the world without ever leaving your table, this is the restaurant to visit. And it’s all served up by a friendly staff.

Next on our Arctic food-lovers tour is the wonderfully named Polar Bear Cafe, a favorite with the locals. You can’t beat its view. It’s only a few feet away from the turbulent Bering Sea. It’s known for its large servings of crab legs and breakfasts all served  by a friendly and efficient staff.

Special mention goes to Board of Trade Saloon.  Apparently, you haven’t had the full Nome experience unless you drink beer here and then go outside to pee in the frigid Bering Sea. Honest.

The best way to reach Nome is by air, probably Alaska Air.

Be sure to visit Carrie M, McLain Memorial Museum. Don’t let the lack of official, accessible websites fool you, visitors love it. It’s charming, informative, and multi-sensory. Well, visual and audial. You’re on own about touching the exhibits. Find out about the fascinating traditional and Gold Rush times of Nome.

Then hop, skip, and jump or even take an all-terrain vehicle to the Bering Land Bridge National Preserve (BLBNP). But the most popular way to get there is by bush plane. There’s also trekking or sledding if you’re really resourceful. It sports great, informative displays. The staff is friendly and helpful. And there is no better place to learn about mammoths and mastodons. You can see a remnant of the great land bridge connecting Asia and North America. Our Asian ancestors used this land bridge to settle the Americas. But why, I keep asking myself, what possessed these worthy humans to go so far north? It had to be double-dang cold even back then. It’s a mystery, but one you can investigate at the BLBNP.

Then get a friend in an ATV to take you to the White Alice Site. You can even hike there if you’re hardy enough. I have no idea why it’s called White Alice. Were they talking about Alice’s ethnicity? And why Alice’s heritage? Why not someone else’s? Did Alice see a ghost? Did Alice run naked here after taking an oatmeal-milk bath? It would have been cold for poor, mad Alice. And no one would have been brave enough to brave the frigid air to see her, just like Lady Godiva. Anyway, the site boasts of beautiful scenery and a panoramic view of Nome and the Bering Sea. Be sure to investigate the Cold War early warning communication site.

Visit Katirvik Cultural Center. It’s in the same building as the McLain Memorial Museum. Hit two must-see places at once, Learn about native ways from the past millennia. The center has great interactive exhibits. The staff is friendly and helpful

Finally, shop at Maruskiya’s. Buy amazing Alaska Native bead work and walrus-ivory carvings for your loved ones and dear friends. Buy the inevitable touristy t-shirts for everyone else.

Peanut Butter French Toast

Hong Kong Breakfast

PEANUT BUTTER FRENCH TOAST

INGREDIENTS

4 slices thick white bread*
6 tablespoons condensed milk
¼ cup smooth peanut butter
3 eggs
½ cup vegetable oil
2 tablespoons butter
½ cup golden syrup or maple syrup

* = Really should be milk bread, but it’s powerful hard to find outside an Asian bakery.

Serves 2 or 4, depending if you want to skip the next meal. These really are calorie bombs. Takes 30 minutes.

PREPARATION

Spread 1st bread slice with 3 tablespoons condensed milk. Spread a 2nd bread slice with 2 tablespoons peanut butter. Place 2nd bread slice, peanut butter side down, on 1st bread slice. Gently press the bread slice together to make a sealed sandwich. Repeat for 2nd sandwich..

Add eggs to mixing bowl. Whisk eggs until well blended. Dredge the sandwiches through the eggs until they are well coated, but not soggy. Add vegetable oil to pan. Fry at medium-high heat for 1-to-2 minutes on each side or until golden brown. (The 2nd sandwich is likely to take less than the 1st.) Remove sandwich. Add 1 tablespoon butter to the middle of the top slice. Drizzle ¼ cup golden syrup over sandwich. Cut in half, if desired. Repeat for remaining sandwich.

TIDBITS

1) Asphalt roads are built with asphalt.

2) The Yellow Brick Road was built with yellow bricks.

3) The Silk Road was built with silk. Silk is strong. This is why construction crews prize silkworms so highly. Look up how many silkworms were employed building the Empire State Building.

4) The recently completed Peanut Butter French Toast Road (PBFTR) was built with peanut butter French toast. Of course, Of course, newly cooked peanut French toast while tasty is completely unable to support the weigh of a big-rig truck or even a bicycle. You have to let the toast dry out. In the meantime, workers can be fed using the same peanut butter French toast. Name one other road-building material that’s edible. Not concrete, let me tell you. The closest thing America has to China’s culinary engineering is its famed Tobacco Road.
