BBQ Meatloaf

American Entree

BBQ MEATLOAF

­
INGREDIENTS
­
3 garlic cloves
1 small onion
½ cup barbecue sauce (¼ cup more later)
2 pounds ground beef, ground pork, or combination
½ cup bread crumbs
1 tablespoon Dijon mustard or yellow mustard
2 eggs
½ teaspoon onion powder
1 teaspoon pepper
½ tablespoon salt
2 tablespoons Worcestershire sauce
no-stick spray
¼ cup barbecue sauce
2 tablespoons fresh parsley

Serves 6. Takes 1 hour 20 minutes.

SPECIAL UTENSIL

9″ * 5″ loaf pan

PREPARATION
­
Preheat oven to 350 degrees. Mince garlic cloves and onion. Add all ingredients save no-stick spray, ¼ cup barbecue sauce and parsley to large mixing bowl. Mix well with hands.
­
Spray loaf pan with no stick spray. Add beef mix to loaf pan. Smooth with spatula. Bake for 45 minutes at 350 degrees. Remove from oven. Top with ¼ cup barbecu sauce. Smooth evenly with brush. Bake again for 15 minutes at 350 degrees. Dice parsley. Garnish with parsley.

TIDBITS
­
1) BBQ is short for barbecue. NRC is the abbreviation for the Nuclear Regulatory Commission. Folks at the NRC love BBQ as who would not? When one of their employees says, “I’m going to nuke the leftover meatloaf, does she mean she’s going to reheat in the microwave or should we be heafing to the fallout shelters?

2) This BBQ Meatloaf recipe uses barbecue sauce.

3) This reminds me of joke they might tell at the NRC.
Q: Why don’t they eat BBQ Meatloaf at the Chemical Safety Board?
A: The meatloaf falls through the holes in the grill. Ha! Ha! Ha!

Yam Neua (Thai Beef Salad)

YAM NEUA
(Thai Beef Salad)

INGREDIENTSThaiBeefSal-

6 cups napa or Chinese cabbage or cabbage
1/2 cup carrots
1 cucumber
1 1/2 pounds beef sirloin steak
3 cloves garlic
2 shallots
1 tablespoon lime juice (1 tablespoon more later)
5 tablespoons Thai fish sauce or Worcestershire sauce
1 teaspoon palm sugar or sugar
1/2 teaspoon cilantro
1/2 teaspoon lemongrass
1/2 tablespoon red pepper flakes

1/2 teaspoon basil
1/2 teaspoon coriander
1 tablespoon lime juice
1 tablespoon olive oil

PREPARATION

Shred napa and carrots. Mince garlic and shallots. Peel, seed, and slice cucumber. Cut sirloin into thin strips.

Add 1 tablespoon lime juice, fish sauce, palm sugar, cilantro, lemongrass, and red pepper flakes to large serving bowl. Mix ingredients with fork. Add cabbage, carrots, and cucumber. Mix again

Add sirloin, garlic, shallots, basil, coriander, 1 tablespoon lime juice, and olive oil to skillet. Sauté on medium-high heat for 5 minutes or until sirloin is no longer pink. Spoon sirloin strips and juice from skillet on top of salad in serving bowl.

A perfect salad for meat lovers.

TIDBITS

1) Cabbage is the new sexy. According to recent research in England, cabbage is the best natural aphrodisiac.

2. Many dishes are aphrodisiacs as well. They include: grilled oyster, grilled asparagus, grilled bananas, honey grilled shrimp, grilled Parmesan potatoes, and grilled carrots.

3) Whoa, look what grilling does.

4) Watch out if your date asks you over for grilled cabbage.

5) What if grilled beans were an aphrodisiac? How would you grill them? They’d keep falling through the spaces in the grill?

6) Chocolates make people more romantic. Would grilling chocolate cause overwhelming passion? Who would know? The chocolate would probably melt on the grill and drip on the hot coals below. Or, the chocolate would burst into flames. Either way you’d scorch your fingers trying to give that chocolate to your sweetheart and then you wouldn’t feel romantic at all.

7) Or you could profess you love, if you want to try a non-culinary approach.

Eggs Benedict

American Entree

EGGS BENEDICT

INGREDIENTS

16 tablespoons or 2 sticks butter
6 egg yolks
1/4 cup sugar
2 tablespoons lemon juice
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/4 teaspoon Worcestershire sauce
1/4 teaspoon thyme

8 slices Canadian bacon
8 eggs
2 teaspoons white vinegar
2 teaspoons rice vinegar
4 English muffins
2 sticks butter

Note: this recipe is made for people allergic to undercooked eggs. If you prefer runnier eggs, please halve the times below.

PREPARATION

Melt two sticks of butter in sauce pan. Add 6 egg yolks, lemon juice, salt, cayenne, Worcestershire sauce, and thyme. Mix thoroughly with whisk. Cook on medium high for 6 minutes or until sauce thickens. Stir frequently.

While sauce is cooking, put bacon in frying pan. Cook on medium heat for about 8 minutes flipping the bacon (BACON!) occasionally until both sides turn brown.

While you are cooking the sauce and frying the bacon, (BACON!) start poaching the eggs. Fill a large sauce pan 2/3 to the top with water. Add rice vinegar and white vinegar. Lower the heat until low and wait until the surface of the water is smooth. (You most certainly do not want to be burnt with bubbling water when you add the eggs.) Crack the shells and slide the eggs in the water. Raise the heat to medium and cook for 8 minutes.

In the spare seconds between attending to the sauce, bacon, and poached eggs, toast 4 English muffins or 8 half muffins. (As you can see this is not a dish where you can safely read Moby Dick.)

Butter the cranny-filled side of a muffin half. Add a slice of Canadian bacon, then a poached egg. (Use a spoon with holes in it to retrieve the egg.) Top with Hollandaise sauce.

Be sure to thank vigorously anyone who helps you clean up after this one. If your date cooks you this dish and has everything completely cleaned up by serving time, consider proposing.

TIDBITS

1) Canadian Bacon comes from Canada. Canada has lot of “a”s in it.

2) So does the Mexican city of Guadalajara.

3) America went to war with Mexico in 1846. As a result, America won the entire southwest part of the modern U.S.

4) America never went to war with Canada. Oh sure, we invaded it in 1812, but it was still part of Britain. That war ended in a tie. We got nothing.

5) Maybe it’s because Guadalajara has one more “a” in it than Canada.

6) But everything’s okay now between America and Canada.

7) But who is Benedict and why did he get eggs named after him? Seems like a great idea for product placement.
