Chicken in Pineapple Boat

Tahitian Entree

CHICKEN IN PINEAPPLE BOAT
(Takia Ni Toa Painaviu)

INGREDIENTSChicken pineapple-

2 large pineapples
3 chicken breasts
½ small onion
2 tablespoons butter
2 tablespoons flour
1 cup chicken stock
3/4 cup coconut milk
½ teaspoon parsley
2 tablespoons cream
1/3 cup dry white wine
½ tablespoon slivered almonds (optional)
add pineapple leaves as decoration

PREPARATION

Cut pineapples in half lengthwise. Carve out inside of pineapple. Cut carved out pineapple flesh into 1″ cubes, throwing out pulpy parts.. Cut chicken into ½” cubes. Mince onion.

Add onion and butter to large frying pan. Sauté for 5 minutes on medium-high heat or until onion softens. Stir frequently. Reduce heat to medium. Add chicken and fry for about 5 MINUTES or until chicken is no longer pink inside. Do not brown chicken. Stir occasionally.

Reduce heat to low. Add flour and chicken stock to pan. Cook for minutes or until sauce thickens Add pineapple cubes, wine, and cream. Cook for 5 minutes on low heat. Stir occasionally Remove chicken/sauce from heat.. Ladle chicken/pineapple/sauce into pineapple halves. Sprinkle with parsley and almonds.

TIDBITS

1) The letter “B” does not exist in the Tahitian language. Tahitians would have a tough time ordering burgers at the Bob’s Big Boy restaurants in America. On the other hand, Tahiti has no poisonous snakes or insects.

2) Tahiti is way cool, Bread is more important than getting mail. Bakeries deliver fresh loaves twice a day to bread boxes outside residents homes. Maiil must be picked up at the post office.

3) Oh my goodness, I just found that the Tahitian alphabet now as only 13 letters, 13 fewer than the English one. And when I did the first tidbit, it apparently had 25. Where did those 13 – 1 = 12 additional letters disappear to and in two tidbits. I’m stopping the tidbits right now before the Tahitians lose any more letters. Goodness.

Kenyan Coconut-Milk Plantain Recipe

Kenyan Entree

COCONUT-MILK PLANTAINS

INGREDIENTSCocoMilkPlan-

4 completely ripe plantains
1/4 teaspoon salt
1 teaspoon curry powder
1/2 teaspoon cinnamon
1/8 teaspoon cloves
1 3/4 cups coconut milk

PREPARATION

Peel plantains. Cut plantains in round slices no thicker than 1/4″ inch. Combine all ingredients (head ‘em up, move ‘em out) into soup pot. Simmer on low heat for 30-to-40 minutes or until the plantains are tender and have absorbed all the coconut milk. Stir occasionally to ensure that all the plantain slices get covered with liquid. Serve hot. If not, serve cold.

TIDBITS

1) Cinnamon is truly a happening spice.

2) True cinnamon comes from Sri Lanka. Powdered cinnamon sold in America is usually not true cinnamon. Instead is really cassia, a similar tasting spice. Fret not, the sky is not falling. You can buy cinnamon sticks and grind your own cinnamon. Take back cinnamon! Yeah!

3) Cinnamon smells great. Indeed, God told Moses (Exodus 30: 22-33). to make holy anointing oil out of cinnamon, cassia, olive oil, myrrh, and scented cane.

4) The ancient folks scurrying around the Mediterranean and points east believed in the Cinnamon Bird. The Cinnamon Bird lived in Arabia and built its nest with cinnamon which it got from parts unknown.

5) The Arabians left heavy chunks of meat on the ground. The Cinnamon Birds would take the meat back to their nest. The weight of the meat would cause the cinnamon nests to fall to the ground. Of course, they could have accomplished the same thing by throwing bowling balls in these birds’ nest, assuming the sons of the desert had bowling balls way back then.

6) The ancient Roman, Pliny the Elder, debunked the myth of the Cinnamon Bird. Nothing got past old Pliny.

7) Economist alert! One ounce of cinnamon could get you fifteen ounces of silver in Roman times. Kinda made having cinnamon toast a special occasion.

8) During the Middle Ages, your social level was determined by the number of spices you had. Hee, hee, I’m fabulously rich! Oh wait, I’m not living in the Middle Ages. Dang it, where’s my time machine?

9) For centuries, European nations fought wars over who would control Ceylon’s, Sri Lanka back then, supplies of cinnamon. A bit like Black Friday at WalmartTM.

10) For a long time I thought Marshall Crenshaw’s song, “Cynical Girl,” was really “Cinnamon Girl.” It changed the meaning somewhat.

Kenyan Maharagwe Soup Recipe

Kenyan Soup

MAHARAGWE
(Spicy red beans in coconut milk)

INGREDIENTSMaharagwe-

3 tomatoes
1 1/2 onions
2 tablespoons olive oil
1 1/4 teaspoons cayenne
1/2 teaspoon salt
1/2 tablespoon turmeric
1 13.5 ounce can coconut milk
1 15 ounce can dark red kidney beans

PREPARATION

Dice tomatoes. Mince onions. Put olive oil and onion in soup pot. Sauté for 5 minutes on medium-high heat or until onion is tender. Drain kidney beans. Add tomato, cayenne, salt, turmeric, coconut milk, and kidney beans to pot.

Cook on low-medium heat for 10 minutes. Stir occasionally. Serve to guests who do not wonder out loud why a dish from Kenya has coconuts.

TIDBITS

1) Kenya grows coconuts. It does! It does! I never knew. I just looked it up. There’s even a Kenya Coconut Development Authority (KCDA). So there.

2) Egypt has pyramids. Mexico has pyramids. Did ancient Egyptians ever voyage to Mexico?

3) I’d always pictured coconuts growing only in islands in the Pacific.

4) But then again, Iceland grows bananas. Iceland is a republic. So, Iceland is a banana republic. So is the United States.

5) Did you know Iceland has a list of approved names? If you pick off the list, the government will not recognize your baby’s name. In that case, you must go to court to win approval.

6) Have you ever bought bananas from Iceland? Iceland has no McDonald’s. It costs too much to ship McDonald’s approved beef and potatoes there.

7) Juneau, Alaska has a McDonald’s. It used up it’s all the supplies that were supposed to last it an entire month on opening day.

Jamaican Pepper Pot

Jamaican Entree

PEPPER POT

INGREDIENTS

1 chicken breast
2 garlic cloves
1 medium yellow onion
1 tablespoon olive oil (1/2 tablespoon more later)

1/2 tablespoon olive oil
1 large fresh red tomato
1 small sweet potato
2 ounces kale (about 2/3 of a bunch at my supermarket)

2 cups chicken broth
1 teaspoon scotch bonnet sauce
1/4 cup unsweetened coconut milk
1/2 teaspoon allspice
1 bay leave
1/8 teaspoon black pepper
1/2 tablespoon brown sugar
1/2 teaspoon celery seed
1/2 teaspoon chili powder
1/2 teaspoon cilantro
1/2 teaspoon coriander
1/4 teaspoon ginger
1/2 tablespoon sea salt
1/4 teaspoon thyme
1 8 ounce can kidney beans, drained

UTENSIL

Dutch oven

PREPARATION

Chop chicken into 1/2-inch cubes. Mince garlic cloves and onions. Dice tomatoes. Peel and dice sweet potato. Remove leaves from kale’s stem and cut them into small pieces. (Sorry, your food processor does a poor job on kale leaves.)

Put 1 tablespoon olive oil in Dutch oven. Cook chicken cubes, garlic, and onion at medium-high heat for about 5 minutes or until chicken begins to brown and has changed color on the inside. Remove chicken/garlic/onion and set aside.

Put 1/2 tablespoon olive oil in Dutch oven. Add tomatoes, potato, and kale. Cook on medium-high for about 5 minutes. Add chicken broth, scotch bonnet sauce, coconut milk, allspice, bay leaves, black pepper, brown sugar, celery seed, chili powder, cilantro, coriander, ginger, sea salt, thyme, and kidney beans.

Add chicken/garlic/onion to Dutch oven. Bring to boil at high heat, stirring frequently. Lower temperature to low-warm and simmer for 30 minutes. Cover and stir occasionally. (You will need to, of course, remove the lid to stir the contents of the Dutch oven. If you don’t need to take off the lid to stir, please let me know. A Nobel Prize in Physics would look very nice on my mantlepiece.)

TIDBITS

1) Scotch bonnet peppers are about 40 times hotter than the esteemed jalapeño pepper.

2) That’s important information to know if you’ve been dared to eat the scotch bonnet pepper at a party. You’ve got to ask your taste buds, “Do you feel lucky today?”

3) And if you eat the fiery pepper without the aid of milk to coat the pain receptors in your mouth, the knowledge that these peppers possess a deeply inverted rounded apex won’t help you at all.

4) However, as you stagger around the party, sweat streaming down your burning face, other parts of your body are benefitting from the helpful fruit. You see, the mighty scotch bonnet pumps goodly amounts of vitamins B and C, iron, niacin, thiamine, magnesium, and riboflavin.

5) These vitamins help bobsledding athletes excel.

6) Jamaican athletes eat scotch bonnet peppers while British athletes never eat them. Jamaica has a better bobsledding team.

7) So eat your scotch bonnets if you wish to enter the Winter Olympics.

8) You might want to eat the fiery peppers as part of a meal such as this one.

9) If you do enter the Winter Olympics because you ate this recipe, please let me know. I’ll be sure to watch and cheer for you.

10) My wife recently won the challenge at Orochon Ramen Restaurant in Los Angeles by eating a huge bowl of their spiciest ramen in 30 minutes; a feat accomplished by only fifty-four others.
